RESUMO

This study aimed to assess the impact of protein supplementation and its interaction with calf sex (CS) on the performance, metabolism and physiology of pregnant beef cows. Fifty-two multiparous Zebu beef cows carrying female (n = 22) and male (n = 30) fetuses were used. Cows were individually housed from day 100 to 200 of gestation and randomly assigned to restricted (RES, n = 26) or supplemented (SUP, n = 26) groups. The RES cows were ad libitum fed a basal diet (corn silage + sugarcane bagasse + mineral mixture), achieving 5.5% crude protein (CP), while SUP cows received the same basal diet plus a protein supplement (40% CP, at 3.5 g/kg of body weight). All cows were fed the same diet during late gestation. Differences were declared at p < 0.05. No significant interaction between maternal nutrition and calf sex was found for maternal outcomes (p ≥ 0.34). The SUP treatment increased the total dry matter (DM) intake (p ≤ 0.01) by 32% and 19% at mid- and late-gestation respectively. The total tract digestibility of all diet components was improved by SUP treatment at day 200 of gestation (p ≤ 0.02), as well as the ruminal microbial CP production (p ≤ 0.01). The SUP treatment increased (p ≤ 0.03) the cows' body score condition, ribeye area, the average daily gain (ADG) of pregnant components (PREG; i.e., weight accretion of cows caused by pregnancy) and the ADG of maternal tissues (i.e., weight accretion discounting the gain related to gestation) in the mid-gestation. The SUP cows exhibited a lower maternal ADG (p < 0.01) compared to RES cows in late pregnancy. There was a 24% additional gain (p < 0.01) in the PREG components for SUP cows during late gestation, which in turn improved the calf birthweight (p = 0.05). The uterine arterial resistance and pulsatility indexes (p ≤ 0.01) at mid-gestation were greater for RES cows. In conclusion, protein supplementation during mid-gestation is an effective practice for improving maternal performance, growth of the gravid uterus and the offspring's birth weight.

From 100 to 200 days of gestation, 52 cows carrying male (n = 30) or female (n = 22) fetuses were assigned to CON (basal diet-5.5% of CP, n = 26) or SUP (basal diet + protein supplement [40% CP, 3.5 g/kg BW]-12% of CP, n = 26) treatments. Glucose concentrations decreased at 200 (p ≤ 0.01; CON = 46.9 and SUP = 54.7 mg/dL) and 270 days (p ≤ 0.05; CON = 48.4 and SUP = 53.3 mg/dL) for CON compared to SUP. The same pattern occurred for insulin (p ≤ 0.01). At parturition, the NEFA concentration was greater (p = 0.01, 0.10 vs. 0.08 mmol/L) for CON than for SUP. Total AA increased in SUP (p ≤ 0.03) at mid- and late-gestation compared to CON. At 200 days, CON dams carrying females had less essential AA (p = 0.01) than cows carrying males. The SUP dams had greater expressions of protein synthesis markers, namely eIf4E and GSK3ß (p ≤ 0.04), at day 200 and of MuFR1 (protein degradation marker, p ≤ 0.04) at parturition. Supplemented cows had higher hepatic pyruvate carboxylase expressions (p = 0.02). Therefore, PS alleviates the restriction overload on maternal metabolism.

This study aimed to evaluate performance, to evaluate performance, carcass traits, feeding behavior, and humoral immune response in Nellore and Angus × Nellore steers fed whole shelled corn diets. Sixteen Nellore and 16 Angus × Nellore steers with 353 ± 25.3 kg were randomly assigned into 2 feeding groups, whole shelled corn without forage (WSC) or whole shelled corn and sugarcane bagasse (WSCB). The data were analyzed using the MIXED procedure of SAS (SAS Inst. Inc., Cary, NC, USA). Angus × Nellore steers had greater final BW, DMI, ADG, and subcutaneous fat thickness than Nellore. Moreover, Nellore steers had lower neutral detergent fiber (NDF) intake but spent more time ruminating and had a greater rumination rate of NDF. Regarding the diets, steers fed the WSCB had greater DMI and spent more time chewing and ruminating. Nellore × Angus steers had a greater haptoglobin concentration. The concentration of D-Lactate tended to be greater in the Nellore steers regardless of diet. In conclusion, the use of sugarcane bagasse in WSC diets increases DMI and ADG without affecting feed efficiency or the carcass traits of the steers. Although Angus × Nellore steers have increased haptoglobin concentration, this effect was not enough to reduce the performance of these animals.

This study aimed to evaluate relationships among maternal residual feed intake (RFI) with growth performance and expression of genes involved in lipid metabolism in offspring of Nellore cattle. Fifty-three cows classified as negative or positive RFI by genomic prediction were exposed to fixed-time artificial insemination (FTAI) protocols at 2 and 3 years of age using semen from the same bull. In the first year, cows gestated under grazing conditions and nursed their calves in the feedlot. In the second year, the opposite occurred. Cows were weighed every 28 days during pregnancy and calves were weighed at birth and every 28 days until weaning. Ultrasound images were collected from the carcass of cows and calves. Muscle gene expression was evaluated in calves at birth and weaning. Data were analyzed by year considering the fixed effects of RFI class and FTAI protocol for variables measured in cows, and RFI class, FTAI protocol and sex for variables measured in calves. There was no effect of maternal RFI on calves performance in the first year. Lower expression of FABP4 gene and trend towards lower expression of SREBF1 and LPL genes were detected in samples collected after birth from calves born to negative RFI cows, indicating that adipogenesis was reduced during the fetal and neonatal period. In the second year, negative RFI cows had greater subcutaneous fat thickness than positive RFI cows, and their calves tended to be heavier at birth and to have less rump fat thickness at weaning. No significant differences in expression of genes studied were detected between cow RFI classes. Nellore cows classified as negative RFI consume less feed and produce calves whose growth potential is similar to that of calves produced by positive RFI cows.

