RESUMO

The microbiota of traditional food provides a rich reservoir of biodiversity to find new strains with interesting features for novel functional food formulation. Therefore, this study aimed to investigate the biofunctional potential of the lactic acid bacteria (LAB) strain Jb21-11 isolated from Jben, a traditional Algerian fresh cheese. This isolate was selected out of a collection of 154 LAB based on its exopolysaccharide (EPS) phenotype and was preliminarily identified by polyphasic characterization as Lactiplantibacillus plantarum (previously known as Lactobacillus plantarum) and its biofunctional properties were then assessed in vitro. The tested strain demonstrated good resistance to gastric juice, acidity around pH 2, and 2% (v/v) bile salts, which are important characteristics for potential biofunctional LAB candidates. It also showed a good production of ropy EPS with 674 mg/L on MRS medium. However, this ability appears to compromise the adhesion of the strain to Caco-2 cells (less than 1%), which according to our results, seems not to be related to autoaggregation and hydrophobicity (44.88 ± 0.028% and 16.59 ± 0.012%). Furthermore, promising antimicrobial activity against three pathogenic bacteria (Escherichia coli, Staphylococcus aureus, and Salmonella) was detected probably due to antimicrobial metabolites excreted during fermentation process into the medium. Moreover, the strain L. plantarum Jb21-11 displayed a therapeutic functionality with both anti-inflammatory and immunomodulatory action using RAW 264.7 cells. The chemical features of the novel ropy Jb21-11-EPS were also investigated revealing the presence of three monosaccharides, namely, mannose, galactose, and glucose, with a molar ratio of 5.42:1.00:4.52 linked together by α- and β-glycosidic bonds, presenting a relatively high molecular weight of 1.08 × 105 Da of interest for a texturing potential. Therefore, the new producing EPS strain Jb21-11 is a promising candidate for use as an adjunct culture for improving the texture of functional food.(AU)

Fundamentos: La dieta familiar influye en el estado de nutrición de sus integrantes, consumir dietas menos diversas, de poca calidad o alimentos con poco o nulo aporte nutricional tendrá repercusiones importantes en el estado de salud. En comunidades rurales la dieta se ve condicionada por los niveles de seguridad alimentaria, por lo que se vuelve de vital importancia evaluar las características de la dieta para revertir la carga de malnutrición concentrada en estas áreas geográficas. Métodos: Se utilizó la información del cuestionario semicuantitativo de frecuencia de consumo familiar de alimentos (de siete días) de un estudio transversal descriptivo observacional del Instituto Nacional de Ciencias Médicas y Nutrición Salvador Zubirán (INCMNSZ) realizado en el año 2017 dentro de dos localidades de la Zona Mazahua, Estado de México. Se analizaron dos características de la dieta (calidad y equilibrio) de 48 familias, para lo cual se estimó el total de kilocalorías obtenidas en su dieta familiar y se dividió en porcentajes según el macronutriente de donde se obtuvieron, categorizando como dieta equilibrada a aquellas que se encontraran dentro los rangos recomendables de los tres macronutrientes. A su vez, se clasificaron los alimentos en: “recomendables para consumo cotidiano”, y “no recomendables para su consumo cotidiano” como criterio para categorizar la característica de calidad. Resultados: Se observó que el 74,21% de la energía obtenida a nivel familiar fue a partir de alimentos “recomendables para consumo cotidiano”, siendo la distribución de macronutrientes obtenidos a partir de los alimentos recomendables el 38,50% a través de carbohidratos, 24,08% lípidos y 11,62% proteínas. El 22,92% de las familias evaluadas mantenía una dieta equilibrada. Conclusión: La calidad de la dieta es adecuada debido a que proviene mayoritariamente de alimentos recomendables para su consumo cotidiano, sin embrago ... (AU)


