RESUMO

Antibacterial acetate grafted starch (AGS) was synthesized by isophorone diisocyanate (IPDI) coupling acetate esterified starch (AST) and the antimicrobial agent polyhexamethyleneguanidine hydrochloride (PHMG), and the antimicrobial properties of AGS were evaluated. The process parameters of AGS were: IPDI reacted with PHMG at 120 °C for 1 h, then, reacted with starch at 60 °C for 3 h. The grafting yield of PHMG and starch reached 28.43%. The Fourier transform infrared spectroscopy (FTIR) and Nuclear magnetic resonance (1H NMR) showed that the binding of IPDI to PHMG was successfully grafted on the AS. The antibacterial effect of AGS was investigated. AGS produced inhibition zones and confirmed its significant inhibitory effect on Escherichia coli and Staphylococcus aureus, as the grafting yield increased, the inhibition effect on bacteria became stronger. When the grafting yield was 28.43%, the inhibition rate of AGS was 90.24% for Escherichia coli. and 94.45% for Staphylococcus aureus. The experiments of water washing showed that after AGS was washed 10 times with water, the inhibition rate of AGS to E. coli. only reduced 3.04% and that of S. aureus 2.95%, indicating that the combination of PHMG and starch was stable and the inhibition effect was long-lasting, AGS has huge potential to be developed into antibacterial material.

Starch microspherical aerogel (SMA) prepared by enzymatic hydrolysis of starch with α-amylase was demonstrated to be higher adsorption capacity for methylene blue. Proper cleavage of α-1,4 glycosidic bonds could enhance the adsorption capacity of SMA, while the cleavage of α-1,6 glycosidic bonds showed an opposite effect. Compared with tapioca starch (TS), α-amylase hydrolyzed starch exhibited a 9.46 % decrease in amylose content, a 25.40 % increase in adsorbability, and significant decreases in weight-average molecular weight (Mw) of different amylases. When the Mw of enzymolysis starch was 6.39 × 106 g/mol, it was suitable for the preparation of SMA, and could significantly increase its adsorption capacity. The adsorbability of the crosslinked starch microspherical aerogel (CSMA) was 1.816 ± 0.026 mg/g, which was increased by 100.60 % relative to that of native starch microspherical aerogel (NSMA). CSMA had the best adsorption effect on oil and could be applied to the adsorption and removal of vegetable oil.

The influence of maltitol on the physicochemical properties of wheat flour dough and bread were evaluated in terms of texture, thermal features, water mobility, and retrogradation kinetics. The presence of maltitol could slow down the fermentation rate of dough. Breads with 6% of maltitol exhibited lower hardness and chewiness, with a significant decrease of 42% and 31%, respectively (p < 0.05). The use of maltitol could remarkably enhance the gelatinization temperature (p < 0.05) that was confirmed by DSC tool. Through the approach of LF-NMR, the addition of maltitol could increase the mobility of immobilized water, further retarded bread staling. The k values from chewiness and total signal amplitude in breads with 2% and 4% levels of maltitol were smaller than the control, which was proven through kinetics of retrogradation analysis, revealing an overall retarding effect of maltitol in prevention of bread staling.

The study aims to elucidate the effects of trehalose on the mechanical, thermal, and rheological properties of wheat flour dough and water distribution in bread. Texture profile analysis, DSC, farinograph, extensograph, and frequency sweep were applied in dough. The results from SEM revealed that the gluten film became less notable with the presence of trehalose. The kinetics of staling process, low-field 1H NMR, and water-binding capacity were employed to characterize physicochemical properties of bread. Trehalose decreased the staling rate constant k, indicating an inhibitory effect on firming process in bread. Trehalose had the ability to retain water by hindering the interaction among water molecules, gluten and starch, thus relatively increasing the immobility of the part of water represented by T22 in low-field 1H NMR tests. Trehalose restricted water mobilization during storage, resulting in a better water-holding capacity. Our findings reveal that trehalose could be an improver in dough and bread-making performance, as well as an antistaling agent in bread.

OBJECTIVE: To observe the balance of T help cell1/2 (Th1/Th2), the changes of correlated proinflammatory cytokines (IFN-gamma and IL-4), and regulated on activation normal T cell expressed and secreted (RANTES), and the abnormal expression of IL-17, the effector of T help cell17 (Th17) in chronic glomerulonephritis (CGN)patients with Shaoyang disease, thus revealing the mechanisms of Xiaochaihu Decoction (XD) for treating proteinuria of CGN patients according to the theory of mediating Shaoyang meridian. METHODS: Totally 70 CGN patients with Shaoyang disease were randomly assigned to two groups, the treatment group (treated by XD) and the control group [treated by Shenyan Kangfu Tablet (SKT)], 35 in each group. Besides, 20 healthy volunteers were recruited as the healthy control group. Besides, routine therapy of chronic kidney disease (CKD), patients in the treatment group and the control group were treated with XD and SKT respectively for 4 weeks. The changes of Chinese medical syndrome, the effectiveness, 24-h urinary protein, renal functions, the peripheral blood IFN-gamma, IL-4, Th1/Th2, IL-17, and RANTES were compared. RESULTS: Before treatment the Th1/Th2, IL-17, and RANTES of the two treated groups were higher, and the IL-4 level was lower than those of the healthy control group (P < 0.05). After treatment the improvement of Chinese medical syndrome, main symptoms, the effectiveness was better in the XD group than in the SKT group (P < 0.05, P < 0.01). The proteinuria obviously decreased in the treatment group, with the efficacy superior to the SKT group (P < 0.05). The Th1/Th2, IL-17, and RANTES decreased to various degrees when compared with the SKT group (P < 0.05, P < 0.01). The IL-4 level increased more obviously in the treatment group than in the control group (P < 0.05). There was no statistical difference in the improvement of the renal function (P > 0.05). CONCLUSIONS: The immune disorder of the CGN patients with Shaoyang disease was correlated with Th1/Th2 imbalance, and abnormal changes of Th17 cell functions and RANTES. XD could improve the inflammation by regulating the immune disorder of CGN patients with Shaoyang disease, which proved that the theory of mediating Shaoyang meridian could be used to improve the inflammation of CGN patients, thus relieving the proteinuria.
