RESUMO

Por su composición los cereales de grano entero permiten alcanzar las ingestas recomendadas de numerosos nutrientes que habitualmente se ingieren en cantidades insuficientes, según diversos estudios. Por otro lado, la evidencia científica señala que el consumo de cereales de grano entero se asocia a efectos positivos para la salud frente al padecimiento de algunas enfermedades crónicas no transmisibles como la obesidad, la enfermedad cardiovascular, la diabetes o el cáncer. Estos efectos pueden deberse al elevado contenido en vitaminas, minerales, fibra y compuestos bioactivos que contienen.El consumo de cereales de grano entero es escaso, lo que podría deberse al desconocimiento de sus efectos beneficiosos por parte de la población. El consumo de 3 o más raciones al día de cereales de grano entero contribuye a conseguir una mejor situación nutricional y sanitaria de los individuos desde edades tempranas. (AU)


Due to their composition, whole grain cereals allow to achieve the recommended intakes of numerous nutrients that are usually ingested in insufficient amounts according to various studies. On the other hand, scientific evidence indicates that the consumption of whole grain cereals is associated with positive effects on health against the suffering of some chronic non-communicable diseases such as obesity, cardiovascular disease, diabetes or cancer. These effects may be due to their high content of vitamins, minerals, fiber and bioactive compounds.The consumption of whole grain cereals is low, which could be due to the lack of knowledge of its beneficial effects by the population. The consumption of 3 or more servings a day of whole grain cereals contributes to achieve a better nutritional and health status of individuals from early ages. (AU)

