Resumo

The present study was undertaken in order to evaluate the growth performances and meat quality of three indigenous chickens phenotypes reared under extensive conditions in the region of Chlef in Algeria. A week after hatching, 3 random groups of 35 chicks from each phenotype; normal plumage free-range chicken (NPFRC), crested free-range chicken (CFRC) and naked neck free-range chicken (NNFRC) were chosen and reared in free-range conditions for 18 weeks. The highest growth performance was shown by the crested free-range chicken (CFRC). In terms of meat quality, the analysis of variance (ANOVA) showed that crested phenotype (CFRC) showed the best nutritional qualities especially proteins and moisture. The discriminant analysis revealed that CFRC and NNFRC were better in terms of tenderness and overall acceptability. As consequence of these very interesting qualities, these local breeds should be considered for extensive production in order to provide a good quality meat, while assuring their preservation.(AU)

Resumo

This study aimed to evaluate the effects of dietary supplementation pelleted Tenebrio molitor (TM) powder with chokeberry by-product (CBP) meal on duck production and meat quality traits. A total of 180 0-day-old Pekin ducks were allocated randomly between three dietary groups viz., control, Treatment 1, and Treatment 2, with three pens per group and twenty birds per pen, characterized by increasing levels of pelleted TM powder with CBP meal in concentration of 0%, 1.5%, and 3%, respectively, and reared until 42 days of age in a completely randomized design. On day 42, the ducks were sacrificed, and breast and thigh muscles were used for meat quality evaluations. Feeding pelleted TM powder with CBP meal resulted in a significant difference in final body weight, weight gain and feed conversion ratio (p<0.05). Additionally, a significant difference was observed in the pH of the breast meat samples (p<0.05). As the only significant difference between the breast and thigh meat, 1,1-diphenyl-2-picryhydrazyl radical scavenging was influenced significantly by the dietary inclusion of pelleted TM powder with CBP meal (p<0.05). However, the values of thiobarbituric acid reactive substances and meat color in both breast and thigh meat were insignificant (p>0.05) different among all groups. To conclude, the inclusion of up to 3 % of pelleted TM powder with CBP meal in the diets of ducks did improve the growth production and antioxidant characteristics effects, which could decrease TBARS and reflected by changes in 1,1-diphenyl-2- picrylhydrazyl free DPPH radical scavenging values.(AU)

ABSTRACT: Romania has good agricultural resources and declining meat consumption, yet the country's meat imports are on the rise. This study uses Balassa's idea to link national trade patterns to worldwide ones and extends it, for the period between 2004 and 2019, to the ratio between prices and to the ratio between variables describing intra-industry trade. For price ratios, this study showed that Romania imported primarily inferior qualities of meat, particularly at the beginning of the study period. Regarding intra-industry trade, the Romanian trend moves in the opposite direction to the worldwide trend. Although, the trade of meat parts compared with whole/ half carcasses is on the rise internationally, it is declining in Romania, probably due to increasing competitiveness of the industry.


RESUMO: A Romênia tem bons recursos agrícolas e declínio no consumo de carne, mas as importações de carne do país estão aumentando. Este estudo usa a ideia de Balassa para vincular os padrões de comércio nacional aos mundiais e estende-a, para o período entre 2004 e 2019, à razão entre os preços e à razão entre as variáveis que descrevem o comércio intra-indústria. Para as relações de preços, este estudo mostra que a Romênia importou principalmente qualidades inferiores de carne, especialmente no início do período de estudo. No que diz respeito ao comércio intra-indústria, a tendência romena move-se na direção oposta à tendência mundial. Embora o comércio de partes de carne em comparação com carcaças inteiras / meias carcaças esteja crescendo internacionalmente, apresenta uma diminunuição na Romênia, provavelmente devido ao aumento da competitividade da indústria.

