RESUMO

The dataset available here comes from an experimental dairy cattle farm located in a mountain region in Central France, where the feeding systems are mostly pasture grazing combined with a period of indoor overwintering during the colder months. The dataset comprises individual productive and functional traits covering over 36 different variables in 185 primiparous Montbéliarde and Holstein cows, followed by data on productive longevity and reason for culling. The data was collected over a 20-year period during which animal husbandry and data collection protocols remained consistent. Potential re-users of the data are private-sector professionals, farmer associations, and researchers interested in developing statistical and mechanistic models and simulations of individual dairy cows under low-input grassland-based systems.

BACKGROUND: The most used protein sources in ruminant nutrition are considered as having negative impacts in terms of environmental sustainability and competition with human nutrition. Therefore, the investigation of alternative and sustainable feedstuffs is becoming a priority in ruminant production systems. RESULTS: This trial was designed to evaluate eight full-fat insect meals (Acheta domesticus - ACD; Alphitobius diaperinus - ALD; Blatta lateralis - BL; Gryllus bimaculatus - GB; Grylloides sygillatus - GS; Hermetia illucens - HI; Musca domestica - MD; and Tenebrio molitor - TM) as potential protein and lipid sources in ruminant nutrition. Fermentation parameters and fatty acids (FA) of rumen digesta after 24-h in vitro ruminal incubation of the tested insect meals were measured and compared with those of three plant-based meals (soybean meal, rapeseed meal and sunflower meal) and fishmeal (FM). Similarly to FM, the insect meals led to a significantly lower total gas production (on average, 1.75 vs. 4.64 mmol/g dry matter-DM), methane production (on average, 0.33 vs. 0.91 mmol/g DM), volatile FA production (on average, 4.12 vs. 7.53 mmol/g DM), and in vitro organic matter disappearance (on average, 0.32 vs. 0.59 g/g) than those observed for the plant meals. The insect meals also led to lower ammonia of rumen fluid, when expressed as a proportion of total N (on average, 0.74 vs. 0.52 for the plant and insect meals, respectively), which could be an advantage provided that intestinal digestibility is high. Differences in ruminal fermentation parameters between the insect meals could be partially explained by their chitin, crude protein and ether extract contents, as well as by their FA profile. In particular, high content of polyunsaturated FA, or C12:0 (in HI), seems to partially inhibit the ruminal fermentations. CONCLUSIONS: The tested full-fat insect meals appear to be potentially an interesting protein and lipid source for ruminants, alternative to the less sustainable and commonly used ones of plant origin. The FA profile of the rumen digesta of ACD, ALD, GB, GS and TM, being rich in n-6 polyunsaturated FA, could be interesting to improve the quality of ruminant-derived food products.

The aims of this work were to study on dairy farm conditions: i) the repeatability of long-term enteric CH4 emissions measurement from lactating dairy cows using GreenFeed (GF); ii) the ranking of dairy cows according to their CH4 emissions across diets. Forty-five Holstein lactating dairy cows were randomly assigned to 3 equivalent groups at the beginning of their lactation. The experiment was composed of 3 successive periods: i) pre-experimental period (weeks 1 to 5) in which all cows received a common diet; ii) a dietary treatment transition period (weeks 6 to 10); and iii) an experimental period (weeks 11 to 26) in which each group was fed a different diet. Experimental diets were formulated to generate more or less CH4 production: i) a diet based on ryegrass silage and concentrates, low in starch and lipid, designed to induce high CH4 emissions (CH4+); ii) a diet based on maize silage and concentrates, rich in starch, designed to induce intermediate CH4 emissions (CH4int); iii) a diet based on maize silage and concentrates, rich in starch and lipid, designed to induce low CH4 emissions (CH4-). Gas emissions were individually measured using GF systems. Repeatability of gas emissions, dry matter intake (DMI) and dairy performances measurements was calculated from data averaged over 1, 2, 4, and 8 weeks for each animal. Hierarchical cluster analysis was performed to rank individual animals according to their CH4 emissions. No significant differences were observed for daily CH4 emissions (g/day) among diets, because of lower DMI of CH4+ cows. When CH4 emissions were referred to units of DMI or milk, the differences among diets emerged as significant and persistent over the observed period of lactation. Repeatability values of gas emissions measurements were higher than 0.7 averaged over 8 weeks of measurement, but still higher than 0.6 for CH4 g/day, CO2 g/day, CH4 g/kg milk, and CH4/CO2 even averaging only 2 weeks of measurement. The repeatability of CH4 emissions measurement was systematically lower than those of DMI or dairy performance parameters, like milk and FPCM yield, irrespective of the averaged measurement period. The dairy cow ranking was not stable over time between all individuals or within any of the diets. In our experimental conditions, the GF performance in the long term can be considered reliable in differentiating dairy herds by their CH4 emissions according to diets with different methanogenic potential, but did not allow the ranking of individual dairy cows within a same diet. Our data highlight the importance of phenotyping animals across environment in which they will be expected to perform.