En los últimos años se ha puesto en evidencia el impacto de los sistemas alimentarios en la salud humana y en la del planeta. La transición hacia dietas más saludables y sostenibles se postula como una medida necesaria para abordar las crecientes preocupaciones medioambientales y de salud relacionadas con los sistemas actuales de producción y de consumo de los alimentos.Este trabajo revisa los avances recientes para integrar la sostenibilidad en las recomendaciones dietéticas y en las guías alimentarias poniendo en valor el papel de los cereales como la base de patrones dietéticos saludables y sostenibles. Como particularmente importante se analiza un enfoque que propone un mayor apego a las guías alimentarias existentes como un objetivo más realista y factible para mejorar el impacto medioambiental y de salud de los sistemas alimentarios. En este contexto, los cereales tienen un papel clave al ser un pilar fundamental de los patrones dietéticos saludables y sostenibles por su aporte de energía y de nutrientes a nivel global, así como por los diferentes beneficios para la salud que se asocian con un consumo adecuado de cereales integrales y fibra de cereales. Over the last years, the impact of food systems on human and planetary health has been appointed. The transition towards more sustainable and healthier diets is postulated as an urgent measure to address the increasing environmental and health concerns related to the current food production and consumption systems.This work reviews recent developments to integrate sustainability into dietary recommendations and food-based dietary guidelines, recognising the role of cereals as the basis for healthy sustainable dietary patterns. It is worth noting that a change in current eating patterns, to achieve greater adherence to existing official dietary guidelines, is proposed as a more realistic and feasible goal to improve the environmental and health impact of food systems. In this context, cereals play a key role as fundamental pillar of healthy and sustainable dietary patterns, due to their energy and nutrient contribution to human diet worldwide, and the different health benefits associated with an adequate intake of grain fibre and wholegrains. Fundamentos: La quinua es un pseudocereal andino, de gran importancia para la seguridad alimentaria en Latinoamérica yel mundo. En el presente artículo, se exponen diversos atributos y aplicaciones funcionales, para este producto ancestral. Métodos: Se realizó una revisión general de literatura, siguiendo el protocolo PRISMA, que involucró una investigación cualitativa secundaria de índole teórico. Resultados: La quinua posee un excelente valor nutritivo, albergando proteína de alta calidad, fibra dietética, ácidos grasos insaturados, vitaminas y minerales. Se destacan su potencial antioxidante, hipocolesterolémico, citoprotector y coadyuvante en el tratamiento de la diabetes. Productos como panes, pastas, cereales y embutidos, han sido elaborados con éxito incorporando este insumo. Conclusiones: El uso de los granos y las hojas de la quinua, con otros fines, como la obtención de aceites, separación de saponinas y fabricación de extractos medicinales, cobran gran interés y prominencia en la actualidad. Background: Quinoa is an andean pseudocereal, of great importance for food security. In this article, functional applications are exposed for this ancestral product. Methods: A general literature review was carried out, following the PRISMA protocol, which involved a qualitative secondary research, of a theoretical nature.Results: Quinoa has an excellent nutritional value, harboring high quality protein, dietary fiber, unsaturated fattyacids, vitamins and minerals. Its antioxidant, hypocholesterolemic, cytoprotective and coadjuvant potential in the treatment of diabetes, stand out. Products such as breads, pasta, cereals and sausages, have been successfully prepared incorporating quinoa.Conclusions: The use of its grains and leaves for other purposes, such as obtaining oils, separating saponins and manufacturing medicinal extracts, are gaining great interest andprominence. La modulación de la microbiota intestinal está emergiendo como un enfoque plausible para promover la salud así como la prevención y el tratamiento de las enfermedades. Los cambios en los macronutrientes de la dieta tienen efectos específicos sobre la microbiota intestinal de los individuos. Específicamente, existe evidencia que sugiere que la fibra dietética puede modificar la abundancia, la diversidad y el metabolismo de la microbiota intestinal.Este trabajo contribuye a la comprensión del impacto del consumo de las fibras intactas de los cereales sobre la microbiota intestinal. La evidencia más sólida apunta al papel del salvado de trigo y la fibra de trigo integral como promotores de la diversidad de la microbiota intestinal, ya que la fibra de trigo demostró los efectos prebióticos más consistentes, con un aumento de tan solo 6 g al día. Modulation of the human gut microbiota is emerging as a plausible approach to promoting health and preventing and treating disease. Changes in dietary macronutrients, mainly in carbohydrates, exert specific effects on the human gut microbiota. Specifically, there is evidence that supports that dietary fiber may influence the abundance, diversity, and metabolism of the human gut microbiota.This work contributes to the understanding of the impact of intact cereal fiber consumption on the gut microbiota of healthy adults. The strongest evidence points to the role of wheat bran and wholegrain wheat fiber promoting gut microbiota diversity, since wheat fiber demonstrated the most consistent prebiotic effects, with demonstrable effects, with an increase in wheat fiber as low as 6 g/day. INTRODUCTION AND OBJECTIVES: Wheat and cereal grains have a broad range of cross-reactivity, but the clinical relevance of this cross-reactivity is uncertain. This study aimed to evaluate clinical and in vitro cross-reactivity with barley, oat, and Job's tears among wheat-allergic patients. MATERIALS AND METHODS: Patients aged 5 to 15 years with IgE-mediated wheat allergy were enrolled. Skin prick test (SPT) and specific IgE (sIgE) to wheat, barley, and oat, and SPT to Job's tears were performed. Oral food challenge (OFC) was conducted if the SPT was ≤5 mm in size and there was no history of anaphylaxis to each grain. Profiles of sIgE bound allergens of wheat, barley, and oat, and inhibition ELISA of IgE binding to barley and oat with wheat were performed. RESULTS: Ten patients with a median age of 8 years were enrolled. Nine of those patients had a history of wheat anaphylaxis. The median SPT size and sIgE level to wheat was 7.3 mm and 146.5 kUA/l, respectively. The cross-reactivity rate for barley, oat, and Job's tears was 60.0%, 33.3%, and 20.0%, respectively. Significantly larger SPT size and higher sIgE level were observed in patients with positive cross-reactivity to barley and oat when compared to patients without cross-reactivity. Barley and oat extracts inhibited 59% and 16% of sIgE bound to wheat gliadins and glutenins, respectively. CONCLUSION: The cross-reactivity rate was quite low for oat and Job's tears compared to that of barley; therefore, avoidance of all cereal grains may be unnecessary in patients with severe wheat allergy

