Resumo

This study aimed to evaluate the effects of dietary supplementation pelleted Tenebrio molitor (TM) powder with chokeberry by-product (CBP) meal on duck production and meat quality traits. A total of 180 0-day-old Pekin ducks were allocated randomly between three dietary groups viz., control, Treatment 1, and Treatment 2, with three pens per group and twenty birds per pen, characterized by increasing levels of pelleted TM powder with CBP meal in concentration of 0%, 1.5%, and 3%, respectively, and reared until 42 days of age in a completely randomized design. On day 42, the ducks were sacrificed, and breast and thigh muscles were used for meat quality evaluations. Feeding pelleted TM powder with CBP meal resulted in a significant difference in final body weight, weight gain and feed conversion ratio (p<0.05). Additionally, a significant difference was observed in the pH of the breast meat samples (p<0.05). As the only significant difference between the breast and thigh meat, 1,1-diphenyl-2-picryhydrazyl radical scavenging was influenced significantly by the dietary inclusion of pelleted TM powder with CBP meal (p<0.05). However, the values of thiobarbituric acid reactive substances and meat color in both breast and thigh meat were insignificant (p>0.05) different among all groups. To conclude, the inclusion of up to 3 % of pelleted TM powder with CBP meal in the diets of ducks did improve the growth production and antioxidant characteristics effects, which could decrease TBARS and reflected by changes in 1,1-diphenyl-2- picrylhydrazyl free DPPH radical scavenging values.(AU)

There is a worldwide demand for new protein sources through environmentally responsible production, and rabbit farming is a sustainable activity. Therefore, this study aimed to characterize meat from different cuts of rabbit carcasses and evaluate their use in the processing of restructured cured cooked ready-to-eat (RTE) products. Rabbit raw meats from different cuts were technologically characterized, and the RTE products were processed from the meats of the entire carcass (RABB), hind legs (RHIND), loin (RLOIN), and foreleg, thoracic cage, and flank (RBACK). Restructured pork cooked ham (PHAM) was used as the reference. Rabbit raw meat from different anatomical parts differed in proximate composition, total collagen and heme-pigment content, water-holding capacity, and CIE color, affecting the characteristics of processed products. RBACK products had higher fat content (5.46%), cooking and reheating losses (7.50% and 5.61%), and poor hardness and chewiness (11.1 N and 17.37 N×mm). Higher values of lightness (L* ~70.27), hue (h ~68.61°), and a slight cured color were observed in RLOIN, with a pale yellowish color described by sensory evaluation. RABB and RHIND were correlated with the sensory attributes of traditional PHAM, being preferred more often and with greater purchase intent than RLOIN and RBACK. It is concluded that cooked ham development from whole carcass meat (RABB) is a potential opportunity for the rabbit industry to offer value-added technological products of high quality to consumers.


Há uma demanda mundial por novas fontes proteicas de produções ambientalmente responsáveis, e a cunicultura se enquadra perfeitamente como uma atividade sustentável. Neste contexto, este estudo teve como objetivo caracterizar a carne de diferentes cortes da carcaça de coelho e avaliar sua utilização no processamento de produtos curados cozidos prontos para o consumo (RTE). As carnes cruas de coelho de diferentes cortes foram caracterizadas tecnologicamente, e os produtos RTE foram processados a partir das carnes de carcaça inteira (FC-INT), patas traseiras (FC-PERNIL), lombo (FCLOMBO), patas dianteiras, caixa torácica e flanco (FC-APARAS). Um produto RTE com carne de pernil suíno (APRESUNTADO) também foi elaborado como referência. A carne de coelho de diferentes partes anatômicas diferiu na composição centesimal, conteúdo total de colágeno e pigmento heme, capacidade de retenção de água e cor (CIE), afetando as características dos produtos elaborados. Os produtos FC-APARAS apresentaram maior teor de gordura (5.46%), perdas por cozimento e reaquecimento (7,50% e 5,61%), baixa dureza e mastigabilidade (11.1 N e 17.37 N×mm). Maiores valores de luminosidade (L* ~70.27), matiz (h ~68.61°) de cor e uma fraca cor curada foram observados no FC-LOMBO, com uma coloração amarelada pálida descrita pela avaliação sensorial. FC-INT e FC-PERNIL foram correlacionados com os atributos sensoriais do tradicional APRESUNTADO, sendo mais preferidos e com maior intenção de compra do que FCLOMBO e FC-APARAS. Concluiu-se que o desenvolvimento de produtos curados cozidos a partir de carcaças inteiras (FC-INT) é uma oportunidade potencial para a indústria de cunicultura oferecer produtos tecnológicos de valor agregado e de alta qualidade aos consumidores.

