30 Nellore animals with an average weight of 407.25 ± 2.04 kg, were distributed in a completely randomized design across the following treatments: 1-Control (without inclusion of 3-NOP); 2-BV75 (inclusion of 3-NOP at 75 mg/kg DM); 3-BV100 (inclusion of 3-NOP at 100 mg/kg DM). No significant effects were observed between treatments on ingestive behavior. However, the notable effect on the BWfinal and ADG of animals supplemented with 3-NOP compared to the control group was measurable. Cattle beef receiving 3-NOP exhibited reduced methane emissions (p < 0.0001) for all variables analyzed, resulting in an average decrease of 38.2% in methane emissions compared to the control, along with increased hydrogen emissions (g/day) (p < 0.0001). While supplementation with BV100 demonstrated lower methane emission, the performance was lower than BV75 in DMI, BWfinal, ADG, and ADG carcasses. Partial separation of metabolomics observed between groups indicated changes in meat metabolism when comparing the control group with the 3-NOP group, identifying metabolites with a variable importance projection (VIP) score > 1. In conclusion, supplementation with 3-NOP effectively reduced methane emissions and did not negatively influence animal performance.

This research was carried out with the objective of evaluating the effects of using a chilling water sprinkler system during the cooling process of swine carcasses on the quantitative and qualitative parameters of carcass and meat. A total of 220 swine carcasses were divided in a completely randomized experiment and two treatments: (1) CONTROL, no water spraying; (2) SPRAY, with water spraying during cooling. Surface and internal temperature of carcasses throughout the cooling process, initial and final pH, and microbiological analyses of carcass surface were evaluated. Samples of the Longissimus lumborum (LL) were collected for analysis of color, cooking loss (CL), shear force (SF), and drip loss (DL). Data were submitted to analysis of variance through the SAS MIXED procedure adopting the most adequate model with treatments as fixed effects and pertinent random effects for each data set. The use of spray-chilling in the initial cooling process accelerates the surface and internal temperature decrease of swine carcasses, which may be a viable technological resource in swine industry.

An experiment was conducted to validate non-invasive evaluation techniques as in vivo evaluation tools for the myopathies wooden breast and white striping that affect broilers, using biopsy as a support tool. It evaluated 30 Cobb 500® broiler chickens in a completely randomized design consisting of two sexes (males and females) and 15 replications per treatment. At 14, 21, 35, 42 and 49 days, the surface temperature of the birds' breasts was recorded using infrared thermography, analysis of fillet depth, and echogenicity by ultrasound imaging. All broiler chickens were sent for biopsy at 21, 35 and 42 days to collect a fragment of the pectoral muscle for descriptive morphological analyses of histological lesions and muscle fibre morphometry. Males had higher echogenicity values at 14, 21 and 42 days. There was no influence of bird sex on the occurrence of the wooden breast and white striping myopathies at 49 days of age in broilers selected and submitted to the biopsy protocol. There was a general trend of decreasing surface temperature for both sexes according to their age. Muscles with less area occupied with fibres had a lower surface temperature. It was concluded that ultrasonography with a 3.5 MHz transducer detects muscle changes after 28 days of age, which is consistent with the myopathic lesions studied. Infrared thermography is a potential method for detecting changes in breast temperature indicating myopathic lesions. A biopsy can be used as an auxiliary tool in the study of myopathies in broiler chicken breasts.RESEARCH HIGHLIGHTS Detection of changes in the breast muscle after 28 days of age with ultrasonography.Changes in the surface temperature range of pectoral muscle with infrared thermography.Use of biopsy as a tool for early diagnostic evaluation in broiler myopathies.

BACKGROUND AND AIM: Ultrasound is a non-invasive technique that enables animal evaluation and body condition classification of animals. Although it is not difficult to obtain an image, the analysis of this image can influence results quality. This study aimed to evaluate the repeatability and reproducibility of the technician trained in image interpretation obtained using different ultrasound frequencies. MATERIALS AND METHODS: Ninety-six lambs were used, ranging in weight from 15 to 40 kg. The images were captured using a linear probe of 13 cm, with a 3.5 megahertz (MHz) frequency and an acoustic couplant aid "standoff" or using a multifrequency transducer (6 and 8 MHz), on B mode, with a linear probe and 8.0 MHz frequency. All measurements were performed by the same technician, on the left side, between the 12th and 13th rib. Five different evaluators, at two different times, with aid of Image J software measured the loin eye area (LEA; only for images obtained with 3.5 MHz), Longissimus thoracis et lumborum depth (DLM), subcutaneous fat thickness (SFT), subcutaneous fat thickness plus skin (SFST), and skin thickness (ST). RESULTS: For LEA, DLM, SFT, SFST, and ST, variation was observed (p<0.01) between evaluators; however, there was no difference (p>0.05) between the 2 times of evaluation. Images measurements obtained with a frequency of 8.0 MHz had better repeatability indices and reproducibility indices. Accordingly, the identity test demonstrated that measurements performed on images obtained using 3.5 or 8.0 MHz were not equivalent. CONCLUSION: Ultrasound image measurements obtained using an 8.0 MHz frequency were more accurate and precise. It is important to use only one evaluator or providing the simultaneous training for all evaluators.

