Approximately a third of all annual greenhouse gas emissions globally are directly or indirectly associated with the food system, and over a half of these are linked to livestock production. In temperate oceanic regions, such as the UK, most meat and dairy is produced in extensive systems based on pasture. There is much interest in the extent to which such grassland may be able to sequester and store more carbon to partially or completely mitigate other greenhouse gas emissions in the system. However, answering this question is difficult due to context-specificity and a complex and sometimes inconsistent evidence base. This paper describes a project that set out to summarize the natural science evidence base relevant to grassland management, grazing livestock and soil carbon storage potential in as policy-neutral terms as possible. It is based on expert appraisal of a systematically assembled evidence base, followed by a wide stakeholders engagement. A series of evidence statements (in the appendix of this paper) are listed and categorized according to the nature of the underlying information, and an annotated bibliography is provided in the electronic supplementary material.

The metrics used in environmental management are performative. That is, the tools deployed to classify and measure the natural world interact with the things they were designed to observe. The idea of performativity also captures the way these interactions shape or distort the governance activities that metrics are used to inform. The performativity of metrics reveals how mundane practices of measurement and auditing are inscribed with substantial power. This has proven particularly true for the global warming metrics, like GWP100, that are central to the management of anthropogenic climate change. Greenhouse gases are materially heterogenous, and the metrics used to commensurate their various warming impacts influence the distribution of both culpability and capital in climate policy and markets. The publication of a new warming metric, GWP* (or GWP Star), has generated a modest scientific controversy, as a diverse cast of stakeholders recognize this performativity seek to influence the metrological regime under which they live. We analyse this controversy, particularly as it unfolded in the fractious discourse around sustainable food and farming, to develop the concept of reflexive performativity: where actors are anticipatory and strategic in their engagement with the metrics that are used to govern their lives. We situate this idea in relation to, and in tentative evidential support of, the concept of reflexive modernization.

This article uses interviews with responsible investment professionals to examine the extent to which institutional equity investors, and specifically 'universal owners' with highly diversified shareholdings, engage with public issues associated with livestock agriculture. As share ownership becomes increasingly concentrated, and the market for Environmental, Social and Governance investment products grows, these investors are increasingly involved in governing the activities of publicly traded corporations (including leading agribusinesses). This paper brings together political economy and marketization studies research to explore how universal owners become concerned about particular environmental and ethical problems, why they overlook other public concerns, and in what ways their selective engagement with ethico-political issues might be altering the content of food politics. Comparing universal owners' engagements with farm animal welfare issues and with tropical deforestation within animal feed supply chains, we argue that these institutions engage with tropical deforestation because it presents a financially material risk to firms across multiple industries. By contrast, the specificity of farm animal welfare issues to agribusinesses means that they do not pose a material risk to the overall performance of universal owners' highly diversified asset portfolios. Efforts to concern universal owners about livestock agriculture's social, environmental and health impacts thus generate a food politics which focuses primarily on risks to global economic systems and renders animals themselves distinctly immaterial.

Veganism is the subject of an increasingly diverse body of social scientific research, yet it remains relatively understudied in geography. Meanwhile, contemporary cultural commentaries note how veganism has gone mainstream, with critics warning of veganism's corporate nature - expressed in the rise of what we term 'Big Veganism'. We argue that food geographers are well placed to examine these trends. We first review vegan studies work beyond geography that examines and critiques the mainstreaming of veganism. We focus on literature that explores multiple contested modes of veganism, veganism as praxis in place and the rise of corporate veganism as useful foundations for geographers to build on, particularly in light of currently unfolding developments in vegan cultures and practice. Taking this work forward, we identify four conceptual traditions from research in food geographies - following foodways, alternative food networks and the cultural and material politics of eating - to develop a 'vegan food geographies' programme that aims to advance critical geographic work on veganism and the emerging implications of its contemporary mainstreaming.

