Abstract The medicinal attributes of honey appears to overshadow its importance as a functional food. Consequently, several literatures are rife with ancient uses of honey as complementary and alternative medicine, with relevance to modern day health care, supported by evidence-based clinical data, with little attention given to honeys nutritional functions. The moisture contents of honey extracted from University of Veterinary and Animal Sciences, Lahore honey bee farm was 12.19% while that of natural source was 9.03 ± 1.63%. Similarly, ash and protein contents of farmed honey recorded were 0.37% and 5.22%, respectively. Whereas ash and protein contents of natural honey were 1.70 ± 1.98% and 6.10 ± 0.79%. Likewise fat, dietary fiber and carbohydrates contents of farmed source documented were 0.14%, 1.99% and 62.26% respectively. Although fat, dietary fiber and carbohydrates contents of honey taken from natural resource were 0.54 ± 0.28%, 2.76 ± 1.07% and 55.32 ± 2.91% respectively. Glucose and fructose contents of honey taken out from honeybee farm were 27% and 34% but natural source were 22.50 ± 2.12% and 28.50 ± 3.54%. Glucose and fructose contents of honey taken out from honeybee farm were 27% and 34% but natural source were 22.50 ± 2.12% and 28.50 ± 3.54%. Microbial contamination of the wort during the fermentation process causes significant losses in ethanol production worldwide and creates a dependence of the industry on chemicals and antibiotics to control contamination. Therefore, this study used electron beam (e-beam) to disinfect wort from sugarcane (Saccharum officinarum L.) molasses and investigate the bioethanol fermentation. Four treatments (T0 - T3) were carried out using ionizing doses of radiation through the electron accelerator: 0 (control), 10, 20, and 40 kGy. Total mesophiles, total bacteria, sucrose, glucose, fructose, phenolics, flavonoids, hydroxymethylfurfural (5-HMF), and Furfural were measured. An alcoholic fermentation assay was performed after the irradiation process. The irradiated treatments showed no inversion of sugars and formation of the inhibitory by-products flavonoids, furfural and 5-HMF, except for the phenolic compounds. The lower dose tested (10 kGy) reduced more than 99.9 % of the total mesophiles and more than 99.99 % of the total bacteria in the substrate. In the fermentation, the irradiated worts presented similar (p > 0.05) yields (92, 93, and 94 %) and ethanol productivity levels (0.89, 0.88, and 0.87 g L-1 h-1, for T1, T2, and T3 respectively). However, all treatments presented higher yields and productivity (p < 0.05) when compared to the control (88 % and 0.85 g L-1 h-1), highlighting the possible use of e-beam in wort fermentation at a lower dose (10 kGy). This allows reduction in losses caused by microbial contamination, besides increasing fermentation yield and productivity with lower energy consumption.(AU)

This study was aimed to assess the efficiency of coconut water extender with addition of soy lecithin and sucrose as nonpermeable cryoprotectants for canine semen vitrification, using a simple method that yields a high survival rate of spermatozoa for clinical use. Twelve ejaculates from 12 adult normozoospermic dogs were collected separately by digital manipulation and only the second semen fraction was used in this study. After evaluation of volume, concentration, viability, total and progressive motility, velocity parameters and morphology, semen was diluted with a coconut water extender (50% (v/v(volume per volume)) coconut water, 25% (v/v) distilled water and 25% (v/v) 5% anhydrous monosodium citrate solution) with addition of soy lecithin and fructose at 1% and 0.25M sucrose until final concentration of 100x106 spermatozoa/ml. After equilibration at 5ºC for 60 minutes, semen was vitrified by "direct dropping method" into liquid nitrogen in spheres with a volume of 30 µl. After a week of storage the spheres were devitrified as three of them were dropped into 0.5 mL of CaniPlus AI medium (Minitüb, Germany), which was previously warmed in a water bath at 42ºC for 2 minutes and evaluated about the above mentioned parameters. It was found that vitrification resulted in a lower percentage of viable sperms, normal morphology, total and progressive motilities (p0.05) compared to fresh semen samples. In conclusion, our results demonstrate that vitrification with coconut water extender with addition of 1% soy lecithin and 0.25M sucrose as cryoprotectants, has an excellent potential for routine canine sperm cryopreservation.(AU)

