Mushrooms are a valuable foodstuff because they are an important source of fiber and essential amino acids, but they have a great capacity to capture metals from substrate. Due to this reason, the content of 14 metals (B, Ba, Cr, Cu, Fe, Li, Mo, Ni, Sr, V, Zn, Al, Cd, Pb) of 100 samples of canned mushrooms grown in Spain were analyzed by inductively coupled plasma atomic emission spectroscopy. Fe (9.55 mg/kg) was the most notable trace element, followed by Zn (2.39 mg/kg). The most abundant toxic metal was Al (17.80 mg/kg). Significant statistical differences between the absorption of metals have been observed when comparing species. Lentinula edodes and Lactarius deliciosus are the species which had the highest metal contents. Taking the average consumption 300 g per day for adults into account, the exposure to trace toxic metals from the consumption of the studied mushrooms does not pose a health risk. However, contribution percentages of Pb (87.6%) and Al (59.2%) found in Lentinula edodes and Pholiota nameko samples, respectively, are near the maximum intake.

Taros are a staple in the diet of many people around the world, and they are an excellent source of minerals. Monitoring the levels of metals in food provides basic information that is useful from the perspectives of safety, regulation, and nutrition. Forty-two samples of taros were randomly obtained from supermarkets, vegetable markets, and farmer's plots on the island of Tenerife (Canary Islands, Spain). The edible portion (pulp) was the only part considered for analysis. Flame atomic absorption spectrometry (FAAS) was used to determine the contents of Na, K, Ca, Mg, Cu, Fe, Mn, and Zn. The levels of Cr, Ni, Cd, and Pb were determined using graphite furnace atomic absorption spectrometry (GFAAS). Mean concentrations (mg/kg) were 565.6 Na, 2947 K, 231.4 Ca, 364.5 Mg, 1.224 Cu, 3.818 Fe, 1.408 Mn, 2.242 Zn, 0.044 Cr, 0.021 Ni, 0.003 Cd, and 0.006 Pb. The mean concentrations of Cd and Pb were well below the accepted European Commission limits (0.1 mg/kg weight for both metals, respectively). Daily consumption of taro (10.41 g taro/person/day) contributes to the dietary intake of essential metals and trace elements, mainly Mg (1.265% in adult women and 1.084% in adult men) and Cu (1.182% for adult men and women). The average daily intakes of Cd (0.031 µg/day) and Pb (0.062 µg/day) from taro were below the legislated respective tolerable weekly intakes (TWIs). Thus, the samples analyzed were considered safe to eat based on their metal concentrations and legislated allowable intakes.

Sweet potatoes are a staple in the diet of some people and an excellent source of minerals. Metal monitoring in food, like sweet potatoes, provides basic information on safety aspects in regulatory processes as well as nutritional values. One hundred five samples of three varieties of sweet potatoes were randomly obtained from supermarkets, farmers markets, and farmers' plots in Tenerife (Canary Islands, Spain). The edible portion (pulp) was the only part considered for analysis. Flame atomic absorption spectrometry was used to determine the contents of sodium (Na), potassium (K), calcium (Ca), magnesium (Mg), copper (Cu), iron (Fe), manganese (Mn), and zinc (Zn), while the levels of chromium (Cr), nickel (Ni), cadmium (Cd), and lead (Pb) were determined using graphite furnace atomic absorption spectrometry. The mean concentrations were 500 Na, 4409 K, 564 Ca, 609 Mg, 1.291 Cu, 6.554 Fe, 2.324 Mn, 2.348 Zn, 0.028 Cr, 0.048 Ni, 0.001 Cd, and 0.003 Pb mg/kg, respectively. Potassium presented the highest contents in all varieties of sweet potatoes. Iron was the most abundant microelement. The orange fleshed sweet potato variety offered greater nutritional contributions to the recommended intakes than the rest of the varieties studied. The estimated mean daily intake of Ni (0.72 mg/day) detected in our samples was highly consistent with other studies. Average daily intakes of Cd (0.015 µg/day) and Pb (0.045 µg/day) were below toxicological reference values. In conclusion, the levels of Cd and Pb detected in the sweet potatoes analyzed do not represent any toxicological risk to consumers.