The demand for clean label foods has driven research in the meat product sector. The objective of this study was to evaluate the effect on the physicochemical properties of adding L-lysine, wheat fiber (WTF) and microcrystalline cellulose (MCC) in sausage without the addition of sodium tripolyphosphate (STPP) and with reduced salt levels. Eight treatments were produced in total. Three control treatments were: CON1 - 0.5 % sodium tripolyphosphate and 2 % salt; CON2 - without STPP and 2 % salt; CON3 - without STPP and 1 % salt. Five other treatments were carried out without STPP and 1 % of salt: LYS - 0.8 % L-lysine; WTF - 2 % wheat fiber; MCC - 2 % microcrystalline cellulose fiber; LYSWTF - 0.8 % L-lysine and 2 % wheat fiber; LYSMCC - 0.8 % L-lysine and 2 % microcrystalline cellulose fiber. L-lysine and wheat fiber provided good emulsion stability for sausages. L-lysine and MCC increased the yield of the products. Microcrystalline cellulose increased the red color value (a*) of sausages. The intensity of the yellow color value (b*) was significantly affected by the removal of STPP and the reduction of salt levels, but L-lysine and MCC improved this parameter, providing similar results to CON1. Adding of L-lysine and dietary fiber increased hardness in sausages without added STPP and with salt reduction. L-lysine and wheat fiber are promising for reformulating emulsified meat product without phosphate added and with reduced salt levels due to lipid oxidation control and improvement in emulsion stability.

This study evaluated the effects of natural extracts on chicken breast fillet marinades regarding the physicochemical properties, oxidative stability, and the Staphylococcus aureus and Escherichia coli inhibition during 21 days of storage. Chicken breast fillets (Pectoralis major) (128 units) purchased in a local market, were used, allocated in a completely randomized block design, in a 4 x 4 factorial scheme (antioxidant x storage time), totalling 16 treatments with eight replicates. The TBARS and the pH values were not influenced by the analyzed factors. For the color results, the values of L* and b* were lower in the marinated chicken breast fillets with basil and BHT, respectively. When assessing the effect of storage time, an increase in oxidation was observed up to 21 days of storage. For pH, a quadratic decrease after storage with an increase in the pH value from the 11th day of storage was observed. In the color results, there was a linear decrease in the L* value during the storage period and in the value of b* a quadratic effect was observed with a reduction of this intensity up to 21 days of storage. In relation to the value of a*, a quadratic effect with an increase in the red intensity from the 7 days of storage was observed. For the counting of the S. aureus, the treatments presented 102 CFU/g up to 14 days, except for the basil which exceeded the limit established by the legislation at 14 days.