INTRODUCCIÓ: La SEIPA (síndrome d'enterocolitis induïda per proteïnes alimentàries) és un tipus d'al·lèrgia alimentària poc coneguda I potencialment greu que pot arribar al xoc. Tot I la potencial gravetat que presenta, el coneixement d'aquesta patologia és baix, I en molts casos és infradiagnosticada. El fet de conèixer l'entitat en facilita el diagnòstic I el tractament correctes a urgències. OBSERVACIÓ CLÍNICA: Es presenten tres casos clínics de tres lactants de mesos, que acudeixen a urgències amb clínica de vòmits persistents, deposicions diarreiques, pal·lidesa, letargia I hipotonia. No van presentar cap altre símptoma d'anafilaxi. Aquesta clínica va aparèixer unes hores després de la ingesta de cereals, en els dos primers casos, I d'ou, en el tercer, I només en el segon dels casos era una primera exposició a l'al·lergen. Tots tres van millorar amb tractament simptomàtic a urgències (fluïdoteràpia, I ondansetró en un dels casos) al cap de 2 o 3 hores. En tots tres casos es van obtenir proves d'al·lèrgia mediada per IgE negatives, I a l'evitar l'aliment implicat no han aparegut nous símptomes. En un dels casos es va fer la prova de provocació per corroborar el diagnòstic. COMENTARIS: La SEIPA és una al·lèrgia no mediada per IgE a diversos aliments. Els més freqüents són la llet de vaca, la de soja I l'arròs. La forma aguda es diagnostica sovint al voltant dels 4-8 mesos. Un cop descartada l'al·lèrgia mediada per IgE típica, el diagnòstic es basa en el compliment d'un seguit de criteris clínics. El tractament durant l'episodi agut són mesures de suport, I el definitiu és evitar l'aliment implicat. El coneixement de les característiques de l'entitat fa més senzill el diagnòstic


INTRODUCCIÓN: El SEIPA (síndrome de enterocolitis inducido por proteínas del alimento) es un tipo de alergia alimentaria poco conocida y potencialmente grave que puede llegar al choque. A pesar de su potencial gravedad, el conocimiento de esta patología es escaso, y en muchas ocasiones está infradiagnosticada. El conocimiento de esta enfermedad facilita su correcto diagnóstico y tratamiento en urgencias. OBSERVACIÓN CLÍNICA: Se presentan tres casos clínicos de lactantes que acuden a urgencias con clínica de vómitos persistentes, deposiciones diarreicas, palidez cutánea, letargia e hipotonía. No presentaron ningún otro signo de anafilaxia. Esta clínica apareció unas horas después de la ingesta de cereales, en los dos primeros casos, y de huevo, en el tercero, y sólo en el segundo de los casos se trataba de una primera exposición al alérgeno. Los tres mejoraron con tratamiento sintomático en urgencias (fluidoterapia, y ondansetrón en uno de los casos) en 2-3 horas. En los tres casos se obtuvieron pruebas de alergia mediada por IgE negativas, y al evitar el alimento implicado no reaparecieron los síntomas. En uno de los casos se realizó prueba de provocación para corroborar el diagnóstico. COMENTARIOS: La SEIPA es una alergia no mediada por IgE a diversos alimentos. Los más frecuentes son leche de vaca, leche de soja y arroz. La forma aguda se diagnostica frecuentemente alrededor de los 4-8 meses. Una vez descartada la alergia mediada por IgE típica, el diagnóstico se basa en el cumplimiento de una serie de criterios clínicos. El manejo durante el episodio agudo se basa en medidas de soporte, y el tratamiento definitivo consiste en evitar el alimento implicado


INTRODUCTION: Food protein-induced enterocolitis syndrome (FPIES) is a relatively unknown and potentially serious type of food allergy that can lead to shock. Despite its potential severity, it is often underdiagnosed. Therefore, clinical suspicion of this entity is very important. The awareness of this disease makes its correct diagnosis and treatment possible in the emergency department. CASE REPORTS: We present three cases of infants who presented to the emergency department with symptoms of persistent vomiting, diarrhea, pale skin, lethargy and hypotonia. They did not present any other signs of anaphylaxis. These symptoms appeared a few hours after the ingestion of cereals in the first two cases, and eggs in the third. All three improved in 2-3 hours with symptomatic treatment in the emergency department (intravenous fluid therapy, ondansetron in one of the cases). In all three cases, Results of IgE-mediated allergy tests were negative and withdrawal of the suspected trigger avoided new episodes. In one of the cases, a provocation test was performed to corroborate the diagnosis. COMMENTS: FPIES is a non-IgE-mediated allergy, triggered by various foods. The most frequent are cow's milk, soybean and rice. It is most frequently diagnosed around 4-8 months of age. Once the typical IgE-mediated allergy is ruled out, the diagnosis is based on a series of clinical criteria. Treatment during the acute episode includes support measures. The definitive treatment is based on avoiding the food involved