INTRODUCTION: Rehabilitation after a stroke is widely considered fundamental to improve secondary functional impairments. Accessible methods based on motor learning, motor transfer and virtual environments are necessary to help to improve stroke patients' quality of life. OBJECTIVES: Continuing the line of our previous studies, this work investigated the effect of our new and innovative game-based virtual reality training using the control of virtual objects with gaze in three chronic stroke survivors. METHODS: All participants performed an eye-controlled virtual training task for 4 weeks. Pre- and post-training evaluation were carried out with the Fugl-Meyer Assessment for upper extremity scale as well as performing a tracking task inside an MRI scanner with a MRI-compatible eye-tracker or a joystick. RESULTS: Neural results for each participant show the increase of activity in the motor cortex, basal ganglia and cerebellum for both effectors (hand or eye). CONCLUSION: These promising results have a potential application as a new game-based neurorehabilitation approach to enhance the motor activity of stroke patients.

Cereals and their derivatives are basic foods in the human diet and a source of minerals, but the content of elements may vary depending on the type of cereal or its processing. The levels of Na, K, Ca, Mg, Fe, Cu, Zn, Mo, Co, and Mn have been determined in 126 samples of cereals and cereal derivatives (rice, corn gofio, corn flour, wheat flour, corn, and wheat) commercialized and consumed in Cape Verde using an inductively coupled plasma-optical emission spectrometer (ICP-OES) after a wet microwave digestion process. Some elements stand out in products such as corn gofio (K), wheat (Mg), and wheat flour (Fe). Negative correlations were found between Mo-Na and Na-Zn that could suggest interference between these elements. Bearing in mind the dietary intake evaluation and the guideline values provided by EFSA (European Food Safety Authority) or FAO (Food Authority Organization), the consumption of wheat (100 g/day) provides a notable contribution of Mo, Mn, Fe, and Mg. Considering the nutritional value of the analyzed essential and trace elements, the consumption of different cereals and their derivatives should be promoted.

Cereals and cereal-based foods continue to be basic foods in all diets. Despite being known for their high nutritional value; they can also contain contaminants (hazards) such as toxic metals. This study assesses the Cd, Pb and Hg dietary exposure from cereals and derivatives marketed in Madeira and the Azores and characterizes the risks by evaluating the Cd and Hg intake contributions to the tolerable intakes and by estimating the Margin of Exposure (MOE) in the case of Pb. In Madeira, metals follow the descending order of Cd > Pb > Hg. Cd stands out as having the highest levels (0.307 mg Cd/kg in oats; 0.237 mg/kg in rye). High levels of Pb (0.347 mg/kg) were also detected in rye. Regarding total mercury, rice stands out (0.0013 mg/kg) followed by wheat (0.001 mg/kg). While all cereals and derivatives except maize consumed in Madeira exceed the maximum value of Cd allowed by the EU, 50.0% of the rye and 25.0% of the corn flour samples exceeded the European Pb limit. The daily consumption of 100 g of oats, rye flour and rye represent high contributions to the TWI of Cd (93.2 - 120%). The MOE values of Pb from the consumption of rye (100 g/day) are 1,294 (nephrotoxic effects) and 3,082 (cardiotoxic effects). In the Azores, corn flour (0.72 mg Pb/kg) stands out with 85.7% of the samples exceeding the maximum Pb EU limit and MOE values of 626 (nephrotoxic effects) and 1,490 (cardiotoxic effects). Regular daily consumption of corn flour makes a low (< 10%) contribution to the Cd TDI. In conclusion, the Pb exposure from the consumption of cereals and derivatives could have toxic effects such as nephrotoxicity or cardiotoxicity in adults. The results highlight the need to set up monitoring and surveillance programs for the safety of cereals and their derivatives in Madeira and the Azores in terms of lead and cadmium.