Resumo

The objective was to evaluate whether space allowance during pre-slaughter transport of European breeding quail affects welfare, carcass traits and meat quality. A total of 248 quails (body weight = 344.90 ± 2.09 g) were used. During pre-transport, the quails were fasted for 5 hours and 30 minutes. The poultry were caught and placed in plastic transport crates with an area of 0.40 m2. The treatments consisted of a different space allowance in each crate: 22, 28, 34 or 40 quails per crate. Immediately upon arrival at the slaughterhouse, the quails were stunned. During bleeding, blood samples were collected. The carcasses were individually weighed. The meat quality was measured. Data were analysed using the effects of space allowance during transport of quails and pickup truck as dependent variables. Death on arrival increased as the space allowance in transport crates decreased (p=0.08). Glucose and uric acid levels were not significantly different between groups (p≥0.14). The cold carcass weight presented the maximum value when the crates contained 31 quails (p=0.03). The meat pH, intensity of red, intensity of yellow and cooking losses were not different between groups (p≥0.12). The meat lightness value presented the maximum value when the crates contained 31 quails (p=0.04). In view of the above, the number of European breeding quails transported in crates must not exceed 30 animals.(AU)

In the last decade, other quality attributes have emerged as the main aspects that impact pork consumers acceptance, such as environmentally friendly production, nutritional value, and animal welfare. This study applies a Check-All-That-Apply (CATA) questionnaire for sensory characterization of loins from genetically lean immunocastrated male pigs fed diets containing either a standard commercial diet with 1.5 % soybean oil (control) or 3 % oil from either soybean oil (SO), canola oil (CO), or fish oil (FO) during the growing-finishing phases. Twenty CATA attributes for loin samples were generated. We interviewed 101 consumers to select all the CATA terms that they considered suitable to characterize sensory attributes of longissimus lumborum muscle samples of pigs from each dietary treatment. The CATA results indicated differences among pork loin samples depending on the source and inclusion level of dietary oil. Loins from pigs fed 3 % SO were characterized by a higher frequency of the "juicy texture" attribute (p < 0.05) and a lower frequency of the "dry texture" attribute (p < 0.05) compared to loins from 3 % FO-fed pigs. Moreover, loins from pigs fed 3 % SO had a lower citation frequency of the "tasteless" attribute (p < 0.05) compared to loins from 3 % FO-fed pigs. The attributes "cooked pork meat-like taste", "juicy texture", "tender texture", and "brightness" were placed close to the overall liking. "Tender texture", "juicy texture", "pork meat-like" (odor and taste), and "cooked pork meat-like taste" attributes were considered drivers of liking. Feeding genetically lean immunocastrated male pigs with diets containing 3 % SO may be advisable from a pork sensory quality perspective.

There is a worldwide demand for new protein sources through environmentally responsible production, and rabbit farming is a sustainable activity. Therefore, this study aimed to characterize meat from different cuts of rabbit carcasses and evaluate their use in the processing of restructured cured cooked ready-to-eat (RTE) products. Rabbit raw meats from different cuts were technologically characterized, and the RTE products were processed from the meats of the entire carcass (RABB), hind legs (RHIND), loin (RLOIN), and foreleg, thoracic cage, and flank (RBACK). Restructured pork cooked ham (PHAM) was used as the reference. Rabbit raw meat from different anatomical parts differed in proximate composition, total collagen and heme-pigment content, water-holding capacity, and CIE color, affecting the characteristics of processed products. RBACK products had higher fat content (5.46%), cooking and reheating losses (7.50% and 5.61%), and poor hardness and chewiness (11.1 N and 17.37 N×mm). Higher values of lightness (L* ~70.27), hue (h ~68.61°), and a slight cured color were observed in RLOIN, with a pale yellowish color described by sensory evaluation. RABB and RHIND were correlated with the sensory attributes of traditional PHAM, being preferred more often and with greater purchase intent than RLOIN and RBACK. It is concluded that cooked ham development from whole carcass meat (RABB) is a potential opportunity for the rabbit industry to offer value-added technological products of high quality to consumers.