Wheat gluten proteins are decisive for the industrial properties of flour, so alterations resulting from grain infection with Fusarium graminearum produce changes in the glutenin content that affect the baking properties. This work analyzes the high-molecular-weight glutenin changes from wheat flour with different degrees of F. graminearum infection at field, since these proteins are determinant for the quality properties of flour. Wheat cultivars-on field trials-infected with F. graminearum isolates of diverse aggressiveness showed severity values between 9.1 and 42.58% and thousand kernel weight values between 28.12 and 32.33 g. Negative correlations between severity and protein content and positive correlations between yield and protein content were observed, employing reversed-phase high-performance liquid chromatography and polyacrylamide gel electrophoresis. Furthermore, the protein signal changes were in agreement for both methodological approaches. Also, the degree of disease observed and the protein changes on infected wheat cultivars varied in relation with the aggressiveness of the isolate responsible for the infection. The principal component analysis showed a close arrangement among protein values obtained by HPLC. For each cultivar, two principal components were obtained, which explained 80.85%, 88.48%, and 93.33% of the total variance (cultivars Sy200, AGP Fast, and Klein Tigre respectively). To our knowledge, the approaches employed for the analysis of protein changes according to the degree of disease, as well as the thorough statistical analysis, are novel for the study of Fusarium Head Blight

Durante los primeros 6 meses de vida, el lactante se puede alimentar exclusivamente con leche materna o, en su defecto, con una fórmula infantil, que cubre totalmente sus necesidades nutricionales. Sin embargo, el aumento de los requerimientos nutricionales a partir de esta edad, así como la maduración neurológica, digestiva y renal, hacen necesaria la diversificación de la dieta del lactante. Atendiendo a estas razones, así como a otras de tipo sociocultural, los cereales constituyen una fuente nutricional de gran interés en esta etapa, que con frecuencia es el primer alimento distinto a la leche materna o fórmula que se introduce en su alimentación. Representan una importante fuente de energía por su contenido en hidratos de carbono, y también aportan, aunque en menor cantidad, proteínas de bajo valor biológico, minerales, ácidos grasos esenciales y vitaminas. En este trabajo se revisan los principales aspectos relacionados con su origen, uso, composición y regulación, así como su papel en la adquisición de unos hábitos de alimentación saludables en la infancia


Infants can be exclusively breast fed or formula fed for the first 6 months of life and their nutritional requirements are completely fulfilled. However, the increase of nutritional requirements as well as neurological, digestive and renal function maturation from 6 months of age onwards, makes necessary the diversification of infant feeding. According to these factors, and considering sociocultural aspects, cereals have always been a nutritional source of interest during complementary feeding. They have frequently been the first food different from milk to be introduced during this period. Cereals represent a main source of energy due to their content in carbohydrates, but also provide low biological value protein, minerals, essential fatty acids and vitamins. In this article, main aspects related to their origin, use, composition and regulations are reviewed, as well as its importance in healthy nutritional habits acquisition in infancy

Introducción: los granos de quinoa presentan en su episperma saponinas, compuestos con actividad antinutricional y que le otorgan sabor amargo al grano, por lo que deben desamargarse previo a su consumo. La falta de precisión acerca de las condiciones más adecuadas para realizarlo por método húmedo, evidencia la necesidad de contar con información que aporte claridad. Objetivo: el objetivo del trabajo fue evaluar las condiciones de desamargado vía húmeda en granos de quinoa, con el fin de comparar su efectividad con un método cuantitativo. Materiales y métodos: se evaluaron como variables el tiempo, relación agua/granos y temperatura. Para determinar el contenido de saponinas residuales, se utilizó el método de la espuma (estimación afrosimétrica) y se compararon los resultados con espectrofotometría. Resultados y discusión: todas las variables ejercieron un efecto significativo y una correlación negativa sobre el contenido de saponinas. La interacción de las variables permitió establecer las condiciones de extracción que tuvieron mayor eficiencia: 6 minutos, relación masa granos/solvente 10 mL/g, independientemente de la temperatura. Por espectrofotometría, se observó la misma tendencia. Conclusiones: la conjugación de estas condiciones permite realizar lavados en tiempos breves, con una cantidad de agua determinada y sin la necesidad de aplicar temperatura. El método demostró ser sencillo, práctico y eficiente para la remoción de las saponinas