The aim of this study was to analyse nickel content in foods and beverages most commonly consumed by the Canary Island people to determine the dietary intake of this metal throughout the Canary Islands as a whole and in each of the seven islands. A total of 440 samples were analysed by graphite furnace atomic absorption spectrometry. Nickel concentrations ranged between 2.348 ± 1.716 mg/kg in nuts and 0.002 ± 0.002 mg/l in water. Estimated total intake of nickel was 0.093 mg/day for the Canary population, which is far below the tolerable upper intake level (UL) established for adults. Gran Canaria turned out to be the island with the highest nickel intake. Differential analysis of nickel intake by age and sex of the Canary Island community showed that values were below the UL in children as well as in adults. These outcomes were compared with data from other populations at the national and international levels.

The Canary Islands is an archipelago that consumes cereals and derivatives imported from other regions of the world. The increase in contamination with toxic metals makes it necessary to assess the content of toxicological metals of interest to ensure quality and safety. The content of toxic metals (Al, Cd, Cr, Pb, Ni, Sr) was determined in 221 samples of cereals and derivatives (corn, wheat, gofio, corn gofio, barley gofio, roasted corn and flour) marketed in the Canary Islands using ICP-OES (inductively coupled plasma optical emission spectrometry) to assess dietary exposure. Al content recorded in barley gofio (29.5 mg/kg fresh weight) stands out. The estimated daily intake (EDI) of Pb is 52 µg/day if 100 g/day of barley gofio is consumed (121% and 240% of the BMDL nephrotoxicity limit set by the EFSA at 0.63 µg/kg body weight/day for adults and children, respectively). The EDI of PB is 16 µg/day if 30 g barley gofio/day is consumed by adults (36.2% of the abovementioned BMDL nephrotoxicity limit). The EDI of Pb is 7.8 µg/day if 15 g barley gofio/day is consumed by children (32.2% of the abovementioned BMDL nephrotoxicity limit). Gofio is a food of high nutritional value. It is necessary to establish monitoring programs for toxic metals in raw materials and processed products to reduce exposure levels.

BACKGROUND: The presence of toxic toxic metals in lipstick can pose a health risk to many consumers of this type of cosmetics, especially for women. Thus, the aim of this study was to assess consequences attributed to dermal and oral exposure to toxic metals in lipsticks manufactured in China and Europe as determined by non-cancer and cancer risks assessment models from SCCS and USEPA, respectively. METHOD: The treatment of the samples was carried out by calcination using muffle furnaces and the determination of Al, Cd and Pb were determined by inductively coupled plasma optical emission spectrometry (ICP-OES). CONCENTRATIONS: The concentration of Cd and Pb in the study samples does not exceed the limits stablished for the FDA (00,228 mg kg-1·day-1 for Cd and 000,343 mg kg-1·day-1 for Pb, respectively) but they do not comply with the Regulation of the European Parliament, which prohibits the presence of these two metals in cosmetics. Neither European Union nor United States have established maximum levels for Al in cosmetics. CONCLUSIONS: The cancer risk assessment of Cd and Pb metals resulted in a total cancer risk less than 1. The results of non-cancer oral risk assessment for Pb had a MoS result of 88 for China and 62 for Europe, suggesting that Pb poses a risk for the human health, especially in samples manufactured in Europe.