Anxieties around the relationship between livestock agriculture and the environmental crisis are driving sustained discussions about the place of beef and dairy farming in a sustainable food system. Proposed solutions range from 'clean-cow' sustainable intensification to 'no-cow', animal free futures, both of which encourage a disruptive break with past practice. This paper reviews the alternative proposition of regenerative agriculture that naturalises beef and dairy production by invoking the past to justify future, nature-based solutions. Drawing on fieldwork in the UK, it first introduces two of the most prominent strands to this green rebranding of cattle: the naturalisation of ruminant methane emissions and the optimisation of soil carbon sequestration via the use of ruminant grazing animals. Subsequent thematic analysis outlines the three political strategies of post-pastoral storytelling, political ecological baselining and a probiotic model of bovine biopolitics that perform this naturalisation. The conclusion assesses the potential and the risks of this approach to grounding the geographies and the temporalities of agricultural transition in the Anthropocene: an epoch in which time is out of joint and natures are multiple and non-analogue, such that they provide slippery and contested grounds for political solutions.

With the intensification of agriculture, the simplification of crop rotations, and the rise in demand for meat, dairy and cereal products, legume production and consumption are at an historic low in Europe. But as the environmental consequences of agriculture (biodiversity loss, high greenhouse gas emissions, water pollution) and the health outcomes of modern diets (heart disease, cancer, diabetes, obesity) become better known, so great and varied hopes are being expressed about the future role of legumes in the food system. This paper catalogues and scrutinises these hopes, mapping the promissory narratives now orbiting around legumes. It identifies six food futures, each of which is made possible through the greater use of legumes in various production, processing, marketing and consumption contexts. These promissory narratives are theorised as contrasting responses to three major areas of contestation in the food systems literature. Namely i) the sustainability of livestock management, ii) the role of technology in different visions of the 'good diet', and iii) the merits of different models for how to make agricultural management more sustainable. It identifies the promiscuity of legumes - in terms of the range of food futures they permit - before distilling three points of consensus amongst advocates of the potential of legumes. These points of consensus relate to their nitrogen fixing capacity, their high protein content, and their long-standing historical role in the context of European food and farming. This map of legume dreams serves to guide deliberations amongst researchers, policymakers and industry stakeholders about the futures of plant-based food in Europe.

Plant-based milk alternatives-or mylks-have surged in popularity over the past ten years. We consider the politics and consumer subjectivities fostered by mylks as part of the broader trend towards 'plant-based' food. We demonstrate how mylk companies inherit and strategically deploy positive framings of milk as wholesome and convenient, as well as negative framings of dairy as environmentally damaging and cruel, to position plant-based as the 'better' alternative. By navigating this affective landscape, brands attempt to (re)make mylk as simultaneously palatable and disruptive to the status quo. We examine the politics of mylks through the concept of palatable disruption, where people are encouraged to care about the environment, health, and animal welfare enough to adopt mylks but to ultimately remain consumers of a commodity food. By encouraging consumers to reach for "plant-based" as a way to cope with environmental catastrophe and a life out of balance, mylks promote a neoliberal ethic: they individualize systemic problems and further entrench market mechanisms as solutions, thereby reinforcing the political economy of industrial agriculture. In conclusion, we reflect on the limits of the current plant-based trend for transitioning to more just and sustainable food production and consumption.

Dairy production systems have rapidly intensified over the past several decades. Dairy farms in many world regions are larger and concentrated in fewer hands. Higher productivity can increase overall economic gains but also incurs site-specific social and environmental costs. In this paper, we review the drivers and impacts of dairy intensification. We identify in the literature four prominent concerns about dairy intensification: the environment, animal welfare, socioeconomic well-being, and human health. We then critically assess three frameworks-sustainable intensification, multifunctionality, and agroecology-which promise win-win solutions to these concerns. We call for research and policy approaches that can better account for synergies and trade-offs among the multiple dimensions of dairy impacts. Specifically, we suggest the need to (1) consider dairy system transitions within broader processes of social-environmental change and (2) investigate how certain framings and metrics may lead to uneven social-environmental outcomes. Such work can help visualize transformations towards more equitable, ethical, and sustainable food systems.