Introduction: quinoa grains present in its episperm saponins, compounds with antinutritional activity that give bitter flavor to the grain. Therefore, they must be previously removed for their consumption. The lack of precision about the most appropriate conditions to perform it by wet method, demonstrates the need to have information that provides clarity. Aim: the aim of this work was to evaluate the conditions of wet de-bittering in grains of quinoa, in order to compare its effectiveness with a quantitative method. Materials and methods: Time, water/grain mass ratio and temperature were evaluated as variables. To determine the content of saponins, foam method (afrosimetric estimation) was used and the data obtained by spectrophotometric method was used to compare. Results and discussion: All the variables presented a significant effect and a negative correlation on the saponin content. The interaction between the variables allowed establishing the conditions of extraction that had greater efficiency: 6 minutes, solvent/grain mass ratio 10:1, independently of the temperature. The same tendency was observed by spectrophotometry. Conclusions: the conjugation of these conditions enables to carry out washes in short periods of time, with a certain amount of water and without the need to apply temperature. The method proved to be simple, practical and efficient for the removal of saponins

Las plantas han desarrollado un sistema de resistencia a insectos y plagas mediante la síntesis de compuestos como los inhibidores de las alfa-amilasas y/o las proteasas digestivas, proteínas que actúan también contra las enzimas digestivas de mamíferos. Diversos estudios han demostrado su implicación en la activación del sistema inmune y posiblemente, en la sintomatología de patologías como la Sensibilidad al Gluten no Celíaca, siendo esta reacción proporcional al contenido en el cereal. El objetivo de este trabajo fue realizar una revisión de las diferentes estrategias para la extracción, purificación, detección y cuantificación de estas proteínas en el trigo y en otros cereales de la dieta actual. Esta revisión incluyó los métodos de análisis con espectrometría de masas del periodo 2000 - 2017, identificándose 114 artículos relevantes de los que se seleccionaron 26. Actualmente no existe un método estandarizado de control que permita determinar estas proteínas de forma clara, concisa y fiable


Plants have developed a system of resistance to insects and pests through the synthesis of certain compounds such as alpha-amylase inhibitors and/or digestive proteases, proteins that can also act against digestive enzymes of mammals. Studies have shown their involvement in the activation of the immune system and possibly in the symptomatology of non-coeliac Gluten Sensitivity, being the reaction proportional to cereal content. The objective of this study was to review the different strategies used for extraction, purification, detection and quantification of these inhibitors in wheat and other cereals of the current diet. A review of the literature published between 2000-2017 on methods of analysis by mass spectrometry was carried out. 114 relevant articles were identified from which 26 were selected for review. At present, there is no standardized control method for the clear, concise and reliable determination of these proteins

El elevado consumo de azúcar en la infancia contribuye a la actual epidemia de caries dental y de obesidad infantil, además de influir de forma negativa en las bajas tasas de lactancia materna. Entre las medidas para controlar este consumo está la determinación, por parte de las autoridades sanitarias, de la cantidad máxima de azúcar existente en los alimentos infantiles elaborados por la industria alimentaria. El presente artículo inspecciona las normas que regulan en Europa y en España la presencia de azúcar en alimentos infantiles distintos a fórmulas lácteas (preparados para lactantes o preparados de continuación): la Directiva 2006/125/CE y el Real Decreto 490/1998. Tras revisar la técnica legislativa y de compilación o refundición de normas, el respeto de plazos y la idoneidad de los procedimientos, podemos concluir que la falta de rigor es patente. Con respecto a las cifras de azúcares permitidos en alimentos infantiles, distan mucho de ser idóneas, hasta el punto de que pueden considerarse un factor obesogénico y de promoción de malos hábitos alimentarios en la infancia. Por ello, cabe preguntarse a quién protege la legislación, si a la salud infantil, o más bien a los intereses de la industria azucarera (AU)


