Bread is one of the most consumed foods all over the world. Several contaminants are identified in bread. Polycyclic aromatic hydrocarbons (PAHs) is one of these contaminants. This systematic study evaluates the amount of four carcinogenic PAHs (PAH4) in various types of breads. To conduct this study, a comprehensive search was carried out using keywords of polycyclic aromatic hydrocarbons, PAHs, PAH4, and bread, with no time limitations. 17 articles were selected and fully evaluated. The observed range of PAH4 concentrations in bread varied from non-detected (ND) to 20.66 µg/kg. In the sample preparation process for analysis, an ultrasonic bath was predominantly utilized. Most chromatographic methods are able to measure PAHs in food, but the GC-MS method has been used more. To mitigate PAH levels in bread, it is suggested to incorporate antioxidants during the bread-making process. Furthermore, the type of bread, the type of fuel used to bake the bread, the temperature and the cooking time were some of the factors affecting the amount of PAH. Restricting these factors could significantly reduce PAH content. Regarding the risk assessment conducted in the manuscript, it was determined that industrial breads are usually considered safe. However, some traditional breads may pose risks in terms of their potential PAH content.

In this study, microplastic contamination in water, natural mineral water and mineral water, sparkling soft drinks, cold tea and some traditional beverages marketed in Türkiye were assessed. Microplastics physically and chemically characterized by microscope and ATR/FT-IR, respectively. Microplastics were detected in 9 out of 47 beverage samples. A total of 250 microplastics with 5 different polymers, 2 different shapes, and 7 different colours were detected in 47 beverage samples. The average microplastic concentration was 2.24 ± 9.86 particles/L for all beverages analysed. The highest average microplastic concentration was found in mineral waters in glass bottles (average 11.3 particles/L). No microplastics were found in cold tea and other drinks. The total annual microplastic exposure from beverage consumption in male and female individuals aged >15 years was 2029 and 1786 particles/mL/year, respectively. The microplastic load index category of all beverage samples was determined as "moderate". The average pRi level of all beverages was 117 ± 260 and the risk level was determined as "low". The study provides evidence that microplastics are common in beverages and that microplastics are directly ingested by humans.

This study aimed to determine the acrylamide exposure of pregnant women resulting from the consumption of bread, coffee, and French fries and to evaluate it in terms of carcinogenic and non-carcinogenic health risks. Retrospective 24-h food consumption data of pregnant women (n = 487) was obtained using the Food Frequency Questionnaire (FFQ). Dietary acrylamide exposure was calculated according to a deterministic model, and the data were assessed by hazard index (HI) and carcinogenic risk (CR). The mean daily acrylamide exposure of pregnant women aged 18-30 and ≥31 years and in the 1st, 2nd, and 3rd trimesters was 31.4, 35.4, 38.7, 31.3, and 32.4 µg/day, respectively. The acrylamide exposure data were not significantly different among different age groups and pregnancy periods (p > .05). Dietary acrylamide exposure in pregnant women of different age groups and trimesters may cause significant and serious health problems in terms of carcinogenic risk. According to their level of contribution to average acrylamide exposure, the foods were ranked as follows: French fries> bread> coffee. There is a significant risk of cancer due to exposure to acrylamide from French fries and bread other than coffee. The findings suggest that pregnant women should avoid consuming French fries, bread, and coffee with high acrylamide levels for both their own health and their newborns' health.

Affordable, nutritious, and easily available bread has a significant place in the nutrition of pregnant women. This study aims to determine bread consumption-induced heavy metal exposure in pregnant women with different sociodemographic characteristics living in Turkey and to evaluate it for non-carcinogenic health risks. Bread consumption data of pregnant women covered a retrospective 24-h period. Heavy metal exposure was calculated according to the deterministic model. Non-carcinogenic health risk assessment was evaluated by target hazard quotient (THQ) and hazard index (HI). Bread consumption-induced Mn, Al, Cu, Ni, Pb, As, Cr, Co, Cd, and Hg exposures of all pregnant women (n = 446) were 44.0, 25.0, 6.62, 0.69, 0.15, 0.06, 0.04, 0.03, 0.03, and < 0.00 µg/kg bw/day, respectively. Bread consumption-induced Mn exposure was higher than the tolerable daily intake level. The HI (1.37 [Formula: see text] 1.71) related to bread consumption is greater than 1 in all pregnant women in different age groups and trimesters and bread consumption may cause some health concerns in terms of non-carcinogenic health risks for pregnant women. The bread consumption can be limited, but bread consumption should not be abandoned.