Brazil is a large country with high biodiversity in its different regions. However, species of native fruits widely reported in the southern Brazil have not been properly explored so far, remaining underutilized by the food industry. This study evaluated the polyphenolic profile, as well as the composition of organic acids and sugars of the pulps of the feijoa, and the uvaia from southern brazilian highlands. The uvaia pulp showed the highest total polyphenol content and the highest antioxidant capacity by the methods used. The polyphenol (+)-catechin (6.54 mg 100g-1) was the major phenolic compound in uvaia pulp, which has not yet been reported in the literature for fruits of other regions. In addition, the feijoa pulp stood out for the presence of (-)-epicatechin (18.29 mg 100g-1). The pulps of native fruits in this study only quantified values for citric and malic acids. Malic acid (553.00 mg 100g-1) was the main acid in the uvaia pulp, and citric acid (455.60 mg 100g-1) was the main acid in the feijoa pulp. It is possible to note that the feijoa pulp showed the highest total sugar content (11.14 g 100g-1) and was the only pulp that contained sucrose. The uvaia pulp, conversely, showed fructose (3.10 g 100g-1) as the main sugar. The results obtained in this study contributed to the valuation and conservation of the species investigated, representing a promising alternative for the use of these native fruits in the development of new products.
O Brasil é um grande país e com elevada biodiversidade em suas diferentes regiões. Entretanto, espécies de frutas nativas amplamente encontradas no sul do Brasil ainda não foram devidamente exploradas, permanecendo desconhecidas e subutilizadas pela indústria de alimentos. Nesse sentido, o objetivo deste estudo foi avaliar o perfil fenólico, bem como a composição de ácidos orgânicos e de açúcares de polpas de feijoa (Acca sellowiana) e de uvaia (Eugenia pyriformis) provenientes do planalto sul brasileiro. A polpa de uvaia apresentou o maior teor de polifenóis totais e a maior capacidade antioxidante pelos métodos utilizados. A (+)-catequina (6.54 mg 100g-1) foi o principal composto fenólico da polpa da uvaia, o que ainda não foi relatado na literatura para frutas de outras regiões. Além disso, a polpa da feijoa se destacou pela presença de (-)-epicatequina (18.29 mg 100g-1). Dentre os ácidos orgânicos avaliados, as polpas de frutas nativas apresentaram valores para os ácidos cítrico e málico, sendo o ácido málico (553.00 mg 100g-1) o principal na polpa de uvaia, e o cítrico (455.60 mg 100g-1) na polpa de feijoa. Em relação aos açúcares, a polpa da feijoa apresentou o maior teor de açúcar total (11.14 g 100g-1) e foi a única polpa que continha sacarose. Já a polpa da uvaia apresentou a frutose (3.10 g 100g-1) como principal açúcar. Os resultados obtidos neste estudo contribuem para a valorização e conservação das espécies investigadas, representando uma alternativa promissora para a utilização dessas frutas nativas no desenvolvimento de novos produtos.

The aim of the study was to evaluate whether supplementation with different levels of selenium (Se) can change the biochemical and electrolytic components of semen, causing an improvement in seminal quality in rams. Thirty animals were kept in an intensive pen system, fed with hay and commercial ration, allocated into five groups (six animals/pen) and supplemented with a mineral mixture containing Omg (G1), 5mg (G2), 10mg (G3), 15mg (G4) and 20mg (G5) of Se/kg. Each group received a different treatment every 56 days and treatments were rotated between groups following a dynamic sequence. Semen samples were collected by electroejaculation after the end of each treatment to evaluate the levels of fructose, citric acid, potassium (K), sodium (Na), calcium (Ca), Se, zinc (Zn), manganese (Mn), sulfur (S) and lead (Pb). The statistical design was a 5x5 Latin square. The different levels of Se supplementation evaluated maintained the concentrations of electrolytes and minerals in the semen at the required levels and did not change the sperm quality, concluding that higher intakes of Se do not cause antagonistic effects on the absorption and subsequent action of other essential minerals supplied to the animals and still maintains electrolyte balance.
