The increasing demand for allergen-free and reduced-allergen foods has led to an investigation into the potential use of O-free wheat, a low-allergy wheat cultivar, in cookie production. This study focused on assessing the gluten composition of O-free flour and comparing its suitability for cookie making in comparison to flours with varying gluten strengths. Several analyses were conducted, including gluten composition, solvent retention capacity (SRC), thermal and pasting properties, dough-mixing characteristics, and cookie-making performance. The gluten composition of O-free flour by SDS-PAGE confirmed the absence of ω-gliadins and the reduced levels of low-molecular-weight glutenins and γ-gliadins. The SRC values of O-free flour fell between the flours with weak and medium gluten strengths. While thermal and pasting properties showed significant differences in sucrose solution but not across flour types, indicating similar starch structures, mixograms displayed distinct variations influenced by both sucrose solution and flour type, highlighting the importance of gluten quality and composition. Cookies made with O-free flour demonstrated similarities to those produced with weak gluten flour, known for their favorable cookie characteristics. This study emphasizes the significant influence of flour gluten composition on cookie-making performance and advocates for the adoption of O-free flour in the development of allergy-friendly cookies.

Plasmonic nanoparticles show highly sensitive optical properties upon local dielectric environment changes. Hybridisation of plasmonic nanoparticles with active polymeric materials can allow stimuli-responsive and multiplex sensing over conventional monotonic sensing capacity. Such heterogeneous adlayers around the plasmonic core component, however, are likely to perturb the local refractive index in the nanometre regime and lead to uncertainty in its intrinsic sensitivity. Herein we prepare a series of polystyrene-grafted polyhedral gold nanoparticles, cubic and concave cubic cores, with different edge lengths and polymer thicknesses with precise synthesis control. Their localised surface plasmon resonance (LSPR) spectral changes are monitored to understand the effect of core morphological details in the interplay of nanoscale polymeric shells. Quantitative image analysis of changes in the core and shell shape contours and finite-difference time-domain simulations of the corresponding LSPR spectra and electric field distributions reveal that the magnitude of the LSPR spectral shift is closely dependent on the core morphology, polymer shell thickness and electric field intensity. We also demonstrate that the polystyrene-grafted gold concave cube displays higher sensitivity for nanoscale refractive index change in the polymer shell than the polystyrene-grafted gold cube at different temperatures. Our systematic investigation will help design polymer-composited plasmonic nanosensors for desirable applications.

PURPOSE: The purpose of this study was to validate the Korean version of the Ethical Leadership at Work questionnaire (K-ELW) that measures RNs' perceived ethical leadership of their nurse managers. METHODS: The strong validation process suggested by Benson (1998), including translation and cultural adaptation stage, structural stage, and external stage, was used. Participants were 241 RNs who reported their perceived ethical leadership using both the pre-version of K-ELW and a previously known Ethical Leadership Scale, and interactional justice of their managers, as well as their own demographics, organizational commitment and organizational citizenship behavior. Data analyses included descriptive statistics, Pearson correlation coefficients, reliability coefficients, exploratory factor analysis, and confirmatory factor analysis. SPSS 19.0 and Amos 18.0 versions were used. RESULTS: A modified K-ELW was developed from construct validity evidence and included 31 items in 7 domains: People orientation, task responsibility fairness, relationship fairness, power sharing, concern for sustainability, ethical guidance, and integrity. Convergent validity, discriminant validity, and concurrent validity were supported according to the correlation coefficients of the 7 domains with other measures. CONCLUSION: The results of this study provide preliminary evidence that the modified K-ELW can be adopted in Korean nursing organizations, and reliable and valid ethical leadership scores can be expected.
