RESUMEN

The study material consisted of 360 eggs from a reproductive flock of meat-type hens; 240 were double-yolked eggs and 120 were single-yolked as a control group. The eggs were numbered individually and then analysed for their quality in terms of characteristics of the whole egg (weight, shape index, specific gravity), shell (colour, strength, weight, density), albumen (pH, height, weight, Haugh units) and yolk (colour, weight, shape index, pH). During the analyses, yolks were sampled for analyses including basic composition, fatty acid profile (by gas chromatography) and fatty acid indices. It was found that double-yolked eggs differed significantly from single-yolked ones in terms of weight, proportion of individual elements in the egg weight, total protein content in the yolks as well as in terms of the fatty acid profile and their indices both due to the presence or absence of two yolks and in the context of the individual yolks analysed. The results indicate the possibility of using double-yolked eggs as table eggs due to the absence of negative effects stemming from being double-yolked and the increased content of biologically important components such as fatty acids.

The aim of the study was to evaluate the birds' sex as well as the caponisation influence on the technological traits of obtained meat, fatty acids profile as well as main chemical compounds distribution. In this study, 40 hens, roosters and green-legged partridge capons each were used (4 replications each). At 24 weeks of age, 2 birds from each replication subgroup were selected and slaughtered. During dissection analysis, pectoral and femoral muscles were sampled. Acidity, colour, tenderness, water holding capacity, drip and cooking loss were determined in the obtained material. The fatty acid profile of the meat was also determined, as well as the distribution of components in the pressed meat samples using FTIR spectroscopy. Statistically significant differences in the colour lightness index (L*) of the breast muscles were recorded, with cockerel meat being the darkest and capon meat the lightest. The greatest natural water loss was recorded in the hens' pectoral muscle; cooking loss was also the greatest in these samples. Roosters showed significantly the lowest content of monounsaturated fatty acids, at the same time the highest proportion of the n3 fatty acids group was found in capons. Irrespective of muscle, meat from roosters showed the highest susceptibility to oxidation (PI index). The variation in the chemical composition of the meat was confirmed by FTIR mapping.

Selection of livestock has not only led to changes in the level of their performance but also modified their behavior. As a result, within a single species, we have to deal with different behaviors of different breeds. In our study, we assumed that the different behaviors within a species are due to differences in the morphology and physiology of behavior-related systems. Two breeds of hens were used as a model: the highly reactive, fearful and high-performance Leghorn breed and proactive, unselected Green-legged Partridge breed. The higher reactivity and fearfulness of Leghorn hens in comparison to the Green-legged Partridge breed may be related to the greater number of neurons in the paraventricular nucleus and anterior hypothalamus and the higher content of zinc and iron in the brain, as these elements are involved in neuronal conduction and myelination processes. The reactive behaviours of Green-legged Partridge hens may be associated with the lower number of neurons in the paraventricular nucleus and the anterior hypothalamus and the higher concentration of dopamine and copper ions in the brain. The analyses confirmed the hypothesis of the existence of interbreed differences in the morphology and physiology of behaviour-related systems, which most probably emerged through unintentional and correlated selection towards high production performance. Consequently, attention should be drawn that the selection of a given genotype (breed) towards a specific environment could lead to creation of highly specialised lines that may not achieve homeostasis in every maintenance system.

The objective of this study was to evaluate whether there are negative effects of the partial replacement of white corn with rye along with xylanase supplementation on overall bone quality, eggshell mineralization, and mechanical strength in laying hens. From the 26th week of life, ISA Brown laying hens were fed either a wheat-corn diet or a diet containing 25% rye, with or without xylanase. The experimental period lasted for 25 weeks, until birds reached their 50th week of age, after which bone and eggshell quality indices were assessed. Eggshell thickness and eggshell Ca content of eggs from rye-fed hens were improved by xylanase supplementation. No differences in the mechanical properties of the eggshells were observed between treatments, except for the diet-dependent changes in egg deformation. Rye inclusion had no effect on the mechanical properties of bone. Xylanase supplementation, irrespective of the diet, had a positive effect on bone strength and increased tibia Ca content, as well as the content of several microelements. Hence, hybrid rye combined with wheat can replace 25% of corn in layer diets without compromising shell quality or bone mineral content. Xylanase supplementation in these diets is recommended since its inclusion improves both bone strength and quality.

