RESUMEN

Food fraud has serious consequences including reputational damage to businesses, health and safety risks and lack of consumer confidence. New technologies targeted at ensuring food authenticity has emerged and however, the penetration and diffusion of sophisticated analytical technologies are faced with challenges in the industry. This review is focused on investigating the emerging technologies and strategies for mitigating food fraud and exploring the key barriers to their application. The review discusses three key areas of focus for food fraud mitigation that include systematic approaches, analytical techniques and package-level anti-counterfeiting technologies. A notable gap exists in converting laboratory based sophisticated technologies and tools in high-paced, live industrial applications. New frontiers such as handheld laser-induced breakdown spectroscopy (LIBS) and smart-phone spectroscopy have emerged for rapid food authentication. Multifunctional devices with hyphenating sensing mechanisms together with deep learning strategies to compare food fingerprints can be a great leap forward in the industry. Combination of different technologies such as spectroscopy and separation techniques will also be superior where quantification of adulterants are preferred. With the advancement of automation these technologies will be able to be deployed as in-line scanning devices in industrial settings to detect food fraud across multiple points in food supply chains.

The present study investigated the impact of filtration, creaming and pasteurization on the authentication of the botanical origin of honey using the dilute-and-shoot method in liquid chromatography coupled to mass spectrometry (LC-MS). The analytical method performances were satisfactory (analyte recoveries ranging from 95 % to 103 % and inter-day precision below 12 %). Three types of raw honeys including blueberry, canola and clover were processed under controlled conditions. Filtration, creaming and pasteurization had no impact on honey botanical classification based on the LC-MS fingerprint, and the key molecular fingerprints were retained after processing. However, results revealed that testing the impact of processing is essential when selecting honey authenticity markers because some candidates (e.g. adenosine) are not stable or can be removed during honey processing. The results of the present study also highlighted the suitability of the dilute-and-shoot approach to both develop authentication tools for honey and study the impact of processing methods on specific chemicals in honeys.

BACKGROUND AND OBJECTIVES: Although the model of successful aging is already well discussed and has received considerable critical responses, its intersection with the growing enthusiasm for creative engagement among older adults needs further exploration. This article contributes to the growing literature on later-life creativity by examining its relationship with the discourse of successful aging. RESEARCH DESIGN AND METHODS: The study employs critical humanities-based perspectives and the literature on later-life to address creativity in older age within contemporary neoliberal imperatives. RESULTS: While successful aging is as an antithesis to the narrative of decline, it often fails to capture alternative meanings of aging and the creative engagement in later life. The commercialization and commodification of creativity often function to discipline individuals towards a culture of productivity, optimization, and innovation. However, many older individuals challenge these notions as they create their own models of aging well and authentically that do not align with the ideals of successful aging. DISCUSSION AND IMPLICATIONS: Reductionist, individualistic, and capital-driven understandings of later-life creativity can be broadened by employing critical interdisciplinary approaches, which also help rethink the current meanings of old age and aging. The article will be of interest to scholars, policymakers, artists, and practitioners in gerontological scholarship and the humanities.

Despite the corona-virus pandemic, Korean cosmetics maintain brand attachment in the Chinese market. This study identifies critical influencing and outcome factors of brand attachment within this consumer phenomenon. Specifically, it investigates the relationship between Chinese consumers' perceived brand authenticity and brand attachment, brand loyalty, willingness to pay a premium, and forgiveness. To this end, it uses AMOS 21.0 to analyze data collected through a questionnaire, testing the research model. The study reveals several key findings. Firstly, it assesses brand authenticity based on the following five sub-factors: consistency, naturalness, originality, advertisement truthfulness, and reliability. According to the assessment results, originality shows the most significant impact, followed by reliability, consistency, and naturalness. Furthermore, brand attachment significantly enhances brand loyalty, willingness to pay a premium, and forgiveness toward the brand. Higher levels of brand attachment lead to increased brand loyalty. In addition, greater brand attachment correlates with consumers' increased willingness to pay more for products and greater forgiveness towards the brand.