This study evaluated the fatty acid composition and qualitative characteristics of meat from lambs feed in feedlot with increasing levels of canola grain. Meat obtained from 27 lambs fed 0, 8 and 16% inclusion of canola grain were analyzed. There was a reduction in the content of saturated fatty acids (SFA): lauric, heptadecanoic, and stearic; and unsaturated fatty acids (UFA): palmitoleic, oleic, and eicosatrienoic, with the increasing levels of canola grain. There was a linear reduction for the ω3 acid and the ω3: ω6 ratio, while the ω6: ω3 ratio increased. But the values observed for this ratio (ω6: ω3) were lower than 4, which is considered a satisfactory value. There was a slight increase (~2%) for the thrombogenicity index and atherogenicity index with the inclusion of canola grain. There was a reduction in the hypocholesterolemic: hypercholesterolemic ratio, with mean values of 2.09 for the diet with 0% inclusion, and 2.06 for 8 and 16% inclusion of canola. Although the inclusion of canola grain for lambs decreased the content of some UFA, reflecting alterations in the correlated nutritional properties, there is a reduction of SFA. The results for instrumental analysis, proximate composition, and sensory acceptance of the lamb meat were similar among the treatments.(AU)


Objetivou-se avaliar a composição dos ácidos graxos e as características qualitativas da carne de cordeiros terminados com níveis crescentes de canola grão na dieta. Foram estudadas amostras de carne provenientes de 27 cordeiros, confinados por 45 dias e alimentados com 00, 08 e 16% de inclusão de canola grão. Houve efeito para os ácidos graxos saturados (AGS): laurico, heptadecanoico e esteárico; ácidos graxos monoinsaturados (AGMI): palmitoleico e oleico; e ácidos graxos polinsaturados (AGPI): eicosatrienoico. Estes ácidos reduziram à medida que os níveis da canola grão aumentaram. Para os AGMI, houve efeito com maior concentração no músculo dos cordeiros alimentados sem a canola grão (49,80%). Houve uma redução linear para o ácido ω3 e para a relação ω3:ω6, enquanto que a relação ω6:ω3 aumentou. A canola grão influenciou o índice de aterogenicidade, com média de 0,57 para o tratamento com 0% de inclusão e 0,58 para os tratamentos com 8% e 16% de inclusão. Observou-se aumento linear para o índice de trombogenicidade com a inclusão da canola grão, cujas médias foram, respectivamente, 0,16, 0,17 e 0,18 para os tratamentos 0%, 8% e 16% de inclusão. Houve redução para a relação hipocolesterolêmicos-hipercolesterolêmicos, com médias de 2,09 para a dieta com 0% de inclusão, e 2,06 para 8% e 16% de inclusão da canola em grão na dieta. A canola grão não influenciou a análise instrumental, composição centesimal e atributos sensoriais da carne.(AU)

Em virtude da grande demanda por proteína de origem animal, tem-se aumentado a produção de frangos de corte e consequentemente a geração de resíduos provenientes do abate de aves, sendo necessário o desenvolvimento de técnicas que permitam o aproveitamento e reciclagem desses materiais. Objetivou-se com a execução deste trabalho avaliar a eficiência da compostagem no tratamento e reciclagem do resíduo sólido de abatedouro avícola. Utilizou-se resíduo sólido de abatedouro avícola comercial composto por fragmentos de vísceras, tecido muscular, adiposo e ósseo, sangue coagulado e penas e, como fonte de carbono, a casca de arroz. Montou-se uma leira com 1,5m3 de volume inicial, na qual foram monitorados os parâmetros: temperatura, teores de sólidos totais (ST), voláteis (SV), N, P, K, carbono orgânico (C), matéria orgânica compostável (MOC), matéria orgânica resistente à compostagem (MORC), demanda química de oxigênio (DQO), massa e volume enleirados, número mais provável (NMP) de coliformes totais e termotolerantes, bem como suas reduções durante o processo. A temperatura máxima atingida no centro da leira foi de 53,3ºC (média semanal), já as reduções de massa de ST e SV e volume durante o processo de pré-compostagem foram de 36,1; 44,3 e 23,3%, respectivamente, e, durante o processo de compostagem, foram de 21,8; 23,8 e 4,4%. A baixa redução do volume das leiras pode estar associada à alta concentração de MORC (40,1%) que pode ser principalmente relacionada à qualidade da fonte de carbono. O processo promoveu satisfatórias reduções totais de ST, SV e volume, sendo, respectivamente, 50,1; 57,5 e 26,7%. No entanto, foram observadas reduções de 43% na quantidade de nitrogênio presente no composto final. Apesar das reduções de nitrogênio, a compostagem demonstrou ser um método eficiente no tratamento dos resíduos sólidos de abatedouro avícola.