The aim of this study was to evaluate the indicators of the behavioural and physiological welfare of Japanese quails (Coturnix japonica) as possible responses to the enrichment of the birds' habitat. The study sample consisted of 280 Japanese quails (224 ♀ and 56 ♂, respectively). Birds of 5 weeks of age were randomly divided into seven equally sized groups and then divided into replication subgroups (four per group, 10 birds in each replication). Birds were maintained in 0.5 m2 cages with unrestricted access to water and food. The experimental factor was the presence or absence of enrichment of the birds' cages: the nest box, scratcher, plastic corrugated pipe (tunnel), limestone cubes, sandbathing box and feeder box with a drilled cover. Quails were subjected to behavioural tests (tonic immobility and open field tests) and, after 6 weeks, blood samples were taken from them to determine their biochemical indices as well as their cortisol and corticosterone levels. An additional element was the assessment of fertility indices. The presence of enrichment was shown to reduce behavioural disturbances in Japanese quails. This study also found that the colour and shape of an object were very important regarding the birds' interest in it. Additionally, individuals kept in enriched cages, who were allowed to exhibit their natural behavioural patterns, had lower stress levels.

The aim of the study was to determine daily changes in some egg quality parameters, indirectly reflecting egg freshness, and to assess the possibility of predicting time from laying using mathematical methods. The study material consisted of 365 table eggs of medium (M, ≥53 g and <63 g) and large (L, ≥63 g and <73 g) weight classes (commercial stock, cage system, brown-shelled eggs) collected on the same day. Eggs were numbered individually and placed on transport trays and stored (14 °C, 70% RH). Every day, for 35 days, egg quality characteristics were analyzed (10 eggs per group). The change of traits in time was analyzed on the basis of linear and polynomial regression equations, depending on the trait. Based on model fitting, eight traits were selected as those most affected by storage time: egg weight and specific weight, Haugh units, albumen weight, air cell depth, yolk index, albumen and yolk pH. These traits, excluding those related to the weight, were then used in a multiple linear regression model to predict egg age. All regression models presented in this study were characterized by high predictive efficiency, which was confirmed by comparison of the observed and estimated values.

The aim of the study was to characterize the population structure and assess the genetic diversity of warmblood horses used in the show jumping discipline. Pedigree data of 1,048 horses participating in the Polish Championships for Young Horses were analyzed. The pedigree of these animals included 12 863 individuals. The study consisted in analysis of the pedigree structure of the horses and characterization of the homozygosity and genetic diversity in the population. It was found that pedigree completeness and depth were sufficient for reliable assessment of the genetic diversity in the analyzed population. Although the average inbreeding coefficient exhibited at an acceptable level (approx. 1.01%), the increasing percentage of inbred animals seems disturbing. The results have shown that modern sport horses are derived from a small number of high-quality sires whose offspring were intensively used for breeding-bottleneck effect. In consequence, a greater part of the genetic variation reduction was observed in the non-founder generations. Given the changes in the studied population, the level of inbreeding in modern sport horses should be monitored, and pedigree data should be effectively used in selection for mating.

The aim of the study was to assess the influence of sex, including caponization, on selected physiological and productive traits of Greenleg partridge (GP) birds. The study material consisted of 120 GP chicks (40 females and 80 males), divided into 3 equal groups (4 replication in each) and kept in litter system and fed ad libitum. A total of 40 cocks have been surgically castrated. The body weight (BW) of birds were measured biweekly. At the age of 24 weeks 8 birds/group were slaughtered, their carcasses were subjected to simplified dissection. Blood samples were collected and among others biochemical profile of serum was established. The lowest BW, regardless of age, had hens. From 18th week capons had the highest BW and finally it was similar to cocks. Cocks demonstrated, significantly, the highest carcass yield, however, the biggest proportion of breast muscles were stated in capons carcasses. The effect of sex is very clear in case of abdominal fat pad. The highest proportion of it was found in females but the lack of sex hormones in capons also contributed to a higher fat accumulation. The serum profile showed that the sexual maturity of hens increased lipids content (cholesterol, trigliceroles) caused by laying production.

Little is known on the protective effects of L-proline on hen erythrocytes. The aim of the study was to determine the protective effects of this amino acid at concentrations of 50 µg/mL, 100 µg/mL, 200 µg/mL in hen erythrocytes subjected to temperatures 41 °C, 43 °C and 45 °C for 1 h and 4 h. The following cellular parameters were determined: viability, morphological alterations, caspase 3/7 activity, heat shock protein HSP70 1A activity and glutathione level. The results showed that exposure to 43 °C and 45 °C resulted in a decrease of viability and increased morphological alterations of the non-treated erythrocytes. Caspase 3/7 activity was increased only at 45 °C, however HSP70 1A activity and glutathione level were increased in the temperature-dependent manner. On the other hand, erythrocytes additionally exposed to L-proline showed alterations of the parameters when compared to the non-treated cells. L-proline at 50 µg/mL and 100 µg/mL increased caspase 3/7 activity at both 41 °C and 43 °C, however it was less augmented at all the concentrations at 45 °C. Glutathione level was decreased in heat-stressed (at 43 °C and 45 °C) hen erythrocytes treated with L-proline (at 50 µg/mL and 100 µg/mL) but it was increased at 200 µg/mL. HSP70 1A activity was augmented in a concentration- and temperature-dependent manner. The results indicate that proapoptotic or antiapoptotic effects of L-proline depend on its concentration and temperature of heat stress and thermoprotective effects induced by the amino acid on some parameters in hen erythrocytes may be a result of stimulation of antioxidative defense and stimulation of HSP70 1A activity.