Melamine is one type of monomer used as starting substance in manufacturing packaging lining in many countries worldwide. Environmental and food contamination is an issue constantly discussed. In the present study, the melamine content in milk samples with three package types was measured by HPLC/UV. Melamine is not a lipophilic compound. Therefore, the selected samples were low-fat milk. The melamine content in various packaged milk, including packet, polyethylene bags, and plastic packaging, is 790 ± 39.8, 50.7 ± 13, and 57.7 ± 24.54 ppb, respectively. According to the existing standards, the measured values in all the milk samples were lower than the permitted limits. The risk assessment for adults and children showed that the HQ value for both age groups was less than 1. Therefore, milk consumption will not pose a health risk in terms of contamination with melamine.

Sodium benzoate and potassium sorbate are relatively common preservatives used in a wide range of foods including flavoring products like sauces. The potential health risks arising from these preservatives along with the high-consumption rate of these flavoring products worldwide highlight the importance of the quality and safety assurance of these products. So, this study aimed to evaluate the concentrations of these two common preservatives (i.e., sodium benzoate and potassium sorbate) in different sauce samples, including mayonnaise, salad dressings, Caesar sauce, Italian dressing, Ranch dressing, French dressing, using high-performance liquid chromatography (HPLC) and to compare them with the acceptable level of Codex standard. For this purpose, 49 samples, including three to five samples of each type of different brands of sauce samples, were randomly collected from supermarkets in Urmia, Iran. Based on the results, the mean concentrations ± standard deviation of sodium benzoate and potassium sorbate in the collected samples were found to be 249.9 ± 157 and 158.0 ± 131 ppm, respectively, which were lower than the general standard of the Codex Alimentarius and the European legislation. Due to the importance of hazardous side effects of these preservatives for consumers, regular and accurate evaluation of these preservatives in sauces as highly consumed food products is still recommended for consumer safety.

In this study, the 10-year dietary habits of patients diagnosed with cancer (n = 1155) were retrospectively analyzed, and the relationships between dietary (red meat, white meat, fish meat, French fries, bread, instant coffee, ready-to-drink coffee, Turkish coffee, and black tea) heterocyclic amines, polycyclic aromatic hydrocarbons, acrylamide, and N-nitrosamine-based risk scores and cancer types were statistically evaluated. The foods with the highest and lowest mean dietary heat-treatment contaminant risk scores were red meat and ready-to-drink coffee, respectively. There were statistically significant differences in the dietary heat-treatment contamination risk scores based on the cancer patients' demographic characteristics (sex, age, smoking, and body mass index) (p < 0.05). According to the cancer types, the systems with the highest and lowest dietary heat-treatment contaminant risk scores were determined as other (brain, thyroid, lymphatic malignancies, skin, oro- and hypopharynx, and hematology) and the reproductive (breast, uterus, and ovary) system, respectively. The relationship between instant coffee consumption and respiratory system cancer types, the frequency of consumption of French fries and urinary system cancer types and the consumption of meat products and gastrointestinal system cancer types were determined. It is thought that this study contains important findings regarding the relationship between dietary habits and cancer and will be a good source for other studies to be conducted in this context.

In this study, the characterization of microplastics of table salts (n = 36) was determined by FT - IR. Then, individuals' exposure to microplastics from table salt consumption was calculated with a deterministic model, and finally, a risk assessment of table salt was performed using the polymer risk index. On average, 44 ± 26, 38 ± 40, 28 ± 9, and 39 ± 30 microplastics/kg were detected in rock salts (n = 16), lake salts (n = 12), sea salts (n = 8), and all salts (n = 36). Microplastics with 10 different polymer types (CPE, VC-ANc, HDPE, PET, Nylon-6, PVAc, EVA, PP, PS, Polyester), 7 different colors (black, red, colorless, blue, green, brown, white, gray), and 3 different shapes (fiber, granulated, film) were found in table salts. The daily, annual and lifetime (70-year) exposures to microplastics from table salt consumption in 15+-year-old individuals (general) were calculated to be 0.41 microplastic particles/day, 150 microplastic particles/year and 10,424 microplastic particles/70-year, respectively. The average microplastic polymer risk index of all table salts was calculated as 182 ± 144 and the risk level is in the medium. In order to minimize microplastic contamination in table salts, protective measures should be taken at the source of the salt, and production processes should be improved.

Acrylamide, identified by the International Cancer Research Center as a possible carcinogenic compound to humans, is a contaminant formed as a result of the thermal process in many foods, such as coffee, French fries, biscuits and bread, which are frequently consumed by individuals in their daily lives. The biggest concern about acrylamide is that the health risks have not yet been fully elucidated. For this reason, many studies have been carried out on acrylamide in the food, nutrition and health equation. This study focused on epidemiological studies examining the associations between dietary acrylamide exposure and cancer risk. For this purpose, articles published in PubMed, Isi Web of Knowledge, Scopus and Science Direct databases between January 2002 and April 2022 were systematically examined using various keywords, and a total of 63 articles were included in the study. Although some studies on reproductive, urinary, gastrointestinal, respiratory and other systems and organs stated that there is a positive relationship between dietary acrylamide exposure and cancer risk, many publications did not disclose a relationship in this direction. Studies examining the relationship between dietary acrylamide exposure and cancer should be planned to include more people and foods in order to obtain more reliable results. Making research plans in this way is very important in terms of guiding health policies to be formed in the future.