Female Genital Mutilation (FGM) is a universal issue which affects girls in Africa, the Middle East, Asia and South America, and immigrant communities in Western Europe, North America, Australia and New Zealand. FGM is a cultural practice in approximately 29 countries in Africa, affecting over 140 million girls. FGM is practiced as a rite of passage, where girls are initiated into womanhood. This practice is promoted as a means for incorporation, thus ascribing personhood, and belonging for girls to their communities. African scholars hold conflicting positions about FGM, with some arguing that it is essential for relational fullness and harmony. While others believe FGM is unjustified because of the health and social risks associated with the practice. We argue, applying sustainable social harmony and Gyekye's views on cultural revitalization, that FGM is morally unjustified and should be prohibited. We believe the claims that FGM fosters harmony, a value of Ubuntu, are fallacious, and this perceived harmony is pretentious and unsustainable. We claim that FGM is inauthentic, unjust and steeped in patriarchal underpinnings that are unsustainable, thus it is a disharmonious practice. Cultural practices that are disharmonious should be refined and pruned and must be dynamic and responsive to current realities.

Fermented plant-based products were gathered from various regions in Thailand and categorized into 10 types of traditional commercial vegetables. Different vegetable materials and natural fermentation methods influence the diverse physical, chemical, nutritional, and functional attributes of the products. All the traditionally fermented Thai vegetable samples collected showed physicochemical properties associated with the fermentation process, contributing to the nutritional and functional quality of the final products. Achieving consistent research results is challenging due to the intricate nature of food matrices and biochemical processes during fermentation. The roles of microorganisms, especially probiotics, are crucial in delivering health benefits through fermented foods. Traditionally fermented Thai vegetable foods contain high levels of total soluble solids, titratable acidity, and salinity in pickled shallot and ginger as a result of the natural fermentation process and the ingredients used. The research findings were confirmed using a hierarchical cluster analysis (HCA)-derived dendrogram pattern. The nutritional compositions, total phenolic contents, and antioxidant activities varied among the different types of vegetables. The correlations among lipid, protein, fiber, total soluble solid (TSSs), total titratable acidity (TTA), and salinity as potential biomarkers in fermented vegetable products were examined. The results suggest that traditionally fermented Thai vegetable products significantly impacted food research by enhancing the quality and preserving the authenticity of traditionally fermented Thai vegetables.

In human culture, an object's value is influenced by tangible properties (e.g. visual desirability and constituent materials) and intangible ownership history (e.g. authentic objects owned by celebrities are often worth more than similar inauthentic objects). Children are sensitive to both of these factors as independent determinants of value, but research has yet to elucidate how they interact. Here, we investigate whether children aged 5-11 years consider object properties or authentic ownership history to be the greater determinant of value and examine how their object valuations are influenced by owners' characteristics. In Study 1, visually desirable and undesirable items belonging to 'famously good' owners received higher valuations than similar items belonging to non-famous owners, whereas desirable items belonging to 'famously bad' owners received significantly lower values. In Study 2, children considered items made from cheap materials belonging to famously good owners, but not famously bad owners, to be as valuable as similar items made from expensive materials belonging to non-famous owners. In Study 3, physical contact with a famously bad owner had a detrimental impact on value, but worn and unworn objects belonging to famously good owners did not significantly differ in value. Across studies, we documented evidence that children's sensitivity to authentic ownership history and physical contact as determinants of value increases with age. Together, these findings demonstrate that children's valuation of ownership history relative to object properties depends on the owner's 'essence', and their sensitivity to owner contact as a mediator of value indicates awareness of 'magical contagion'.

Paprika (Capsicum annuum L.) is a popular spice known for its unique properties. Spices are susceptible to microbiological risks arising from harvest factors such as high moisture or environmental contamination. To ensure microbiological safety, post-harvest processing based on heat sterilization, free of chemicals and radiation, is becoming essential in the European market. This study introduces a novel metabolomics approach using ultra-high performance liquid chromatography (UHPLC) coupled with quadrupole-Orbitrap-high-resolution mass spectrometry (HRMS) to assess the sterilization impact on paprika's metabolomic composition. Sterilized and untreated samples were distinguished by OPLS-DA, achieving perfect predictability with high-quality parameters (R2Y = 0.988, Q2 = 0.904). The methodology identified 19 key markers, including fatty acids, amino acids, etc. Sterilization reduced fatty acids such as linoleic acid but increased other metabolites such as DL-malic acid and flazin. This research introduces new metabolomics strategies to ensure paprika quality and other valuable spices, focusing on unexplored sterilization processes.

