RESUMEN

Mercury (Hg) is a chemical element that poses risks to human health due to its high toxicity and environmental persistence. We determined the total Hg (THg) and methyl Hg (MeHg) concentrations in hair samples from residents of the Demarcação District (Porto Velho, Rondônia) in the Brazilian Amazon, as well as in water and fish samples, to evaluate factors influencing human exposure. The average THg concentration in human hair was 7.86 ± 6.78 mg kg-1 and it was significantly higher in men, with an increasing trend related to age. There was no significant difference between female age groups. Human exposure to Hg through water was negligible compared to fish consumption. The average weekly intake estimates in the community varied between 1.54 and 4.62 µg kg-1, substantially higher than the recommended limit. The fish species with the highest amounts safe for daily consumption were herbivores and detritivores. Our results contribute to an understanding of how exposure to Hg affects the health of riverside populations and provide insights for new research to develop methods to mitigate such exposure and thus improve the quality of life of Amazonian people.

The aim of this study was to determinate the content of some elements in a specific dairy product, mozzarella, in a particular area of western Slovakia and to evaluate the estimation of the risk to the consumers based on the contribution to the provisional tolerable weekly intake. The consumption of mozzarella can contribute to the intake of important elements in the diet, such as calcium and magnesium, along with others. The contents of some toxic and trace elements were low and have not exceeded the permitted limit. In addition, the contribution to PTWI was found to be very low, which means that the consumption of mozzarella possesses no risk to humans. It is concluded that the data obtained in this study can help as a valuable addition to methodological and scientific material in the field of food safety of dairy products and their positive impact on human health.

Various wastes, especially heavy metals, which are introduced to water sources in an uncontrolled manner, accumulate in aquatic organisms in the food web. Through the consumption of fish and invertebrates, those contaminants reach humans. In response to rapid industrialization, the accumulation of heavy metals in fish adversely impacts human health. The purpose of this study was to evaluate the accumulation of some heavy metals (Chromium, Cadmium, Mercury, Lead, Iron, Copper, Zinc, and Arsenic) among 11 fish species inhabiting in Iznik Lake Basin (Turkey) that are threatened by anthropogenic pollution. Results showed significant differences among species with the accumulation of heavy metals (p < 0.001 and p < 0.05). Chromium, zinc, arsenic, and lead presented the highest contents in Capoeta tinca caught from Çakirca Stream. The contents of lead, copper, and zinc were higher than the guidelines of various authorities. The potential human health risk assessment was conducted by provisional tolerable weekly intake (PTWI). In Rutilus rutilus and Cyprinus carpio, the estimated weekly intake (EWI) for mercury was higher than the PTWI. The findings of this study are of great importance in terms of understanding the effect of fish consumption on human health in the heavy metal polluted area.

Turkey ranked first in sea bass farming in Europe, and almost all extra-EU seabass come from this country. The share of Turkish sea bass in the fish consumption of Europeans has increased significantly, and assessment of potential health risks of trace metals via sea bass, cultured by Turkey, became important. The Netherlands is the main buyer of the Turkish sea bass. Therefore, potential health risks were determined for Turkish and Dutch consumers. In the study, the concentrations of lead (Pb) and mercury (Hg) were below the limits, but the level of cadmium (Cd) was above the guidelines, in spring and winter. Dietary intake and potential health risk were found higher for the Dutch consumer, but all target hazard quotients (THQs) and total THQ (TTHQ) values were well below 1, showing no significant health risk due to the consumption of sea bass, cultured and exported by Turkey. It was determined that these sea basses can be safely consumed in quite high amounts, such as at least 31 meals a month. Se/Hg molar ratios were all above 1 and selenium health benefit values (Se-HBVs) were positive, indicating that selenium (Se) had a protective effect on Hg toxicity and positive health effects. Considering the average annual intake in Turkey and Netherlands, the consumption of sea bass, cultured by Turkey, is safe. Since the risk levels of communities may differ due to their eating habits, it is important to determine the public health impacts of the international fish trade.

