Resumo

As avaliações rotineiras do caráter tempo de cozimento em feijão (Phaseolus vulgarisL.) podem ser efetuadas de distintas maneiras resultando em diferentes variáveis. Por vez, a análise estatística univariada não considera as interdependêcias entre as variáveis, podendo omitir importantes informações a respeito dos genótipos. Com isso, o objetivo do trabalhofoi dispor uma proposta alternativa para análise do tempo de cozimento em feijão, permitindo a discriminação entre genótipos. O experimento utilizado para esta abordagem foi conduzido em condições de campo na safra agrícola do ano 2017/18em Lages, Santa Catarina, Brasil. Ostratamentos foram compostos por doze genótipos, sendo quatro genitores, estruturados em dois cruzamentos BAF50 x BAF07 e BAF09 x IPR 88 Uirapuru, com suas gerações F2, F3, F8e F9. O delineamento utilizado foi blocos casualizados, com dois blocos e duas observações em cada unidade experimental. Posteriormente a colheita, a variável resposta tempo de cocção dos grãos de feijão foi mensurada com o cozedor Mattson, sendo considerado o tempo de cocção das 13 hastes iniciais. Na análise multivariada, as variáveis tempo de cocção da segunda (TCH2), décima segunda (TCH12) e décima terceira haste (TCH13) foram utilizadas com base em sua significância pelo método de seleção de variáveis passo a passo (stepwise). A análise de variância multivariada demonstrou diferença entre os genótipos (P<0,05). A partir da matriz de dissimilaridade com as distâncias de Mahalanobis e o dendrograma de agrupamento, foi possível verificaras distâncias dos genótipos derivados dos cruzamentos BAF50 x BAF07 e BAF09 x IPR 88 Uirapuru. Comisso, a análise multivariada possibilitou a discriminação dos genótipos, adicionalmente o cruzamento BAF50 x BAF07 demonstrou maiores estimativas de dissimilaridade nas progênies.(AU)


Routine evaluations of cooking time traitin common bean (Phaseolus vulgarisL.) can be performed in different ways resulting in different variables. At the same time, the univariate statistical analysis does not consider the interdependencies between the variables, and may omit important information regarding the genotypes. With this,the objective of this work was to present an alternative proposal foranalysis of the cooking time in common bean, allowing the discrimination between genotypes. The experiment used for this approach was conducted under field conditions in the 2017/18 agricultural season in Lages, Santa Catarina, Brazil. The treatments consisted of twelve genotypes, (fourparents, structured in two crossings BAF50 x BAF07and BAF09 x IPR 88 Uirapuru, with their generations F2, F3, F8and F9). The design used was randomized blocks, with two blocks and two observations in each experimental unit. After the harvest, the response variable cooking time of thegrains was measuredwith a Mattson cooker, considering the cooking time of the 13 initial stems. In the multivariate analysis, the variables cooking time of the second (TCH2), twelfth (TCH12) and thirteenth stem (TCH13) were used based on their significance by the stepwise variable selection method. Multivariate analysis of variance showed differences between genotypes (P<0.05). From the dissimilarity matrix with the Mahalanobis distances and the clustering dendrogram, itwas possible to verify the distances of the genotypes derived from crosses BAF50 x BAF07 and BAF09 x IPR 88 Uirapuru. With that, the multivariate analysis enabled thegenotypes, additionally the crossing BAF50 x BAF07 showed higher estimates of dissimilarity in the progenies.(AU)

Resumo

This study evaluated the changes caused by cooking presoaked aged carioca beans in the autoclave steam, focusing on its bioactive components, antioxidant activity, and nutritional compounds. Additionally, to identify which carioca bean cultivar could preserve the most quantity of bioactive compounds in cooked flour. The cooked flours from Imperador had the highest antioxidant activity (DDPH: 10.58 µmolTrolox·g-1, ABTS: 18.71 µmolTrolox·g-1), anthocyanins (8.08 µg·g-1), and total phenolic content (TPC) (36.69 mg·g-1). The cultivar Gol also retained part of these compounds after cooking. The phenolic and saponin profiles of cooked flours revealed a reduction in phenolic compounds such as catechin, epicatechin, and kaempferol and an increase in soyasaponin-Ba and Bb. The samples Notavel, Dama, and Madreperola, presented the highest amount of soyasaponin-A0. Thus, the cooked flours from Imperador and Gol stood out due to their retention of part of their bioactive compounds, such as polyphenols and group B saponins.


Este estudo avalia as alterações causadas pelo cozimento do feijão carioca, envelhecido e pré-embebido, no vapor da autoclave, com foco em seus componentes bioativos, atividade antioxidante e compostos nutricionais. Além disso, identifica qual cultivar de feijão carioca preserva a maior quantidade de compostos bioativos na farinha de feijão cozida. As farinhas cozidas do Imperador apresentaram a maior atividade antioxidante (DDPH: 10.58 µmolTrolox·g-1, ABTS: 18.71 µmolTrolox·g-1), antocianinas (8.08 µg·g-1) e fenólicos totais (TPC) (36.69 mg·g-1). A cultivar Gol também reteve parte desses compostos após o cozimento. Os perfis fenólicos e saponínicos das farinhas cozidas revelaram redução de compostos fenólicos, como a catequina, epi-catequina e kaempferol e aumento de soyasaponin-Ba e Bb. As amostras Notável, Dama e Madrepérola, apresentaram a maior quantidade de sojasaponina-A0. Assim, as farinhas cozidas do Imperador e Gol se destacaram pela retenção de parte de seus compostos bioativos, como polifenóis e saponinas do grupo B.