This study explore the authenticity identification technique of traditional Chinese medicine (TCM) using chemometrics in conjunction with cluster analysis. A clustering Gaussian mixture model was constructed and applied for the data clustering analysis of four types of TCM. Chemical measurements combined with discrete wavelet transform (DWT), Fourier transform infrared spectroscopy (FTIR), and Fourier self-deconvolution (FSD) were utilized for the detailed differentiation of Bupleurum scorzonerifolium, Bupleurum yinchowense, Bupleurum marginatum, and Bupleurum smithii Wolff var. parvifolium. Differences in the attenuated total reflection-FTIR (ATR-FTIR) spectra among the four TCMs were observed. Utilizing clustering algorithms, the one-dimensional DWT of the infrared spectra of samples was employed for the authentication of Chinese herbal medicines. The model demonstrates optimal performance throughout 2000 rounds of network training. The accuracy (88.6 %), sensitivity (86.5 %), and specificity (82.7 %) of the model constructed in this study significantly surpassed those of the CNN model: accuracy (67.7 %), sensitivity (70.4 %), and specificity (68.5 %) (P < 0.05). By setting the cluster size K = 5 and the number of Gaussian mixture model components to 5, the model effectively fits the actual number of categories within the dataset. Infrared spectroscopy analysis revealed distinct carbon-oxygen stretching vibration absorption peaks between 1025 and 1200 cm-1 for Bupleurum scorzonerifolium, Bupleurum yinchowense, Bupleurum marginatum, and Bupleurum smithii Wolff var. parvifolium, indicating strong absorption peaks of carbohydrates. A comprehensive structural information analysis revealed a similarity of above 0.982 among the four types of TCM. Combined with chemometrics and intelligent algorithm-based cluster analysis, successful and accurate authentication of TCM authenticity was achieved, providing an effective methodology for quality control in TCM.

Food authentication significantly impacts consumer health and the credibility of Food Business Operators (FBOs). As European regulations mandate the verification of food authenticity and supply chain integrity, competent authorities require access to innovative analytical methods to identify and prevent food fraud. This study utilizes the DNA metabarcoding approach on meat preparations, sampled during an official control activity. It assesses animal and plant composition by amplifying DNA fragments of the 12S rRNA and trnL (UAA) genes, respectively. The results not only confirmed the declared species but also revealed undeclared and unexpected taxa in products labelled as containing a single animal species and various unspecified plant species. Notable findings such as the presence of Murinae, Sus scrofa, Ovis aries, and Pisum sativum could raise public health concerns, compromise consumer choices made for ethical or religious reasons, and reflect the hygienic conditions of the processing plant. This study demonstrates that the DNA metabarcoding approach looks to be a promising support tool for official control authorities to ensure food authenticity and safety, and to develop risk profiles along the supply chain.

The aim of our study is to investigate the mediating role of self-compassion in the relationship between authenticity and alexithymia by examining the relationships between authenticity, alexithymia and self-compassion. The data collected via email by using three scales from the students of a foundation university in Istanbul/Turkey in the spring semester of 2022-2023. The data collection method was a descriptive cross-sectional study and the data were collected on a voluntary basis. Since it was thought that there would be a difference between the departments, data were collected from three different departments. The sample included 263 participants, 139 were English Language Teaching, 107 were Guidance and Psychological Counseling, and 17 were Elementary Mathematics Teaching students. The average age of the participants was 22.11 ± 3.59, 257 of them were single and 6 of them were married. The data were evaluated by using the SPSS 22.0 and LISREL 8.80 programs. While descriptive analyses were used in the evaluation, the mediating role of self-compassion in the relationship between authenticity and alexithymia was tested with Structural Equation Modeling. When the measurement model was examined, it was seen that there was a relationship between authenticity and alexithymia (r = -.40; p < .000), between self-compassion and alexithymia (r = - .85; p < .001) and between self-compassion and authenticity (r = .43; p < .001). When the structural equation model was examined, it was found that the relationship between authenticity and alexithymia in the measurement model (r = -.40) decreased to (ß = - .05; p > .005) when the mediating role of self-compassion was examined and the relationship was found to be insignificant. When this path was removed from the model and the model was re-examined, the goodness of fit values of the model were χ2/df (71.12/51) ratio = 1.174; RMSEA = .039; SRMR = .050; CFI= .99; NFI = .96; NNFI = .98; IFI = .99; RFI = .95 and GFI = .96. In the study, it was found that self-compassion has a full mediating role in the relationship between authenticity and alexithymia in three departments. The relationship between authenticity and alexithymia goes through self-compassion.