O objetivo deste estudo foi avaliar os efeitos de extratos naturais em marinados de filés de peito de frango sobre as propriedades físico-químicas, estabilidade oxidativa e inibição Staphylococcus aureus e Escherichia coli durante 21 dias de armazenamento. Foram utilizados 128 filés de peito de frango (Pectoralis major) adquiridos no mercado local, alocados em delineamento de blocos inteiramente casualizados em fatorial 4 x 4 (antioxidante x tempo de armazenamento), totalizando 16 tratamentos com oito repetições. Os valores de TBARS e pH não foram influenciados pelos tratamentos. Para os resultados de cor apenas os valores de L* e b* foram influenciados pelos tratamentos, sendo os menores valores encontrados no tratamento com manjericão e BHT, respectivamente. Avaliando o efeito do tempo de armazenamento observou-se aumento da oxidação até 21 dias de estocagem. Para o pH verificou-se diminuição quadrática após a estocagem com aumento no valor do pH a partir do 11º dia de armazenamento. Nos resultados de cor, verificou-se queda linear no valor L* durante o período de armazenamento e no valor de b* observou-se efeito quadrático com redução dessa intensidade até 21 dias de estocagem. Em relação ao valor de a* observou-se efeito quadrático com aumento da intensidade a partir dos sete dias de armazenamento. Para contagem de S. aureus, os tratamentos apresentaram <102 UFC/g até 14 dias, exceto o manjericão que aos 14 dias excedeu o limite estabelecido pela legislação.

The aim was to evaluate the effect of replacing ground corn with spineless cactus from two species Orelha de Elefante Mexicana-OEM (Opuntia stricta Haw.) and Gigante (Opuntia ficus-indica Mill) in a total mixed ration for finishing lambs evaluating its effects on intake, ingestive behavior, performance, carcass traits, commercial cuts and physiochemical composition of the meat. Eighteen crossbred lambs with average body weight of 15.0 ± 2.32 kg were distributed in a completely randomized design with three treatments (OEM and Gigante spineless cactus and ground corn as control treatment) and six replications. Spineless cactus species replacing ground corn in lambs diets does not change the intake of dry matter (DMI), crude protein and neutral detergent fiber or time (min/d) of ingestion, rumination and idleness, or final body weight gain. Lambs fed with ground corn and "Gigante" cactus presented a higher total weigh gain (TWG) and average daily weight gain (ADG) when compared to OEM spineless specie. Ground corn diet promoted better hot and cold carcass yield in lambs receiving spineless cactus, regardless of species. Feed and total costs (kg/lamb) were higher for the ground corn diet. The replacement of ground corn with spineless cactus did not change moisture, protein, and ash meat contents, as well as water holding capacity, cooking loss, shear force, and a* color intensity. However, there was an effect for the meat lipid content, b* and L* color intensity and color index, where the species of cactus Gigante on ground corn presented the highest lipid content and yellowness (b*) intensity and lower L* color compared to OEM. Spineless cactus species Gigante can replace ground corn as a source of energy in diets for finishing lambs because it significantly improves the financial income for the producer without changing the ADG, DMI, ingestive behavior and yield of commercial cuts.


Objetivou-se avaliar o efeito da substituição do milho moído por duas espécies de palma forrageira, Orelha de Elefante Mexicana-OEM (Opuntia stricta Haw.) e espécie Gigante (Opuntia ficus-indica Mill) em uma ração completa para terminação de cordeiros avaliando seus efeitos sobre consumo, comportamento ingestivo, desempenho, características de carcaça, cortes comerciais e composição físico-química da carne. Foram utilizados dezoito cordeiros sem padrão racial definido com peso corporal médio de 15,0 ± 2,32 kg e foram distribuídos em delineamento inteiramente casualizado com três tratamentos (OEM e palma Gigante e grão de milho como controle) e seis repetições. As duas espécies de palma forrageira em substituição ao milho moído na dieta de cordeiros não modificaram o consumo de matéria seca (CMS) proteína bruta e fibra em detergente neutro nem o tempo (min/dia) de ingestão, ruminação e ócio ou ganho corporal final. Cordeiros alimentados com milho moído e palma Gigante apresentaram maior ganho de peso total (GPT) e médio diário (GMD) em relação à espécie OEM. A dieta com milho moído promoveu melhor rendimento de carcaça quente e fria comparando cordeiros recebendo palma forrageira, independente da espécie. Os custos com ração e total (kg/cordeiro) foram maiores para a dieta com milho moído. A substituição do milho moído pela palma forrageira não alterou os teores de umidade, proteína e cinzas da carne, bem como a capacidade de retenção de água, perda por cozimento, força de cisalhamento e intensidade de cor a*. No entanto, houve efeito para o teor de lipídios da carne, índice de intensidade de cor b* e L*, sendo que a espécie de palma Gigante e o milho grão moído apresentou o maior teor de lipídios e intensidade de amarelo (b*) e menor cor L* em relação ao OEM. A espécie palma forrageira Gigante pode substituir o milho moído como fonte de energia em dietas para cordeiros em terminação, pois melhora significativamente o rendimento financeiro do produtor sem alterar o GMD, CMS, comportamento ingestivo e rendimento dos cortes comerciais.