Resumo

The objective was to evaluate whether space allowance during pre-slaughter transport of European breeding quail affects welfare, carcass traits and meat quality. A total of 248 quails (body weight = 344.90 ± 2.09 g) were used. During pre-transport, the quails were fasted for 5 hours and 30 minutes. The poultry were caught and placed in plastic transport crates with an area of 0.40 m2. The treatments consisted of a different space allowance in each crate: 22, 28, 34 or 40 quails per crate. Immediately upon arrival at the slaughterhouse, the quails were stunned. During bleeding, blood samples were collected. The carcasses were individually weighed. The meat quality was measured. Data were analysed using the effects of space allowance during transport of quails and pickup truck as dependent variables. Death on arrival increased as the space allowance in transport crates decreased (p=0.08). Glucose and uric acid levels were not significantly different between groups (p≥0.14). The cold carcass weight presented the maximum value when the crates contained 31 quails (p=0.03). The meat pH, intensity of red, intensity of yellow and cooking losses were not different between groups (p≥0.12). The meat lightness value presented the maximum value when the crates contained 31 quails (p=0.04). In view of the above, the number of European breeding quails transported in crates must not exceed 30 animals.(AU)

This study aimed to evaluate the correlations between mineral profile, physical and chemical characteristics, and proximate composition of ewe meat receiving different water supply levels (100% - ad libitum group; 80%; 60% and 40% ad libitum group). Thirty-two Santa Ines ewes were assigned to a randomized block design, with 4 treatments, and 8 replications, during the 63-day experimental period. Significant correlations between all minerals (P<0.05) were found in the 60% and 40% water supply levels. A correlation (P<0.05) was observed for minerals P, K, Ca, Mg, S, Cu, and Fe with crude protein at 100% water supply. Negative correlations (P<0.05) between N, P, K, Ca, Mg, S, Cu, Fe, and Zn were detected in the meat of animals supplied with 60% water. Principal component analysis (PCA) of macrominerals explained 82.9% data variance. Zinc had a strong contribution to PC1. Cooking losses had a similar contribution to PC1 and PC2. PC1 and PC2 explained 66.7% data variance in chemical characteristics. The decrease in water supply causes the correlation of nitrogen with the other minerals in meat, in addition to altering the correlation between the physical and chemical profile of the meat.


O objetivo deste estudo foi avaliar as correlações entre o perfil mineral, as características físico-químicas e a composição centesimal da carne de ovelhas recebendo diferentes níveis de oferta hídrica (100% - grupo ad libitum; 80%; 60% e 40% do grupo ad libitum). Trinta e duas ovelhas Santa Inês foram distribuídas em delineamento em blocos ao acaso, com 4 tratamentos e 8 repetições, durante o período experimental de 63 dias. Correlações significativas entre todos os minerais (P<0,05) foram encontradas nos níveis de 60% e 40% de oferta hídrica. Observou-se correlação (P<0,05) dos minerais P, K, Ca, Mg, S, Cu e Fe com a proteína bruta em 100% de oferta hídrica. Correlações negativas (P<0,05) entre N, P, K, Ca, Mg, S, Cu, Fe e Zn foram detectadas na carne de animais que receberam oferta de 60% de água. A análise de componentes principais (ACP) dos macrominerais explicaram 82,9% da variação dos dados. O zinco apresentou forte contribuição para a componente 1 (CP1). As perdas por cozimento tiveram contribuição semelhante para CP1 e componente 2 (CP2). A CP1 e a CP2 explicaram 66,7% da variação dos dados das características químicas. A diminuição da oferta hídrica promoveu a correlação do nitrogênio com os demais minerais da carne, além de alterar a correlação entre o perfil físico e químico da carne

The aim was to evaluate the effect of replacing ground corn with spineless cactus from two species Orelha de Elefante Mexicana-OEM (Opuntia stricta Haw.) and Gigante (Opuntia ficus-indica Mill) in a total mixed ration for finishing lambs evaluating its effects on intake, ingestive behavior, performance, carcass traits, commercial cuts and physiochemical composition of the meat. Eighteen crossbred lambs with average body weight of 15.0 ± 2.32 kg were distributed in a completely randomized design with three treatments (OEM and Gigante spineless cactus and ground corn as control treatment) and six replications. Spineless cactus species replacing ground corn in lambs diets does not change the intake of dry matter (DMI), crude protein and neutral detergent fiber or time (min/d) of ingestion, rumination and idleness, or final body weight gain. Lambs fed with ground corn and "Gigante" cactus presented a higher total weigh gain (TWG) and average daily weight gain (ADG) when compared to OEM spineless specie. Ground corn diet promoted better hot and cold carcass yield in lambs receiving spineless cactus, regardless of species. Feed and total costs (kg/lamb) were higher for the ground corn diet. The replacement of ground corn with spineless cactus did not change moisture, protein, and ash meat contents, as well as water holding capacity, cooking loss, shear force, and a* color intensity. However, there was an effect for the meat lipid content, b* and L* color intensity and color index, where the species of cactus Gigante on ground corn presented the highest lipid content and yellowness (b*) intensity and lower L* color compared to OEM. Spineless cactus species Gigante can replace ground corn as a source of energy in diets for finishing lambs because it significantly improves the financial income for the producer without changing the ADG, DMI, ingestive behavior and yield of commercial cuts.


