This work presents a review that aimed to demonstrate the importance of Bacillus cereus, the toxigenic profile of this group of spore-forming bacteria that has been related to outbreaks of food poisoning, the methodologies used to determine, identify factors emetic toxins and virulence diarrheal such as poisoning prevention and treatment can be avoided. The presence of B. cereus was detected in equipment and utensils that are analyzed showing potential sources of transmission of microorganisms for food and also the importance of proper cleaning of equipment.(AU)