O objetivo do estudo foi avaliar se a suplementação com diferentes níveis de selênio (Se) pode alterar os componentes bioquímicos e eletrolíticos do sêmen, ocasionando, por conseguinte, uma melhoria na qualidade seminal em carneiros. Foram utilizados 30 animais, mantidos em sistema intensivo de baias, alimentados com feno e ração comercial, sendo alocados em cinco grupos (seis animais/baia) e suplementados com uma mistura mineral contendo 0mg (G1), 5mg (G2), 10mg (G3), 15mg (G4) e 20mg (G5) de Se/kg. Cada grupo recebeu um tratamento diferente a cada 56 dias, e foi realizado um rodízio de tratamentos entre os grupos seguindo uma sequência dinâmica. Amostras de sêmen foram colhidas por eletroejaculação após o fim de cada tratamento, a fim de se avaliarem os níveis de frutose, ácido cítrico, potássio (K), sódio (Na), cálcio (Ca), Se, zinco (Zn), manganês (Mn), enxofre (S) e chumbo (Pb). O desenho estatístico foi um quadrado latino 5x5. Os diferentes níveis de suplementação de Se avaliados mantiveram as concentrações de eletrólitos e de minerais do sêmen nos níveis exigidos e não modificaram a qualidade espermática, concluindo-se que maiores ingestões de Se não causam efeitos antagônicos na absorção e subsequente ação de outros minerais essenciais fornecidos aos animais e ainda mantêm o equilíbrio eletrolítico.

Hylocereus costaricensis, H. undatus, and H. megalanthus are pitaya species produced and marketed in Brazil. The cultivation of this fruit has increased in recent years owing to its attractive appearance and sweet taste, and it may be either consumed fresh or processed for beverages and desserts. Studies on the biochemical traits and antioxidant capacity of these species can contribute to the development of new pitaya cultivars for fresh consumption and/or industrial processing. Sugars and organic acids were extracted from fruit, separated, and quantified using a chromatographic system. Total phenolic content and antioxidant capacity were quantified by spectrophotometric analysis using the Folin-Ciocalteu assay and 2,2-diphenyl-1-picrylhydrazyl radical scavenging, respectively. The data were subjected to analysis of variance and the Tukeys test. H. undatus presented 9.83% of the total sugars, distributed as 4.75% glucose and 5.08% fructose. Total sugar concentration for H. megalanthus was 5.93%, with 0.99%, 3.25%, and 1.69% of glucose, fructose, and sucrose, respectively, and was the only species containing sucrose. The concentrations of organic acids for H. costaricensis, H. undatus, and H. megalanthus were 0.83%, 0.71%, and 0.62% for malic acid and 0.37%, 0.36%, and 0.40% for citric acid, respectively. Ascorbic acid (vitamin C) was not detected in the pulp samples. H. costaricensis had the highest content of total phenolic content and antioxidant capacity, 33.75 mg gallic acid equivalents 100 g-1 and 175.51 μmol Trolox equivalent antioxidant activity 100 g-¹, respectively. Thus, the consumption of H. megalanthus fruits is recommended for people who require carbohydrate-restricted diets, although sensorially it seems to have the sweetest pulp, probably owing to the presence of sucrose. O cultivo dessa fruta tem aumentado nos últimos anos devido à sua aparência atraente e sabor adocicado, podendo ser consumida in natura ou processada para bebidas e sobremesas. Estudos sobre as características bioquímicas e capacidade antioxidante da polpa dessas espécies podem contribuir para o desenvolvimento de novas cultivares de pitaya visando o consumo fresco e/ou processamento