Background: The family diet influences the nutritional status of its members; consuming less diverse diets, of poor quality, or foods with little or no nutritional contribution will have important repercussions on the state of health. In rural communities, the diet is conditioned by the levels of food security, it becomes vitally important to evaluate the characteristics of the diet to reverse the burden of malnutrition concentrated in these geographical areas. Methods: Information from the semi-quantitative questionnaire on family food consumption frequency (seven days) from a descriptive observational cross-sectional study of the Salvador Zubirán National Institute of Medical Sciences and Nutrition (INCMNSZ) carried out in 2017 in two locations in the Zone Mazahua, State of Mexico. Two characteristics of the diet (quality and balance) of 48 families were analyzed, for which the total kilocalories obtained in their family diet were estimated and divided into percentages according to the macronutrient from which they were obtained, categorizing as balanced diet those that they will be within the recommended ranges of the three macronutrients. In turn, the foods were classified as: "recommended for daily consumption" and "not recommended for daily consumption" as a criterion to categorize the quality characteristic. Results: It was observed that 74.21% of the energy obtained at the family level was from foods "recommended for daily consumption", with the distribution of macronutrients obtained from these foods being 38.50% through carbohydrates, 24.08% lipids and 11.62% proteins. 22.92% of the families evaluated maintained a balanced diet. Conclusions: The quality of the diet is adequate because it comes mostly from foods recommended for daily consumption, however, it does not cover the parameters to categorize it as a balanced diet. Introducción: con ser importante, la alimentación en los hospitales medievales y modernos distó de la excelencia y abundancia que sugierenalgunos historiadores, probablemente por una incorrecta valoración de la documentación hospitalaria al considerar como destinado a la alimentación todo gasto en alimentos, cuando buena parte tuvo como destino la botica.Objetivo/método: identificar los alimentos utilizados para una finalidad terapéutica no nutricional durante la edad moderna en el Hospital deSantiago Apóstol de Vitoria (Álava, España), describir su sistema de consignación y revisar la bibliografía del periodo para facilitar estrategias devaloración documental a los investigadores.Resultados: entre 1592 y 1813 se identifican 42 grupos de alimentos adquiridos para finalidades terapéuticas no nutritivas. El sistema deanotación en los libros de gastos no es sistemático ni homogéneo sino muy variable y dependiente de quien efectuara el asiento. Se identifican27 términos para el reconocimiento de que un determinado alimento tuviera por destino la botica y no la cocina. Se escogen 14 textos sanitariosdel periodo como bibliografía clarificadora, encontrándose de mayor utilidad para los fines propuestos los manuales enfermeros del siglo XVII.Conclusiones: la variedad y cantidad de alimentos destinados a la botica evidencia el riesgo de confusión en los investigadores no familiarizadosal analizar las dietas hospitalarias desde los libros de contabilidad. La propuesta de términos y estrategias de discriminación del uso nutricionalo no nutricional de los alimentos adquiridos, junto a la recomendación bibliográfica, resulta indispensable para una adecuada valoración de lasdietas hospitalarias históricas. Introduction: although important, food in medieval and modern hospitals was far from the excellence and abundance suggested by somehistorians, probably due to an incorrect assessment of hospital documentation, considering all food expenditure to be for food when much of itwas destined for the apothecary’s shop.Aim/method: to identify the foodstuffs used for non-nutritional therapeutic purposes during the modern age at Hospital de Santiago in Vitoria(Alava, Spain), to describe the system of consignment, and to review the bibliography of the period in order to facilitate documentary assessmentstrategies for researchers.Results: between 1592 and 1813, 42 groups of foodstuffs acquired for non-nutritional therapeutic purposes were identified. The system of annotation in the expenditure books is neither systematic nor homogeneous, but highly variable and dependent on who made the entry. Twenty-seventerms were identified for the recognition that a given foodstuff was intended for the apothecary’s shop and not the kitchen. Fourteen sanitarytexts of the period were chosen as clarifying bibliography, finding the 17th century nursing manuals most useful for the proposed purposes.Conclusions: the variety and quantity of foodstuffs destined for the apothecary’s shop shows the risk of confusion in unfamiliar researcherswhen analysing hospital diets from account books. A proposal of terms and strategies for discriminating the nutritional or non-nutritional use ofthe food acquired, together with bibliographical recommendations, is essential for an adequate assessment of historical hospital diets. Introduction: there is an emerging current necessity of valid questionnaires, encompassing most of food, beverages, diseases, signs and symptoms currently related to the pathogenesis of adverse reactions to foodstuffs (ARFS) in the Spanish population. Objectives: this study aimed to design and validate two questionnaires to assess ARFS in the Spanish population, Food and Beverages Frequency Consumption Questionnaire to Identify Adverse Reactions to Foodstuffs (FBFC-ARFSQ-18); and Pathologies and Symptomatology Questionnaire associated with Adverse Reactions to Foodstuffs (PSIMP-ARFSQ-10). Methods: both questionnaires were designed adapting questionnaires from the literature; and validated, using the expert judgment method, in five phases: questionnaires development, pilot test and reliability, content validity, face validity, and ethical considerations. Questionnaires were developed using the REDCap™ tool hosted at the Universidad Politécnica de Madrid. A total of 20 Spanish experts evaluated the questionnaires. Cronbach’s alpha reliability coefficients were calculated using SPSS version 25.0 (IBM Corp., Armonk, NY-USA) and Aiken’s V coefficient values were calculated using ICaiken.exe (Visual Basic 6.0, Lima-Perú). Results: a final construct of questions was designed, ensuring no overlap, for FBFC-ARFSQ-18 and PSIMP-ARFSQ-10. Cronbach’s alpha reliability coefficients were 0.93 and 0.94; and Aiken’s V coefficient values were 0.90 (0.78-0.96 CI) and 0.93 (0.81-0.98 CI) for FBFC-ARFSQ-18 and PSIMP-ARFSQ-10, respectively. Conclusions: both validated questionnaires could be used to analyze the association between certain food and beverages consumption with ARFS, such as food allergies and food intolerances; also, to investigate the link between some specific diseases, signs and symptoms with ARFS.(AU)