Breastfeeding is one of the foundations of child health, development and survival. Breastmilk substitutes (BMS) are associated with negative influences on breastfeeding practices and subsequent health concerns and, as with all foods, production and consumption of BMS comes with an environmental cost. The carbon footprint (CFP) of production and consumption of BMS was estimated in this study. To illustrate regional differences among the largest producers and consumers, the CFP of BMS production in New Zealand, United States (USA), Brazil and France and the CFP of BMS consumption in United Kingdom (UK), China, Brazil and Vietnam were assessed. The CFP values were then compared with the CFP of breastfeeding arising from production of the additional food needed for breastfeeding mothers to maintain energy balance (approximately 500â¯kcal per day). The CFP of production was estimated to be 9.2⯱â¯1.4, 7.0⯱â¯1.0, 11⯱â¯2 and 8.4⯱â¯1.3â¯kg CO2e per kg BMS in New Zealand, USA, Brazil and France, respectively, with the largest contribution (68-82% of the total) coming from production of raw milk. The CFP of consumption, which included BMS production, emissions from transport, production and in-home sterilisation of bottles, and preparation of BMS, was estimated to be 11⯱â¯1, 14⯱â¯2, 14⯱â¯2 and 11⯱â¯1â¯kg CO2e per kg BMS in UK, China, Brazil and Vietnam, respectively. Comparison of breastfeeding with feeding BMS showed a lower CFP from breastfeeding in all countries studied. However, the results were sensitive to the method used to allocate emissions from raw milk production on different dairy processing co-products (i.e. BMS, cream, cheese and lactose). Using alternative allocation methods still resulted in lower CFP from breastfeeding, but only slightly for UK, Brazil and Vietnam. Care is also needed when interpreting findings about products that are functionally different as regards child health and development.

This paper offers a critical examination of the narrative landscape that has emerged with a new movement of alternative proteins intended as substitutes for conventional meat, milk and other animal-based food products. The alternative protein approaches analysed include edible insects, plant-based proteins and cellular agriculture, the latter of which encompasses 'cultured' or 'clean' meat, milk and egg products produced in vitro via cell-science methods. We build on previous research that has analysed the promissory narratives specific to cultured/clean meat by examining the key promises that have worked across the broader alternative protein movement. In doing so, we develop a five-fold typology that outlines the distinct yet interconnected claims that have operated in alternative protein promotional discourses to date. The second part of the paper examines the counter-narratives that have emerged in response to alternative protein claims from different stakeholders linked to conventional livestock production. We offer a second typology of three counter-narratives that have so far characterised these responses. Through mapping this narrative landscape, we show how different types of 'goodness' have been ascribed by alternative protein and conventional livestock stakeholders to their respective approaches. Moreover, our analysis reveals a series of tensions underpinning these contested food futures, many of which have long histories in broader debates over what constitutes better (protein) food production and consumption. The paper's discussion contributes to ongoing research across the social sciences on the ontological politics of (good) food, and the key role of narratives in constructing and contesting visions of 'better' food futures.

Both the global average per capita consumption of meat and the total amount of meat consumed are rising, driven by increasing average individual incomes and by population growth. The consumption of different types of meat and meat products has substantial effects on people's health, and livestock production can have major negative effects on the environment. Here, we explore the evidence base for these assertions and the options policy-makers have should they wish to intervene to affect population meat consumption. We highlight where more research is required and the great importance of integrating insights from the natural and social sciences.

The need for more sustainable production and consumption of animal source food (ASF) is central to the achievement of the sustainable development goals: within this context, wise use of land is a core challenge and concern. A key question in feeding the future world is: how much ASF should we eat? We demonstrate that livestock raised under the circular economy concept could provide a significant, nonnegligible part (9-23 g/per capita) of our daily protein needs (~50-60 g/per capita). This livestock then would not consume human-edible biomass, such as grains, but mainly convert leftovers from arable land and grass resources into valuable food, implying that production of livestock feed is largely decoupled from arable land. The availability of these biomass streams for livestock then determines the boundaries for livestock production and consumption. Under this concept, the competition for land for feed or food would be minimized and compared to no ASF, including some ASF in the human diet could free up about one quarter of global arable land. Our results also demonstrate that restricted growth in consumption of ASF in Africa and Asia would be feasible under these boundary conditions, while reductions in the rest of the world would be necessary to meet land use sustainability criteria. Managing this expansion and contraction of future consumption of ASF is essential for achieving sustainable nutrition security.