The great demand for animal protein was responsible for the increase on the broilers production and hence, the generation of waste from the poultry slaughter was increased as well, which in turn, propelled the development of techniques that allow the reuse and recycling of these wastes. The objective of this study was to evaluate the efficiency of composting on the treatment and recycling of solid waste from poultry slaughterhouse. The solid waste was from a commercial poultry slaughterhouse and was composed of viscera, muscle, fat, bone, blood and feathers that was mixed with a source of carbon, rice husk. Initially, a windrow with a volume of 1.5m3 was built, and then some parameters were monitored: temperature, total solids (TS), volatile (VS), N, P, K, organic carbon (C), composting organic matter (COC), organic matter resistant to composting (MORC), chemical oxygen demand (COD), mass and volume of the windrow, most probable number (MPN) of total and fecal coliforms, as well as their reductions during the process. The maximum temperature reached in the center of the windrow was 53.3°C (weekly average) since reductions of weight of TS and VS and volume during the pre-composting were 36.1, 44.3 and 23.3%, respectively and during the composting process was 21.8, 23.8 and 4.4%. The low volume reduction can be associated with high concentrations of MORC (40.1%) which can be mainly related to the quality of the carbon source. The process produced satisfactory total reductions of TS, VS and volume that were respectively, 50.1, 57.5 and 26.7%. However reductions were observed in 43% of amount of nitrogen in the final compound. Despite reductions in nitrogen content, composting proved to be an effective method in the treatment of solid waste from poultry slaughterhouse.

This study aimed to assess and compare the growth performance, feed efficiency, and carcass traits of Pantaneiro sheep and their Texel and Santa Inês crossbreds. Ninety-six lambs, fifty-one males, and forty-five females, with a mean weaning weight of 15.21 ± 1.25 kg and 78 ± 13 days of age, were slaughtered at a 32-kg body weight. The results showed better production efficiency from males compared with females. Texel-crossed lambs had a better growth performance than the other genotypes. The Texel × Pantaneiro lambs were more efficient with a better feedlot performance, higher ribeye muscle area, and better carcass characteristics with an adequate amount of fat cover. Pantaneiro lambs and their crosses with meat breeds could be useful in meat production systems under Savanna environmental conditions.

Advances in DNA technology have created biotechnological tools that can be used in animal selection and new strategies for increasing herd productivity and quality. The objective of the present work was to associate the genotypes of leptin gene exon 2 polymorphisms with productive traits in Nellore cattle. Blood was collected from Nellore males and PCR-RFLP reactions were performed with the restriction enzymes Cla I and Kpn 2I. The gene frequencies resulting from digestion by Cla I were 0.60 and 0.40 for allele A and T, respectively; the genotypic frequencies were AA = 0.20 and AT = 0.80. The gene frequencies from digestion by Kpn 2I were 0.81 for allele C and 0.194 for allele T; the genotypic frequencies were CC = 0.62 and CT = 0.38. The populations in both cases were not in Hardy-Weinberg equilibrium (p > 0.05), and the TT genotype was not found. Significant associations were noted between leptin gene exon 2 polymorphisms and five productive traits in Nellore cattle: carcass fat distribution, the intensity of red muscle coloration, pH, marbling, and post-slaughter fat thickness.

An investigation was carried out to assess the carcass characteristics and meat quality aspects of immunocastrated male pigs of medium genetic potential for lean meat deposition in carcass (53 to 55%). When the crossbred Large White x Landrace pigs (n = 45) were 70 days old, they were distributed in a totally randomized design in three treatments (castrated males, females and immunocastrated males) with three replicates of five animals. The pigs were slaughtered when they were 140 days old. Carcass temperature and pH were recorded twice, at 45 min and 24 h after slaughter. The carcasses were evaluated for hot and cold carcass yield, commercial cuts yield, length and depth, back fat thickness, loin eye area and lean meat percentage. The Longissimus dorsi muscle was extracted for analysis of color (L*, a*, b*), exudate loss, cooking loss and centesimal and sensorial analysis of the meat. There were no significant differences for the evaluated parameters between castrated males, immunocastrated males and females, except for backfat thickness between the 7th and 8th thoracic vertebra and the point P2 (lower for immunocastrated males) and carcass temperature at 45 min post slaughter (higher in immunocastrated males), however, this did not interfer with the rate of pH decrease post mortem and the meat quality. The results from this research did not indicate a benefit of immunocastration on carcass characteristics of pigs of medium genetic potential for lean meat deposition in carcass, when compared to surgical castration.