In this study, exposure risk assessment was made by determining the acrylamide levels of some traditional foods frequently consumed by the Turkish society and registered geographical indication. For this purpose, acrylamide levels of 20 traditional foods [7 meat products, 3 loaves of bread, 3 bagels (simit), and 7 desserts] obtained from different bakeries, patisseries, and restaurants were determined by LC-MS/MS. Acrylamide levels were determined between 12.7 - 299 µg/kg in meat products, 11.8 - 69.3 µg/kg in bread, 11.8 - 179 µg/kg in bagels, 11.7 - 85.0 µg/kg in baked desserts, and 32.3 - 527 µg/kg in deep-fried desserts. According to the portion size, the food with the highest acrylamide level in meat products is Adana kebab (17.70 µg/180 g). Formulation and cooking techniques are thought to be the main determinants of acrylamide level detected in traditional foods. Dietary acrylamide exposure was calculated according to the deterministic model. Exposure was calculated as 0.20, 0.53, and 0.98 µg/kg bw per day for good, average and bad scenarios, respectively. The calculated acrylamide exposure value is below the reference values stated by FAO/WHO. The acrylamide dietary exposure was not of concern concerning neurotoxicity and carcinogenicity. The results can be used to reduce acrylamide levels in foods and risk assessment studies.

This study focuses on infant formulas and baby biscuits, which have an important place in the nutrition of the most vulnerable individuals, namely babies. In this sense, the aluminum levels of 64 different baby foods, retrospectively consumed by 348 babies for dietary recall 24 h, were determined by ICP-MS. Then, the exposure resulting from the consumption of these foods was calculated via a deterministic model, and a risk assessment was made. Aluminum levels of infant formulas and baby biscuits that are of higher values compared to other studies were found in the range of 718-6987 and 1803-15,479 µg/kg, respectively. Aluminum exposure was calculated as 8.02, 7.28, 4.03, and 4.08 µg/kg bw/day in babies aged 0-6, 7-12, 13-24, and 25-36 months, respectively. There is no statistically significant difference between different age groups according to the total aluminum exposure levels. The toxicological contribution of aluminum exposure is quite limited (< 6.0% of PTWI). THQ values were calculated as 10-20 for babies aged 0-36 months. Therefore, THQ values indicate a potential health problem.

Many researchers have pointed out that coffee contributes significantly to the dietary exposure among the many foods that contain acrylamide. Within the context of this study, the 24 h dietary recall method was employed to obtain the coffee consumption information of 263 individuals with different socio-demographic characteristics, followed by an estimation based on the deterministic model and an analysis of statistical data, in an attempt to estimate acrylamide exposure from coffee. The acrylamide intake of individuals who consume coffee was estimated to be 0.11 ± 0.084 µg/kg bw per day (95th percentile, 0.27 µg/kg bw per day); the exposure of women was estimated to range on an average between 0.12 ± 0.097 µg/kg bw per day while the exposure of men was estimated to range between 0.10 ± 0.065 µg/kg bw per day. A statistically significant difference (p < .05) was detected in the estimated average values between the parameters of age group, education level and coffee types consumed. Dietary acrylamide exposure was not of concern with respect to neurotoxicity and carcinogenicity. This is the first study carried out to estimate acrylamide exposure of individuals in Turkey from coffee.

Coffee is a beverage that is widely enjoyed and consumed by all segments of society. As well as having a rich content, it contains acrylamide, defined as 'a probable carcinogen for humans' by the International Agency for Research on Cancer. The aim of this study was both to determine the acrylamide levels of ready-to-drink coffees from various coffee brands marketed in Turkey and to offer a resource for risk assessment and acrylamide exposure studies in this area. For this purpose, a total of 41 coffee samples (22 instant coffee, 7 traditional Turkish coffee and 12 ready-to-drink (brewed) coffee) obtained from local markets and coffee shops were analysed in terms of acrylamide content. LC-MS/MS was used to detect the acrylamide content in the samples. The levels of acrylamide ranged from 16.5 to 79.5 ng mL-1 in instant coffees, from 5.9 to 38.8 ng mL-1 in ready-to-drink (brewed) coffees and from 5.3-54.8 ng mL-1 in Turkish coffee and other traditional coffees. The study showed that instant coffee includes the highest level of acrylamide among the other types. In addition, it was found that terebinth coffee, a form of traditional Turkish coffee, had a high content of acrylamide.