Há uma demanda mundial por novas fontes proteicas de produções ambientalmente responsáveis, e a cunicultura se enquadra perfeitamente como uma atividade sustentável. Neste contexto, este estudo teve como objetivo caracterizar a carne de diferentes cortes da carcaça de coelho e avaliar sua utilização no processamento de produtos curados cozidos prontos para o consumo (RTE). As carnes cruas de coelho de diferentes cortes foram caracterizadas tecnologicamente, e os produtos RTE foram processados a partir das carnes de carcaça inteira (FC-INT), patas traseiras (FC-PERNIL), lombo (FCLOMBO), patas dianteiras, caixa torácica e flanco (FC-APARAS). Um produto RTE com carne de pernil suíno (APRESUNTADO) também foi elaborado como referência. A carne de coelho de diferentes partes anatômicas diferiu na composição centesimal, conteúdo total de colágeno e pigmento heme, capacidade de retenção de água e cor (CIE), afetando as características dos produtos elaborados. Os produtos FC-APARAS apresentaram maior teor de gordura (5.46%), perdas por cozimento e reaquecimento (7,50% e 5,61%), baixa dureza e mastigabilidade (11.1 N e 17.37 N×mm). Maiores valores de luminosidade (L* ~70.27), matiz (h ~68.61°) de cor e uma fraca cor curada foram observados no FC-LOMBO, com uma coloração amarelada pálida descrita pela avaliação sensorial. FC-INT e FC-PERNIL foram correlacionados com os atributos sensoriais do tradicional APRESUNTADO, sendo mais preferidos e com maior intenção de compra do que FCLOMBO e FC-APARAS. Concluiu-se que o desenvolvimento de produtos curados cozidos a partir de carcaças inteiras (FC-INT) é uma oportunidade potencial para a indústria de cunicultura oferecer produtos tecnológicos de valor agregado e de alta qualidade aos consumidores.

The study predicted chicken meat production in 2019-2025 period for the leading chicken-producing countries with the help of the 1961-2018 Food and Agriculture Organization (FAO) data since chicken meat consumption is so high worldwide. The USA ranks the first place while Brazil and China take second and third places, respectively. The analysis of the pioneer chicken meat-producing countries indicates that while the portion of the USA in world production decreases, the share, particularly Brazil and China, will approach that of the USA. World chicken meat production, which was 7.56 million tons in 1961, will increase to 139.19 million tons in 2025, and this production per capita is predicted to increase to 17.0 kg in 2025 from 2.4, 5.35, 9.80, and 15.0 kg in 1961, 1981, 2001, and 2018, respectively. Indonesia, Russia, Brazil, Japan, and India will run the highest increases in production. However, the share of countries in chicken meat production will decrease from 61% to 60% in 2019-2025 compared to the 2012-2018 periods. This condition showed that apart from some leading countries, the production will keep a rapid increase in production. The increase in chicken meat production and chicken meat import worldwide will improve human nutrition, especially in developing and underdeveloped countries. Countries that run cost advantages and high-quality life standards in line with technological innovations produce processed chicken products, strengthen animal health, hygiene, and transportation standards, and attach importance to advertising activities that increase consumer demand will be more advantageous in this market.


O estudo visa prever a produção de carne de frango no período de 2019-2025 para os principais países produtores de frango com a ajuda dos dados da Organização para Agricultura e Alimentação (FAO) de 1961-2018, uma vez que o consumo de carne de frango é tão alto emtodo o mundo. Os EUA ocupam o primeiro lugar, enquanto o Brasil e a China ficam com o segundo e o terceiro lugares, respectivamente. A análise dos países pioneiros na produção de carne de frango indica que enquanto a participação dos EUA na produção mundial diminui a participação, principalmente do Brasil e da China, se aproximará da dos EUA. A produção mundial de carne de frango, que era de 7,56 milhões de tonelada sem 1961, aumentará para 139,19 milhões de tonelada sem 2025, e esta produção per capita deve aumentar para 17,0 kg em 2025 de 2,4, 5,35, 9,80 e 15,0 kg em 1961, 1981, 2001 e 2018, respectivamente. Indonésia, Rússia, Brasil, Japão e Índia terão os maiores aumentos de produção. No entanto, a participação dos países na produção de carne de frango cairá de 61% para 60% em 2019-2025 em relação ao período de 2012-2018. Essa condição mostra que, além de alguns países líderes, a produção manterá um rápido aumento da produção. O aumento na produção e importação de carne de frango em todo o mundo melhorará a nutrição humana, especialmente nos países em desenvolvimento e subdesenvolvidos. Os países que possuem vantagens de custo e padrões de vida de alta qualidade alinhados às inovações tecnológicas produzem produtos processados de frango, fortalecemos padrões de saúde, higiene e transporte animal e atribuem importância a atividades de publicidade que aumentem a demanda do consumidor serão mais vantajosas neste mercado.