Objetivou-se avaliar o efeito da substituição do milho moído por duas espécies de palma forrageira, Orelha de Elefante Mexicana-OEM (Opuntia stricta Haw.) e espécie Gigante (Opuntia ficus-indica Mill) em uma ração completa para terminação de cordeiros avaliando seus efeitos sobre consumo, comportamento ingestivo, desempenho, características de carcaça, cortes comerciais e composição físico-química da carne. Foram utilizados dezoito cordeiros sem padrão racial definido com peso corporal médio de 15,0 ± 2,32 kg e foram distribuídos em delineamento inteiramente casualizado com três tratamentos (OEM e palma Gigante e grão de milho como controle) e seis repetições. As duas espécies de palma forrageira em substituição ao milho moído na dieta de cordeiros não modificaram o consumo de matéria seca (CMS) proteína bruta e fibra em detergente neutro nem o tempo (min/dia) de ingestão, ruminação e ócio ou ganho corporal final. Cordeiros alimentados com milho moído e palma Gigante apresentaram maior ganho de peso total (GPT) e médio diário (GMD) em relação à espécie OEM. A dieta com milho moído promoveu melhor rendimento de carcaça quente e fria comparando cordeiros recebendo palma forrageira, independente da espécie. Os custos com ração e total (kg/cordeiro) foram maiores para a dieta com milho moído. A substituição do milho moído pela palma forrageira não alterou os teores de umidade, proteína e cinzas da carne, bem como a capacidade de retenção de água, perda por cozimento, força de cisalhamento e intensidade de cor a*. No entanto, houve efeito para o teor de lipídios da carne, índice de intensidade de cor b* e L*, sendo que a espécie de palma Gigante e o milho grão moído apresentou o maior teor de lipídios e intensidade de amarelo (b*) e menor cor L* em relação ao OEM. A espécie palma forrageira Gigante pode substituir o milho moído como fonte de energia em dietas para cordeiros em terminação, pois melhora significativamente o rendimento financeiro do produtor sem alterar o GMD, CMS, comportamento ingestivo e rendimento dos cortes comerciais.

No Brasil e no mundo é comum a oferta de produtos veganos com características complementares, seja para atender o público interessado em produtos naturais, sem aditivos e/ou orgânicos; ou por questões religiosas. A utilização da pupunha como base para a elaboração de hambúrgueres, com a substituição da farinha de trigo pela farinha de linhaça, mostrou um elevado potencial alimentício e socioeconômico de caráter regional. Diante isso, objetivou-se elaborar duas formulações de hambúrguer vegano de pupunha (f1 e f2) e realizar análises microbiológicas, físico-químicas e sensoriais, bem como avaliar o rendimento e o custo. As formulações apresentaram, nas análises físico-químicas, teores inferiores de proteínas (6,3 e 4,5% para f1 e f2, respectivamente) quando comparados com outros hambúrgueres de origem animal. Além disso, as formulações f1 e f2 apresentaram os seguintes teores, respectivamente: 58,6 e 58,5% para umidade, 13,4 e 11,5% para lipídios, 1,8 e 2,8% para cinzas, 18,6 e 21,8% para carboidratos e valor energético de 231,6 e 214,6 kcal. A análise sensorial demonstrou que a utilização de farinhas diferentes não interfere nas escolhas futuras dos consumidores. As formulações não apresentaram contaminação microbiológica, sendo ausente para salmonella (aus/25g), aeróbios mesófilos/g e escherichia coli/g, onde foram encontrados valores abaixo dos permitidos pela legislação. O estudo demonstrou um potencial produto alimentício para a indústria alimentícia, apresentando pouca perda de rendimento após cocção e oferecendo, também, uma opção mercadológica de baixo custo para três nichos: veganismo, doentes celíacos e produtos regionais.


