RESUMO

The particular characteristics of cherries, such as color, firmness, and palate increase their demand, as does, among other things, their antioxidant properties that benefit human health. However, their high perishability leads to a reduced shelf life and consequently generates undesirable changes in the cherry flow chain. To ensure food quality and safety and prevent food waste, a smart device prototype is proposed. The concepts related to the formulation and design of the enzymatic-type chromatic time-temperature integrator (TTI) device used to monitor the real-time quality of cherries are described. The kinetic parameters for thermal inactivation of cultivar Santina cherries were determined based on the degradation of phenolic compounds that are substrates of the polyphenol oxidase enzyme, whose hydroxylation reaction of a monophenol to o-diphenol leads to the oxidation in o-quinone. The proposed device concept aims to help retailers and consumers decide upon selling and buying according to the remaining shelf life, thus promoting sustainability related to food processes.

RESUMO

Nowadays, the strong increase in products consumption, the purchase of products on online platforms as well as the requirements for greater safety and food protection are a concern for food and packaging industries. Active packaging brings huge advances in the extension of product shelf-life and food degradation and losses reduction. This systematic work aims to collect and evaluate all existing strategies and technologies of active packaging that can be applied in food products, with a global view of new possibilities for food preservation. Oxygen scavengers, carbon dioxide emitters/absorbers, ethylene scavengers, antimicrobial and antioxidant active packaging, and other active systems and technologies are summarized including the products commercially available and the respective mechanisms of action. © 2022 Society of Chemical Industry.

RESUMO

Abstract Data Centers are growing steadily worldwide, and they are expected to continue growing up to 53% in 2020. Energy efficiency, in high power consumption, is a key venue. There are methodologies to measure this efficiency, one example is using the PUE (Power Usage Effectiveness) index. In this paper is proposed a new index for measuring efficiency at the design stage, the EUED (Energy Usage Effectiveness Design). This index allows to evaluate systems using "free cooling" and adiabatic system. A comparison is performed considering the equipment in the worst situation. The thermodynamics parameter enthalpy is used to calculate the results. This new methodology allows to determine differences between the cities of São Paulo and Curitiba (1.21%) and between Rio de Janeiro and Curitiba (10.61%). The values for the EUED index were 1.245 kW/kW for Curitiba, 1.260 kW/kW for São Paulo and 1.377 kW/kW for Rio de Janeiro, respectively, reaching a difference of 16.86% for Curitiba, 16.19% for São Paulo and 10.31% for Rio de Janeiro in relation to PUE COA (Power Usage Effectiveness Constant Outdoor Air). The advantage of the EUED is that it works with the 8,760 hours in the design phase, using psychometric elements to determine when to use free cooling and evaporative system, and more importantly varying the COP according to environmental characteristics.
