Short germination is a process that can improve bioactive compounds in rice. This work aimed investigate the physical properties, phenolic compounds (PC), antioxidant activity and amino acids composition of husk + bran, brown and milled rice with high amylose content after short germination (16 h). α-amylase activity (Falling Number, FN) and enthalpy (ΔH) were unchanged (p < 0.05). RVA curve profiles were similar, even though after short germination and milling. Globally, metabolomics analysis identified 117 PC, in which 111 (bound), 104 (free) and 21 revealed in both extracts. p-Coumaric, trans-ferulic and ferulic acids were the most abundant PC revealed in all fractions. The portion husk + bran showed the highest level of total antioxidant activity (709.90 µmol TE) in both free and bound fractions. In terms of total amino acids, there was no statistical difference (p < 0.05) among non-germinated and germinated samples, contrary to free amino acids content. Glutamic acid (Glu) presented the highest values combining short germination and milling (1725-1900 mg/100 g) consequently, leads to higher value of GABA (12.21 mg/100 g). The combination of short germination and milling demonstrated a good strategy to improve the nutritional quality of rice, unless the thermal and pasting properties have been altered, contribute to potential health benefits on human nutrition.

This study aimed to determine how the cooking methods change the phenolics and saponins profiles, oligosaccharides, antinutrients and antioxidant properties of flours from colorful beans. The autoclave cooking consisted of: 6 h soaking and 5 min cooking (C5); and 20 min cooking without soaking (C20). Both cooking methods significantly promote changes on the chemical compounds studied, and the intensity of these variations were affected by the cultivars. Most of flours of C5 beans presented a lower loss of anthocyanins (3.9-70.0%), DPPH (11.7-87.2%), ABTS (0.0-82.7%), and tannins (0.0-90.0%) compared with C20. The cooked flours of Artico and Realce showed some similarities among chemical compounds, as well as the lowest concentration of tannins (0.0 mg‧g-1), antioxidant activity (0.40 µmol Trolox‧g-1), and higher amounts of oligosaccharides and acetylcholine. Most of cooked flours presented a reduction in phenolics and soyasaponins αg and ßg, and an increase in soyasaponins Ba and I and oligosaccharides (mainly C20 flours).

High temperature, moisture content and radiation conditions, common in the tropics, accelerate the physiological post-harvest disorders in beans, affect integument color and bean hardness. This study explored the darkening and hardening mechanisms in carioca type beans during storage. The contrasting genotypes for bean darkening and hardening (BRS Estilo and BRS Pontal: rapid darkening and hardening; BRSMG Madrepérola and CNFC 10467: slow darkening and partially resistant to hardening; and a Canadian genotype of the Pinto Bean type resistant to darkening (negative control)) were evaluated right after harvest and after six months storage at 20.3 ±â€¯0.2 °C and 78.9 ±â€¯6.0% RH, with respect to their physicochemical, biochemical and morphological attributes. All the samples hardened with time, but the velocity of darkening did not always parallel the degree of hardening of the beans (that increase linearly with time), which indicates that the color of the bean integument was not a safe indicator to predict the culinary quality of carioca beans. During storage, the SOD (superoxide dismutase) activity and LP (lipid peroxidation) in the cotyledon increased, and the increase was more significant in the integument of the rapid-darkening genotypes. The oxidative stress detected in the beans apparently started in the green bean formation phase, continuing during post-harvest, especially for the rapid-darkening beans. Quantification of the bivalent ions in the bean fractions, together with the degree of membrane damage was positively associated with bean darkening, independent of the group. Thus, aging of the carioca beans could be triggered by a complex mechanism involving diverse intrinsic factors in different degrees according to the genotype and the post-harvest period, but some parameters could serve as indicators, as cooking time, hardness and color, to differentiate between rapid and slow darkening beans.

ABSTRACT: A current alternative for meeting the modern consumer's beans food demands is the industrial processing. This study evaluated the adaptability of eight Brazilian beans cultivars to industrial canning from commercial class cultivars of Carioca and of Black beans. The grains were processed in an industry sector using metallic cans with a capacity of 420 g, where the samples were conditioned without previous hydration. The cooking and sterilization process took place in a rotating autoclave. Quality parameters were evaluated in the canned beans. As a result, it was verified that, for the Carioca class, the Estilo cultivar differs from the rest of the genetic materials in terms of its low drained weight, which contributes to the increase in the total solids in the sauce, which have low hardness values. Estilo cultivar is not suitable for the type of processing used in this experiment. For the Black class, similar quality characteristics were observed between Esplendor and Uirapuru and between Esteio and Campeiro cultivars, where the latter stands out due to its lower damaged bean indices after processing. Finally, with the information present in this paper we intend to contribute to future researches on this subject and thereby increase the consumption and exportation of beans as processed product.