In Brazil and in the world, it is common to offer vegan products with complementary characteristics, either to serve the public interested in natural products, without additives and/or organics, or for religious reasons. The use of peach palm as a basis for the elaboration of a hamburgers with the substitution of wheat flour for flaxseed flour showed a high food and socioeconomic potential with regional character. Thus, this study aimed to elaborate two formulations of pupunha vegan hamburger (f1 and f2) and perform microbiological, physical-chemical, and sensorial analyzes, as well as evaluate the yield and cost. The products showed, in the physical-chemical analyzes, lower protein contents (6.3 and 4.5% for f1 and f2, respectively) when compared to other hamburgers of animal origin. In addition, the formulations f1 and f2 presented the following levels, respectively: 58.6 and 58.5% for moisture, 13.4 and 11.5 for lipids 1.8 and 2.8 for ash,18.6 and 21.8% for carbohydrates, and energetic value of (231.6 and 214.6 Kcal. Sensory analysis showed that the use of different flours does not interfere with future consumer choices. The formulations showed no microbiological contamination, being absent of Salmonella (aus/25g), mesophilic Aerobes/g, and Escherichia coli/g, with values below those allowed by legislation. It demonstrated a potential food product for the food industry, presenting little loss of income after cooking, and also offering a low-cost marketing option for three niches: veganism, celiac patients, and regional products.

There is a worldwide demand for new protein sources through environmentally responsible production, and rabbit farming is a sustainable activity. Therefore, this study aimed to characterize meat from different cuts of rabbit carcasses and evaluate their use in the processing of restructured cured cooked ready-to-eat (RTE) products. Rabbit raw meats from different cuts were technologically characterized, and the RTE products were processed from the meats of the entire carcass (RABB), hind legs (RHIND), loin (RLOIN), and foreleg, thoracic cage, and flank (RBACK). Restructured pork cooked ham (PHAM) was used as the reference. Rabbit raw meat from different anatomical parts differed in proximate composition, total collagen and heme-pigment content, water-holding capacity, and CIE color, affecting the characteristics of processed products. RBACK products had higher fat content (5.46%), cooking and reheating losses (7.50% and 5.61%), and poor hardness and chewiness (11.1 N and 17.37 N×mm). Higher values of lightness (L* ~70.27), hue (h ~68.61°), and a slight cured color were observed in RLOIN, with a pale yellowish color described by sensory evaluation. RABB and RHIND were correlated with the sensory attributes of traditional PHAM, being preferred more often and with greater purchase intent than RLOIN and RBACK. It is concluded that cooked ham development from whole carcass meat (RABB) is a potential opportunity for the rabbit industry to offer value-added technological products of high quality to consumers.


Há uma demanda mundial por novas fontes proteicas de produções ambientalmente responsáveis, e a cunicultura se enquadra perfeitamente como uma atividade sustentável. Neste contexto, este estudo teve como objetivo caracterizar a carne de diferentes cortes da carcaça de coelho e avaliar sua utilização no processamento de produtos curados cozidos prontos para o consumo (RTE). As carnes cruas de coelho de diferentes cortes foram caracterizadas tecnologicamente, e os produtos RTE foram processados a partir das carnes de carcaça inteira (FC-INT), patas traseiras (FC-PERNIL), lombo (FCLOMBO), patas dianteiras, caixa torácica e flanco (FC-APARAS). Um produto RTE com carne de pernil suíno (APRESUNTADO) também foi elaborado como referência. A carne de coelho de diferentes partes anatômicas diferiu na composição centesimal, conteúdo total de colágeno e pigmento heme, capacidade de retenção de água e cor (CIE), afetando as características dos produtos elaborados. Os produtos FC-APARAS apresentaram maior teor de gordura (5.46%), perdas por cozimento e reaquecimento (7,50% e 5,61%), baixa dureza e mastigabilidade (11.1 N e 17.37 N×mm). Maiores valores de luminosidade (L* ~70.27), matiz (h ~68.61°) de cor e uma fraca cor curada foram observados no FC-LOMBO, com uma coloração amarelada pálida descrita pela avaliação sensorial. FC-INT e FC-PERNIL foram correlacionados com os atributos sensoriais do tradicional APRESUNTADO, sendo mais preferidos e com maior intenção de compra do que FCLOMBO e FC-APARAS. Concluiu-se que o desenvolvimento de produtos curados cozidos a partir de carcaças inteiras (FC-INT) é uma oportunidade potencial para a indústria de cunicultura oferecer produtos tecnológicos de valor agregado e de alta qualidade aos consumidores.

ABSTRACT: This study aimed to evaluate the quality traits and fatty acid profile of beef from Nellore and Angus bulls fed whole shelled corn (WSC) and ground corn plus maize silage (GC) diets. Eighteen Nellore and 18 Angus young bulls [381 ± 12 kg initial body weight (BW) and an average age of 20 ± 1.9 months] were used in a completely randomized design using a 2 × 2 factorial arrangement and were slaughtered at a final BW of 451.5 kg and 545.5 kg, respectively. Twentyfour hours after slaughter, samples of longissimus thoracis muscle were collected for the analysis of lipid oxidation, color, fatty acid profile, shear force, and cooking loss. There was no effect of diet × breed interaction on meat color, lipid oxidation, shear force, and cooking loss. Angus beef had lower shear force (p 0.05) than Nellore beef and had a greater concentration of linoleic acid and polyunsaturated fatty acids (PUFA) (p 0.01). Beef of bulls fed WSC tended to have greater concentration of CLA C18:2c9t11 (p = 0.09), greater concentration of CLA C18:2t10c12 (p = 0.01), and PUFA (p = 0.05), and consequently, higher oxidation levels. Angus bulls produced beef with greater tenderness and PUFA concentration. The results of fatty acid show a possible change in biohydrogenation when animals are fed the WSC diet, reducing lipogenesis, as this diet increases the C18:2t10c12 content.