This study evaluated the performance parameters, carcass characteristics, and meat quality of Label Rouge chickens raised under an alternative system as a function of age at slaughter. The design was completely randomized with a 5×2 factorial arrangement, with slaughtering at five ages (70, 90, 120, 150, and 180 days) and two sexes. A total of 240 birds (Pescoço Pelado strain) were used, including 120 females and 120 males. Performance, carcass, physicochemical, proximate composition, and muscle fiber traits were evaluated. Rearing time and sex had significant effects on performance-related traits, with better results for males. The interaction between slaughter age and sex had a significant effect on the carcass and physicochemical parameters, which cause different responses in males and females with increasing slaughter age. For the proximate composition and muscle fiber analysis, the interaction between the parameters studied only had a significant effect on ether extract in the breast. The increase in age resulted in chickens with higher live and carcass weight at slaughter but lower performance indices. Females had lower carcass yield and greater deposition of abdominal fat. Females had lower tenderness in the drumstick and males in the breast with increasing slaughter age, and both cuts had more intense color and redness and reduced lightness starting at the slaughter age of 90 days.


O objetivo deste estudo foi avaliar os parâmetros de desempenho e as características de carcaça e qualidade da carne de frangos Label Rouge criados em sistema alternativo em função do aumento da idade de abate. O delineamento foi inteiramente casualizado (DIC) disposto em esquema fatorial (2x5), sendo dois sexos (macho e fêmea) e cinco idades de abate (70, 90, 120, 150 e 180 dias). Foram utilizadas 240 aves (Pescoço Pelado), sendo 120 fêmeas e 120 machos, sendo avaliados os parâmetros de desempenho, carcaça, físico-químicos, composição centesimal e fibra muscular. Com o aumento no tempo de produção houve efeitos dos períodos de produção e sexo em relação a variáveis de desempenho, com melhores resultados para os machos. Para os parâmetros de carcaça e físico-químicos, houve interação entre sexo e idade de abate, revelando comportamento diferenciado para machos e fêmeas com aumento da idade de abate. Para a composição centesimal e análise das fibras musculares, somente para extrato etéreo no peito foi verificado interação entre os fatores estudados. O aumento da idade proporcionou a obtenção de frangos com maiores pesos vivos e de carcaça ao abate com consequente redução dos índices de desempenho, além de menor rendimento de carcaça e maior deposição de gordura abdominal nas fêmeas. As fêmeas apresentam menor maciez na coxa e os machos no peito com aumento da idade de abate e, em ambos os cortes, ocorreu maior intensificação da cor, índice de vermelho e redução do brilho a partir de 90 dias ou em maiores idades de abate.