Graviera Naxos, a renowned cheese with Protected Designation of Origin status, is crafted from a blend of cow, goat, and sheep milk. This study focused on assessing the Sr isotopic and multi-elemental composition of both the processed cheese and its ingredients, as well as the environmental context of Naxos Island, including samples of milk, water, soil, and feed. The objective was to delineate the geochemical signature of Graviera Naxos cheese and to explore the utility of Sr isotopes as indicators of geographic origin. The 87Sr/86Sr values for Graviera Naxos samples ranged from 0.70891 to 0.70952, indicating a relatively narrow range. However, the Sr isotopic signature of milk, heavily influenced by the feed, which originates from geologically distinct areas, does not always accurately reflect the local breeding environment. Multi-elemental analysis revealed variations in milk composition based on type and season; yet, no notable differences were found between raw and pasteurized milk. A mixing model evaluating the contributions of milk, sea salt, and rennet to the cheese's Sr isotopic signature suggested a significant average contribution of 73.1% from sea salt. This study highlights the complexities of linking dairy products with their geographical origins and emphasizes the need for sophisticated geochemical authentication methods.

The dispute over the authenticity of video has become a hot topic in judicial practice in recent years. Despite detection methods being updated rapidly, methods for determining authenticity have limitations, especially against high-level forgery. Deleting the integral group of pictures (GOP) length in static scenes could remove key information in the video, leading to unjust sentencing. Anyone can conduct such an operation using publicly available software, thus escaping state-of-the-art detection methods. In this paper, we propose a detection method based on noise transfer matrix analysis. A pyramid structure and a weight learning module are adopted to improve the detection rate and reduce the false positive rate. In total, 80 videos were examined through delicate anti-forensic forgery operations to verify the detection performance of the proposed method and three previously reported methods against anti-forensic forgery operations. In addition, two of the latest learning-based methods were included in our experiments to evaluate the proposed method. The experimental results show that the proposed method significantly improves the detection of frame deletion points compared with traditional and learning-based methods, especially in low false positive rate (FPR) intervals, which is meaningful in forensic science.

The day and age where pharmaceutical institutions were securely nestled within solid walls in one country, without much communication and collaboration with other sites and external collaborators, are long gone. The move to more global communication and collaboration has been beneficial for science exploration, however, it has presented scientists with the challenge of working on global teams. This article will explore this world-wide-working web and provide guidance on how to be successful in this new environment in the pharmaceutical industry and related work institutions. Four angles will be explored - intercultural awareness, virtual working and non-standard working hours, personal and team goals and how to be authentic in this new environment. The article will conclude with a road-map that the reader can follow, when embarking on the global team journey.

Many factors, such as the farming systems and preslaughter rearing practices, can influence the physiological and metabolic functions of poultry with consequent effects on poultry meat quality. In this trial, label-free shotgun proteomics was used to analyze the early post-mortem Pectoralis major muscle proteomes of Ross 308 and Ranger Classic chicken strains raised under two divergent farming systems these being organic and antibiotic-free. The combination of chemometrics using partial-least-square discriminant analysis (PLS-DA) and shotgun proteomics allowed clear discrimination between the different groups. Chicken strains were discriminated by differences in the abundance of 73 and 62 proteins within the antibiotic-free and organic farming systems, respectively. The abundances of 71 and 52 proteins were impacted by the farming system within the Ross 308 and Ranger Classic chicken strains, respectively. The analyses allowed for the proposal of several putative biomarkers of meat authenticity, which were found to be related to muscle structure and energy metabolism pathways. This study is a significant step forward in elucidating the potential of proteomics profiling and chemometrics in chicken meat, which may provide opportunities for the efficient assessment of chicken authenticity.

The authenticity of salted goose products is concerning for consumers. This study describes an integrated deep-learning framework based on a generative adversarial network and combines it with data from headspace solid phase microextraction/gas chromatography-mass spectrometry, headspace gas chromatography-ion mobility spectrometry, E-nose, E-tongue, quantitative descriptive analysis, and free amino acid and 5'-nucleotide analyses to achieve reliable discrimination of four salted goose breeds. Volatile and non-volatile compounds and sensory characteristics and intelligent sensory characteristics were analyzed. A preliminary composite dataset was generated in InfoGAN and provided to several base classifiers for training. The prediction results were fused via dynamic weighting to produce an integrated model prediction. An ablation study demonstrated that ensemble learning was indispensable to improving the generalization capability of the model. The framework has an accuracy of 95%, a root mean square error (RMSE) of 0.080, a precision of 0.9450, a recall of 0.9470, and an F1-score of 0.9460.