Introducción: actualmente, existe una necesidad emergente de cuestionarios validados que abarquen la mayor parte de los alimentos, bebidas,enfermedades, signos y síntomas relacionados con la patogénesis de las reacciones adversas a los alimentos (RAA).Objetivos: diseñar y validar dos cuestionarios para evaluar las RAA en población española, el Cuestionario de Frecuencia de Consumo de Ali-mentos y Bebidas para Identificar Reacciones Adversas de Origen Alimentario (CFCAB-RAA-18); y el Cuestionario de Patologías y SintomatologíaAsociadas a Reacciones Adversas a Alimentos (PSIMP-RAA-10).Métodos: ambos cuestionarios se diseñaron adaptando cuestionarios de la literatura y se validaron, utilizando el método de juicio de expertos,en cinco fases: desarrollo de cuestionarios, prueba piloto y confiabilidad, validez de contenido, validez aparente y consideraciones éticas. Loscuestionarios se desarrollaron utilizando la herramienta REDCap™. Un total de 20 expertos evaluaron los cuestionarios. Se calcularon coefi-cientes de confiabilidad alfa de Cronbach con SPSS versión 25.0 (IBM Corp., Armonk, NY-Estados Unidos) y valores del coeficiente V de Aikencon ICaiken.exe (Visual Basic 6.0, Lima-Perú).Resultados: se diseñó una construcción final de preguntas, evitando solapamiento entre ambas herramientas. Fundamentos: Se tiene poca información sobre compra y consumo de alimentos ante el confinamiento por SARSCoV-2 en pacientes socioeconómicamente vulnerables. El objetivo fue evaluar la compra y consumo de alimentosante confinamiento por SARS-CoV-2 de pacientes con sobrepeso u obesidad pertenecientes a una Clínica de Salud Incluyente en la Ciudad de México. Métodos: Estudio observacional, transversal analítico, con pacientes de ambos sexos, entre 30 y 70 años, con sobrepeso u obesidad, sin ansiedad y depresión severa. Vía telefónica, se preguntó por la compra y el consumo de alimentos, percepción de cambios de peso corporal y tiempo para preparar alimentos. Se aplicó estadística descriptiva, pruebas de chi-cuadrado y razón de momios. El nivel de significancia fue de 0,05. Resultados: Muestra de 30 pacientes, 50% sexo femenino, con una edad promedio 57,2 ± 5,9 años. La más alta percepción de aumento de precio y escasez fue en los grupos de frutas, verduras y alimentos de origen animal. Consumen dieta completa en frutas y verduras: 33,3%; alimentos de origen animal: 56% y cereales: 100% de los pacientes. Se determinó que el 6,7% tenía dieta inocua y el 43,3% variada. La percepción de aumento de precio de alimentos de origen animal y leguminosas se relacionó con la de aumento de peso corporal (OR:21; IC95% 1,833- 240,52 y OR:35; IC95% 1,780-693,41). Conclusiones: Durante confinamiento, la percepción de aumento de precio y escasez de frutas, verduras y alimentos de origen animal puede explicar su bajo consumo. Las recomendaciones de nutrición deberán facilitar consumo de frutas, verduras, leguminosas y alimentos de origen animal entre pacientes socioeconómicamente vulnerables. (AU)


Background: There is little information on the purchase and consumption of food in the face of confinement in underserved patients. Objective: To evaluate purchase and consumption of food during the confinement due to SARS-CoV-2 among overweight or obese patients in an Inclusive Health Clinic in Mexico City. Methods: Observational, cross-sectional analytical study, with patients of both sexes, between 30 and 70 years old, with overweight or obesity, without severe anxiety and depression. Through telephone calls, purchase and consumption of food, changes in body weight perception and in the time to prepare food were asked. Descriptive statistics, chi square and odd ratios were applied. The significance level 0.05. Results: The sample of 30 patients, 50% women, average age 57.2 (+5.9) years. The highest proportion of perception of price increase and scarcity was in the fruits and vegetables and animal products. With complete diet in fruits and vegetables: 33.3%; animal products: 56% and cereals: 100%. From all, 6.7% innocuous diet and 43% varied diet. The perception of increase price in animal products and legumes is related to perceiving an increase in body weight (OR: 21; 95% CI: 1.833-240.52 and OR: 35; 95% CI 1.780-693.41). Conclusions: During confinement, the perception of price increase and scarcity in fruits, vegetables and animal products explain the low amount of consumption. Conclusion: Based on our results, the nutrition recommendations need to facilitate consumption of fruits, vegetables, legumes and animal products among uderserved patients. (AU)