ABSTRACT: The study evaluated the effect of sex and slaughter weight on carcass traits and non-carcass components of 1,489 horses (739 geldings and 750 females, classified into eight groups according to their weight). Data were analyzed under a completely randomized design. Geldings had a higher (P < 0.05) hot carcass yield (HCY) and cold carcass yield (CCY) than females; however, fat yellowness values (b*) were greater (P < 0.05) in females. Slaughter weight (SW) affected the carcass characteristics. Hot carcass weight (HCW), cold carcass weight (CCW), HCY, and CCY increased (P < 0.05) in accordance with slaughter weight, while cool loss percentage (CL%) was lower (P < 0.05) in horses weighing more than 300 kg. In addition, the non-carcass components decreased (P < 0.05) as the weight of the horses increased. In conclusion, sex and body weight are factors to consider in the production of equine meat since they affect carcass characteristics and non-carcass components.


RESUMO: O estudo teve como objetivo avaliar o efeito do sexo e do peso ao abate sobre as características de carcaça e componentes não-carcaça de 1.489 cavalos (739 machos castrados e 750 fêmeas, classificados em oito grupos de acordo com o peso). Os dados foram analisados em um desenho inteiramente casualizado. Os semeadores apresentaram maior rendimento de carcaça quente (HCY) e fria (CCY) do que as fêmeas, porém o amarelecimento da gordura (b*) foi maior nas fêmeas. O peso ao abate (SW) afetou as características de carcaça. HCW, CCW, HCY e CCY aumentaram de acordo com o peso de abate, enquanto CL% foi menor em equinos com peso superior a 300 kg. Além disso, os componentes não-carcaça diminuíram com o aumento do peso dos cavalos. Em conclusão, sexo e peso corporal são fatores a serem considerados na produção de carne equina, uma vez que afetam as características da carcaça e seus componentes.

Resumo

The production of duck meat in the republic was previously based on the use of 4-5 lines and populations of the Beijing breed, where the Medeo cross lines (M-1 paternal and M2-maternal) were the most widespread. At the same time, many domestic lines and populations, such as the cross "Bishkulskaya Tsvetnaya", "Kyzylzharsky", whose livestock is concentrated in the Northern region, represent rich genetic material and can be used to create new crosses. This article describes the productive and breeding qualities of ducks of the local population in the Northern region of Kazakhstan, the data obtained make it possible for further purposeful breeding work to create, preserve highly productive poultry, providing highly efficient production of eggs and meat, adapted to both industrial conditions and conditions of keeping in small-scale and farms. On the basis of "Bishkul Poultry Farm" LLP, we obtained results on the assessment of productive and breeding indicators of ducks of the local population.


A produção de carne de pato na república era anteriormente baseada no uso de 4 a 5 linhas e populações da raça de Pequim, onde as linhas de cruz Medeo (m-1 paterna e M2-materna) eram mais difundidas. No entanto, muitas linhas e populações domésticas, como cross "Bishkul Color" e "Kyzylzharsky", cuja população está concentrada na região Norte, representam um rico material genético e podem ser utilizados em novos cruzamentos. Este artigo descreve as qualidades produtivas e reprodutivas dos patos da população local na região norte do Cazaquistão. Os dados obtidos permitem um trabalho de criação mais focado na criação e preservação de aves altamente produtivas, garantindo a produção altamente eficiente de ovos e carne, adaptada tanto às condições industriais quanto às condições de detenção em pequenas fazendas. Com base na "Bishkul avicultura LLP", obtivemos resultados relacionados à avaliação dos indicadores produtivos e reprodutivos dos patos da população local.

Resumo

Pacas (Cuniculus paca) are highly hunted animals because of the flavor of their meat, and commercial breeding is recommended. However, this species has a relatively low reproductive rate. This study aimed to collect semen from pacas through electroejaculation and obtain the sperm parameters of this species for the first time. Seven male pacas were used, submitted to an anesthetic protocol before stimulation by an electroejaculator appropriate for the species. The stimulus protocol was performed in three series: series I, 10 stimuli with 1 and 2 V; series II, 10 stimuli with 3 and 4 V; and series III, 10 stimuli with 5 V and interval between series of 2 s. The collected material was evaluated for color, volume, motility, vigor, and concentration. The sperm parameters collected showed a mean volume of 0.43±0.33 mL, concentration of 45.5±42.44×106 sperm/mL, motility of 33.33±32.14%, and mean vigor of 2.6±1.15. In this study, the anesthetic protocol did not seem to favor semen collection by electroejaculation in the pacas. The electrical stimulation protocol was able to stimulate all animals in the study; however, there were few samples with sperm cells and a low rate of motility and vigor in most ejaculates.