Consumption of cereals and cereal-based products represents 47% of the total food energy intake in Cape Verde. However, cereals also contribute to dietary exposure to metals that may pose a risk. Strengthening food security and providing nutritional information is a high-priority challenge for the Cape Verde government. In this study, toxic metal content (Cr, Ni, Sr, Al, Cd, and Pb) is determined in 126 samples of cereals and derivatives (rice, corn, wheat, corn flour, wheat flour, corn gofio) consumed in Cape Verde. Wheat flour samples stand out, with the highest Sr (1.60 mg/kg), Ni (0.25 mg/kg) and Cr (0.13 mg/kg) levels. While the consumption of 100 g/day of wheat would contribute to 13.2% of the tolerable daily intake (TDI) of Ni, a consumption of 100 g/day of wheat flour would contribute to 8.18% of the tolerable weekly intake (TWI) of Cd. Results show relevant Al levels (1.17-13.4 mg/kg), with the highest level observed in corn gofio. The mean Pb average content in cereals is 0.03-0.08 mg/kg, with the highest level observed in corn gofio. Al and Pb levels are lower in cereals without husks. Without being a health risk, the consumption of 100 g/day of wheat contributes to 17.5% of the European benchmark doses lower confidence limit (BMDL) of Pb for nephrotoxic effects; the consumption of 100 g/day of corn gofio provides an intake of 1.34 mg Al/day (13.7% of the TWI) and 8 µg Pb/day (20% of the BMDL for nephrotoxic effects). A strategy to minimize the dietary exposure of the Cape Verdean population to toxic metals from cereals should consider the continuous monitoring of imported cereals on arrival in Cape Verde, the assessment of the population's total diet exposure to toxic metals and educational campaigns.

Fluoride is highly present in the environment, especially in water and its derivatives. Excessive fluoride contribution to diet poses a health risk. Tea leaves accumulate fluoride and the consumption of tea (Camellia sinensis) could pose a risk to human by the excessive fluoride intake. Ninety tea samples were analyzed by potentiometry using a selective fluoride ion electrode. Mixed tea samples (2.82 ± 1.11 mg/L) and black tea samples (2.28 ± 0.79 mg/L) recorded the highest fluoride levels. The contribution of drinking water is important for increasing fluoride levels in teas. The daily consumption of two cups (250 mL per cup) of mixed and black teas prepared with La Laguna tap water does pose a health risk for children (4-8 years old) because of the high contribution percentages (74.4% and 63.6%, respectively) of the Tolerable Upper Intake Level set in 2.5 mg/day by the EFSA (European Food Safety Authority). A minor consumption in children (4-8 years old) and adults during pregnancy is advisable.

Fluoride is a widely distributed ion in the environment and, consequently, in water as well. High levels of fluoride in waters can be found in the Canary Islands because of their volcanic origin. Due to the risk and detrimental effects associated with a high fluoride intake, the content of this ion has been potentiometrically determined in 256 supply water samples from the islands of Tenerife, El Hierro, and La Palma, using a fluoride selective ion electrode. Fluoride mean concentration found on Tenerife is 4.22 mg/L, exceeding the parametric value of 1.5 mg/L set out in Spanish legislation. The consumption of 2 L of water from the studied municipalities of Tenerife would mean there is an excessive fluoride intake. The consumption of this water poses a serious risk to health. It is necessary to take action aimed at reducing the level of fluoride in the north of the island of Tenerife.

Sarpa salpa is a fish belonging to the Sparidae family and is usually found in local markets. Toxic metals such as aluminum (Al), cadmium (Cd), lead (Pb) and trace elements such as boron (B), barium (Ba), cobalt (Co), copper (Cu), chromium (Cr), iron (Fe), lithium (Li), manganese (Mn), molybdenum (Mo), nickel (Ni), strontium (Sr), vanadium (V) and zinc (Zn) are incorporated into fish tissues and remain there. The liver has the highest concentrations of all the analyzed toxic metals and almost all the analyzed trace elements. The consumption of 100 g/day of S. salpa muscle tissue does not pose a health risk. However, 100 g/day of liver consumption may pose a serious health risk due to the intake of Cd (572% of the tolerable weekly intake for adults with a body weight of 68.48 kg) and Pb (117% of the tolerable daily intake for adults weighing 68.48 kg). The consumption of liver of this species is not recommended due to its possible harmful effects on health.