RESUMO: Atualmente uma alternativa alimentar que atende às demandas do consumidor moderno é o processamento industrial do feijão. Foi avaliada a adaptabilidade de oito cultivares de feijão ao processamento industrial. Os grãos foram processados em uma indústria do setor, utilizando-se embalagens metálicas com capacidade de 420 g, nas quais as amostras foram acondicionadas sem o emprego de hidratação prévia. O processo de cozimento e esterilização foi realizado em autoclave rotativa. No feijão enlatado foram então avaliados os parâmetros de qualidade. Como resultado, verificou-se que, na classe Carioca, o cultivar BRS Estilo diferencia-se dos demais, devido ao baixo peso drenado que contribuiu para o aumento de sólidos totais no caldo, com baixos valores de dureza, não se adaptando ao tipo de processo utilizado neste experimento. Na classe Preto, observaram-se características de qualidade semelhantes entre BRS Esplendor e IPR Uirapuru, e entre BRS Esteio e BRS Campeiro, destacando-se esta última por apresentar menores índices de grãos danificados após o processamento. Por fim, com as informações presentes neste trabalho pretende-se contribuir com pesquisas futuras sobre o tema e dessa forma incrementar o consumo do feijão e sua exportação na forma de produto processado.

ABSTRACT: Gluten-free foods are a growing trend in the domestic and international markets, contributing to health and wellness, especially the celiac public. The objective of this study was to create a new option of gluten-free food by replacing wheat flour by rice grit flour, cornstarch, and extruded split bean flour, and to aggregate value to low cost industrial byproducts. A new food product was developed and its components analyzed for their nutritional characteristics and changes during baking. The baked cakes can be a source of protein, had a good starch and protein digestibility, and low antinutritional factors, notably tannins. Incorporation of an extruded bean flour in a gluten-free cake mix improves protein digestibility, total dietary fiber, and raises ash, iron, and zinc contents.


RESUMO: Os alimentos sem glúten são uma tendência crescente no mercado doméstico e internacional, contribuindo para a saúde e o bem-estar, principalmente do público celíaco. O objetivo deste estudo foi desenvolver novas opções de alimentos sem glúten, substituindo a farinha de trigo por farinha de arroz, amido de milho e farinha de feijão extrusada, agregando assim valor a subprodutos industriais de baixo custo. Um novo produto alimentar foi desenvolvido e seus componentes analisados quanto às suas características nutricionais e alterações durante o cozimento. Os bolos assados podem ser fontes de proteínas, possuem boa digestibilidade de amido e proteínas e baixos fatores antinutricionais, principalmente taninos. A incorporação da farinha de feijão extrusada na mistura para bolos sem glúten melhorou a digestibilidade das proteínas, a fibra alimentar total e aumentou o teor de cinzas, ferro e zinco.

Common bean (Phaseolus vulgaris L.) is a source of bioactive peptides, but little is known about its effects on hypercholesterolemia, oxidative stress, and the inflammatory process. Therefore, the aim of this study was to evaluate the effect of whole flour and bean protein hydrolysate of common bean variety Carioca on inflammation and oxidative stress in BALB/c mice. Four experimental groups were included in the study: standard diet (SD), high fat high cholesterol diet (HFC), high fat high cholesterol diet and whole bean flour (HFC-F); and high fat high cholesterol diet and bean protein hydrolysate (HFC-PH). Animals fed with bean protein hydrolysate showed lower weight gain and food intake. Animals fed with whole bean flour showed lower alanine aminotransferase and low-density lipoprotein cholesterol levels than animals fed with bean protein hydrolysate. SOD mRNA was lower in HFC, HFC-F and HFC-PH groups whereas SOD concentration was higher in HFC-F and HFC-PH groups. HSP72 mRNA expression was lower in the HFC-F group in relation to HFC-PH. IL-10 and PPARα mRNA expression was lower in HFC-F and HFC-PH groups in comparison with SD. The whole bean flour and bean protein hydrolysate reduced inflammation and the risk factors for cardiovascular diseases in BALB/c mice.