Pacas (Cuniculus paca) são animais altamente caçados devido ao sabor de sua carne, sendo a criação comercial delas, recomendada. Entretanto, é uma espécie com baixa taxa reprodutiva. O objetivo deste estudo foi efetuar coleta de sêmen em pacas por meio da eletroejaculação e da obtenção, pela primeira vez, dos parâmetros espermáticos dessa espécie. Foram utilizadas sete pacas machos, as quais, antes dos estímulos por eletroejaculador apropriado para a espécie, foram submetidas a protocolo anestésico. O protocolo de estímulo foi realizado em três séries: série I, 10 estímulos com 1 e 2V; série II, 10 estímulos com 3 e 4V; série III, 10 estímulos com 5V, e intervalo entre as séries de dois segundos. O material coletado foi avaliado quanto à cor, ao volume, à motilidade, ao vigor e à concentração. Os parâmetros espermáticos coletados demonstraram volume médio de 0,43±0,33mL, concentração de 45,5±42,44x106 espermatozoides/mL, motilidade de 33,33±32,14% e vigor médio de 2,6±1,15. Neste estudo, o protocolo anestésico parece não ter favorecido a coleta de sêmen por eletroejaculação em pacas. Entretanto, o protocolo de estímulos elétricos foi capaz de estimular todos os animais do estudo. Assim, chegou-se ao resultado de poucas amostras com a presença de células espermáticas, bem como baixo índice de motilidade e vigor na maioria dos ejaculados.

The aim of this study was to evaluate the effects of replacing 50% of the true protein from soybean meal with extruded urea on the performance and carcass characteristics of lambs finished on pasture. Twenty lambs with initial weight of 29.9±6.2kg and 5 months of age, distributed in two treatments in blocks at random, were kept in pastures of Urochloa spp. Supplemented with 2% of body weight (BW). The treatments consisted of supplements containing soybean meal as the only true protein source (control), or extruded urea replacing 50% of soybean meal (NPN treatment). There was no effect of treatment on total supplement intake. There were differences in average daily gain (242.1 vs. 264.6g/day), slaughter weight (41.9 vs. 45.0kg) and carcass weight (18.9 vs. 20.1kg). There was no effect of the treatment on the final body condition score, hot carcass yield, carcass length, breast depth, subcutaneous fat thickness or rib eye area. The group of animals that received extruded urea showed superior carcass finishing characteristics (99.0% vs. 66.0%), maturity (22.0% vs. 0.0%), marbling (55.0% vs. 33.0%), meat texture (44.0% vs. 33.0%) and fat (66.0% vs. 22.0%). There were no significant effects on tenderness (7.5kg/f) or flesh color (L* = 33.2; a* = 16.2; b* = 8.3). There were no significant changes in the biochemical profile of the animals' blood during the experiment for both treatments. The replacement of 50% of protein from soybean meal by the extruded urea as NPN source in the supplement for lambs finished in Urochloa spp pastures provides better animal performance and qualitative characteristics of meat, without altering quantitative carcass characteristics.