Simultaneous selection for various agronomic traits, cooking time and mineral concentration are major challenges for common-bean (Phaseolus vulgaris L.) breeding programs. The authors of this study proposed to analyze genetic gain estimates obtained by direct and indirect selection using selection indices and economic weights for 13 traits, and to determine the most efficient selection strategy for the simultaneous selection of fast cooking, mineral-biofortified common bean cultivars with high agronomic performance. For this purpose, three experiments were carried out in different growing seasons to evaluate 49 common bean cultivars of different grain types. Agronomic performance was evaluated based on six traits; cooking time was determined using a Mattson cooker; and the concentration of six minerals was analyzed in samples of raw grains. Significant genotype × environment interaction or genotype effects were observed for all traits, indicating the existence of genetic variability. Direct selection resulted in high genetic gain estimates for individual traits, but caused undesirable changes in one or more of the traits under selection. The classic, base, desired-gains and rank-sum selection indices tested with six economic weights do not provide genetic gain estimates favorable to the selection of all traits. The multiplicative index is the best selection strategy for use in the breeding program when aiming at the simultaneous selection of fast cooking, mineral-biofortified common bean cultivars with high agronomic performance.

The physicochemical characteristics of the meat from lambs fed diets containing whole or disintegrated cottonseed, associated or not with calcium lignosulfonate (LignoCaSO3), were evaluated. Thirty non-castrated Dorper x Santa Inês lambs, with an average of 24.9 ± 3.6 kg and four months of age were confined for 60 days in collective stalls and distributed in a completely randomized design with six replications. After slaughter, by means of contrasts, the averages of the parameters of the semimembranous and semitendinosus muscles were analyzed. The cottonseed increased cooking loss and ash, and reduced muscle weight, water holding capacity and red intensity. The disintegration of the cottonseed reduced the shear force in diets without LignoCaSO3, increased the protein and the loss by cooking and reduced the pH in the diets with the additive. The luminosity values increased with the disintegration of the cottonseed in diets with and without LignoCaSO3. The addition of LignoCaSO3increased the weight of the muscle, protein, ash, pH, shear strength and the intensity of red. Moisture, lipids and yellow intensity were not influenced by the diets. Resumo

Bos taurus indicus temperament is variable and affects beef tenderization. Our objective was to investigate temperament and performance of non­castrated Nellore and identify groups based on Longissimus lumborum (LL) pH decline as well as beef characteristics produced by those groups. We investigated 94 animals with a subset of carcasses (n = 24) selected based on LL pH at 24 h postmortem (pm) to represent two groups: resistant to pH decline (> 5.8 called pH­Res; n = 10) and normal (< 5.7 called pH­Nor; n = 14). Steaks were fabricated from the LL muscle and randomly assigned to aging (2, 7, 14, and 21 days). Sarcomere length, cooking loss, myofibrillar fragmentation index (MFI), and Warner­Bratzler shear force (WBSF) were determined. Data on temperament were investigated in a multivariate approach, while beef data were compared between groups using the analysis of variance. Rectal temperature at the beginning of the finishing phase and total weight gain were greater and related to animals in the pH­Res group (p < 0.01 and p = 0.03, respectively). Temperature and pH decline curves, sarcomere length, and cooking loss revealed that pH­Res produced beef with lower quality compared to the pH­Nor group. Results for MFI and WBSF did not show differences between groups within each time pm; however, overall steaks from pH­Res were tougher (p = 0.06). Incidence of LL pH between 5.8 and 5.9 at 24 h pm did not compromise the tenderization rate or extension; however, it affected the water holding capacity in this population of Nellore cattle.(AU)

Resumo

The aim of this study was to develop methodologies to obtain fish protein concentrates from tambacu filleting residues, characterize their physical-chemical composition and evaluate their sensory profile. Concentrates were prepared by one of three methodologies: cooking of the raw material and subsequent drying (FPC1); cooking, drying, lipid removal with ethanol at 70 °C and final drying (FPC2); and three washing steps of the raw material with ethanol at 70 °C and drying (FPC3). FPC2 had a lower final yield (15.5%) and chroma a* (1.77) and chroma b* values (14.12) but higher moisture (5.22%) and protein content (80.39%) and luminosity (74.97), in addition to having the weakest fish taste compared to FPC1 and FPC3. FPC1 had the strongest odour, darkest colour, and strongest fish taste compared to FPC2 and FPC3. Ash, pH values, and water activity were not different between the concentrates. It is concluded that the methodology where lipid removal steps are carried out after cooking and drying (FPC2) is more effective for the removal of lipids and deodorization of tambacu protein concentrate.(AU)