Mercury (Hg) is a fairly common environmental pollutant. Chronic exposure to this element may cause, inter alia, kidney damage, and disturbances in the functioning of the nervous system. Literature data indicate that food, including dietary supplements (DS), may sometimes be contaminated with Hg. Therefore, the aim of the study was to assess Hg content in DS containing ingredients of plant origin. The study covered 200 DS available for sale in Poland. Hg content was determined by using the AAS method with the amalgamation technique using the AMA-254 analyzer. The highest average Hg content was found in preparations used as adjuncts for lowering glucose levels (23.97 ± 38.56 µg/kg). The highest percentage of PTWI (1.143%) was found in DS aimed at improving vitality. Due to the fact that DS are commonly used, their quality should be constantly monitored.

OBJECTIVE: The goal of this study was to determine the levels of lead (Pb), cadmium (Cd), and aluminum (Al) in raw bovine milk. Milk consumption was used to calculate the estimated weekly intake (EWI), provisional tolerable weekly intake (PTWI), and target hazard quotient (THQ) for individuals. Metal distribution in dairy products and byproducts was studied as a result of artisanal processing. MATERIAL AND METHODS: Seventy-five raw bovine milk samples were collected from artisanal producers in Alexandria city, West Delta, Egypt, and analyzed using the atomic absorption spectrophotometer. The effect of artisanal dairy processing on metal distribution was studied. RESULTS: The averages of Pb, Cd, and Al in milk samples were 45.06, 4.77, and 2.93 µg/l, with 13.33% and 1.33% of analyzed samples had Pb and Al levels higher than the permissible limits, respectively. The EWI values of Pb, Cd, and Al were 1.050, 0.111, and 0.068 µg/kg body weight, which contributed to about 4.20%, 1.59%, and 0.97% from the PTWI, respectively. The THQ of three metals was <1, which referred to safe consumption. Metal residues were heavily concentrated in artisanal cheese and yogurt after coagulation and fermentation compared with other dairy products. Accordingly, the maximum average and reduction values of Pb, Cd, and Al were 745.87, 51.99, and 71.58 µg/l and -72.87%, -56.5%, and -40.96% in Damietta cheese; 535.51, 40.11, and 62.43 µg/l and -24.11%, -20.74%, and -22.94%) in Kareish cheese; and 418.42, 31.26, and 50.66 µg/l and 3.02%, 5.90%, and 0.27% in yogurt, respectively. CONCLUSIONS: The results indicated that consumption of raw bovine milk did not pose a risk to Alexandria citizens. Metal concentration increased in artisanal cheese and yogurt because of metal bio-gathering after coagulation and fermentation. Fat separation, churning, and boiling milk might keep metal concentration in dairy products and byproducts at lower levels than milk. Thus, they are suggested to be applied especially in highly contaminated areas.

Total mercury (THg), methylmercury (MeHg), and selenium (Se) concentrations were measured in various commercially important fish species. The benefit-risk binomial associated with these chemicals was assessed in children through the probability of exceeding the provisional tolerable weekly intakes (PTWIs) of the contaminants and the Se recommended dietary allowance (RDA). The Se:Hg molar ratios, selenium health benefit values (HBVSe), and monthly consumption rate limits (CRmm) for each species were also calculated. THg and Se were analyzed by atomic absorption spectrophotometer (Shimadzu, Milan, Italy), while MeHg was determined by Trace Ultra gas chromatograph connected with a PolarisQ MS (Thermo Fisher Scientific, Waltham, MA, USA). None of the analyzed fish had Hg levels above the European Community regulatory limits, while most large predators had MeHg levels over the threshold concentration set by US EPA. The estimated weekly intakes of THg and MeHg exceeded in many cases the PTWIs and the Se estimated daily intakes were provided from 0.71% to 2.75% of the RDA. Se:Hg molar ratios above 1 and positive HBVSe index suggested that Se in fish could be enough to alleviate the potential toxic effect of Hg. However, high-risk groups as children should consume fish in moderation because a large consumption pattern, especially of swordfish and tunas, might be of concern for health.