There have been determined the features of m. longissimus lumborum steaks from young cattle-for-fattening of Holstein-Friesian breed, Polish black-and-white variety. There were measured pH values, basic chemical composition and colour parameters. The meat was subjected to moist-ageing for 12 days and, next, stored in modified atmosphere for the following 10 days. The amount of heat loss in relation to the temperature of thermal processing was determined. Texture parameters were studied instrumentally and organoleptically. The studied muscles from young cattle-for-fattening characterised with proper and similar pH values. The average fat content was 4.37%. The surface colour of the studied dorsal muscle was relatively bright, the average value L*=37.97, and on the cross-section L*=32.97. The average value of the muscle surface's 'redness' was a*=18.98, whereas cross-section's a*=20.27. The amounts of heat leakages were rising along with the increase of temperature from 11.24 to 37.14%. Ageing and storing in MAP led to a significant decrease in the amounts of heat leakages. Ageing and storing in MAP had a significant influence on decreasing shear force and on increasing the organoleptic evaluation marks of the m. longissimus lumborum after thermal processing, which shows that the muscle may become culinary meat with features accepted by consumers.(AU)

This study determined the metabolizable energy of DDGS for broiler quails (Experiment I) and evaluated the effect of different dietary levels of DDGS on performance, carcass, organ weight, meat quality, and economic viability (Experiment II). In Experiment I, 72 broiler quails were randomly distributed into two treatments (reference or test diets). The experimental period consisted of 5 days of adaptation, followed by 5 days of total excreta collection. Experimental diets consisted of a reference or a test diet containing 800 g/kg reference diet and 200 g/kg DDGS. In experiment II, 432 unsexed broiler quails were randomly distributed into groups fed six levels of DDGS (0, 50, 100, 150, 200, or 250 g/kg). At 43 days of age, birds were slaughtered and evaluated for carcass yield, organ weight, and meat quality. Apparent metabolizable energy values corrected for nitrogen retention of DDGS were 2,488 and 2,466 kcal/kg for males and females, respectively. In the growth phase and the overall period, feed intake increased linearly (p=0.015 and 0.040) and feed conversion ratio worsened (p=0.038 and 0.001) with the inclusion of DDGS in the diet, respectively. A linear increasing (p=0.001) of gizzard weight was observed with increasing dietary DDGS levels, while the economic variables were affect depending on seasonal feedstocks prices. It is concluded that dietary levels up to 250 g/kg DDGS do not affect growth, carcass characteristics, and meat quality of broiler quails. However, the prices of ingredients in the harvest and off-season period should be considered to determine the level of inclusion of DDGS.(AU)

The present study was executed to evaluate the effect of lighting programs for meat quails on their bone growth and development. A total of 1500 sexed European quails (Coturnix coturnix coturnix) were distributed using a completely randomized design in a 2 × 3 factorial arrangement, with two sexes and three lighting programs (natural, intermittent, and continuous) with five replicates of 50 quails. The lighting programs were applied in the period from 7 to 49 d of age. Weekly slaughterings were performed to remove the tibiotarsus and femur and subsequently determine weight, length, dry and mineral matter content. The growth and deposition curves of dry and mineral matter in the bones were obtained using the Gompertz model. There was no significant interaction between lighting programs and sex for the estimates of the Gompertz curve parameters of all variables studied. There was an effect of the lighting programs only on the time needed to reach the maximum deposition rate of the growth curve and dry and mineral matter deposition. Females showed higher weight and deposition of mineral matter at maturity, and took longer to reach the maximum deposition rate value for these variables. There was influence of the lighting programs on resistance and bone deformity of the tibiotarsus. For quails raised in the tropical region, a natural or intermittent lighting program must be used, as it does not compromise the development of bones and assures bone quality.(AU)