Este trabalho teve por objetivo desenvolver metodologias para a obtenção de concentrados proteicos de pescado a partir de aparas da filetagem de tambacu, caracterizando sua composição físico-química e perfil sensorial. Foram utilizadas três metodologias: cozimento da matéria-prima e posterior secagem (CP1), cozimento, secagem, deslipidificação com etanol a 70°C e secagem final (CP2) e três lavagens da matéria-prima com etanol a 70°C e secagem (CP3). O CP2 apresentou o menor rendimento final (15,5%), porém maior teor de umidade (5,22%), proteína (80,39%) e luminosidade (74,97), além de menores médias para croma a* (1,77), croma b * (14,12), além de sabor de peixe mais fraco comparado aos CP1 e CP3. O CP1 apresentou odor mais forte, cor mais escura e o sabor de peixe mais forte em relação ao CP2 e CP3. Os valores de pH e atividade de água não foram diferentes entre os concentrados. Conclui-se que a metodologia de deslipidificação após o cozimento e secagem (CP2) é mais eficaz para a remoção dos lipídeos e desodorização do concentrado proteico de tambacu.(AU)

ABSTRACT: Common bean is a worldwide important crop. The development of varieties with durable resistance to diseases is a major challenge in common bean breeding. The present study aimed at evaluating the phenotypic and molecular selection of anthracnose resistance in a population obtained by assisted backcrossing from IAC Formoso (resistant, donor parent) × BRS Pérola (susceptible, recurrent parent). Nine microsatellites (SSRs) and one Sequence Tagged Sites (STS) markers previously linked to ANT resistance were used to genotype this progeny, and the results showed that the selection of the genotypes closest to the donor parent in the BC1F1 population decreased the number of backcrossing cycles necessary to obtain advanced isogenic lines, potentiating the use of this tool for early selection of resistant cultivars. A total of 31 % of the BC1F1 progeny was selected and backcrossed again. The progeny derived from the second backcross (BC2F3) was selected for the Carioca grain ideotype, and 42 % of the genotypes showed high resistance to anthracnose under controlled conditions of infection for races 65 and 81. Superior resistant plants were selected and evaluated under natural conditions of infection to fusarium wilt and angular leaf spot, allowing the selection of two inbred lines with higher resistance to anthracnose, fusarium wilt, angular leaf spot and postharvest quality traits such as yield, 100 seed weight, L value at seed harvest grain darkening and cooking time. The approach outlined in this paper proved to be effective to simultaneously select for disease resistance without losing technological quality aspects of the bean.

The Phaseolus lunatus L. (lima bean) is a species of the Fabaceae family widely cultivated in the Northeast region of Brazil and is an important source of nutrients for the population. The lima bean has high genetic variability, which results in many cultivated varieties. However, there is little information about the cyanide levels, nutritional quality and sensory acceptance of these varieties, as well as about the changes caused by the cooking process, especially with regard to free cyanide contents. Therefore, the objective of this work was to evaluate the cyanide contents, nutritional quality and sensory attributes of lima bean varieties. Potential and free cyanide levels, quality attributes and a Qualitative Descriptive Analysis (QDA) were evaluated in raw and cooked grains. The study was carried out in a completely randomized design, with five lima bean varieties (Orelha de Vó, Branca, Roxinha, Rosinha, and Cearense), in 4 replications. Relatively to the raw ones, cooked grains presented larger size and smaller contents of ash, proteins, carbohydrates, potential cyanide and free cyanide, in the studied varieties. The Orelha de Vó lima bean showed higher mass of raw and higher firmness of cooked grains, which was judged to have the bitterest flavor among the others but showed safe levels of free cyanide after cooking. When cooked, Branca lima bean had a greater intention of purchase and global acceptance, due to its greater intensity of characteristic aroma and lower residual bitter taste.(AU)


A Phaseolus lunatus L. (fava) é uma espécie da família Fabaceae amplamente cultivada na região Nordeste do Brasil, sendo uma importante fonte de nutrientes e geração de renda para a população. A fava possui elevada variabilidade genética, o que resulta em muitas variedades cultivadas. No entanto, existem poucas informações sobre os níveis de cianeto, qualidade nutricional e aceitação sensorial dessas variedades, bem como sobre as alterações ocasionadas pelo processo de cocção, principalmente no que se refere aos teores de cianeto livre. Diante disso, o objetivo deste trabalho foi avaliar os teores de cianeto, qualidade nutricional e atributos sensoriais de grãos de variedades de fava. Os níveis de cianeto potencial e livre, atributos de qualidade nutricional e uma Análise Descritiva Qualitativa (ADQ) foram avaliados em grãos crus e cozidos. O estudo foi conduzido em delineamento inteiramente casualizado, com cinco variedades de fava (Orelha de Vó, Branca, Roxinha, Rosinha e Cearense), em 4 repetições. Relativamente aos crus, grãos cozidos apresentaram maior tamanho e menores teores de cinzas, proteínas, carboidratos, cianeto potencial e cianeto livre, das variedades estudadas. A fava Orelha de Vó apresentou maior massa nos grãos crus e maior firmeza nos cozidos, que foi julgada como sabor residual mais amargo entre as demais, mas apresentou níveis seguros de cianeto livre após cozimento. Quando cozida, a fava branca teve maior intenção de compra e aceitação global, devido a sua maior intensidade de aroma característico e menor sabor amargo residual.(AU)