Three cooking temperatures (72, 80, and 88 °C) were applied to two rice genotypes (Puitá Inta CL and INOV CL) for preparing quick cooking brown rice. Samples were analyzed for cooking time, color, scanning electron microscopy (SEM), damaged grains, amylose, protein content and extractability, differential scanning calorimetry (DSC), X-ray diffraction (XRD), sensory properties, and in vitro digestion. Cooking time was reduced from 23.0-23.6 to 5.5-6.9 min when the highest temperature was applied, depending on genotype. The greatest grain deformation was observed for treatments from Puitá Inta CL. XRD showed greater ability of brown rice from Puitá Inta CL to gelatinize at 88 °C. Appearance, texture, and flavor of quick cooking brown rice prepared at 88 °C was inferior to its brown rice counterparts. Starch digestibility decreased by around 20-22% in 88 °C-prepared-quick cooking brown rice. Lower digestibility values were determined for 88 °C-treated-INOV CL, and were associated with grain integrity.

BACKGROUND: Starches from four common bean genotypes were characterized and used in the production of biodegradable films. Starches were characterized by their swelling power, solubility, amylose content, granule morphology, relative crystallinity, thermal and pasting properties, and susceptibility to α-amylase hydrolysis. Films were characterized according to their morphology, mechanical and water vapor barrier properties, whiteness and opacity. RESULT: Depending on the common bean genotype, a great variation on starch properties was found, which, in turn, clearly impacted on the characteristics of the starch-based films. Starches from BRS Pitanga and BRS Pérola genotypes exhibited the highest amylose content and the lowest swelling capabilities. Bean starch from the IPR Uirapuru genotype presented granules with an irregular surface and shape. Starches from IPR Uirapuru and BRS Estilo genotypes provided well-structured biodegradable films, without the occurrence of fissures or cracks. Moreover, starch films containing starch from BRS Estilo genotype exhibited the highest flexibility, permeability and solubility. CONCLUSION: The morphological, mechanical and water vapor barrier properties of films elaborated with common bean starch vary greatly as a function of the bean genotype used for starch production. © 2018 Society of Chemical Industry.

ABSTRACT: Beans are popular as a protein-filled legume of high nutritional value, being one of the most planted species in the world. However, recent years have seen a decrease in the consumption of beans, owing to the time necessary to cook it domestically. Thus, it is being replaced in people’s diets by other foods. An alternative preparation that supplies modern consumers’ demands is industrially processed beans. This article aimed to provide a literature review on the processing of canned beans. Few recent studies have been performed in Brazil on this subject, as most studies have focused instead on the technological quality of dry bean grains processing. In this article industrial processing concepts and features, production unit operations, and canned beans quality standards will be discussed. These efforts are expected to contribute to the Brazilian beans production chain, and consequently to increase consumption of canned beans and the demand for industrial processing of beans in both the domestic market and future product exports.


RESUMO: O feijão destaca-se no cenário mundial como uma leguminosa rica em proteínas e com alto valor nutricional, sendo estando entre uma das espécies mais cultivadas em todo o mundo. Porém, observa-se diminuição do consumo deste alimento devido à demanda de tempo no seu preparo doméstico, sendo então substituído na dieta. Uma alternativa que atende as demandas do consumidor moderno é o processamento industrial. O objetivo deste trabalho é fornecer uma revisão de literatura abordando informações sobre o processamento tipo enlatado em feijão. Atualmente, no Brasil, são realizados poucos trabalhos dentro desta linha de pesquisa, visto que o maior enfoque é para a qualidade tecnológica dos grãos para o consumo tradicional, na forma seca. Neste material são apresentadas informações sobre alguns conceitos e detalhes do processamento industrial, das operações unitárias na produção e dos parâmetros de qualidade avaliados no feijão enlatado. Espera-se, contribuir com a cadeia produtiva do feijão brasileiro, aumentando o consumo e as demandas do processamento industrial, tanto em mercado interno quanto para futuras exportações do produto.

With the ever-increasing global demand for high quality rice in both local production regions and with Western consumers, we have a strong desire to understand better the importance of the different traits that make up the quality of the rice grain and obtain a full picture of rice quality demographics. Rice is by no means a 'one size fits all' crop. Regional preferences are not only striking, they drive the market and hence are of major economic importance in any rice breeding / improvement strategy. In this analysis, we have engaged local experts across the world to perform a full assessment of all the major rice quality trait characteristics and importantly, to determine how these are combined in the most preferred varieties for each of their regions. Physical as well as biochemical characteristics have been monitored and this has resulted in the identification of no less than 18 quality trait combinations. This complexity immediately reveals the extent of the specificity of consumer preference. Nevertheless, further assessment of these combinations at the variety level reveals that several groups still comprise varieties which consumers can readily identify as being different. This emphasises the shortcomings in the current tools we have available to assess rice quality and raises the issue of how we might correct for this in the future. Only with additional tools and research will we be able to define directed strategies for rice breeding which are able to combine important agronomic features with the demands of local consumers for specific quality attributes and hence, design new, improved crop varieties which will be awarded success in the global market.