Little is known about early indicators of heat stress in bird erythrocytes. We investigated the effects of elevated temperatures on the morphology and cellular responses of avian erythrocytes. Hen red blood cells were subjected to 22-45 °C temperatures for 1 h and 4 h, then stained and examined by light microscopy to assess morphological alterations. Cell viability, cytotoxicity and caspases 3 and 7 activity also were investigated. We found that short-term exposure of hen blood to 43-45 °C caused morphological alterations and increased the activity of pro-apoptotic caspases 3 and 7; hemolytic cells also were found. Reduction of erythrocytes may be a consequence of direct disruption of the cell membrane, although apoptotic disintegration also may occur. Because changes in erythrocyte morphology were rapid, they may be useful indicators of thermal stress in birds.

The aim of the study was to investigate the changes in bone geometry, histological structure, and selected mechanical characteristics in young male and female Japanese quails supplemented with Saccharomyces cerevisiae. Quails were fed a basal diet containing no yeast or a basal diet supplemented with 1.5% (15 g per 1 kg of diet) of inactive S. cerevisiae, for a period of 42 days. S. cerevisiae inclusion had no effect on bone weight, length, and density, diaphysis geometry (cross-sectional area, wall thickness, moment of inertia) or on the mechanical strength (yield load, ultimate load, stiffness, Young's modulus, yield stress, ultimate stress). Yeast supplementation improved the morphology of the articular cartilage both in male and female quails, as the total thickness of the articular cartilage was significantly increased. In trabecular bone, an increase in real bone volume and trabecular thickness was observed in females supplemented with S. cerevisiae, while in males the increase in trabecular number was accompanied by a reduction in trabecular thickness. The results of the present study demonstrate that S. cerevisiae, through a sex-dependent action on the gut-bone axis, improved the structure of articular cartilage and microarchitecture of trabecular bone. The positive effects of S. cerevisiae supplementation were more evident in female quails.

The aim of the study was to assess the behaviour of chicks of three different breeds of laying hens differing in the activity, emotional reactivity, and environmental preferences. Another objective was to answer the question whether the behavioural differences between adult birds would be evident already in the chick period or whether they are an effect of the further modifying impact of the environment. 60 green-legged partridge, 60 Polbar, and 60 Leghorn chicks were used in the experiments. The chicks hatched in a flock where hens were previously assessed with behavioural tests and the corticosterone levels in their feathers was determined, indicating significant differences in the temperament and stress level between the breeds. Five tests were carried out: two on competitiveness, activity, interest and fearfulness/curiosity. The experiments revealed considerable differences between the chicks. The Zk birds coped better with situations requiring swiftness and initiative. The Pb chicks were slower than Zk and Lg and did not make quick decisions. Hence, a lower number of these birds entering and leaving the test cage and staying inside was recorded. The Zk chicks exhibited a higher level of fearfulness than the other breeds. In terms of the environment enrichment elements, sand and woodchips were more attractive to the Zk chicks, whereas the Lg and Pb birds preferred pecking the string. No differences in the time of undertaking the analysed activities were found between the breeds.

OBJECTIVE: For many generations, most species of farm animals have been subjected to intense and strictly targeted selection for improvement of their performance traits. This has led to substantial changes in animal anatomy and physiology, which resulted in considerable differences between the current animal breeds and their wild ancestors. The aim of the study was to determine whether there is breed-specific variability in behaviour as well as differences in emotional reactivity and preferences of laying hens. METHODS: The investigations involved 50 Green-legged Partridge, 50 Polbar, and 50 Leghorn hens. All birds were kept in the same conditions, and the behavioural tests were carried out at 30 weeks of age. We used the tonic immobility test and a modified open-field test including such objects as water, commercial feed, feed enriched with cereal grains, finely cut straw, and insect larvae, a sandpit, a mirror, and a shelter imitating a hen nest. RESULTS: The research results demonstrate that the birds of the analysed breeds differ not only in the excitability and emotional reactivity but, importantly, also in the preferences for environment-enriching elements. Ensuring hens' well-being should therefore be based on environmental modifications that will facilitate acquisition of essential elements of chickens' behaviour. The greatest emotional reactivity was found in the Leghorn breed, which may be a result of correlated selection aimed at an increase in chicken productivity. CONCLUSION: The differences in the behaviour of the birds from the analysed breeds indicate that laying hens cannot be regarded as one group of animals with the same environmental requirements.