Abstract Vegetable oils have their specific physicochemical properties due to which they are playing vital role in human nutritional diet for health benefits. Cottonseed oil is obtained from various species of cotton seeds that are famous to be grown mainly for their fiber quality. The most prominently used specie is Gossypium hirsutum. It is obvious that the seeds of different variety of cotton vary as grown in diverse agroclimatic conditions with respect to oil, fats and protein contents. Cottonseed oil is routinely used for cooking and food manufacturing products. Cottonseed oil obtained after proper extraction/processing steps from crude state to refined oil in a variety of ways. Cotton crop is considered for their dual-use purpose, for fiber quality and oil production to promote health benefits in the world. Keeping in view the above facts, this review clearly demonstrated an overview about physicochemical and functional properties of cottonseed oil to promote health benefits associated with the use of this oil. The overall characteristics and all concerned health benefits of CSO will further improve their usefulness is a compact way. We have summarized a brief multi-dimensional features of CSO in all aspects up to the best of our knowledge for the end researchers who can further research in the respective aspect.


Resumo Os óleos vegetais têm propriedades físico-químicas específicas que desempenham um papel vital na dieta nutricional humana em benefício à saúde. O óleo de semente de algodão, utilizado rotineiramente no preparo e na fabricação de alimentos, é obtido através de várias espécies de sementes de algodão, famosas pela alta qualidade de sua fibra., cuja espécie mais utilizada é Gossypium hirsutum. As sementes variam, em relação ao teor do óleo, da gordura e das proteínas, de acordo com o cultivo e as diversas condições agroclimáticas. O óleo de algodão é obtido após etapas adequadas de extração das sementes e processamento do estado bruto ao refinado. Assim, a presente revisão demonstra, de maneira geral, as propriedades físico-químicas e funcionais do óleo de semente de algodão e seus benefícios à saúde humana, resumindo suas características multidimensionais. As características gerais e todos os benefícios do composto podem melhorar ainda mais se utilizadas de forma compacta, auxiliando futuros pesquisadores.

Abstract Infection caused by geo-helminth parasites are called geohelminthiasis are one of the global health problems. Vegetables eaten raw is the principal source of transmission of geo-helminth parasites. Pakistani people believe that eating raw vegetables are a significant source to get important vitamins and minerals. Based on the high incidence of pathogenic parasites and cultivating different vegetable types in the study areas, we conducted this study to evaluate the geo-helminth contamination of raw vegetables in northwest Khyber Pakhtunkhwa, Pakistan. This is a descriptive study comprised, 1942 samples of 25 various types of vegetables. The samples were examined in physiological saline solution using sedimentation and centrifugation methods. The findings were analyzed by Graph-Pad version 5. P value less than 0.05 (95% CI) was considered significant. Results showed that 16.5% (n=322) of all vegetables were contaminated with one or more type of geo-helminth parasites. Garlic was the highest (35%) and cauliflower the lowest (4%) contaminated samples respectively. Ascaris lumbricoides was the most common geo-helminth found followed by hook worm species while Trichuris trichura was the least in all the vegetable samples. Leafy vegetables were highly contaminated 25.3% than vegetables with root parts 21.2% and fruity 9.09%. More than half of the contaminated vegetables were contaminated with single species of geo-helminth (P 0.05) while less than half with multiple types of geo-helminth contamination. Ninety two vegetables samples were contaminated with 2 species of parasites (P 0.05) and 45 with 3 (P>0.05) species of geo-helminth parasites. Education level of vendors and means of display were not significantly associated while types of vegetable used were significantly associated with the prevalence of parasites. The findings of this study provide evidence that consumption of raw vegetable has a high risk of acquiring geo-helminth infections. The authors believe that preventing the human to enter to the vegetable farmland for defecation, avoiding the irrigation of agricultural fields via night soil, and educating the people on proper washing and cooking of vegetables may be useful in reducing parasitic infections.