Walnuts (fruits Juglans regia, L.) belong among to the most spread, commercially grown tree nuts in the world. Nuts have grown higher attention in last years as valuable sources of essential elements; they are rich in non-essential fatty acids, proteins, fibre, plant sterols and minerals including potassium and magnesium and antioxidants. Determination of elements distribution in nuts is required not only for evaluation of total intake of essential elements in our food, but it is also useful for gaining data on contamination of foodstuffs by risk elements, but also for monitoring of heavy metal contamination in foodstuffs. Walnut samples were taken from three selected areas in Slovakia. The first location is in the vicinity of the cities Strázske, Humenné and Vranov nad Toplou, the second one is situated close to the city of Prievidza and the last one is close to the city of Vráble. The results of evaluation showed that the content of the elements monitored in location of Vráble did not exceed the limits set by the Regulation of Ministry of Health of Slovak Republic No 2/1994. In the half of samples taken from the location of Strázske, higher content of cadmium as the permitted limit has been found. The samples exceeded the amounts allowed by the Regulation No 2/1994 in contaminated area called "The dangerous triangle". Potential consumption of these walnuts could negatively affect human organism, but only if the kernels from the exact locality would be consumed in very high daily amounts (100-fold higher intake as daily intake according to the Statistical Office of SR).

Akita prefecture is located in the northern part of Japan and has many cadmium-polluted areas. We herein performed an exposure assessment of cadmium in 712 and 432 female farmers in two adjacent cadmium-polluted areas (A and B, respectively), who underwent local health examinations from 2001-2004. We measured cadmium concentrations in 100 food items collected from local markets in 2003. We then multiplied the intake of each food item by its cadmium concentration in each subject to assess cadmium intake from food and summed cadmium intake from all food items to obtain the total cadmium intake. Median cadmium intake levels in areas A and B were 55.7 and 47.8 µg/day, respectively, which were both higher than that of the general population and were attributed to local agricultural products, particularly rice. We also calculated weekly cadmium intake per body weight and compared it to the previous provisional tolerable weekly intake reported by the Joint FAO (Food and Agriculture Organization)/WHO (World Health Organization) expert committee on food additives or current tolerable weekly intake in Japan of 7 µg/kg BW/week. Medians in areas A and B were 7.2 and 6.0 µg/kg BW/week, respectively. Similar estimated values were also obtained by the Monte Carlo simulation. These results demonstrated that the cadmium exposure levels among the farmers were high enough to be approximately the tolerable weekly intake.

The examination of various elements in the milk products is very important in the food sector in respect of food quality and safety. The aim of this study was to determine the concentrations of calcium (Ca), cobalt (Co), cadmium (Cd), copper (Cu), chromium (Cr), iron (Fe), mercury (Hg), potassium (K), magnesium (Mg), sodium (Na), nickel (Ni), phosphorus (P), lead (Pb) and zinc (Zn) in white cottage cheese or cottage cheese supplemented with various additives (white, lacto-free, chive, tzatziki, mustard + onion, chili, active protein) available on the market of Slovakia. All essential elements were within the reference range. Cottage cheese enriched with tzatziki showed higher amount of Cu, Fe, K, and Zn. Mustard + onion cheese contained high values of Ca, Co, Mg, and Ni. In white cottage cheese high amount of Cr, Mn, and P was measured. The content of xenobiotic metals was below permitted limit. The contribution to PTWI (Provisional tolerable weekly intake) suggested very low dietary exposure to heavy metals as Cd, Hg, and Pb as well as other metals (Cu, Ni, and Zn) in cottage cheese. Numerous correlations between concentrations were observed. MOE (Margin of Exposure) evaluation denoted that average consumption of cottage cheese does not pose any high cardiovascular and nephrotoxicity threat.

This study assessed if the concentrations of methylmercury (MeHg) in predatory and non-predatory fish caught in the Upper Solimões River are safe for human consumption, according to the reference values established by the Joint FAO/WHO Expert Committee on Food Additives (JECFA). MeHg concentrations were evaluated in muscle of 5 predatory and 4 non-predatory fish species by gas chromatography with electron capture detector (GC-ECD). MeHg concentrations in predatory (0.09 mg kg-1) and non-predatory (0.04 mg kg-1) fish were under the safe upper limit for human consumption. The general average concentration of MeHg in these fish were 0.05 mg kg-1. The Estimated Weekly Intake of MeHg was higher than the provisional tolerable weekly intake in both predatory and non-predatory fish, especially for women. Due to the high rates of fish consumption in the Amazon, the risk assessment based only on the concentration of MeHg in fish may not be accurate.