Objetivo: Comparar la calidad nutricional de los alimentos y bebidas anunciados por televisión en España antes y después del plan para mejorar su composición. Método: Se grabaron las emisiones por televisión digital terrestre (TDT) en horario infantil de los canales más populares. Se registraron los productos anunciados en los cortes comerciales y su composición nutricional. Se comparó su distribución de frecuencias por categorías alimentarias y su adherencia al perfil nutricional de la Organización Mundial de la Salud en 2017 y 2020. Resultados: En 256 horas de emisión se identificaron 173 productos (78 en 2017 y 95 en 2020). Los más anunciados fueron los chocolates (26,9% en 2017 y 22,1% en 2020). El 76,3% de los productos anunciados eran no saludables (76,9% en 2017 y 75,8% en 2020; p = 0,86). Conclusiones: El perfil nutricional de los productos anunciados por televisión, mayoritariamente no saludables, no cambió tras la implantación del plan para mejorar su composición. Es preciso regular la publicidad alimentaria para proteger a los niños. (AU)


Objective: To compare the nutritional quality of the foods and beverages advertised on television in Spain, before and after the plan to improve their composition. Method: DTT broadcasts of the more popular channels were recorded in children's hours. Every advertised products in commercial breaks were registered and their nutritional data collected. We compared the distribution of frequencies by food categories and their adherence to the nutritional standards of the World Health Organization in 2017 and 2020. Results: In 256 h of broadcasting we identified 173 products (78 in 2017 and 95 in 2020). The most advertised products were chocolates (26.9% in 2017 and 22.1% in 2020). 76.3% of the products advertised were unhealthy (76.9% in 2017 vs. 75.8% in 2020; p = 0.86). Conclusions: The nutritional profile of the foods and drinks advertised on television, mostly unhealthy, did not change after the implementation of the plan to improve their composition. A regulation is needed to protect children from food advertising. (AU)

Para atender las necesidades alimentarias y nutricionales de una población creciente y garantizar los recursos naturales y productivos, lossistemas alimentarios deben experimentar cambios adoptando dietas más sostenibles. Diferentes organismos e instituciones recomiendanpatrones de dieta variada y equilibrada, con predominio de alimentos de origen vegetal y menor presencia de alimentos de origen animal, paramejorar el estado de salud y bienestar y reducir el impacto medioambiental. Este tipo de dietas presentan beneficios en la salud, sobre todosi están bien planificadas y los alimentos se combinan adecuadamente. Sin embargo, en algunas etapas de la vida (escolares, adolescentes,ancianos) y en situaciones fisiológicas especiales (embarazadas, deportistas) se debe prestar atención a los requerimientos nutricionales, quepodrían verse comprometidos en caso de no llevar a cabo una correcta planificación dietética, lo que podría derivar en problemas para la salud.Por ello, para facilitar la transición de los consumidores a una dieta sostenible, se deben promover estrategias bien diseñadas que incluyanprogramas de educación nutricional con instrucciones específicas acerca de las elecciones y combinaciones de alimentos más adecuadas paraaumentar el valor nutricional de la dieta. Además, en situaciones fisiológicas específicas en las que alcanzar los requerimientos nutricionalespudiera estar comprometido, podría considerarse el consumo de alimentos enriquecidos y/o la administración de suplementos. To meet the food and nutritional needs of a growing population and, at the same time, guarantee natural and productive resources, food systemsmust undergo changes in production models and consumption patterns, adopting more sustainable diets. The recommendations of differentorganizations and institutions are aimed at adopting a varied and balanced dietary pattern, with a greater predominance of plant-based food anda lower presence of animal food, to improve the state of health and well-being, while reducing the environmental impact. These types of diets haveimportant health benefits, especially if diets are well planned and foods are properly combined. However, in some stages of life (schoolchildren,adolescents, elders) and in some special physiological situations (pregnancy, athletes), special attention should be paid to the increase of certainnutritional requirements that could compromise the health status if a correct dietary planning is not carried out. Therefore, well-designed strategies should be put in place to facilitate the transition to a sustainable diet, including nutrition education programs for consumers with specificinstructions on the most appropriate food choices to increase the nutritional value of the diet. In addition, in specific physiological situations,where meeting nutritional requirements may be compromised, the consumption of fortified foods and/or supplementation could be considered. (AU)