The effect of caponization on the mechanical properties of Polbar chicken bones was the subject of investigation. The biomechanical strength of bones and the risk of their deformation or fracture were determined on the basis of their geometric, structural, material, and densitometric properties. Eight-week-old cockerels of Polbar breed were surgically castrated and then fattened until the 24th week of life. It was observed that caponization did not influence the weight and length of either of the long bones. It did however significantly reduce their ash content and the Ca and P contents in their femur, and P content in their tibia. Dual energy x-ray absorptiometry densitometry revealed that bone mineral content of the mid-diaphyseal part of both bones were reduced. Similarly, the bone tissue density of bones decreased. Caponization influenced the bone's geometric structure increasing the internal and external diameters of the bones. The bone cross-sectional area was greater in capons, and, consequently, the cross-sectional moment of inertia and the radius of gyration significantly increased. However, the relative wall thickness and cortical index were not altered. The three-point bending tests revealed the negative effect of caponization on the mechanical endurance of bones. Yield strength, Young modulus, and yield stress, characterizing the strength of the bone's material, decreased in capons. That suggests a higher risk of permanent deformation as capon bones become less elastic. Concluding, caponization negatively influenced the quality characteristics of Polbar chicken long bones.

This study aimed to develop a methodology for using ultrasonic technology (USG) to record eggshell thickness for selection of layers. Genetic correlations between eggshell strength and its thickness have been reported to be around 0.8, making shell thickness a selection index candidate element. Applying ultrasonic devices to measure shell thickness leaves an egg intact for further handling. In this study, eggs from 2 purebred populations of Rhode Island White (RIW) and Rhode Island Red (RIR) hens were collected on a single day in the 33rd week of the farm laying calendar from 2,414 RIR and 4,525 RIW hens. Beginning from the large end of the egg, measurements were taken at 5 latitudes: 0º (USG0), 45º (USG45), 90º (USG90), 135º (USG135), and 180º (USG180). To estimate the repeatability of readings, measurements were repeated at each parallel on 3 meridians. Electronic micrometer measurement ( EMM: ) were taken with an electronic micrometer predominantly at the wider end of eggs from 2,397 RIR and 4,447 RIW hens. A multiple-trait statistical model fit the fixed effect of year-of-hatch × hatch-within-year, and random effects due to repeated measurements (except EMM) and an animal's additive genetic component. The shell was thinnest in the region where chicks break it upon hatching (USG0, USG45). Heritabilities of shell thickness in different regions of the shell ranged from 0.09 to 0.19 (EMM) in RIW and from 0.12 to 0.23 (EMM) in RIR and were highest for USG45 and USG0. Because the measurement repeatabilities were all above 0.90, our recommendation for balancing egg strength against hatching ease is to take a single measurement of USG45. Due to high positive genetic correlations between shell thickness in different regions of the shell its thickness in the pointed end region will be modified accordingly, in response to selection for USG45.

Pulmonary aspergillosis is frequently reported in parrots, falcons, and other birds held in captivity. Inhalation is the main route of infection for Aspergillus fumigatus, resulting in both acute and chronic disease conditions. Itraconazole (ITRA) is an antifungal commonly used in birds, but its administration requires repeated oral dosing, and the safety margin is narrow. To investigate the efficacy of inhaled ITRA, six groups of ten young quails (Coturnix japonica) were inoculated intratracheally with 5 × 10(6) spores (3 groups) or 5 × 10(7) spores (3 groups). Animals were exposed to nebulized ITRA nanosuspension as 10 % suspension or 4 % suspension, once daily for 30 min, starting 2 h after inoculation for 6 days. Control groups were exposed to nebulized saline for the same period of time. Survival and clinical scores were evaluated, and animals were subjected to gross pathology. In control animals, aspergillosis resulted in systemic disease without pulmonary or air sac granulomas. Animals died from multiple organ failure. Inhalation of 10 % ITRA nanosuspension blocked lethality and prevented disease-related symptoms in the quails exposed to the low dose of spores, while the disease course in quails inoculated with the high-spore dose was retarded. Inhalation of 4 % ITRA nanosuspension was less effective. Both inhalations were well tolerated, and gross pathology did not reveal signs of local toxicity. The data indicate that inhaled administration of 10 % ITRA nanosuspension is capable of alleviating an acute A. fumigatus infection in quails. A lower ITRA concentration may be only active in chronic pulmonary aspergillosis.