industrial. Os açúcares e ácidos orgânicos foram extraídos e, posteriormente, separados e quantificados em sistema cromatográfico. A quantificação do conteúdo fenólico total e da capacidade antioxidante foi realizada por análise espectrofotométrica utilizando o método de Folin-Ciocalteu e o ensaio de sequestro de radicais DPPH, respectivamente. Os dados foram submetidos ao teste F utilizando ANOVA, teste de Tukey e análise dos componentes principais. H. undatus apresentou 9,83% de açúcares totais, distribuídos na forma de 4,75% de glicose e 5,08% de frutose. A concentração total de açúcar para H. megalanthus foi de 5,93%, com 0,99, 3,25 e 1,69% para glicose, frutose e sacarose, respectivamente, sendo a única a ter sacarose. As concentrações de ácidos orgânicos para as espécies H. costaricensis, H. undatus e H. megalanthus foram: 0,83, 0,71 e 0,62% para ácido málico e 0,37, 0,36 e 0,40% para ácido cítrico, respectivamente. O ácido ascórbico (vitamina C) não foi detectado nas polpas. H. costaricensis teve o maior teor de conteúdo fenólico total e capacidade antioxidante, 33,75 mg GAE 100 g-¹ e 175,51 μmol TEAC 100 g-¹, respectivamente. Hylocereus costaricensis, H. undatus, and H. megalanthus are pitaya species produced and marketed in Brazil. The cultivation of this fruit has increased in recent years owing to its attractive appearance and sweet taste, and it may be either consumed fresh or processed for beverages and desserts. Studies on the biochemical traits and antioxidant capacity of these species can contribute to the development of new pitaya cultivars for fresh consumption and/or industrial processing. Sugars and organic acids were extracted from fruit, separated, and quantified using a chromatographic system. Total phenolic content and antioxidant capacity were quantified by spectrophotometric analysis using the Folin-Ciocalteu assay and 2,2-diphenyl-1-picrylhydrazyl radical scavenging, respectively. The data were subjected to analysis of variance and the Tukeys test. H. undatus presented 9.83% of the total sugars, distributed as 4.75% glucose and 5.08% fructose. Total sugar concentration for H. megalanthus was 5.93%, with 0.99%, 3.25%, and 1.69% of glucose, fructose, and sucrose, respectively, and was the only species containing sucrose. The concentrations of organic acids for H. costaricensis, H. undatus, and H. megalanthus were 0.83%, 0.71%, and 0.62% for malic acid and 0.37%, 0.36%, and 0.40% for citric acid, respectively. The objective of the present study was to identify the biochemical components of the agoutis' seminal plasma. For this purpose, six adult males were collected by means of electroejaculation. Biochemical analysis was performed using commercial kits and the absorbances were read on a spectrophotometer. The results were described as mean and standard error. The following organic constituents were identified in the seminal plasma: albumin (6.64 ±2.31g/dL), total proteins (1.9±0.62g/dL), glucose (26.27±9.84mg/dL), fructose (26.92±8.08mg/dL), citric acid (408.28±227.92mg/dL)), triglycerides (282.04±83.58mg/dL) and cholesterol (125.16±34.35mg/dL). Regarding inorganic components, chlorides (283.66±104,11mEq/L), magnesium (4.24±0.38mg/dL), phosphorus (3.67±0.59mg/dL), calcium (12.47±1.85mg/dL), and iron (620.63±266.33µg/dL). It should be noted that this is the first description of the biochemical composition of seminal plasma in the species Dasyprocta leporina. This information will be useful for the improvement of sperm conservation protocols for the species.