Resumo As infecções causadas por parasitas geo-helmínticos são chamados de geohelmintíases e são um dos problemas de saúde globais. Os vegetais comidos crus são a principal fonte de transmissão dos parasitas geo-helmínticos. O povo paquistanês acredita que comer vegetais crus é uma fonte significativa para obter vitaminas e minerais importantes. Com base na alta incidência de parasitas patogênicos e no cultivo de diferentes tipos de vegetais nas áreas de estudo, conduzimos este estudo para avaliar a contaminação por geo-helmintos de vegetais crus no noroeste de Khyber Pakhtunkhwa, Paquistão. Trata-se de um estudo descritivo composto por 1942 amostras de 25 tipos diversos de vegetais. As amostras foram examinadas em solução salina fisiológica utilizando métodos de sedimentação e centrifugação. Os achados foram analisados pelo Graph-Pad versão 5. O valor de P menor que 0,05 (IC 95%) foi considerado significativo. Os resultados mostraram que 16,5% (n = 322) de todas as hortaliças estavam contaminadas com um ou mais tipos de parasitas geo-helmínticos. O alho foi a amostra mais contaminada (35%) e a couve-flor a menos (4%), respectivamente. Ascaris lumbricoides foi o geo-helmíntico mais comum encontrado, seguido por espécies de verme-anzol, enquanto Trichuris trichura foi o menos encontrado em todas as amostras de vegetais. Os vegetais folhosos foram altamente contaminados 25,3% do que os vegetais com partes de raiz 21,2% e frutados 9,09%. Mais da metade dos vegetais contaminados estavam contaminados com uma única espécie de geo-helmintos (P 0,05), enquanto menos da metade com vários tipos de contaminação com geo-helmintos. Noventa e duas amostras de vegetais estavam contaminadas com 2 espécies de parasitas (P 0,05) e 45 com 3 (P> 0,05) espécies de parasitas geo-helmínticos. O nível de escolaridade dos vendedores e os meios de exibição não foram significativamente associados, enquanto os tipos de vegetais usados foram significativamente associados à prevalência de parasitas. Os resultados deste estudo fornecem evidências de que o consumo de vegetais crus tem um alto risco de adquirir infecções por geo-helmintos. Os autores acreditam que impedir que o ser humano entre na terra de hortaliças para defecação, evitar a irrigação de campos agrícolas via solo noturno e educar as pessoas sobre a lavagem e cozimento adequados de vegetais pode ser útil na redução de infecções parasitárias.

The study investigated meat quality of bulls fed concentrate feeds and hay. The treatments were hay ad libitum + dried cafeteria leftover 4 kg DM d-1(D1); hay ad libitum+ wheat bran 4 kg DM d-1(D2); hay ad libitum+ 4 maize grain 4 kg DM d-1(D3); hay ad libitum+ mix 4 kg DM d-1(1:1, wheat bran to maize grain, respectively (D4)); hay ad libitum+ scrambled whole groundnut 4 kg DM d-1(D5); and hay ad libitum+ mix of each ingredient 4 kg DM d-1(D6)). Samples from longissimus lumborum muscle were taken in triplicate. Beef from bulls fed D5 had highest (p < 0.05) protein and fat than those fed other treatments. However, bulls finished in D3 had similar fat to those fed with whole ground nut. Highest meat tenderness (p < 0.05) recorded at 24thfollowed by 16thd than those aged on other periods. Beef from D6 produced lean meat, which is acceptable to consumer and market demand than D3, produced carcass with highest fat coverage This study confirmed that meat from D6 had an acceptable quality attribute suggesting the breed could serve as a potential source in red meat industry.(AU)

The objective of this study was evaluate whether pretransport feed withdrawal affects welfare, carcass, and meat characteristics of European quails. A total of 120 European quails were used, with an initial age of 15 days. Bird feed was removed before transport to the slaughterhouse at the following times, which characterised the different treatments: zero hours, three hours, six hours, nine hours and twelve hours. The transport took 54 minutes to cover 27 kilometres to a commercial slaughterhouse. The birds were slaughtered at 41 days of age. During bleeding, blood samples were collected. Blood glucose, total protein, albumin, uric acid, and corticosterone concentrations were measured. The carcasses and meat characteristics were measured. Poultry body weight decreased and blood glucose concentrations increased with the increase in feed withdrawal time. The treatments did not affect carcass weights. Carcass yields after three hours fasting were similar to those in the six hours and nine hours groups, indicating that gastrointestinal tracts were empty after the third hour. Meat quality was negatively affected (pH, lightness, water holding capacity, cooking loss) by the increase in feed withdrawal time; integrated parameters that characterise dark, firm, dry meat. Pre transport feed withdrawal time should be three hours to empty the gastrointestinal tract and minimise losses in meat quality of European quails. It is necessary to adjust feed withdrawal so that it does not exceed this time, since there is no technical justification for supporting it.(AU)

This study aimed to evaluate the quality traits and fatty acid profile of beef from Nellore and Angus bulls fed whole shelled corn (WSC) and ground corn plus maize silage (GC) diets. Eighteen Nellore and 18 Angus young bulls [381 ± 12 kg initial body weight (BW) and an average age of 20 ± 1.9 months] were used in a completely randomized design using a 2 × 2 factorial arrangement and were slaughtered at a final BW of 451.5 kg and 545.5 kg, respectively. Twenty–four hours after slaughter, samples of longissimus thoracis muscle were collected for the analysis of lipid oxidation, color, fatty acid profile, shear force, and cooking loss. There was no effect of diet × breed interaction on meat color, lipid oxidation, shear force, and cooking loss. Angus beef had lower shear force (p < 0.05) than Nellore beef and had a greater concentration of linoleic acid and polyunsaturated fatty acids (PUFA) (p < 0.01). Beef of bulls fed WSC tended to have greater concentration of CLA C18:2c9t11 (p = 0.09), greater concentration of CLA C18:2t10c12 (p = 0.01), and PUFA (p = 0.05), and consequently, higher oxidation levels. Angus bulls produced beef with greater tenderness and PUFA concentration. The results of fatty acid show a possible change in biohydrogenation when animals are fed the WSC diet, reducing lipogenesis, as this diet increases the C18:2t10c12 content.