Cardiovascular disease (CVD) is the leading cause of mortality worldwide. An unhealthy diet, among other risk factors, can be involved in the development of the disease. This type of diet is usually characterized by being low in unprocessed foods (fruits, vegetables, etc.) and high in ultra-processed foods (UPFs). It has been suggested that a high consumption of UPFs could be related to the development of CVD. However, as UPFs are a broad group in which multiple foods with different compositions coexist, it is not only difficult but also a generalization to draw a conclusion about their possible association. The present systematic review studies the relationship between the consumption of UPFs and the risk of CVD.A systematic review was performed in the PubMed database. PRISMA criteria were applied to identify articles that met the following criteria: studies performed in humans, in English or Spanish, and be original articles, excluding meta-analyses and reviews. The search was performed using the terms “Ultra-processed food” or “Fast food” and “Cardiovascular disease” or “Cardiovascular risk factor”, with a total of 10 articles included: 4 prospective cohort studies, 4 cross-sectional studies and 2 modeling studies.An association between the consumption of UPFs and CVD was found in all the studies analyzed. However, there are limitations with respect to the use of different food classification systems according to the degree of processing.This systematic review concludes that more studies are needed to establish with greater evidence the relationship between the consumption of UPFs and risk of CVD. Las enfermedades cardiovasculares (ECV) son la principal causa de mortalidad en el mundo. Una dieta poco saludable puede contribuir en el desarrollo de la enfermedad. Este tipo de dieta suele caracterizarse por ser baja en alimentos no procesados (frutas, verduras, etc.) y alta en alimentos ultra-procesados. Se ha observado que un consumo elevado de ultra-procesados podría estar relacionado con el desarrollo de ECV. Sin embargo, dado que los ultra-procesados son un grupo amplio en el que coexisten múltiples alimentos con diferentes composiciones, es difícil establecer su posible relación con la ECV. La presente revisión sistemática recopila la evidencia según la literatura científica disponible de la posible asociación entre el consumo de alimentos ultra-procesados y el riesgo de ECV.Se realizó una revisión sistemática en la base de datos PubMed siguiendo las recomendaciones PRISMA. Se incluyen los artículos que cumplían los siguientes criterios: estudios en humanos, publicados en inglés o español, y que fueran artículos originales, excluyendo meta-análisis y revisiones. La búsqueda se realizó utilizando los términos “Ultraprocessed food” o “Fast food” y “Cardiovascular disease” o “Cardiovascular risk factor”, se seleccionaron finalmente un total de 10 artículos: 4 estudios de cohortes prospectivos, 4 estudios transversales y 2 estudios de modelización.En todos los estudios analizados se encontró una asociación entre el consumo de alimentos ultra-procesados y la ECV. Sin embargo, existen limitaciones con respecto al uso de diferentes sistemas de clasificación de alimentos según el grado de procesamiento.Esta revisión sistemática concluye que se necesitan más estudios para establecer con mayor evidencia la relación entre el consumo de ultra-procesados y el riesgo de ECV. RESUMO

Las señales de daño molecular atraen a los neutrófilos hasta los lugares donde hay infección o inflamación. El receptor acoplado a la proteína G (GPR43) y el receptor para los compuestos avanzados de glicosilación (RAGE) reconocen a ácidos grasos de cadena corta (propionato y butirato) y AGEs (compuestos avanzados de glicosilación) respectivamente, estando ambos receptores abundantemente expresados en los neutrófilos y las células del epitelio intestinal. El papel funcional que juega la activación de estos receptores en la orquestación in vivo de la respuesta inmune no está claro. Nuestro trabajo examina el efecto de la ingesta de AGEs sobre la respuesta inmune, tanto en ratones sanos como en ratones a los que se les indujo una colitis, utilizando ratones transgénicos deficientes en los receptores GPR43 o RAGE. Uno de los principales hallazgos es que tanto el receptor GPR43 como el RAGE son necesarios para el reclutamiento de los neutrófilos en un modelo de inflamación intestinal por lesión de la barrera mucosa. Así mismo hemos comprobado que los AGEs ingeridos con la dieta promueven la aparición de un desequilibrio en el balance inflamatorio a nivel intestinal, dando lugar a un status proinflamatorio. Igualmente hemos demostrado que la carboximetillisina (CML), un tipo de AGE concreto, es capaz de estimular el receptor GPR43 y actuar como un factor quimioatractor de los neutrófilos. Finalmente, hemos ensayado el tratamiento con sRAGE, proteína capaz de captar AGEs libres. Este procedimiento podría ser una terapia prometedora para el tratamiento de la enfermedad inflamatoria intestinal. (AU)


Molecular damage signals attract neutrophils to sites of infection or inflammation. The G-protein coupled receptor (GPR43) and the receptor for advanced glicosilation compounds (RAGE) recognize short-chain fatty acids (propionate and butyrate) and AGEs (advanced glycosylation compounds) respectively, both receptors being abundantly expressed in neutrophils and intestinal epithelial cells. The functional role that activation of these receptors plays in the in vivo orchestration of the immune response is unclear. Our work examines the effect of the ingestion of AGEs on the immune response, both in healthy mice and in mice that were induced to colitis, using transgenic mice deficient in GPR43 or RAGE receptors. One of the main findings is that both the GPR43 receptor and RAGE are necessary for the recruitment of neutrophils in a model of intestinal inflammation due to mucosal barrier injury. We have also verified that the AGEs ingested with the diet promote the appearance of an imbalance in the inflammatory balance at the intestinal level, giving rise to a pro-inflammatory status. We have also show that carboxymethylisine (CML), a specific type of AGE, is capable of stimulating the GPR43 receptor and acting as a neutrophil chemoattraction factor. Finally, we have tested the treatment with sRAGE, a protein capable of capturing free AGEs. This procedure could be a promising therapy for the treatment of inflammatory bowel disease. (AU)