The high level of sugar intake in infancy and childhood contributes to the current epidemic of tooth decay and childhood obesity, influencing negatively, as well, on low rates of breastfeeding. One of the measures to control this consumption is the determination by the health authorities of the maximum amount of existing sugar in infant foods produced by the food industry. This article inspects the law in Europe and Spain governing the presence of sugar in baby foods other than infant formula: Directive 2006/125/EC and Royal Decree 490/1998. After reviewing the legislative and compilation or consolidation technical rules, the respect of deadlines and the suitability of the procedures, we can conclude that the lack of accuracy is evident. Regarding the amount of sugars allowed in baby foods, they are far from ideal, to the extent that they can be considered an obesogenic factor and an issue that promote bad dietary habits throughout childhood. Therefore, we can question if the law protects infant’s health or the interest of sugary industry (AU)

OBJETIVO: Valorar el patrón dietético de la población escolar del Área de Salud La Mancha Centro (Ciudad Real). METODOLOGÍA: Estudio transversal sobre una muestra representativa de los escolares de 6 a 12 años. Se utilizó un cuestionario para explorar los hábitos dietéticos generales y un recordatorio de ingesta de 24 h. RESULTADOS: Se evaluó a 1.142 escolares, 612 niños (53,6%) y 530 niñas (46,4%), con una edad de 9,3±1,7 años. La frecuencia de la ingesta de alimentos, de 4,62±0,6 veces al día, decrecía de forma estadísticamente significativa con la edad de los escolares (p = 0,044) y aumentaba con el nivel educativo de los padres (p = 0,004). La preferencia era un factor influyente en la elección de los alimentos consumidos. El grado de apetito se relacionó de forma directa con el peso y el índice de masa corporal (p< 0,001), la edad (p = 0,02) y el número de ingestas diarias (p = 0,038). Los grupos de alimentos más frecuentemente ingeridos fueron los cereales y derivados (92,8%), la leche y derivados (90,45%) y los menos, las verduras y hortalizas (35,46%). Más del 70% de la muestra consumía como aceite habitual el de oliva. CONCLUSIÓN: El patrón dietético de los escolares mantiene algunas de las características del patrón de dieta mediterránea tradicional, como el hábito de desayuno, el elevado consumo de aceite de oliva o de cereales, pero no otras, destacando el escaso consumo de verduras y frutas, y el elevado de carnes


OBJECTIVE: To assess the dietary pattern of the school population from La Mancha-Centro Health Area (Ciudad Real). METHODOLOGY: A cross-sectional study conducted on a representative sample of schoolchildren aged 6 to 12 years, using a questionnaire to determine their general dietary habits and a record of their 24-hour intake. RESULTS: A total of 1142 schoolchildren were included, with 612 boys (53.6%) and 530 girls (46.4%), and a mean age of 9.3±1.7 years of age. The frequency of food intake was 4.62±0.6 times a day, which decreased with the age of the schoolchildren (P=.044), and increased with the educational level of parents (P=.004). Food preference influenced the choice in the meals consumed. The level of appetite was related directly with weight and body mass index (BMI)(P<.001), age (P=.02), and number of daily food intakes by the children (P=.038). The food groups most frequently consumed were cereals and their derivatives (92.8%), milk and dairy products (90.45%), while vegetables were the least consumed (35.46%). Over 70% of the sample usually consumed olive oil. CONCLUSION: The dietary pattern of the school population maintains some of the features of traditional Mediterranean dietary pattern, such as the habit of daily breakfast, the greater consumption of olive oil and cereals. On the other hand, other characteristics are remarkable, such as the low consumption of fruit and vegetables and the high consumption of meat