The present work carried out full-genome SNP genotyping of 16-month-old Kalmyk steers to study their productive characteristics and beef quality indicators in the leading farms of the Republic of Kalmykia (Group I was located at the Agrofirma Aduchi farm; Group II at the Kirovsky breeding plant, and Group III at the Plodovitoye agricultural cooperative). As a result of investigating the frequencies of some homozygous alleles, the study established that the heterozygous allele A/A varied considerably along the lines from 0.2785 to 0.3146, while B/B varied from 0.3697 to 0.4125. Meanwhile, the heterozygous allele A/B varied from 0.2986 to 0.3197. Estimated inbreeding coefficients were 1.35, 1.28 and 1.27%. The conducted studies established a higher natural resistance determined by lysozyme, bactericidal and phagocytic activities of steers raised at the Agrofirma Aduchi as farm than their counterparts at the other agricultural enterprises. Over the entire period of the experiment, the steers from 8 to 16 months of age in Group I exceeded the indices of their counterparts in Groups II and III by 30.46g, or 3.31% and 38.04g, or 4.16%, respectively. It is concluded that an increase in the heterozygosity of the studied Kalmyk steers not only results in higher meat productivity, but also improves the quality of carcass and beef quality, increases the yield of more valuable meat grades, and optimizes the fractional composition of proteins.


O presente trabalho realizou a genotipagem de bois Kalmyk de 16 meses de idade para estudar suas características produtivas e indicadores de qualidade da carne bovina nas principais fazendas da República de Kalmykia (o Grupo I estava localizado na fazenda Agrofirma Aduchi; Grupo II - na planta de criação Kirovsky; Grupo III - na cooperativa agrícola Plodovitoye). Como resultado da investigação das freqüências de alguns alelos homozigotos, o estudo estabeleceu que o alelo heterozigotos A/A variou consideravelmente de 0,2785 a 0,3146, enquanto o B/B variou de 0,3697 a 0,4125. Enquanto isso, o alelo heterozigoto A/B variou de 0,2986 a 0,3197. Os coeficientes estimados de consanguinidade foram de 1,35, 1,28 e 1,27%. Os estudos realizados estabeleceram uma maior resistência natural determinada pelas atividades lisozóides, bactericidas e fagocitárias dos bois criados na Agrofirma Aduchi como fazenda do que suas contrapartes nas outras empresas agrícolas. Durante todo o período do experimento, os bois de 8 a 16 meses de idade no Grupo I excederam os índices de suas contrapartes nos Grupos II e III em 30,46g, ou 3,31% e 38,04g, ou 4,16%, respectivamente. Conclui-se que um aumento na heterozigosidade dos bois Kalmyk estudados não só resulta em maior produtividade da carne, mas também melhora a qualidade da carcaça e da carne bovina, aumenta o rendimento das carnes de maior valor e otimiza a composição fracionária das proteínas.

O hambúrguer é um produto cárneo moldado, com maior risco de contaminação microbiana pelo fato de ser preparado com carne moída que apresenta maior superfície de exposição, além de ser muito manipulado e consumido, muitas vezes, mal-passado. O objetivo do presente estudo foi avaliar a qualidade microbiológica de hambúrgueres industriais comercializados no município do Rio de Janeiro/RJ, bem como, verificar as condições higiênicosanitárias dos locais de comercialização. Foram coletadas 12 amostras de hambúrguer, de oito marcas comerciais, comercializados em três diferentes supermercados. Durante a coleta das amostras foi realizada uma avaliação visual das condições higiênicas da comercialização. Após obtenção, as amostras foram encaminhadas para o Laboratório de Controle Microbiológico de Alimentos da Universidade Castelo Branco (UCB), para realização das análises microbiológicas. De acordo com os resultados das avaliações higiênicosanitárias dos locais onde as amostras de hambúrguer foram obtidas, observou-se 20%, 60% e 20% de não conformidades nos supermercados I, II e III, respectivamente, devido falhas na organização da gôndola, no acondicionamento do produto e/ou no controle da temperatura de comercialização. Resultados em não conformidade com o padrão microbiológico vigente foram observados em 16,67%, 66,67% e 8,33% das amostras para a contagem de Bactérias Heterotróficas Aeróbias Mesófilas, Estafilococos coagulase positiva e E. coli, respectivamente. A presença de Unidades Formadoras de Colônias típicas de Salmonella spp foi verificada em 41,67% das amostras. Os resultados demonstraram que os hambúrgueres comercializados em três supermercados do município do Rio de Janeiro/RJ estavam impróprios para o consumo podendo representar risco à saúde dos consumidores.(AU)