Fish has great socioeconomic, cultural, and nutritional importance for Amazonian populations. Despite all health benefits, fish can accumulate great amounts of mercury (Hg). The entry of Hg in aquatic trophic chains is an issue of concern to animal and human health. Higher risks of human exposure are strongly related to fish consumption. Upper Solimões population has one of the highest fish consumption rates of the Amazon. This study aimed to access the concentration of total Hg (THg) in muscle, liver, and gills of 17 species of fishes marketed in the Upper Solimões Region and Health Risk Assessment. Higher concentrations were observed in Carnivores/Piscivores. The highest THg concentration was found in liver of Cichla ocellaris (4.549 µg/g) and the lowest in gills of Hoplosternum littorale (0.002 µg/g). Most species had higher THg concentrations in muscle>liver>gills, in the Ebb period, and liver>muscle>gills, in the Flood period. Hoplias malabaricus, Pseudoplatystoma fasciatum, Plagioscion squamosissimus, Ageneiosus inermis, and C. ocellaris presented average THg concentrations above the safe limit stablished by WHO. THg levels in C. ocellaris, H. malabaricus, P. squamosissimus, P. fasciatum, and Semaprochilodus insignis were higher than those found in fish of heavily impacted areas. Signs of bioaccumulation and biomagnifications of Hg can already be observed in this region. The Western Amazon Region urgently needs government actions to inhibit Hg release in aquatic ecosystems and to advise this population on the safe amount of fish to be eaten according to species and period of the year.

The aim of the study was to determine 16 elements by FAAS and ICP-AES in ca. 1500 samples of 22 species of mushrooms collected from different regions of Poland and the area around Umeå in Sweden. Chemometric techniques were applied to differentiate samples with respect to their geographical origin and interspecies differentiation. Samples of Cantharellus cibarius (Fr.), Boletus edulis (Bull.) and Leccinum scabrum (Bull.) Gray from Morag, Augustów, the Zaborski Landscape Park, Tarnobrzeg and Umeå were discriminated by factor 1 and factor 2. Some species, i.e. Cantharellus cibarius, Boletus edulis, Boletus pinophilus (Pilát & Dermek), Leccinum aurantiacum (Bull.) Gray, Leccinum scabrum and Leccinum versipelle (Fr. & Hök) Snell from one region of Poland (Augustów or Morag) were discriminated by K, Na, Mg, Ca, Fe, Zn, Cu, Mn and Cd. The results enabled an assessment of the hypothetical percentage realisation of the recommended dietary intake (RDA) for the bio-elements in question and of provisional tolerable weekly intakes (PTWI) of toxic metals from the consumption of 100 g of mushrooms. The most abundant element in all the mushroom samples was K, especially in Gomphidius glutinosus (Schaeff. ex Fr.) (Umeå - Sweden) and Cantharellus cibarius (Poland - Morag). Lycoperdon perlatum (Pers.) from Poland and Sweden tended to accumulate the highest levels of Mg, Fe, Zn and Cu. The highest percentage of RDA was obtained for K, Mg and Cu. Based on the estimated PTWI, it can be concluded that no health hazard is associated with the consumption of these mushrooms.