BACKGROUND: Heat pretreatment is considered the first step in grain milling. This study therefore evaluated microwave and micronization heat treatments in improving the dehulling characteristics, phenolic composition and antioxidant and α-amylase activities of bean cultivars from three market classes. RESULTS: Heat treatments improved dehulling characteristics (hull yield, rate coefficient and reduced abrasive hardness index) depending on bean cultivar, whereas treatment effects increased with dehulling time. Micronization increased minor phenolic components (tartaric esters, flavonols and anthocyanins) of all beans but had variable effects on total phenolic content depending on market class. Microwave treatment increased α-amylase inhibitor concentration, activity and potency, which were strongly correlated (r² = 0.71, P < 0.0001) with the flavonol content of beans. Heat treatment had variable effects on the phenolic composition of bean hulls obtained by abrasive dehulling without significantly altering the antioxidant activity of black and pinto bean hulls. Principal component analysis on 22 constituents analyzed in this study demonstrated the differences in dehulling characteristics and phenolic components of beans and hulls as major factors in segregating the beneficial heat treatment effects. CONCLUSION: Heat treatment may be useful in developing novel dietary fibers from beans with variable composition and bioactivity with a considerable range of applications as functional food ingredients.

It is internationally accepted that malnutrition and chronic diseases in developing countries are key limitations to achieving the Millennium Development Goals. In many developing countries, rice is the primary source of nutrition. In those countries, the major forms of malnutrition are Fe-induced anaemia, Zn deficiency and Vitamin A deficiency, whereas the major chronic disease challenges are Type II diabetes, cardiovascular disease and some cancers. There is a growing corpus of evidence regarding both limitations and opportunities as to how rice could be an effective vehicle by which to tackle key nutrition and health related problems in countries with limited resources. Rice breeding programs are able to focus on developing new varieties carrying enhanced amounts of either Fe, Zn or beta-carotene because of large public investment, and the intuitive link between providing a mineral/vitamin to cure a deficiency in that mineral/vitamin. By contrast, there has been little investment in progressing the development of particular varieties for potential impact on chronic diseases. In this review article we focus on the broad battery of evidence linking rice-related nutritional limitations to their impact on a variety of human health issues. We discuss how rice might offer sometimes even simple solutions to rectifying key problems through targeted biofortification strategies and finally, we draw attention to how recent technological (-omics) developments may facilitate untold new opportunities for more rapidly generating improved rice varieties specifically designed to meet the current and future nutritional needs of a rapidly expanding global population.

In order to inactivate enzymatic deterioration, whole rice bran samples were subjected to two stabilization methods. Changes in nutritional value in terms of, concerning chemical composition, minerals and fatty acid content, were evaluated to supplement existing data and promote the utilization of rice bran in the human diet. The following homemade heat treatments were applied: roasting on a conventional stove or heating in a microwave oven. Based on the results, the different heating methods affected sample composition, since the levels of some nutrients of treated samples showed significant changes (p<0.05) compared to corresponding raw samples. The rice bran treated on a conventional stove produced products with lower moisture (5.14±0.10 g/100 g) and nutrients such as sodium 11.8%; palmitic acid 9.9% and stearic acid 8.1%. The microwave oven procedure resulted in better nutrient preservation, with slightly higher moisture content (6.28±0.10 g/100 g), and appears to be a practical and rapid tool for home heat stabilization of rice bran.


A fim de inativar a deterioração enzimática, as amostras de farelo de arroz foram submetidas a dois métodos de estabilização. As mudanças do valor nutricional, no que se refere a composição química, os minerais e o conteúdo de ácidos graxos, foram avaliadas para adicionar mais informações aos dados existentes e promover a utilização de farelo de arroz na dieta humana. Os seguintes tratamentos caseiros por calor foram aplicados: torra em forno convencional ou de aquecimento em forno de micro-ondas. Com base nos resultados, os diferentes métodos de aquecimento afetaram a composição das amostras, já que os níveis de alguns nutrientes mostraram alterações significativas (p <0,05), comparado com as amostras cruas correspondentes. O farelo de arroz tratado em fogão convencional forneceu produtos com menos umidade (5,14 ± 0,10 g/100 g) e nutrientes, tais como: de sódio 11,8%; ácido palmítico 9,9% e ácido esteárico 8,1%. O procedimento de forno de micro-ondas resultou em melhor preservação dos nutrientes, com teor de umidade um pouco maior (6,28 ± 0,10 g/100 g), o que parece ser uma ferramenta prática e rápida no tratamento térmico caseiro para o farelo de arroz.