The hamburger is a molded meat product with a greater risk of microbial contamination because it is prepared with ground meat, which has a greater contact surface. In addition, it is very manipulated and often consumed medium rare. The objective of the present study was to evaluate the microbiological quality of industrial hamburgers sold in Rio de Janeiro/RJ and verify the hygienic-sanitary conditions of the commercialization places. Twelve hamburger samples were collected, from eight commercial brands, and sold in three different supermarkets. During the collection of the samples, a visual evaluation of the hygienic conditions of the commercialization was carried out. After obtaining, the samples were sent to the Laboratory of Microbiological Control of Food at Universidade Castelo Branco (UCB), for microbiological analysis. According to the results of the hygienicsanitary evaluations of the places where the hamburger samples were obtained, 20%, 60%, and 20% of non-conformities were observed in supermarkets I, II, and III, respectively. The non-conformities were due to failures in the organization of the shelf, in the packaging of the product, and/or in the control of the commercialization temperature. Results that did not comply with the current microbiological standard were observed in 16.67%, 66.67%, and 8.33% of the samples for the counting of Mesophilic Aerobic Heterotrophic Bacteria, Coagulase Positive Staphylococci, and E. coli, respectively. The presence of typical Colony Forming Units of Salmonella spp was verified in 41.67% of the samples. The results showed that the hamburgers sold in three supermarkets in Rio de Janeiro/RJ were unfit for consumption and could pose a risk to consumers' health.(AU)

This study evaluated the performance parameters, carcass characteristics, and meat quality of Label Rouge chickens raised under an alternative system as a function of age at slaughter. The design was completely randomized with a 5×2 factorial arrangement, with slaughtering at five ages (70, 90, 120, 150, and 180 days) and two sexes. A total of 240 birds (Pescoço Pelado strain) were used, including 120 females and 120 males. Performance, carcass, physicochemical, proximate composition, and muscle fiber traits were evaluated. Rearing time and sex had significant effects on performance-related traits, with better results for males. The interaction between slaughter age and sex had a significant effect on the carcass and physicochemical parameters, which cause different responses in males and females with increasing slaughter age. For the proximate composition and muscle fiber analysis, the interaction between the parameters studied only had a significant effect on ether extract in the breast. The increase in age resulted in chickens with higher live and carcass weight at slaughter but lower performance indices. Females had lower carcass yield and greater deposition of abdominal fat. Females had lower tenderness in the drumstick and males in the breast with increasing slaughter age, and both cuts had more intense color and redness and reduced lightness starting at the slaughter age of 90 days.


O objetivo deste estudo foi avaliar os parâmetros de desempenho e as características de carcaça e qualidade da carne de frangos Label Rouge criados em sistema alternativo em função do aumento da idade de abate. O delineamento foi inteiramente casualizado (DIC) disposto em esquema fatorial (2x5), sendo dois sexos (macho e fêmea) e cinco idades de abate (70, 90, 120, 150 e 180 dias). Foram utilizadas 240 aves (Pescoço Pelado), sendo 120 fêmeas e 120 machos, sendo avaliados os parâmetros de desempenho, carcaça, físico-químicos, composição centesimal e fibra muscular. Com o aumento no tempo de produção houve efeitos dos períodos de produção e sexo em relação a variáveis de desempenho, com melhores resultados para os machos. Para os parâmetros de carcaça e físico-químicos, houve interação entre sexo e idade de abate, revelando comportamento diferenciado para machos e fêmeas com aumento da idade de abate. Para a composição centesimal e análise das fibras musculares, somente para extrato etéreo no peito foi verificado interação entre os fatores estudados. O aumento da idade proporcionou a obtenção de frangos com maiores pesos vivos e de carcaça ao abate com consequente redução dos índices de desempenho, além de menor rendimento de carcaça e maior deposição de gordura abdominal nas fêmeas. As fêmeas apresentam menor maciez na coxa e os machos no peito com aumento da idade de abate e, em ambos os cortes, ocorreu maior intensificação da cor, índice de vermelho e redução do brilho a partir de 90 dias ou em maiores idades de abate.