Rearing dairy calves with their mothers could teach them how to graze, optimizing grass use, and improving their welfare and performance. We tested the short-term effects of dam-calf contact experience on grazing and social behavior of weaned calves, monitored over seven days for their first post-weaning grazing experience. "Dam" (D) calves were reared and grazed with their mothers until weaning. "Mixed" calves (M) were separated from their mothers after 4 ± 0.5 weeks, they experienced dam-calf contact, but not grazing. "Standard" (S) calves had never experienced either dam-calf contact (separated at birth) or grazing. Each group grazed an equivalent pasture plot offering heterogeneous herbage. Scan sampling of calves' activities was performed every 5 min, 6 h per day, on Days 0, 1, 2, 3, and 7. Daily, the time when calves started grazing after introduction to pasture, and the number and duration of their grazing cycles were measured. Daily activities were differentiated into ingestion, rumination, and idling. The proportion of time that calves spent grouped with other individuals or isolated, and standing or lying were recorded. When grazing, their bites were characterized by botanical family group, height of the selected bite and vegetation status. Individual average daily gains from the 2-week periods before and after grazing were calculated, and were equivalent between groups (313 ± 71 g/d). On Day 0, D-calves started grazing immediately (1 ± 4.1 min), unlike M- and S-calves (39 ± 4.1 and 23 ± 4.1 min), and D-calves grazed patches of dry grass 21.7 times less than M-calves and 16.9 times less than S-calves. Dry herbage patch preference and grazing start time differences disappeared on Day 1. Calves spent the same time ingesting and idling, but M-calves spent on average 1.6 times less ruminating than D- or S-calves. The D-calves showed grazing behavior similar to that of adult cows, selecting grasses throughout pasture utilization, although legumes and forbs were present in the grazed layer. On the contrary, M- and S-calves did not express any specific preference. The S-calves spent more time isolated but had more positive reciprocal interactions than the calves in the other groups.

In the mountains, autochthonous and robust breeds are often used to valorize biodiverse grasslands. Along with their lower nutrient requirements, compared to specialized dairy breeds, they are expected to be better adapted to complex environments and valorize grasslands into dairy products of high quality. Therefore, the aim of the present study was to investigate the grazing selection of three contrasting dairy breeds on a biodiverse mountain pasture, and its consequences on milk fatty acid (FA) profile and prevalence of individual terpenes. A dual-purpose breed from the Italian Alps, the Valdostana Red Pied (Va), was compared to Montbéliardes (Mo), more specialized in milk production, and the highly specialized Holsteins (Ho). Diet selection was measured by scan-sampling, calculating selectivity indexes, and collecting simulated bites during two consecutive days in June (end of first grazing cycle) and July (second grazing cycle). Milk samples were collected at each milking during these experimental periods. Yield of milk and its fat and protein contents were measured. Milk FA and terpenes were analyzed by gas chromatographic methods. We tested the effects of breed, period and their interaction in a repeated mixed model, and calculated Pearson's correlations between behavioral data and milk FA as well as terpenes. The Va grazed less mature vegetation than Ho, but this difference was not sufficient to lead to a major breed effect on milk FA profile and prevalence of terpenes. However, the proportion of α-linolenic acid (C18:3 n-3) was always higher in the milk fat of Va than Ho (Mo were intermediary), but this without any correlation to grazing selection. This could be a consequence from a different metabolism concerning ruminal biohydrogenation, but must be further investigated. Finally, we confirmed previous studies that highlighted a link between milk quality and cows' grazing behavior, but here without differences among breeds. All cows adapted their behavior to the herbage evolution during the season, leading to higher proportions of unsaturated FA in July than June milks. Our study suggests that under mountain grazing conditions (biodiverse pasture and cows in late lactation), milk quality depends more on herbage composition than on cow breed.

Different grazing management systems are practiced on upland dairy farms during summer, depending on topography, local traditions, and infrastructure. The present experiment compared two distinct management systems with respect to feeding behavior and milk-related properties. Two similar groups of eight Valdostana Red Pied cows originating from two farms were followed during three grazing events in summer on three upland grazing sites. Cows in the full-time grazing group were kept exclusively on pasture and milked twice daily in a mobile milking parlor. Cows in the part-time grazing group had access to pasture for 4 h and 2 h after their morning and evening milkings, respectively. The part-time grazing cows differed markedly in their feeding behavior; they exhibited shorter daily ingestion times and longer durations of ingestion and idling bouts than full-time grazing cows. Part-time grazing cows had lower milk protein and casein contents, but milk yield and milk coagulation properties did not differ from the full-time grazing cows. As a result of the fasting periods in the barn, part-time grazing cows synthesized less fatty acids de novo and mobilized body fat reserves, as evidenced by the higher proportion of oleic acid in their milk fat.