Actualmente, la administración de antineoplásicos se realiza mayoritariamente por vía parenteral, sin embargo, la vía oral está cada vez más extendida en oncología por presentar beneficios importantes, como mayor comodidad o seguridad para el paciente. Sin embargo, la vía oral supone nuevos retos son las interacciones fármaco-alimentos (iAM), que puede dar lugar a importantes variaciones en la biodisponibilidad del fármaco. Esta mini-revisión se inicia comentando en una breve introducción algunos aspectos centrales sobre los inhibidores de tirosin-kinasa (TKI) y su mecanismo de acción y los planteamientos que han ido llevando a la aparición de TKI de segunda y tercera generación. Posteriormente y centrado en el tema interacción fármaco-alimentos se comentan algunos resultados y conclusiones de 47 artículos seleccionados de un total de 55 donde se describen distintos tipos de iAM que atañen a los TKI y otros antineoplásicos orales y que afectan a la biodisponibilidad de los mismos y los factores determinantes de dichas interacciones (p. ej. tipo de alimento, las reacciones físico-químicas entre fármaco y alimento, la fisiología postprandial). También resume algunos ejemplos bien definidos de dichas iAM, así como de las posibles consecuencias positivas de la coadministración de medicamentos y alimentos. La revisión termina con pautas futuras a considerar en este tipo de interacciones (estatus nutricional del paciente, farmacogenética relacionada con las isoformas del citocromo P450, cronoterapia y cronofarmacia relacionada con los genes CLOCK, efectos del consumo de compuestos bioactivos y perfiles dietéticos) y con unas conclusiones. Por todo ello, el conocimiento profesional de estos aspectos juega un papel fundamental a la hora de garantizar el éxito terapéutico. (AU)


Nowadays, the intravenous administration of antineoplastic drugs is more common than oral administration. However, oral chemotherapy on oncology is increasing due to some advantages, such as the comfort and safety of the patient. Nevertheless, oral administration implies new challenges as the food and drugs interactions that can change the drug’s bioavalability. Present mini-review stars with a short introduction in main aspects of the tyrosine kinase inhibitors (TKI), their action mechanism as well as the stages that have giving rise to the second and third generations of TKI are reviewed. Dealing with drugfood interaction the review discusses some results and conclusions derived from 47 articles selected from a total of 55 ones in which some food-drug interaction affecting bioavailability of TKI and other oral antineoplastics are described, as well as some determinant factors of such interactions (e.g. type of food, food and drug physicochemical reactions, postprandial physiology). Some well-defined and known examples of those interactions are commented as well the possible positive consequences of food and drug coadministration. The review ends with future remarks (e.g nutritional status, farmacogenetics related to the Cytochrome P450, chronotherapy and chronopharmacy related to CLOCK genes, the effects of bioactive compounds and dietary profiles) and with some conclusions. For all this, the professional knowledge and background seem fundamental in order to warrantee therapeutic success. (AU)

Objetivo: La finalidad del estudio fue diseñar y validar una lista de intercambio de alimentos peruanos (LIA) para la confección de dietas y planificación de menús. Material y métodos: Se tomó como base la metodología para diseñar listas de intercambio descrita en trabajos previos, desarrollándose en seis fases realizadas en múltiples intervenciones en laboratorio, en donde se evaluaron 273 alimentos, que fueron estudiados a través de un análisis descriptivo cualitativo. Se realizó una validación con 12 nutricionistas que elaboraron un plan nutricional y luego se comparó la composición nutricional obtenida usando la tabla peruana de composición de alimentos 2017 (TPCA) con la composición nutricional aplicando LIA. Para la comparación de métodos se aplicó la prueba de Wilcoxon. Resultados: Se elaboró una lista de intercambio de alimentos peruanos (LIA) que incluyó 273 alimentos categorizados en siete grupos de intercambio. Se estimó la media del aporte de energía y macronutrientes por cada grupo de intercambio y se compiló un álbum fotográfico con las porciones de intercambio. Respecto a la validación de la LIA, en la comparación de la cantidad de energía, carbohidratos, proteínas y grasas de los planes alimentarios usando TPCA versus LIA no se encontraron diferencias significativas. Conclusión: Se obtuvo una LIA válida que permite la confección y planificación de dietas de forma eficiente, dentro de un margen de error adecuado, se recomiendan nuevos estudios que incorporen otras poblaciones más específicas y nuevos alimentos.(AU)