The objective of this study was to evaluate the effects of lambs fed two roughage: concentrate (R:C) ratios, with or without the liquid residue of cassava (LRC) on carcass traits and meat quantity. Forty lambs (19.5 ± 1.45 kg body weight), non-castrated, crossbred Santa Inês were distributed in a completely randomized 2 × 2 factorial design. There was no effect (p > 0.05) of the inclusion of LRC on the variables. The roughage:concentrate ratio of 40:60 promoted higher values for empty body weight, hot carcass weight, cold carcass weight, subcutaneous thickness fat, cooling loss, Longissimus muscle area, carcass morphometric measurements, and commercial cuts. Higher weight of leg, muscles, fat, bone and other tissues, as well as for the ratio muscle:fat, and muscle:bone was observed in lambs fed 40R:60C. For the meat chemical composition, there was the effect (p < 0.05) only for ether extract (EE) for lambs fed 40R:60C ratio. The redness (a*) of meat was greater (p < 0.05) for lambs fed 80R:20C. The other physicochemical characteristics were not influenced. The roughage:concentrate ratio of 40:60 improves the carcass traits and commercial cuts, but does not promote changes in meat quality, independent of supplementation with liquid residue of cassava.(AU)

Two experiments were carried out to evaluate the effectsof protease addition to the diet of broilers at a higher level (1× or 2×) thanthe nutritional value proposed for the enzyme. The first experiment, 1280 day-old chicks (Cobb500®) were randomly allocated (randomized block design, 2×2+1 factorial arrangement),five treatments, eight replicates containing32 birds/replicate. Treatmentsconsisted: control diet without protease (CD); CD + 1× nutritional value of the enzyme (CDM1); CD + 2× nutritional value of the enzyme (CDM2); CDM1 + protease; and CDM2 + protease. The experimental period was 42 days. The mean weight (AFW), feed intake (FI), weight gain (WG), feed conversion, and carcass yield were evaluated. Significant differences were observed for AFW, WG, FI, abdominal fat yield, and feet percentage in the carcass. In the second experiment, 120 Cobb500®chicks at 14 days of age were allotted in a completely randomized design, 2×2+1 factorial arrangement, five treatments, six replicates withfour birds/replicate. The treatments were consistent with the first experiment. Significant improvements in the nitrogen balance wereobserved for the broilersthat received protease.The use of the enzyme tested is recommended with the recommended nutritional matrix, improving the zootechnical indices of broilers.(AU)

Catfish (Clarias gariepinus) meat isn't preferred by consumers in compared to other fish species meat, thus to enhance the use of catfish meat, ready to eat catfish fingers were prepared with some plants additives (amla and ginger powder). The mean objective of this study was to assess the impact of amla and ginger powder on catfish finger qualities in terms of physical, chemical, microbiological, and sensorial parameters under stored at a low temperature (5 ± 1 °C). The obtained results were compared with those of a control sample (basic formula) and a sample containing the synthetic antioxidant. During the storage period, the levels of pH, thiobarbituric acid, total volatile basic nitrogen, trimethylamine, total bacteria count, psychrophilic bacteria, molds and yeasts counts increased dramatically, although the values remained within acceptable ranges. The findings also revealed, that amla and ginger powder considerably (p < 0.05) reduced the changes in quality parameters, as well as there was a considerable increase in the quality parameter in all treated samples than in the control. Finally, amla and ginger powder can be a substitute for synthetic antioxidants and antimicrobials. These findings suggest that the powder of amla and ginger are suitable for use as a natural antioxidants and antimicrobials to extend the shelf-life of animal products.

The goal of this study was to determine the essential fatty acids of the total lipids of the fillet, head and orbital cavity tissue from farmed tambaqui (Colossoma macropomum) fish from a Brazilian Amazon area. The tambaqui were acquired from different fish farms in the Roraima state, located at Western Brazilian Amazon. The meat, the head and the fatty tissue from orbital cavity were dissected for lipid extraction and analysis of fatty acids by gas chromatography. The fatty acids were quantified in mg g-1of total lipids using C23:0 as an internal standard. The nutritional quality of the lipids was determined by using the atherogenicity and thrombogenicity indices, and also by the ratio between hypocholesterolemic / hypercholesterolemic fatty acids. The orbital cavity tissue had the higher concentration amount of linoleic and α-linolenic acid, whereas the fillet had higher docosahexaenoic acid (DHA). The eicosapentaenoic acid (EPA) concentration was: 1.28, 0.97, 1.71 mg g-1of total lipids, in the filet, in head, and in orbital cavity tissue,respectively. All essential fatty acids were detected in the three parts analyzed. The nutritional quality of the total lipids from the head and from the orbital cavity tissue was similar to the fillet.(AU)