The present research presents an analytical methodology based on High Performance Liquid Chromatography (HPLC) and Principal Component Analyses (PCA) for simultaneous quantification and analytical differentiation of organic acids and sugars in commercial fruit juice samples (orange, grape, apple and tangerine). In addition to the development of the method that generated suitable validation paramters for quantitative analytical applications, the analysis of fourteen commercial samples and the use of Principal Component Analysis indicated the relationship between the constituents and the very constitutional chemical nature of the juice. In general, in grape and apple juices, ascorbic acid was not quantified and the citric acid content was very low; however, the concentrations of fructose and glucose were the highest in both juices. In orange and mandarin orange juices, the content of all analytes, except acorbic acid, did not differ statistically from each other. However, these differed significantly from the others, mainly in relation to sucrose content. Finally, the apple juice samples differed according to the content of fructose and malic acid, the predominant constituint of the apple. Results showed that the simultaneous chromatographic method associated with principal component analysis generated important information about characteristics of commercial juices, with the potential to be used in systems of quality control and identification of adulterations.(AU)
O presente trabalho apresenta uma metodologia analítica baseada em Cromatografia Líquida de Alto Desempenho (CLAE) e Análise de Componentes Principais (ACP) para quantificação simultânea e diferenciação analítica de ácidos orgânicos e açúcares em amostras comerciais de suco de frutas (laranja, uva, maçã e tangerina). Além do desenvolvimento do método que gerou parâmetros de validação adequados para aplicações analítica quantitativas, a análise de catorze amostras comerciais e o uso da ACP indicaram a relação entre os analitos e a natureza química constitucional do suco. Em geral, nos sucos de uva e maçã não foi quantificado ácido ascórbico sendo o conteúdo de ácido cítrico muito baixo, no entanto, as concentrações de frutose e glicose foram as mais altas em ambos sucos. Nos sucos de laranja e tangerina, o conteúdo de todos os analitos, exceto o ácido ascórbico, não diferiram estatisticamente entre si. No entanto, diferiram significativamente dos demais, principalmente em relação ao conteúdo de sacarose. Finalmente, as amostras de suco de maçã diferiram de acordo com o teor de frutose e ácido málico, constituinte predominante da maçã. Os resultados mostraram que o método comatográfico simultâneo associado à análise de componentes principais gera informações importantes sobre as características dos sucos comerciais, com potencialidade para ser utilizado em sistemas de controle de qualidade e identificação de adulterações.(AU)

Canine sperm is a very delicate cell that is quite susceptible to oxidative stress since the cytoplasm is restricted and features little antioxidant reserves. Furthermore, the sperm membrane has some polyunsaturated fatty acids sensitive to lipid peroxidation, which makes it important to addition antioxidant substances to the diluter aiming at decreasing such stress to the sperm cell, particularly during seminal cryopreservation. Several antioxidants have been used in this process in some domestic animal's species, however, the use of palmitic acid has been little reported in works on cryopreservation of semen of the canine species. Hence, this study aimed to assess the effect of addition antioxidants palmitic acid and vitamin E to the Tris-egg yolk diluter on the semen quality of dogs after thawing. Samples were collected from the ejaculates of 4 adult dogs, apparently healthy, of the American Pit Bull Terrier breed of kennels in the city of Teresina, PI, places where the pre-freezing procedures of the dog's semen were performed. The samples were diluted in Tris citric acid fructose (3.28 g Tris-hydroxymethyl-aminomethane, 1.78 g citric acid monohydrate and 1.25 g D-fructose), dissolved in 100 mL distilled water, and added 20% egg yolk and 6% glycerol, at the concentration of 100x106 sptz/mL. The semen samples were divided into 3 mL aliquots to form 3 experimental groups: G1 - Only Tris-egg yolk (Control group); G2 - Tris-egg yolk + 100 µM palmitic acid; and G3 - Tris-egg yolk + 116 µM vitamin E. Semen was collected weekly over a period of little over 2 months. After thawing, thermorresistance test (TTR) was carried out at 0, 30, 60, and 90 min to assess spermatics motility and vigor, in addition to analysis of integrity of plasma membrane, acrosomal membrane and mitochondrial activity of the sperm, using fluorescent probes. These assessments were performed out at the Animal Reproduction Biotechnology Laboratory (LBRA/UFPI). In the TTR, G2 and G3 didn't exhibit significant