BACKGROUND: One of the most important consequences of climate change could be its effects on agriculture. Although much research has focused on questions of food security, less has been devoted to assessing the wider health impacts of future changes in agricultural production. In this modelling study, we estimate excess mortality attributable to agriculturally mediated changes in dietary and weight-related risk factors by cause of death for 155 world regions in the year 2050. METHODS: For this modelling study, we linked a detailed agricultural modelling framework, the International Model for Policy Analysis of Agricultural Commodities and Trade (IMPACT), to a comparative risk assessment of changes in fruit and vegetable consumption, red meat consumption, and bodyweight for deaths from coronary heart disease, stroke, cancer, and an aggregate of other causes. We calculated the change in the number of deaths attributable to climate-related changes in weight and diets for the combination of four emissions pathways (a high emissions pathway, two medium emissions pathways, and a low emissions pathway) and three socioeconomic pathways (sustainable development, middle of the road, and more fragmented development), which each included six scenarios with variable climatic inputs. FINDINGS: The model projects that by 2050, climate change will lead to per-person reductions of 3·2% (SD 0·4%) in global food availability, 4·0% (0·7%) in fruit and vegetable consumption, and 0·7% (0·1%) in red meat consumption. These changes will be associated with 529,000 climate-related deaths worldwide (95% CI 314,000-736,000), representing a 28% (95% CI 26-33) reduction in the number of deaths that would be avoided because of changes in dietary and weight-related risk factors between 2010 and 2050. Twice as many climate-related deaths were associated with reductions in fruit and vegetable consumption than with climate-related increases in the prevalence of underweight, and most climate-related deaths were projected to occur in south and east Asia. Adoption of climate-stabilisation pathways would reduce the number of climate-related deaths by 29-71%, depending on their stringency. INTERPRETATION: The health effects of climate change from changes in dietary and weight-related risk factors could be substantial, and exceed other climate-related health impacts that have been estimated. Climate change mitigation could prevent many climate-related deaths. Strengthening of public health programmes aimed at preventing and treating diet and weight-related risk factors could be a suitable climate change adaptation strategy. The coming decades are likely to see increasing pressures on the global food system, both on the demand side from increasing population and per capita consumption, and on the supply side from greater competition for inputs and from climate change. This paper argues that the magnitude of the challenge is such that action is needed throughout the food system, on moderating demand, reducing waste, improving governance and producing more food. It discusses in detail the last component, arguing that more food should be produced using sustainable intensification (SI) strategies, and explores the rationale behind, and meaning of, this term. It also investigates how SI may interact with other food policy agendas, in particular, land use and biodiversity, animal welfare and human nutrition.

OBJECTIVES: To model the impact on chronic disease of a tax on UK food and drink that internalises the wider costs to society of greenhouse gas (GHG) emissions and to estimate the potential revenue. DESIGN: An econometric and comparative risk assessment modelling study. SETTING: The UK. PARTICIPANTS: The UK adult population. INTERVENTIONS: Two tax scenarios are modelled: (A) a tax of £2.72/tonne carbon dioxide equivalents (tCO2e)/100 g product applied to all food and drink groups with above average GHG emissions. (B) As with scenario (A) but food groups with emissions below average are subsidised to create a tax neutral scenario. OUTCOME MEASURES: Primary outcomes are change in UK population mortality from chronic diseases following the implementation of each taxation strategy, the change in the UK GHG emissions and the predicted revenue. Secondary outcomes are the changes to the micronutrient composition of the UK diet. RESULTS: Scenario (A) results in 7770 (95% credible intervals 7150 to 8390) deaths averted and a reduction in GHG emissions of 18 683 (14 665to 22 889) ktCO2e/year. Estimated annual revenue is £2.02 (£1.98 to £2.06) billion. Scenario (B) results in 2685 (1966 to 3402) extra deaths and a reduction in GHG emissions of 15 228 (11 245to 19 492) ktCO2e/year. CONCLUSIONS: Incorporating the societal cost of GHG into the price of foods could save 7770 lives in the UK each year, reduce food-related GHG emissions and generate substantial tax revenue. The revenue neutral scenario (B) demonstrates that sustainability and health goals are not always aligned. Future work should focus on investigating the health impact by population subgroup and on designing fiscal strategies to promote both sustainable and healthy diets.