Objective: The purpose of the study was to design andvalidate a Peruvian food portions exchange list (LIA) for thepreparation of diets and menu planning. Methodology: The methodology for designing exchangelists described in previous studies was used as a basis, devel-oped in six phases carried out in multiple laboratory interven-tions, where 273 foods were evaluated and studied through aqualitative descriptive analysis. A validation was performedwith 12 nutritionists who elaborated a nutritional plan andthen the nutritional composition obtained using the Peruviantable of food composition 2017 (TPCA) was compared withthe nutritional composition applying LIA. For the comparisonof methods, the Wilcoxon test was applied. Results: A Peruvian food exchange list (LIA) was devel-oped that included 273 foods categorized into seven ex-change groups. The mean energy and macronutrient intakefor each exchange group was estimated and a photographicalbum was compiled with the exchange portions. Regardingthe validation of the LIA, in the comparison of the amount ofenergy, carbohydrates, proteins and fats of the meal plans us-ing TPCA versus LIA no significant differences were found. Conclusion: A valid LIA was obtained that allows thepreparation and planning of diets in an efficient way, withinan adequate margin of error, new studies incorporating othermore specific populations and new foods are recommended.(AU)

Una dieta saludable como la Dieta Mediterránea consiste, en general, en consumir alimentos de todos los grupos para obtener todos los nutrientes necesarios.JUSTIFICACIÓN: como los hábitos alimentarios están cambiando de forma globalizada. Destaca el abandono de la dieta mediterránea. La literatura científica establece que por la COVID-19 se alteraron los comportamientos alimentarios.OBJETIVO: propiciar actividades de orientación alimentaria que conduzcan a la adopción y reforzamiento de hábitos de alimentación saludables con la finalidad de reducir la susceptibilidad de las complicaciones por SARS-CoV2 .Material /Métodos Durante la pandemia un grupo de 10 farmacias del distrito de Arganzuela de Madrid pensábamos en conocer las maneras de alimentarse de nuestros clientes con el uso de esta encuesta propia. 1. ¿Qué factor consideras más importante al elegir un alimento ?2. Fundamentos: Analizar cuáles son los antibióticos y los alimentos involucrados en las interaccionesfarmacocinéticas de absorción con mayor relevancia clínica y proponer su relación con la resistencia aantibióticos.Métodos: Revisión bibliográfica narrativa basada en la búsqueda bibliográfica de estudios publicados desdeel 1996 en PubMed.Resultados: Los antibióticos más afectados han sido las tetraciclinas, las quinolonas y los antituberculosos y,de los alimentos, la leche y sus derivados. Cuando se toman conjuntamente se produce una interacciónfarmacocinética de absorción que puede comprometer la biodisponibilidad del fármaco y/o de ciertosnutrientes, como el calcio. Este tipo de interacción puede ser un factor de riesgo de las resistencias.Conclusiones: Las interacciones entre los antibióticos y los alimentos existen y pueden ser un factor de riesgode las resistencias antimicrobianas. Para evitarlas se debe separar en el tiempo la administración de estosfármacos y los alimentos. El abuso en el empleo de estos fármacos y su mala utilización durante años haoriginado una fuerte presión selectiva en el mundo microbiano, favoreciendo el incremento de laspoblaciones resistentes y, consecuentemente, más patógenas. Es imprescindible que los profesionalessanitarios tengan formación específica e información actualizada para poder detectarlas y evitarlas. (AU)


Background: Analyze which are the antibiotics and foods involved in the absorption pharmacokineticinteractions with greater clinical relevance and propose their relationship with antibiotic resistance.Methods: Narrative bibliographic review based on the bibliographic search of studies published since 1996 inPubMed.Results: The most affected antibiotics have been tetracyclines, quinolones and antituberculous drugs and,from food, milk and its derivatives. When taken together, an absorption pharmacokinetic interaction occursthat can compromise the bioavailability of the drug and / or of certain nutrients, such as calcium. This type ofinteraction can be a risk factor for resistance.Conclusions: Interactions between antibiotics and food exist and can be a risk factor for antimicrobialresistance. To avoid them, the administration of these drugs and food must be separated in time. The abusein its use and its misuse for years has caused a strong selective pressure in the microbial world, favoring theincrease of resistant populations and, consequently, more pathogenic. It is essential that health professionalshave specific training and updated information to be able to detect and avoid them. (AU)

Fundamentos: El consumo de insectos por el hombre (antropoentomofagia), es una práctica adoptada pordiversas culturas a lo largo de la historia. Sin embargo, a pesar de sus beneficios nutricionales ymedioambientales, su consumo aún no es culturalmente aceptado por la mayor parte del mundooccidentalizado.Métodos: Para esta revisión narrativa se realizó una búsqueda bibliográfica sobre artículos enfocados enentomofagia y seguridad alimentaria en Medline, ScienceDirect, Scielo y Google Scholar y se complementócon una búsqueda manual en páginas web de instituciones especializadas en salud y seguridad alimentaria.Resultados: Se ha reportado que muchos insectos presentan una composición nutricional comparable a losproductos cárnicos. Además, su rendimiento puede llegar a ser superior al del ganado tradicional generandomejores tasas de conversión alimentaria, lo que ha generado que se proponga como una alternativa desolución ante una situación de inseguridad alimentaria, aunque su difusión es aún un reto debido a laneofobia y barreras culturales que generan rechazo a esta práctica.Conclusiones: La entomofagia es una potencial alternativa que puede aportar a la seguridad alimentaria.Para promover la entomofagia, esta debe ser abordada mediante diversas estrategias, entre ellas la difusiónde sus beneficios medioambientales y nutricionales. Background: The consumption of insects by man (anthropoentomophagy) is a practice adopted by variouscultures throughout history. However, despite its nutritional and environmental benefits, its consumption isstill not culturally accepted by most of the Western world.Methods: For this narrative review, a bibliographic search was carried out on articles focused onentomophagy and food security in Medline, ScienceDirect, Scielo and Google Scholar and it wascomplemented with a manual search on the web pages of institutions specialized in health and food safety.Results: Many insects have been reported to have a nutritional composition comparable to meat products. Inaddition, its performance can be higher than that of traditional livestock, generating better food conversionrates, which has led to it being proposed as an alternative solution to a situation of food insecurity, althoughits dissemination is still a challenge due to neophobia and cultural barriers that generate rejection of thispractice.Conclusions: Entomophagy is a potential alternative that can contribute to food security. To promoteentomophagy, it must be addressed through various strategies, including the dissemination of itsenvironmental and nutritional benefits. (AU)