results for spermatics motility or vigor when compared with the control group. The palmitic acid and vitamin E also had no significant effects on the parameters of acrosomal membrane integrity or mitochondrial activity. However, sperm cryopreserved with the addition of palmitic acid exhibited significant differences for plasma membrane integrity, providing greater protection to the sperm cells in G2. The palmitic acid is one of the most saturated fatty acids in human semen, with reports of great proportions also in the seminal plasma of dogs. Its main role is to protect the plasma membrane from external damage, improving viability and fertility of the sperm after cryopreservation. Data is scarce in the literature on the composition of fatty acids in canine semen and regarding the use of palmitic acid as a seminal antioxidant in that species, which grants further studies aiming to investigate such valuable information for canine reproduction. It is concluded that addition palmitic acid at 100µM concentration to the Tris-egg yolk diluter was able to preserve the integrity of the plasma membrane during the process of cryopreservation of canine semen.(AU)

The present study investigated the effects of various concentrations of trehalose in Tris-fructose egg yolk diluent on ram semen preservation at 0 â. Semen was collected by artificial vagina ejaculation from six rams of proven fertility. High-quality ejaculates were diluted with 0 (control), 5, 10, 15, and 20 mM trehalose of Tris-fructose egg yolk extender and control (tris-fructose egg yolk extender without trehalose), respectively. Then, the ejaculates were diluted to a concentration of 5×108 sperm/mL, cooled to 0 â for 90 min, and maintained at that temperature for twelve days. The diluted semen samples were examined, and their sperm progressive motility, membrane functionality, and acrosome integrity recorded at 0, 24, 72, 144, 216, and 288 h. Two hundred ninety-six ewes were transcervically inseminated with the 216-h control (without trehalose) or the optimal trehalose concentration group semen, and the pregnancy and lambing rates were measured. No significant differences were established in the sperm progressive motility and membrane functionality among the control and 5, 10, 15, and 20 mM groups. The sperm samples of trehalose addition groups had no significant difference in the acrosome integrity of sperm, but they were, nonetheless, significantly higher than those in the control. No significant difference was detected in the lambing and pregnancy rates between the 5 mM and control groups. These results suggest that ram sperm is capable of fertilization after cooling and preservation at 0 â by the use of 5 mM trehalose for Tris-fructose egg yolk diluent. Under these conditions, ram sperm can be more effectively preserved than under other four concentrations of diluents.(AU)

Male rats (Sprague-Dawley: 280-340g) divided into three groups (n=7): Control; Fructose-1,6-bisphosphate (FBP); Histidine-Tryptophan-Ketoglutarate (HTK). Animals underwent laparotomy-thoracotomy for perfusion of livers with saline. Livers were removed and deposited into solutions. Mitochondria were isolated to determine State 3 (S3), State 4 (S4), Respiratory Control Ratio (RCR) and Swelling (S). Liver enzymes (AST, ALT, LDH) were determined in solution. At tissue, Malondialdehyde (MDA) and Nitrate (NOx) were determined. All parameters were analyzed at 0.6 and 24 hours of hypothermic preservation. Statistics analysis were made by Mann-Whitney test (p<0.05).. Results. Regarding ALT, there was a difference between FBP-6h/HTK-6h, lower in HTK. Regarding AST, there was a significant difference between FBP-24h/HTK-24h, lower in FBP. Regarding NOx, there was a difference between 0h and 6h, as well as 0h and 24h for both solutions. Regarding S3, there was a significant difference in 24h compared to Control-0h for both solutions, and a significant difference between FBP-6h/FBP-24h. Native fruits are economically important to small producers, and they are a important part of the diet of several communities. Therefore, postharvest studies of these fruits are essential. In addition, research involving their chemical composition can identify substances that add potential value to the fruits, especially from a nutritional and medicinal standpoint. This study characterized the fruits of the muricizeiro shrub (Byrsonima crassifolia, Malpighiaceae), which were harvested from native plants on private properties and stored for 16 days at a mean temperature of 12 °C. The fruits were evaluated during storage for: 2,2-diphenyl-1-picrylhydrazyl (DPPH) radical scavenging activity, ascorbic acid content, phenolics and carotenoids total, carotenoids profile, glucose, fructose and sucrose contents. Overall, the temperature that the fruits were storage at was effective at maintaining the quality of the fruit. However, the ascorbic acid content of the fruits did decrease during the storage period. Results showed that the fruits had a high antioxidant capacity, possibly because of the presence of phenolic compounds and carotenoids. It is also important to highlight that this fruit is source of vitamin A, owing to the high concentration of β-carotene.(AU)