Objetivou-se avaliar os efeitos da substituição de 50% da proteína verdadeira do farelo de soja por ureia extrusada sobre o desempenho e as características de carcaça de cordeiros terminados em pasto. Vinte cordeiros de 29,9+6,2kg de peso inicial e com cinco meses de idade, distribuídos em dois tratamentos em blocos ao acaso, foram mantidos em pastagens de Urochloa spp. suplementado com 2% do peso vivo (PV). Os tratamentos consistiram em suplementos contendo farelo de soja como única fonte de proteína verdadeira (controle), ou ureia extrusada em substituição a 50% do farelo de soja (tratamento NPN). Não houve efeito do tratamento na ingestão total de suplemento. Houve diferenças no ganho médio diário (242,1 vs. 264,6 g/dia), no peso ao abate (41,9 vs. 45,0kg) e no peso da carcaça (18,9 vs. 20,1kg). Não houve efeito do tratamento sobre escore de condição corporal final, rendimento de carcaça quente, comprimento de carcaça, profundidade do peito, espessura de gordura subcutânea ou área de olho de lombo. O grupo de animais que recebeu ureia extrusada apresentou características superiores de acabamento de carcaça (99,0% vs. 66,0%), maturidade (22,0% vs. 0,0%), marmoreio (55,0% vs. 33,0%), textura da carne (44,0% vs. 33,0%) e gordura (66,0% vs. 22,0%). Não houve efeitos significativos na maciez (7,5 kg/f) nem na cor da carne (L*= 33,2; a*= 16,2; b * = 8,3). Não houve mudanças significativas no perfil bioquímico do sangue dos animais durante o experimento para ambos os tratamentos. A substituição de 50% da proteína do farelo de soja pela ureia extrusada como fonte de NPN no suplemento para cordeiros terminados em pastagem de Urochloa spp. proporciona melhor desempenho animal e características qualitativas da carne, sem alterar as características quantitativas da carcaça.

After slaughtering and exsanguination, Mb is the major pigment that provides the red color in meat. The concentration of Mb together with its redox state are two pivotal factors that determine meat color. The elevated pH of darkcutting beef can affect both physical and biochemical properties resulting in decreased oxygenation. The darkening observed in high ultimate pH (pHu) beef concerns meat processors as color is the initial attribute that impacts on the purchase. Thus, any atypical meat color (i.e., loss of brightness) reduces consumer interest in the product. Several studies have demonstrated that immunological castration is effective in preventing both aggressive behavior and undesirable darkcutting of bull meat. However, little information is available on the effects of processing techniques that limit the oxidation of ferrous iron (Fe2+), Mb or promote metmyoglobin (MMb) reduction in darkcutting beef. Because of the importance of color to fresh beef marketability, this review aimed at overviewing the significance of pHu in beef color and color stability and to discuss new alternatives for improving and assessing the beef color of darkcutting beef, especially in Nellore bulls and their crossbreds, which are widely used in beef cattle production in Brazil.

Resumo

Guinea fowl have several advantages over chickens. These birds are highly valued for their meat and eggs, particularly in tropical regions. They are currently in many parts of the world. Recently, the demand for guinea fowl meat has increased because it is considered a high-quality protein source. In addition, their eggs are delicious and considerably better than those of chickens. Guinea fowl eggs are valued for their thick shells, and longer shelf life, and it has premium prices compared with commercial and indigenous chickens. Chicken eggs have been well studied for egg and meat quality. However, such information isn't so sufficiently documented in other poultry species. Despite the interest in guinea fowl production, it is vital to take cognizance of the fact that there is a lack of information on the production and quality of guinea fowl products, in contrast to commercial chickens. Therefore, the present review aims to assess the egg and meat quality of Guinea fowl in different tropical regions. The main results of the current study showed that the external egg quality characteristics, mainly (egg weight, shell percentage, and shell thickness), and internal egg quality traits, mainly (albumen weight, haugh unit, yolk height, and yolk color) of Guinea fowl differed under different tropical regions. Concerning carcass characteristics, a clear difference was observed in dressing percentage and breast percentage of Guinea fowl in various tropical areas. A similar trend was observed for the meat color.(AU)