To evaluate the daily dietary intake of essential metals in the Canary Islands, the iron, copper, zinc and manganese contents in 420 food and drink samples collected in local markets were analysed by inductively coupled plasma-atomic emission spectrometry (ICP-AES). The estimated daily dietary intakes of iron, copper, zinc and manganese are 13.161 mg/day, 2.098 mg/day, 8.954 mg/day and 2.372 mg/day, respectively. The iron dietary intake was found to be below the recommendations fixed for adult women, while the copper and manganese dietary intakes fulfilled the Recommended Dietary Allowances. The mean daily intake of zinc was below the Recommended Dietary Allowance. Cereals were found to be the food group that contributed most to the intake of these metals. While the island of El-Hierro presented iron, copper, zinc and manganese mean intakes over the estimated intakes for the whole archipelago, Fuerteventura island showed the lowest intakes. Tenerife and Fuerteventura showed the lowest iron intakes, being below the recommendations.

Honey is a natural product made by honey bees from the nectar of flowers or secretions produced by other living plant parts. The metal content of the honeys is related to the levels of metals in the environment. Due to the importance of honey in the human diet and the increase of environmental pollution, it is necessary to determine the content of metals in honey to evaluate the toxicological risk derived from its consumption. The objective of this study was to determine the content of 20 metals (Al, B, Ba, Ca, Cd, Co, Cr, Cu, Fe, K, Li, Mg, Mn, Mo, Na, Ni, Pb, Sr, V, and Zn) in different samples of artisanal honey from the Canary Islands (Spain) in order to evaluate the dietary intake derived from the consumption of these honeys. A total of 161 samples of different types of Canary honey were analyzed by ICP-OES (inductively coupled plasma-optical emission spectrometry). K (825 mg/kg) was the macroelement found in highest concentration, while B (4.25 mg/kg) was the trace element with the highest mean concentration. Al (3.33 mg/kg) was the most abundant toxic metal, followed by Pb (0.040 mg/kg) and Cd (0.002 mg/kg). A mean consumption of 25 g/day of honey mainly contributes to the recommended daily intake of Cu (1.34% adults) and K (0.67% adults). As regards the toxic metals, the contribution percentage to the TDI (tolerable daily intake) of Pb at 2.92% for adults is noteworthy. However, the consumption of honey does not imply a high intake of metals and, therefore, does pose a risk to the health of adult men and women.

Algae are becoming increasingly common because of their importance in vegan and vegetarian diets. Although they are a source of essential minerals, vitamins and antioxidants, these marine organisms have a high absorption capacity that can lead to the accumulation of toxic metals which are dangerous in humans. The objective of this study is to determine the content of toxic metals (Al, Cd, Pb and Hg) in edible seaweed samples marketed in Spain (Europe) to assess the toxicological risk from the intake of these metals. A total of 73 European and Asian algae samples marketed in Tenerife (Canary Islands, Spain) were analyzed by ICP - OES (Inductively Coupled Plasma - Optical Emission Spectrometry) and by CV-AAS (Cold Vapor - Atomic Absorption Spectrophotometry). The major toxic metal was Al, whose highest level was recorded in seaweed salad (57.5 mg Al/kg dry weight). Regarding the origin, the highest concentrations of Al (38.9 mg/kg dw), Cd (0.59 mg/kg dw) and Pb (0.40 mg/kg dw) were found in Asian algae, which may be due to the high levels of industry in the Asian countries. However, the highest concentration of Hg (0.017 mg/kg dw) was found in European algae. The consumption of 5 g of dehydrated seaweed per day represents a percentage of contribution to the tolerable weekly intake of Cd of 22.7%, this percentage may entail a risk when considering total Cd intake. However, the consumption of 5 g a day of dehydrated seaweed would not, pose a risk to the health of adults.

Beer is a widely consumed drink throughout the world, and because its manufacture involves the use of water, beer can be, in some cases, a source of fluorides. For this reason, the objective of this study was to determine the concentration of fluorides in 50 samples of beers from different sources sold in two different types of container (aluminum can and glass bottle). The possible significant differences between the different types of packaging and the intake of fluoride from the consumption of these beers were evaluated. The concentration of fluoride in beers has been determined using the potentiometric method of fluoride determination by standard addition. The concentration of fluoride ranged between 0.06 and 1.77 mg/L. In general, the concentration was below 1 mg/L, except for three beer samples from Ireland and the USA, whose concentration was over 1.5 mg/L. No significant differences were found between the types of packaging. The contribution of fluoride to the diet from beer consumption is not high (<27%); however, it is necessary to warn consumers whenever they are in areas of high concentrations of fluoride in the water supply.