Frutas nativas são economicamente importantes para pequenos produtores, e são uma parte importante da dieta de várias comunidades. Portanto, estudos pós-colheita desses frutos são essenciais. Além disso, pesquisas envolvendo sua composição química podem identificar substâncias que agregam valor potencial às frutas, principalmente do ponto de vista nutricional e medicinal. Este estudo caracterizou os frutos do arbusto muricizeiro (Byrsonima crassifolia, Malpighiaceae), que foram colhidos de plantas nativas em propriedades particulares e armazenados por 16 dias em temperatura média de 12 °C. Os frutos foram avaliados durante o armazenamento em vista da: atividade de eliminação de radicais 2,2-difenil-1-picril-hidrazil (DPPH), conteúdo de ácido ascórbico, fenólicos e carotenoides totais, perfil de carotenoides, conteúdo de glicose, frutose e sacarose. No geral, a temperatura em que os frutos foram armazenados foi eficaz para manter a qualidade do fruto. No entanto, o teor de ácido ascórbico dos frutos diminuiu durante o período de armazenamento. Os resultados mostraram que os frutos apresentaram alta capacidade antioxidante, possivelmente pela presença de compostos fenólicos e carotenoides. Também é importante destacar que esta fruta é fonte de vitamina A, devido à alta concentração de β-caroteno.(AU)

Objetivou-se desenvolver e avaliar sensorialmente doces em massa de graviola com substituição parcial da sacarose por xarope de glicose. As formulações de doces foram elaboradas variando a concentração de xarope de glicose em substituição a sacarose. A análise sensorial foi aprovada pelo comitê de ética em pesquisa da Universidade Estadual da Paraíba. Os doces apresentaram cor, aroma e sabor característicos do fruto. Percebeu-se que a aceitação sensorial apresentou semelhança significativas entre as formulações e boa impressão global, ficando com média que remete a gostei moderadamente. Todas as formulações alcançaram valores satisfatórios para a avaliação sensorial, sendo a formulação com substituição parcial de 19,70% a que apresentou maior aceitação.(AU)

Objetivou-se testar concentrações de Aloe vera para produção de diluidor vegetal na refrigeração espermática. Amostras obtidas de epidídimos bovinos foram recuperadas e homogeneizadas para formação do pool. Sete grupos experimentais foram formados: GC= Grupo TRIS-Gema; G5= AV5%+1,488g frutose; G10= AV10%+1,488g frutose; G20= AV20%+1,488g frutose; GF5= AV5%+2,976g frutose; GF10= AV10%+2,976g frutose; GF20= AV20%+2,976g frutose. Os grupos foram submetidos às avaliações de quantificação de açúcares redutores; reologia; potencial hidrogeniônico (pH) a 5 °C e 37 ºC; motilidade subjetiva, integridade e funcionalidade da membrana plasmática nos períodos T0 (momento diluição) e T2 (ao atingir 5 ºC); crescimento microbiológico após 48h e 72h de refrigeração. Os G20 e GF20 apresentaram maior (p0,05) na integridade e funcionalidade da membrana plasmática entre grupos e tempo de avaliação. No crescimento microbiológico, após 72h, o G20 apresentou efeito antimicrobiano. Conclui-se que concentrações de extrato de Aloe vera interferem negativamente na motilidade de espermatozoides epididimários bovino, porém preservam a integridade e funcionalidade da membrana plasmática e apresentam efeito antimicrobiano. Estudos para determinação da viscosidade ideal do extrato e aprimoramento da confecção deste possível diluidor vegetal devem ser encorajados.(AU)
The current study aimed to test concentrations of Aloe vera for production of plant origin extender to sperm cooling. Samples obtained from bovine epididyms were recovered and homogenized for pool formation. Seven groups were performed: GC= TRIS-egg yolk Group; G5= AV5%+1.488g fructose; G10= AV10%+1.488g fructose; G20= AV20%+1.488g fructose; GF5= AV5%+2.976g fructose; GF10= AV10%+2.976g fructose; GF20= AV20%+2.976g fructose. The groups they were submitted to the quantification of sugar reduction; rheology; hydrogenation potential (pH) at 5 °C and 37 °C; subjective motility, integrity and functionality of the plasma membrane at T0 (dilution moment) and T2 (reaching 5 ºC) periods; microbiological growth after 48h and 72h by refrigeration. The G20 and GF20 presented higher (p0.05) were observed in the integrity and functionality of the plasma membrane among groups and times of evaluation. In the microbiological growth, after 72h, the G20 presented antimicrobial effect. Therefore, concentrations of Aloe vera extract negatively interfere with bovine epididymal sperm motility, but preserve integrity and functionality of spermatozoa plasma membrane and present antimicrobial effect.