Las micotoxinas son metabolitos fúngicos que aparecen comúnmente como contaminantes de muchos cereales y pueden causar una amplia variedad de efectos tóxicos. En el presente estudio, se analizó un total de 182 muestras de diferentes cereales (arroz, trigo, maíz, avena, espelta, soja y tapioca) obtenidos en establecimientos de la Comunidad Valenciana (España). Se examina la presencia de deoxinivalenol (DON) y se realiza un estudio estadístico de las muestras según el tipo de cultivo (orgánico o convencional), su composición, el tipo de producto y la marca (comercial o blanca) para estimar si estos parámetros influyen en la concentración de DON. Del total de muestras, 111 estaban contaminadas con DON, pero en concentraciones inferiores a los límites permitidos por la legislación europea. Se observó mayor incidencia de DON en muestras de trigo (80%) seguidas de maíz (35%) y arroz (13%), pero sin diferencia significativa (p>0,05) entre el tipo de cereal; ni con la práctica agrícola. Sin embargo, los resultados demostraron que el tipo de producto en el cereal procesado (p<0,001; los productos a base de lluvia y sémola presentaran valores mayores de DON que los fideos), los componentes del alimento procesado (p<0,01; los niveles de DON eran superiores en las rosquilletas de pan simples respecto a las rosquilletas con queso y con chocolate ) y la marca (p<0,05; las marcas blancas contienen más DON que las comerciales) si influyen en los niveles de DON hallados en las muestras de trigo (AU)


Mycotoxins are fungal metabolites that commonly appear as contaminants in many cereals and can cause a variety of toxic effects. In this study, a total of 182 samples of different cereals (rice, wheat, corn, oats, spelt, soy and tapioca) obtained in establishments of Valencia (Spain) were analyzed. The presence of deoxynivalenol (DON) was determined and a statistical study of the samples was performed according to the type of crop (organic or conventional), its composition, the type of product and brand (commercial or white) to estimate whether these parameters influence DON concentration. Of the total samples, 111 were contaminated with DON, but their concentration were below the limits allowed by European legislation. Higher DON concentration was observed in wheat samples (80%) followed by corn (35%) and rice (13%), but no significant difference (p> 0.05) between the type of cereal; or harvest conditions. However, the results showed that the type of product in the processing cereal (p <0.001; the rain-based products and grits presented higher values of DON than noodles), processed food components (p <0.01; DON levels were higher in simple snacks than snacks bread with cheese and chocolate) and brand (p <0.05; white brands contain more DON than commercial ones) have related to DON concentration found in wheat samples (AU)

En este estudio se ha realizado una investigación sobre residuos de plaguicidas en muestras de frutas, verduras y hortalizas y cereales en la Comunidad Autónoma de Aragón durante el periodo 010-2013. Para ello, se ha llevado a cabo un análisis de los resultados obtenidos de dichas muestras, y en aquellas que se ha superado el Límite Máximo de Residuos (LMR), se ha realizado una evaluación del riesgo mediante el modelo de la Autoridad Europea de Seguridad Alimentaria (EFSA) PRIMo. Solamente en un 6% de las 183 muestras analizadas se ha superado el LMR. De éstas, únicamente en un melocotón y en una borraja se han detectado riesgos de toxicidad aguda para los consumidores (AU)


In this study we have conducted research on pesticide residues in samples of fruits, vegetables and cereals in Aragon during the period 2010-2013. To do this, we have conducted an analysis of the results of these samples, and those that have exceeded the Maximum Residue Limit (MRL) has been performed a risk assessment by EFSA PRIMo model. Only in 6% of the 183 analyzed samples exceeded the MRL. Of these, only a peach and a borage were detected acute toxicity risks to consumers (AU)

Las fórmulas de continuación y los cereales infantiles van enriquecidos según lo establecido por la legislación. Sin embargo, el enriquecimiento de alimentos infantiles no es siempre igual de efectivo. En el caso del hierro, no todas las sales autorizadas por ley presentan la misma biodisponibilidad; por tanto, podría producirse una baja absorción de hierro no detectada que dé lugar a situaciones de deficiencia. Una dieta deficitaria durante el inicio de la alimentación complementaria (4-7 meses) es la principal causa de deficiencia de hierro, y suele estar ocasionada también por otros factores, como la presencia en la dieta de compuestos que modifican la absorción de hierro (p. ej., fitatos, calcio, oxalatos, vitamina C o proteínas). La carencia de hierro es, en la actualidad, el problema nutricional con más prevalencia entre la población. En la mayoría de los países no industrializados amenaza a más del 60% de las mujeres y niños, mientras que en los países industrializados el 12-18 % de las mujeres y el 9,6% de los niños sufren anemia. Por tanto, la alimentación complementaria es un vehículo idóneo para realizar una intervención nutricional preventiva y evitar que se produzcan situaciones carenciales. La búsqueda de fuentes de hierro altamente absorbibles supone un reto clave para la industria de alimentos infantiles (AU)