The main goal of this monitoring program was to evaluate the contamination in the intertidal environment of Óbidos Lagoon by the metals Cd, Pb, and Ni on water, sediments, and on biological samples, using the bivalve Cerastoderma edule (common name: cockle) as a biomonitor. Since C. edule is an edible mollusc, the risk of their consumption by humans from this lagoon was also evaluated. The study was performed in a restricted area of the lagoon-the ML station-where human activities, such as shellfish harvesting, intersect with the natural processes occurring in this system. The results obtained revealed that the water samples were polluted with Cd and Pb with concentrations (0.00025 mg l-1 and 0.0072 mg l-1) above the maximum legislated on the Directive 2008/105/EC, while for Ni, this occurred only on one of the seasons sampled (summer 2010: 0.029 mg l-1). The sediments were not contaminated with Cd and Ni, and the contamination detected for the metal Pb, allowed the classification of this station as an unpolluted site ([Pbmin] = 7.477 mg.kg-1 and [Pbmax] = 19.875 mg.kg-1). On biological samples, comparing the results of metal contaminations with the values of the maximum levels fixed by European Commission Regulation (EC) No 1881/2006 and USFDA, all the results were below the legal value. Therefore, during the period of study, the consumption of this bivalve by humans was safe. Also, BAF and CF calculations suggest that C. edule can be used as a biomonitor to determine the source of the contaminations. This study supported the use of C. edule as a biomonitor to assess the contamination by the metals Pb and Ni at the Óbidos Lagoon and allowed to predict the potential transfer of metals to higher trophic levels with potential impacts on the natural and human communities.

Walnuts (Juglans nigra) are considered to be a functional food. In the present study, twenty one macro-, micro-, and trace elements (Al, As, B, Ba, Ca, Cd, Co, Cr, Cu, Fe, K, Li, Mg, Mn, Mo, Na, Ni, Pb, Se, Sr, and Zn) were selected to be determined in walnuts and walnut oils. The beneficial content of essential elements could be shown by the obtained results, the macro-elements Ca, K, Mg, and Na being present in nuts with 1062 mg/kg, 2771 mg/kg, 1426 mg/kg, and 42.3 mg/kg, respectively. Regarding micro- and trace elements, the following order (decreasing content) was found: Mn > Fe > Zn > B, Mo > Cu > Ni > Co > Al > Sr > Ba > Li > Pb > Se > Cr > As > Cd. Furthermore, the potentially toxic trace elements (As, Cd, Pb) determined were below the maximum allowed values in most of the investigated walnut samples. A comparison of oils and nuts revealed that the former contain lower concentrations of all elements analyzed except for Fe and Zn. This suggested the origin from contamination during oil processing. Fe influences the oil oxidation rate, thus its entry during production should be avoided.

Trace element (Hg, Pb, Cd, Zn, Cu, Ni, and Cr) occurrence was determined in the muscle tissue of swordfish collected in the Mediterranean Sea to assess whether the intakes complied with the recommended levels for essential metals and permissible levels for toxic elements. Metals were analyzed by an atomic absorption spectrophotometer (Shimadzu AA 7000). The methodology of Target Hazard Quotient (THQ) was also evaluated. The ranking order of toxic metal concentration was Hg > Cd > Pb, while for essential elements the distribution pattern followed the sequence Zn > Cu > Ni > Cr. The Estimated Weekly Intakes (EWI) as well as THQ for Cd and Pb indicated that swordfish consumption did not pose a risk to human health, whereas the major concern was for Hg. Fish size-related changes in Hg concentrations resulted in high EWI and THQ values relative to larger fish consumption, implying a potential risk to human health. For consumer protection, catches of swordfish approximately above 44 kg should be avoided as these fish have a higher risk of containing toxic levels of Hg.

Wine consumption delivers macroelements and microelements necessary for the proper metabolism. On the other hand, wine can be an important source of toxic metals. The aim of this study was to estimate the concentrations of Ca, Cd, Cu, Fe, Hg, Mg, Ni, Pb, and Zn in the Slovak and non-Slovak wines. The concentration of metals was evaluated with respect to the type, the alcohol content, and the age of Slovak wine. The general scheme of concentrations found was as follows Ca > Mg > Fe > Zn > Pb > Cd > Ni > Cu > Hg. The type of wine and the alcohol content do not have a significant impact on metal concentrations. Also, the age of wine has no influence on the mean concentration of metals, except for Zn. Metal concentrations in Slovak and non-Slovak wines indicate similar contents of metals, except for Ni. The contribution to both dietary reference values (DRVs) and provisional tolerable weekly intake (PTWI) evaluations in the Slovak wine suggested low dietary exposure to Ca, Cu, Fe, Mg, Ni, Zn, Cd, Hg, and Pb, respectively. However, we do not suggest that the consumption of all Slovak wines is healthy. The maximum Pb concentrations in Slovak wines exceed the maximum permitted level proposed by the European Commission. This might be proved by the results of the margin of the exposure (MOE) value evaluation in the samples containing the maximum Pb concentrations, showing a high risk of CKD and SBP in high and extreme consumption groups.