BACKGROUND: Donkey milk is considered as a functional food for sensitive consumers, such as children who are allergic to cow milk. No information is available regarding the effect of farming systems on the quality of donkey milk. The present study aimed to evaluate the effect of the farming system and lactation stage on donkey milk with respect to gross composition, as well as fat-soluble vitamins and fatty acids (FA). RESULTS: Individual milk samples were collected from lactating jennies (n = 53) on the six of the largest farms located in North West Italy. The performance of lactating jennies, herd characteristics and feeding strategies were recorded at each milk sampling. The gross composition of the milk, along with the fat-soluble vitamin content, differed in accordance with the farming system. The lactation stage had limited effects on milk quality. A higher milk fat content corresponded to a higher amount of fresh herbage proportion in the diet, with the highest polyunsaturated fatty acid (PUFA), C18:1c9, C18:3n-3, n-3 FA, retinol and α-tocopherol content and the lowest concentrations of the FA that are less favorable for human health in the milk of animals fed on only forage diets. CONCLUSION: Extensive farming of dairy donkeys increased the fat content and fat-soluble vitamin concentration of milk and also altered the FA composition to a more favorable profile for human nutrition. © 2017 Society of Chemical Industry.

Near (NIR) and medium (MIR) infrared reflectance spectroscopy (IR) predictions of fatty acid (FA) composition, expressed as g/kg of milk or g/100g of FA, on fresh and thawed milk were compared. Two-hundred-and-fifty bulk cow milks, collected from 70 farms in northwest Italy, were scanned by MIR in liquid form and by NIR in liquid and oven-dried forms. MIR and NIR FA (g/100g FA) predictions on oven-dried milk were similar for the sum of even chain-saturated FA (ECSFA), odd chain-FA (OCFA), unsaturated FA (UFA), conjugated linoleic acid (CLA), n-3 FA, and C18:1cis9 to C16 ratio. The monounsaturated FA (MUFA), n-6 to n-3 ratio, polyunsaturated FA (PUFA), and n-6 FA were predicted better by NIR on oven-dried milk. The NIR showed worse predictions than MIR for almost all FA, when expressed as g/kg of milk. The NIR predictions on fresh liquid and oven-dried milk were similar, but the reliability decreased for thawed liquid milk. The high performance shown by NIR and MIR allows their use for routine milk FA composition recording.

The composition of the volatile fractions of three important grasses from sub-alpine N.W. Italian pastures, namely Festuca nigrescens Lam. non Gaudin (chewing fescue), Phleum alpinum L. (alpine timothy) and Poa alpina L. (alpine bluegrass) was investigated. The fresh aerial parts were collected at the flowering stage during the summer season. The volatile oils obtained from green tissues by steam distillation in a Clevenger-type apparatus, were analyzed by GC/FID and GC/MS. The oil yield was 0.04 +/- 0.01% weight/fresh weight bases for each of the investigated species. Several classes of compounds were found in the volatile fractions, including aldehydes, alcohols, acids, hydrocarbons, esters, ketones, terpenes, and phenolics. Qualitative and quantitative differences were observed.

The effect of animal feeding on milk volatile organic compounds (VOCs) of metabolic origin was tested on a hay-based diet (H), a highly diversified pasture under continuous grazing (CG), or a less diversified pasture under rotational grazing (RG). Individual milk of 24 Montbéliarde cows (8 per treatment) were sampled after 2 weeks. Pasture-derived milk was richer (p < 0.05) in camphene, sabinene, ß-caryophyllene, and skatole than H milk. Neither milk yield nor fat content affected the majority of VOCs measured. Skatole increased slightly with milk yield, while indole and cineole decreased slightly with milk fat content but with poor regression (R(2) < 0.54). Multivariate analysis showed that, on the basis of those VOCs of metabolic origin whose concentration differed between treatment (dimethyl-sulfone, skatole, toluene, undecanoic acid, 1-octadecene, benzeneacetaldehyde, octanoic acid, and 2-pentanone-4-hydroxy-4-methyl), it was possible to obtain good discriminations among feeding systems. This study is promising for a future use of VOCs of metabolic origin to trace animal feeding systems.

The volatile fraction from the aerial part of Alchemilla xanthochlora Rothm. (Rosaceae) was obtained by hydrodistillation, and the chemical composition of the obtained oil was determined by GC/FID and GC/MS. Several compounds were found, belonging to the classes of aldehydes, alcohols, terpenes, esters, acids and hydrocarbons. The major constituents were cis-3-hexenol (11.20+/-0.02%), linalool (10.36+/-0.75%), oct-1-en-3-ol (8.98+/-1.43%), and nonanal (7.83+/-0.93%), followed by myrtenol (4.65+/-0.40%), hexadecanoic acid (4.59+/-0.79%), cis-3-hexenyl acetate (3.92+/-0.15%) and alpha-terpineol (3.10+/-0.26%).