Introducción: los compuestos bioactivos (sustancias con efecto fisiológico) están teniendo en los últimos años una gran consideración en las dietas de las poblaciones, sobre todo en aquellas que consumen un alto contenido de alimentos vegetales que las aportan. Métodos: recoger los últimos datos científicos sobre compuestos bioactivos de origen vegetal y recopilar la legislación que regula la información nutricional de los alimentos y de las bebidas, así como de las propiedades saludables y de prevención de riesgo de enfermedad y de la aprobación de nuevos alimentos. Resultados: existe evidencia científica sobre el efecto de los compuestos bioactivos, lo que ha supuesto su incorporación en índices de calidad de la dieta (como la brújula alimentaria), así como la aprobación de 26 declaraciones de propiedades saludables y 2 de prevención de riesgo de enfermedad en la Unión Europea. También se han aprobado varios ingredientes o alimentos catalogados como nuevos alimentos dentro de la legislación alimentaria de la Unión Europea. Conclusiones: los compuestos bioactivos tienen cada vez más evidencia científica para estar recomendados, directamente o a través de los alimentos y de las bebidas que los contienen, en las guías alimentarias y deberían considerarse como otros nutrientes e incorporarse a la información nutricional, aunque no tengan aporte calórico. Introduction: substances with physiological effect or bioactive compounds are having a fundamental consideration in the diets of the populations during the last years, especially those that consume high content from plant foods that provide them. Methods: collect the latest scientific data on bioactive compounds from plant origin and develop legislation regulating the nutritional information of foods and beverages, as well as the health claims and reduction of disease risk claims. The approval of novel foods too. Results: there is scientific evidence on the effect of bioactive compounds, and this has meant their incorporation into dietary quality indices, such as the food compass. As well as the approval of 26 health claims and 2 reduction of disease risk claims in the European Union. Several ingredients or foods classified as novel foods have also been approved within European Union food law. Conclusions: bioactive compounds have more and more scientific evidence to be recommended directly or through the foods and beverages that contain them in dietary guidelines and must be considered as other nutrients and incorporated into the nutritional information even if they do not have caloric intake. This research study measures psychological attraction in relation to food brands by football player’s advertisements. This research is based on consumer behavior and examines the effect of product choices—and has been conducted in the context of China using primary data analysis techniques. For analysis, the data is generated on the basis of responses to specific questions related to the psychological attraction, food brand advertisement, consumer behavior, and product choice. To measure the data, the smart PLS software ran different results such as statistical ratio analysis, T-test analysis, regression analysis, generalized linear model, and that reliability test analysis. This study aimed to better understand the components of product attributes in the sporting environment in order to better understand what makes a product-athlete endorsement connection more effective. While it is usual for businesses to utilize athletes for advertising and marketing their products or services, only a limited number of studies have looked at the qualities of athletes and the roles these characteristics play in developing an effective advertisement relationship. Analysis of data findings shows that psychological attraction has a positive and significant impact on consumer behavior and product choice. On the other hand, food brand advertisement shows a positive but insignificant effect on product choice.(AU)

It is vital for technology to advance and for the brand to obtain public recognition to achieve competitive supremacy. It is impossible to deploy without an adequate marketing, awareness, and execution strategy, as well as structured advertising approaches. As a result, advertising is an important strategy for marketing products to consumers. This research article makes a case for examining the psychological appeal of food brands associated with basketball players and customer behavior while making product purchases. If a well-known celebrity appears in a commercial, people will strongly influence the brand or product. Psychological Attraction (PA) and Food Brand Advertisement (FBA) were independent variables in the research framework. Customer Behavior (CB) was used as the Independent Variable. Nonetheless, data was gathered from 100 customers. SEM PLS 3 was used to analyze the collected data. The results suggested that the association between PA à CB is a non-significant link; however, the relationship between FBA àCB is significant.(AU)
