A pilot experimental field combining rewetting of reclaimed peaty soils and water phyto-treatment was set up in the Massaciuccoli Lake basin (Tuscany, Italy) to reduce the water eutrophication and peat degradation caused by almost a century of drainage-based agricultural use. In this paper, we investigated the restoration process occurring consequently to the conversion of a drained area in a natural wetland system (NWS) (the partial top soil removal, the realization of a perimeter levee to contain the waters, the rewetting with the drainage waters coming from the of surrounding cultivated areas) and the capability of the spontaneous vegetation to catch nutrients acting as a vegetation filter. To follow the restoration process over time (2012-2016), we used a mixed approach merging phytosociological surveys with ortophotos taken by an Unmanned Aerial Vehicle (UAV). During the last year of observation (2016), we performed destructive sampling on the most widespread plant communities in the area (Phragmites australis and Myriophyllum aquaticum community) to quantify the biomass production and the uptake of nitrogen and phosphorus. Stands of Phragmites australis (Cav.) Trin. ex Steud. yielded more than Myriophyllum aquaticum (Vell.) Verdc. (4.94 kg m-2 vs 1.08 kg m-2). M. aquaticum showed higher nutrient contents (2.04% of N and 0.35% of P), however P. australis was able to take up more nutrients within the NWS because of its larger cover and productivity. In the perspective of maximizing the plant development and consequently the amount of nutrients extracted from treated waters, the authors suggest 4-5 year-long-harvesting turns, better occurring in spring-summer.

Potato is a staple food crop and an important source of dietary energy. Its tubers contain several essential amino acids, vitamins, minerals and phytochemicals that contribute to the nutritional value of this important product. Recently, scientific interest has focused on purple and red potatoes that, due to the presence of anthocyanins, may be considered as natural powerful functional food. The aim of this study was to evaluate the characteristics of pigmented varieties, the types of anthocyanins accumulated and the level of both beneficial phytochemicals (vitamin C and chlorogenic acids, CGAs) and anti-nutritional compounds (glycoalkaloids) following various cooking methods. The analyses described the presence of a mix of several acylated anthocyanins in pigmented tubers along with high level of CGA. The amount of antioxidants was differently affected by heat treatments according to the type of molecule and the cooking methods used. In some cases, the beneficial compounds were made more available by heat treatments for the analytical detection as compared to raw materials. Data reported here describe both the agronomic properties of these pigmented varieties and the effects of food processing methods on bioactive molecules contained in this natural functional food. They may provide useful information for breeders aiming to develop new varieties that could include desirable agronomical and industrial processing traits.

Understanding linkages between heterogeneous soil structures and non-uniform flow is fundamental for interpreting infiltration processes and improving hydrological simulations. Here, we utilized ground-penetrating radar (GPR) as a non-invasive technique to investigate those linkages and to complement current traditional methods that are labor-intensive, invasive, and non-repeatable. We combined time-lapse GPR surveys with different types of infiltration experiments to create three-dimensional (3D) diagrams of the wetting dynamics. We carried out the GPR surveys and validated them with in situ observations, independent measurements and field excavations at two experimental sites. Those sites were selected to represent different mechanisms that generate non-uniform flow: (1) preferential water infiltration initiated by tree trunk and root systems; and (2) lateral subsurface flow due to soil layering. Results revealed links between different types of soil heterogeneity and non-uniform flow. The first experimental site provided evidence of root-induced preferential flow paths along coarse roots, emphasizing the important role of coarse roots in facilitating preferential water movement through the subsurface. The second experimental site showed that water infiltrated through the restrictive layer mainly following the plant root system. The presented approach offers a non-invasive, repeatable and accurate way to detect non-uniform flow.

Pasta and couscous are popular foods manufactured (in their traditional form) from durum wheat semolina. In recent years, the consumers' quest for novel, functional, gluten-free, wholegrain foods has prompted the industry to manufacture new pasta and couscous products in which durum wheat has been partially or totally replaced by other vegetable flours. Besides dietary fibre, these raw materials might be an interesting source of phytochemicals. In this work, 16 commercial samples of pasta and four samples of couscous representative of the new products and made of refined and wholegrain flours of different species of cereals, pseudocereals and legumes were analysed for free, hydrolysable bound and total polyphenol content by means of the Folin-Ciocalteu procedure. Analyses were repeated on cooked samples to assess the quantity of polyphenols ingested by the consumers. The raw legume and pseudocereal products had a total polyphenol content higher than most cereal products (up to 1743.4 mg of Gallic Acid Equivalent (GAE) per 100 g dry weight). Wholegrain products had higher contents than refined products. The free fraction underwent up to 46% loss with cooking, probably because of solubility in water. The water absorption of pasta and couscous during cooking was in a ratio of 2:3, resulting in higher dilution of polyphenols in the cooked couscous.

This study compared dry matter production, nutrient uptake and tissue nutrient concentration of two C4 turfgrass species (Cynodon dactylon × Cynodon transvaalensis Burtt Davy and Paspalum vaginatum Swartz) supplied with three different nutrient solutions in a sand and peat culture. The 8-week experiment was performed in mesocosms and simulated the conditions of an open-field phyto-treatment system located in a Mediterranean drained peatland (Tuscany, Italy). Peat was collected on the site, and one of the solutions mimicked drainage water flowing into it. Three hypotheses were tested: (i) the species chosen efficiently removed nutrients from both the solution and the substrate; (ii) peat contributed to the nutrient load; and (iii) the species chosen were suitable in the open-field system. Both species adapted well to the experimental conditions and demonstrated considerable ability to remove nutrients. P. vaginatum took up nitrogen more efficiently, mainly in conditions of high nutrient availability. We observed supplementary nutrient uptake by plants in the peat treatment. Performances of the two C4 turfgrasses extrapolated to the field scale seemed effective from a phyto-treatment perspective.