Thirteen Jamaican-grown food crops - ackee (Blighia sapida), banana (Musa acuminate), cabbage (Brassica oleracea), carrot (Daucus carota), cassava (Manihot esculenta), coco (Xanthosoma sagittifolium), dasheen (Colocasia esculenta), Irish potato (Solanum tuberosum), pumpkin (Cucurbita pepo), sweet pepper (Capsicum annuum), sweet potato (Ipomoea batatas), tomato (Solanum lycopersicum) and turnip (Brassica rapa) - were analysed for aluminium, arsenic, cadmium and lead by atomic absorption spectrophotometry and instrumental neutron activation analysis. The fresh weight mean concentrations in these food crops (4.25-93.12 mg/kg for aluminium; 0.001-0.104 mg/kg for arsenic; 0.015-0.420 mg/kg for cadmium; 0.003-0.100 mg/kg for lead) were used to calculate the estimated daily intake (EDI), target hazard quotient (THQ), hazard index (HI) and target cancer risk (TCR) for arsenic, associated with dietary exposure to these potentially toxic elements. Each food type had a THQ and HI < 1 indicating no undue non-carcinogenic risk from exposure to a single or multiple potentially toxic elements from the same food. The TCR for arsenic in these foods were all below 1 × 10-4, the upper limit used for acceptable cancer risk. There is no significant health risk to the consumer associated with the consumption of these Jamaican-grown food crops.

Youtiao is a typical, traditional and widely consumed fried food in China. Fermentation of youtiao involves the use of aluminium potassium sulphate (alum). There are health concerns related to the levels of aluminium in food; therefore, we aimed to determine the aluminium concentrations of youtiao from various locations, and to estimate the dietary exposure by different age groups in southern and northern China. The aluminium content of youtiao samples varied considerably (range = 4.46-852.69 mg kg-1). Both the mean and median aluminium contents of youtiao exceeded 100 mg kg-1, which is the China National Standard (GB) 2760-2014 National Food Safety for Standards for food additives. However, the median and 97.5th percentile of weekly dietary exposure to aluminium from youtiao, estimated using Monte Carlo simulation, did not exceed the provisional tolerable weekly intake (PTWI) set by the joint FAO/WHO Expert Committee on Food Additives (JECFA) for children, adolescents, adults and seniors. The weekly dietary exposure to aluminium would exceed the PTWI if children, adolescents, adults and seniors consumed 134.47, 260.98, 327.10 or 320.41 g of youtiao per week, respectively.

The paper's objective was to estimate weekly Hg intake from fish meals based on intervention research. Total Hg (THg) concentrations in blood and hair samples collected from men (n = 67) from an intervention study as well as muscular tissues of fresh and after heat-treating fish were determined using the thermal decomposition amalgamation atomic absorption spectrometry method (TDA-AAS) using direct mercury analyzer (DMA-80). The mean of the estimated weekly intake (EWI) was estimated at 0.62 µg/kg bw/week in the range 0.36-0.96 µg/kg body weight (bw) /week through the consumption of 4 edible marine fish species every day (for 10 days) by the participants from the intervention research in Lodz, Poland. The Hg intake in the volunteers in our intervention study accounted for 38.6% of the provisional tolerable weekly intake (PTWI) (1.6 µg/kg bw, weekly) value. The average Hg concentration in the analyzed fish ranged from 0.018 ± 0.006 mg/kg wet weight (Gadus chalcogrammus) to 0.105 ± 0.015 mg/kg wet weight (Macruronus magellanicus). The results for the average consumers were within PTWI of methylmercury (MeHg). Moreover, the average concentration of Hg in the selected fish after heat treatment did not exceed the maximum permitted concentrations for MeHg (MPCs = 0.5 mg/kg wet weight) in food set by the European Commission Regulation (EC/1881/2006). Hence, the risk of adverse effects of MeHg for the participants is substantially low.