ABSTRACT: This study aimed to evaluate the quality traits and fatty acid profile of beef from Nellore and Angus bulls fed whole shelled corn (WSC) and ground corn plus maize silage (GC) diets. Eighteen Nellore and 18 Angus young bulls [381 ± 12 kg initial body weight (BW) and an average age of 20 ± 1.9 months] were used in a completely randomized design using a 2 × 2 factorial arrangement and were slaughtered at a final BW of 451.5 kg and 545.5 kg, respectively. Twentyfour hours after slaughter, samples of longissimus thoracis muscle were collected for the analysis of lipid oxidation, color, fatty acid profile, shear force, and cooking loss. There was no effect of diet × breed interaction on meat color, lipid oxidation, shear force, and cooking loss. Angus beef had lower shear force (p 0.05) than Nellore beef and had a greater concentration of linoleic acid and polyunsaturated fatty acids (PUFA) (p 0.01). Beef of bulls fed WSC tended to have greater concentration of CLA C18:2c9t11 (p = 0.09), greater concentration of CLA C18:2t10c12 (p = 0.01), and PUFA (p = 0.05), and consequently, higher oxidation levels. Angus bulls produced beef with greater tenderness and PUFA concentration. The results of fatty acid show a possible change in biohydrogenation when animals are fed the WSC diet, reducing lipogenesis, as this diet increases the C18:2t10c12 content.

ABSTRACT The present study was carried out to evaluate the effect of net energy levels in diets for barrows, from 70 to 100 kg, on performance, plasma parameters and carcass characteristics. Two experiments were carried out: in the first (Experiment I), a metabolism assay was carried out to estimate the net energy (NE) of experimental diets. Twelve crossbred barrows, averaging 85.74 ± 6.80 kg initial body weight, were distributed in a randomized block design with two metabolizable energy (ME) levels (3100 and 3500 kcal kg1) with six replicates and one animal per experimental unit. In the second (Experiment II), 45 castrated male pigs were used, averaging 70.10 ± 1.26 kg of initial body weight distributed in a randomized block design, with five NE levels (2345, 2425, 2505, 2585, 2665 kcal kg1), nine replicates and one animal per experimental unit. The increase in diet NE levels provided a linear reduction (p 0.00039) in average daily feed intake (ADFI). There was a quadratic effect on NE efficiency (p 0.0027), average daily gain (ADG), (p 0.0352) and the feed:gain ratio (F:G), (p 0.0024), the optimal levels being estimated at 2485, 2493 and 2533 kcal kg1, respectively. Drip loss (DL) decreased (p 0.0001) as NE levels increased. There was also a linear decrease (p 0.0462) in the Minolta color parameter (+a*), due to the NE levels. Plasma parameters were not affected (p > 0.05) by NE levels. The dietary net energy levels affected the performance and meat quality of finishing pigs and the level of 2493 kcal kg1 provided the best ADG.

Resumo

The effect of including partially dehulled sunflower seeds in the diet of grazing chickens in meat quality was evaluated. Two hundred and forty, one-day-old, Ross 308 chickens were used, randomly distributed into four treatments with six replicates of 10 birds each. Seventy-two birds were slaughtered at seven weeks of age, 18 per treatment, extracting the Pectoralis major muscle to analyze meat quality. The treatments were completely randomized in a 2x2 factorial arrangement, where type of rearing (confinement or grazing) and diet (base diet or base diet substituting 10% soybean meal for partially dehulled sunflower seeds) were the independent variables. The grazing chickens spent 8 hours a day in a white clover (Trifolium repens) paddock. Including sunflower seeds improved (p<0.05) the color and crude protein (CP) in breast meat (p<0.05), while grazing increased (p<0.05) CP, dry mater (DM), and shear force (SF), and the percentage of breast fat decreased (p<0.05) by up to 50%. Additionally, grazing increased (p<0.05) saturated fatty acids (SFA) and reduced (p<0.05) lipid oxidation by up to 50%. Partially replacing soybean meal with partially dehulled sunflower seeds in the diet of grazing chickens with white clover improves the physicochemical characteristics and nutritional quality of the breast meat; it also decreases lipid oxidation, extending the shelf life of the meat.(AU)