Conduziu-se este trabalho, com o objetivo de desenvolver bebidas elaboradas com extratos de quirera de arroz e de arroz integral e comparar as características químicas e sensoriais destas com bebida elaborada com extrato de soja. Utilizou-se um delineamento inteiramente casualisado, com três tratamentos (bebidas de extrato de quirera de arroz, extrato de arroz integral e extrato soja). As seguintes análises foram realizadas: umidade, cinzas, proteínas, lipídios, carboidratos totais, valor energético, cálcio, magnésio, cobre, manganês, ferro e zinco. Também determinou-se a aceitabilidade e a intenção de compra. A bebida elaborada com o extrato de soja contém maiores teores de cinzas, proteínas, lipídeos e minerais em relação ao extrato de quirera de arroz, que possui o maior teor de carboidratos e valor energético. Todas as bebidas obtiveram boa aceitação, com intenção de compra pela população entrevistada acima de 95 por cento, sendo que mais de 99 por cento dos provadores comprariam a bebida elaborada com o extrato de arroz integral (tratamento de maior aceitação). As bebidas elaboradas com extrato de arroz integral ou de quirera de arroz são uma alternativa viável para as pessoas que possuam intolerância à lactose do leite de origem animal e/ou alergia às proteínas da soja.


The aim of this work was to develop drinks based on extracts of broken rice and brown rice and to compare their chemical and sensory characteristics with a drink made of soy extract. A totally randomized design was applied, with three treatments (broken rice extract, brown rice extract and soy extract drinks). The following analyses were performed: moisture, ash, protein, lipids, total carbohydrates, caloric value, calcium, magnesium, copper, manganese, iron and zinc, besides the determination of consumer acceptability and buying intention. The soy-based drink has the highest ash, protein, lipids and mineral contents when compared to broken rice extract, which in turn has the highest carbohydrate content and energetic value. All drinks had a good acceptance, with a positive buying intention of more than 95 percent of interviewed population, and 99 percent of these tasters would buy the drink made with whole rice extract (the most accepted treatment). The rice extract (whole or broken)-based drinks are a viable option for people who present animal milk lactose intolerance and/or soy protein allergy.

Rice bran is a byproduct resulted from the rice milling process. It corresponds to 8% of the total rice grain. It is an abundant and low-cost product which has high concentration of insoluble fiber, vitamins and minerals, and it is mainly applied for animal feeding and soil fertilizing. The aim of this work was to evaluate the color, the proximate composition and acceptability of the cookies formulated with extruded rice bran (ERB). Completely randomized design was applied using one control and four treatments (12.5%, 25%, 37.5% and 50% of EBR in place of wheat flour and cassava starch). All analyses were performed according to standard methods. The gradual addition of EBR to biscuits influenced its darkening and yellow/red color tendency. Cookies with 50% of ERB had higher contents of protein (7.56 g 100 g(-1)), dietary fiber (5.17 g 100 g(-1)) and ash (3.31 g 100 g(-1)) and lower proportion of carbohydrate (60.78 g 100 g(-1)) than the control. Forty grams of that formulation supplies more than 10% of daily recommended intakes of magnesium, phosphorus and copper. The cookies were well accepted and did not show significant difference (P = 0,05) regarding the appearance, texture and flavor when compared to control. Cookies formulated with 50% of ERB present better nutritional quality than those elaborated without rice bran and have good sensory acceptance.

O desaparecimento do amido é uma das alterações mais marcantes observadas durante o amadurecimento da banana. A transformaçäo amido/sacarose envolve diversas enzimas e mais de uma via metabólica. Com o intuito de estudar as propriedades das amilases e seu envolvimento nesse metabolismo, procurou-se otimizar a metodologia de extraçäo das proteínas e de atividade enzimática, purificaçäo e caracterizaçäo parciais em bananas durante o amadurecimento. A determinaçäo de atividade hidrolítica total foi realizada com base nos métodos sacarogênico e iodométrico. A atividade "alfa"-amilásica ou endoamilolítica foi medida pelos métodos cromogênicos que utilizam como substratos amilose-azure ou BPNG7...