The levels of 20 metals (aluminum, boron, barium, calcium, cadmium, cobalt, chromium, copper, iron, potassium, lithium, magnesium, manganese, molybdenum, sodium, nickel, lead, strontium, vanadium, and zinc) were analyzed in muscle and liver tissue of Trachurus picturatus marketed in the Canary Islands (Spain) by using inductively coupled plasma optical emission spectrometry. In the liver samples, the mean concentrations in milligrams per kilogram wet weight (wt) of Al (14.7), B (0.99), Ba (1.64), Ca (314), Cd (2.52), Co (0.15), Cu (4.07), Fe (106), Li (3.89), Mn (0.85), Mo (0.16), Na (1510), Ni (0.51), Pb (0.36), Sr (3.54), V (0.78), and Zn (23.13) were higher than those detected in the muscle samples in milligrams per killogram wet wt, which were as follows: Al (8.76), B (0.07), Ba (0.30), Ca (210), Cd (0.01), Co (0.01), Cu (1.51 ), Fe (7.33), Li (1.08), Mn (0.12), Mo (0.01), Na (697), Ni (0.11), Pb (0.04), Sr (1.45), V (0.01), and Zn (4.69). The mean concentrations of Cr, K, and Mg (0.14, 1,904, and 243 mg/kg wet wt, respectively) were higher in muscle than in liver (0.05, 1,333 and 236 mg/kg wet wt, respectively). The mean concentrations of Cd and Pb (0.01 and 0.04 mg/kg wet wt) in muscle did not exceed the maximum limits established by a European Commission regulation (0.1 mg of Cd/kg and 0.3 mg of Pb/kg, respectively). Considering a mean daily consumption of fish muscle for the adult population of 31.9 g/day published in the report on food consumption by the Spanish Ministry of Agriculture and Fisheries, Food and Environment, Mg made the highest contributions to the intake (2.58% for adult women of 60 kg and 2.22% for men of 70 kg), and the estimated intakes of Al (0.35 to 0.46 mg/day), Cd (0.55 to 0.74 mg/day) and Pb (1.66 to 5.53 mg/day) were below the respective established tolerable intakes. In conclusion, the results of this study show that the consumption of muscle from this benthopelagic species can be considered safe in terms of maximum legal limits, while consumption of liver is discouraged as a major source of exposure to toxic metals, such as Al, Cd, and Pb.

Panga (Pangasius hypophthalmus), originating from Vietnam, is one of the most consumed fish because of its low cost, mild taste and presentation (fillets without skin and bones). Nevertheless, due to the high levels of contamination of the rivers where it lives, and to the fact that the panga is a predator, whereby it will accumulate a higher mercury concentration, the main objectives of the present study were to evaluate the toxic risk from mercury ingestion as a result of the consumption of this fish. A total of 80 frozen panga samples natural and marinade from different commercial establishments have been analyzed using cold vapour atomic absorption spectrophotometry (CV-AAS). The results obtained show a wide range of mercury concentrations between 0.10 and 0.69 mg/kg, with an average value of 0.22 mg/kg. In addition, it has been found that the average mercury concentration in the marinated presentation (0.18 mg/kg) is higher than that obtained in the natural panga (0.16 mg/kg). However, no significant differences were found between commercial establishments or in the presentation formats, with the conclusion that they did not influence the mercury content in the samples. Assuming a weekly consumption of 350 g of panga, the contribution rate to Tolerable Weekly Intake (TWI) of mercury (4 µg/kg bw/week) is 32% and 27.5% for women and men, respectively. Based on the results obtained in this study, an exhaustive control of the mercury content in this type of fish is necessary. In addition, a consumption restriction to children will be established.