The following formulas and infant cereals are fortified according to the provisions of the legislation. However, baby food fortification is not always as effective. In the case of iron, not all salts authorized by law have the same bioavailability, and therefore may cause a low iron absorption undetected leading to situations of deficiency. A deficient diet during startup of complementary feeding (4-7 months) is the main cause of iron deficiency, and is usually caused by other factors such as the presence of compounds modifying dietary iron absorption, as phytates, calcium, oxalates, vitamin C or protein. Iron deficiency is currently the most prevalent nutritional problem among the population. In most industrialized countries threatens more than 60% of women and children, while in industrialized countries between 12-18% of women and 9.6% of children suffer from anemia. Therefore, supplementary feeding is an ideal vehicle for preventive nutritional intervention and avoids situations of need. The search for sources of highly absorbable iron is a key challenge for the baby food industry (AU)

Background and aims: childhood obesity in Chile is a serious problem with the prevalence continuing to increase over the last decade, despite all governmental efforts to diminish it. Studies indicate that the consumption of certain foods may help to control body weight. The objective of this study was to evaluate the relationship between ready-to-eat cereals (RTEC), body mass index and nutritional intake of macronutrients and micronutrients in school children from Santiago, Chile. Methods and results: the study included 1 477 children aged 6-13 years who were evaluated by trained nutritionists. Weight, height and waist circumference were measured and a 24-hour recall questionnaire was administered in which the hours spent watching TV were also recorded. Overall, 32% of boys and 28 % of girls were overweight but the difference between them was not significant. All children, regardless of sex, showed a significant inverse relationship between amounts of RTEC consumed and body mass index (BMI). Those girls that consumed higher amount of RTEC had a reduced waist circumference than those that had a lower intake. A high consumption of RTEC in all children was related to a higher intake of calories, proteins, carbohydrates, calcium and zinc and to a lower intake of calories from fat. RTEC consumption was also associated with lower risk of being overweight/obese. Conclusion: this study identifies RTEC intake as a potential indicator of a healthy diet. Controlled interventions are necessary to isolate the effect of RTEC consumption from other participating factors (AU)


Introducción y objetivos: la obesidad infantil en Chile es un problema serio de salud, con una prevalencia que ha ido en aumento durante las últimas décadas, a pesar de todos los esfuerzos gubernamentales por combatirla. Algunos estudios indican que el consumo de ciertos alimentos puede ayudar en el control del peso corporal. El objetivo de este estudio fue evaluar la relación entre los cereales listos para comer (CLC), el índice de masa corporal y la ingesta de macro y micronutrientes en escolares de Santiago de Chile. Métodos y resultados: el estudio incluyó 1.477 niños con edades entre los 6-13 años que fueron evaluados por nutricionistas entrenados. Se midieron peso, talla y circunferencia de la cintura, además se aplicó una encuesta alimentaria por recordatorio de 24 horas y se preguntó por el número de horas que veían TV. Del total, el 32% de los niños y el 28% de las niñas presentaron exceso de peso, diferencia que no fue significativa. Todos los niños, independientemente del género, mostraron una asociación inversa significativa entre el consumo de CLC y el índice de masa corporal. Aquellas niñas que consumían mayores cantidades de CLC tenían menor circunferencia de cintura que aquellas que consumían menos. Un mayor consumo de CLC en todos los niños estuvo relacionado con mayor ingesta de calorías, proteínas, carbohidratos, calcio y zinc, además de con un menor consumo de calorías provenientes de las grasas. El consumo de CLC también estuvo asociado con menor riesgo de ser obeso o padecer sobrepeso. Conclusión: este estudio muestra que la ingesta de CLC es un indicador potencial de una dieta saludable. Son necesarias intervenciones más controladas para evaluar el efecto aislado de los CLC en comparación con otros factores (AU)