Foodomics employs advanced analytical techniques to provide answers regarding food composition, authenticity control, marker identification and issues related to food quality and safety. Nuclear magnetic resonance (NMR) spectroscopy and chromatography hyphenated to mass spectrometry (MS) are the main analytical platforms used in this field. Nevertheless, they are rarely employed in an integrated manner, and even then, the contribution of each technique remains vague. Table olives (Olea europaea L.) are a food commodity of high economic and nutritional value with an increasing production tendency over the last two decades, which, however, suffers from extensive fraud incidents and quality determination uncertainties. Thus, the current attempt aims towards two axes with the first being the multilevel integration of LC-HRMS and NMR data of the same samples and table olives being the selected matrix. In more detail, UPLC-HRMS/MS-based analysis was compared at different stages within an untargeted metabolomics workflow with an NMR-based study and the complementarity of the two platforms was evaluated. Furthermore, statistical heterospectroscopy (SHY), rarely employed in foodomics, combining the spectroscopic with spectrometric datasets and aiming to increase the confidence level of annotated biomarkers was applied. Amongst these lines, the second parallel axis of this study was the detailed characterization of table olives' metabolome in search for quality markers considering the impact of geographical (from Northern to Southern Greece) and botanical origin (Kalamon, Konservolia, Chalkidikis cultivars), as well as processing parameters (Spanish, Greek). To that end, using deep dereplication tools including statistical methods, with SHY employed for the first time in table olives, different biomarkers, belonging to the classes of phenyl alcohols, phenylpropanoids, flavonoids, secoiridoids and triterpenoids were identified as responsible for the observed classifications. The current binary pipeline, focusing on biomarkers' identification confidence, could be suggested as a meaningful workflow not only in olive-based products, but also in food quality control and foodomics in general.

Does self-control express or suppress our true selves? This article reviews the emerging body of literature on the effect of self-control on authentic self-expression from the actors' (self-signaling) and the observers' (other-signaling) perspective. While actors can experience self-control as either expression or suppression of the self, individual differences in decision-making or personal values can predict when self-control is more likely to be experienced in one way or the other. Self-control also signals to observers both positive (e.g., competent, trustworthy, powerful) and negative (e.g., inauthentic, robotic, less warm) identities, with specific inferences depending on the context (e.g., work vs. fun). Overall, the relationship between self-control and self-expression is more nuanced than earlier research suggested, and several open questions await further investigation.

BACKGROUND: Accurate identification of meat species is critical to prevent economic fraud and safeguard public health. The use of inappropriate meat sources, such as murine, poses significant health risks because of potential contamination with pathogens and allergens, leading to foodborne illnesses. The present study aimed to develop a novel real-time enzymatic recombinase amplification (ERA) method for the rapid and specific detection of murine DNA in meat products. RESULTS: A novel ERA primer and probe set was designed, targeting a murine-specific single-copy nuclear gene identified through bioinformatics analysis. The assay demonstrates high specificity, showing no amplification in commonly consumed meats, other animals or major crops. Additionally, it exhibits remarkable sensitivity, detecting as few as five copies of murine genomic DNA. For practical application, the ERA method could effectively identify mouse DNA in laboratory-prepared samples at concentrations as low as 0.5% and also quantify samples with mouse DNA content as low as 5%. It also accurately detects the presence of murine-derived ingredients in commercially available meat products. The detection process is straightforward, utilizing a simple isothermal device for incubation, blue light excitation and a smartphone camera for result interpretation. This rapid analysis can be completed within 20 min. RESUMEN

Seasonings such as naturally fermented soy sauce without added monosodium glutamate (MSG), are currently a growth market in China. However, fraudulent and mislabeled zero-added MSG soy sauce may cause a risk of excessive MSG intake, increasing food safety issues for consumers. This study investigates stable carbon and nitrogen isotopes and 16 amino acids in typical Chinese in-market soy sauces and uses a similarity method to establish criteria to authenticate MSG addition claims. Results reveal most zero-added MSG soy sauces had lower δ13C values (-25.2 ‰ to -17.7 ‰) and glutamic acid concentrations (8.97 mg mL-1 to 34.76 mg mL-1), and higher δ15N values (-0.27 ‰ +0.95 ‰) and other amino acid concentrations than added-MSG labeled samples. A combined approach, using isotopes, amino acids, similarity coefficients and uncertainty values, was evaluated to rapidly and accurately identify zero-added MSG soy sauces from MSG containing counterparts.