Two studies were carried out, the first with the objective to evaluate performance, beef quality and expression of genes involved in lipid metabolism in the muscle of bulls fed with or without low-fat dried distillers grains with solubles (DDGS, 21% DM) in the diet. In the second, eight rumen-fistulated bulls were assigned in a switch back design to evaluate the fatty acid profile of omasal fluid. We hypothesized that bulls fed DDGS may have an improved fatty acid profile and expression of genes involved in lipid metabolism may be altered, without affecting performance. Bulls fed DDGS had greater (P < .05) concentrations of PUFA n-6 in the omasum and muscle. CLA t10, c12 content was higher and there was lower expression of the LPL gene (P = .05) in the muscle of animals fed DDGS (P = .03). In conclusion, DDGS can be used as a protein feedstuff because it maintains beef quality.

One hundred twenty Angus × Simmental steers [322 ± 4.8 kg initial body weight (BW)] were blocked by BW and randomly allocated to 4 treatments arranged as a 2 × 2 factorial to evaluate the effects of supplemental arginine (none or 63 g/d of a 15.6% metabolizable arginine), supplemental lysine (none or 40 g/d of a 25% metabolizable lysine), and their interaction on performance and carcass composition of feedlot steers during a 170-d feeding period. The basal diet [dry matter (DM) basis] contained 52% dry-rolled corn, 22% dried distillers grains with solubles, 20% corn silage, and 6% vitamin-mineral supplement. Lysine balance was estimated to be -10.3 to -10.8 g for diets that did not contain supplemental lysine, and arginine supply was estimated to be +9.7 g for diets that did not contain supplemental arginine during period 1 (days 0 to 87). Lysine and arginine supplies met or exceeded requirements in period 2 (days 88 to 170). Rumen-protected arginine and lysine were top dressed daily until slaughter at a common BW (622 ± 5.5 kg). Data were analyzed using the MIXED procedure of SAS. Body weight, average daily gain, and DM intake were not affected (P ≥ 0.14) by arginine or lysine supplementation. However, lysine increased gain:feed (P = 0.05) during period 1. Lysine decreased serum urea nitrogen (P = 0.03) on day 87, increased (P = 0.01) longissimus muscle (LM) area, decreased (P ≤ 0.01) fat thickness and yield grade, and tended (P = 0.06) to increase moisture content of LM steaks. There tended to be an interaction for moisture content of steaks (P = 0.09), where arginine supplementation increased moisture content to a greater extent in steaks from cattle supplemented with lysine compared with steaks from cattle not fed supplemental lysine. Arginine tended to increase the proportion of Choice grade carcasses (P = 0.09) but did not change lipid content of steaks (P = 0.59). Arginine tended to decrease serum glutamate (P = 0.09) and lysine (P = 0.07) after 87 d of feeding. In conclusion, supplemental rumen-protected arginine and lysine did not improve performance, but lysine can increase carcass muscle and leanness, and although arginine did not increase lipid content of steaks, it may favorably shift carcasses to a greater quality grade.

The effect of the replacement of corn silage with spineless cactus associated with Tifton 85 hay or sugarcane bagasse was evaluated on the performance, body weight components and sheep meat quality. Twenty-one Santa Inês male sheep with initial body weight of 22.9 ± 2.9 kg were used. They were confined in individual stalls for 74 days receiving the following diets: corn silage + concentrate (CS); spineless cactus + Tifton 85 hay + concentrate (TH); spineless cactus + sugarcane bagasse + concentrate (SB). After the feedlot period, the animals were slaughtered and their body components were weighed and sampled. Data were submitted to Tukey's test at 5% probability. The average daily gain (0.25 vs 0.14 kg), cold carcass weight (13.3 vs 13.7 kg), loin muscularity (0.6 vs 0.4 kg) and liver weight (0.7 vs. 0.5 kg) were higher (P < 0.05) for the TH diet when compared to that for the CS. The physical-chemical parameters of meat were not influenced (P > 0.05) by the treatments and presented about 20.1% of crude protein, 6.1% of crude fat and shear force of 2.0 kgf/cm2. In complete diets for sheep, Tifton 85 hay associated with spineless cactus provides greater weight gain, cold carcass muscularity and organ weight when compared to those for animals fed with corn silage as exclusive roughage. Sugarcane bagasse associated with spineless cactus may replace corn silage in complete diets for sheep.

Proteins are the major constituents of muscle and are key molecules regulating the metabolic changes during conversion of muscle to meat. Brazil is one of the largest exporters of beef and most Brazilian cattle are composed by zebu (Nellore) genotype. Bos indicus beef is generally leaner and tougher than Bos taurus such as Angus. The aim of this study was to compare the muscle proteomic and phosphoproteomic profile of Angus and Nellore. Seven animals of each breed previously subjected the same growth management were confined for 84 days. Proteins were extracted from Longissimus lumborum samples collected immediately after slaughter and separated by two-dimensional electrophoresis. Pro-Q Diamond stain was used in phosphoproteomics. Proteins identification was performed using matrix assisted laser desorption/ionization time-of-flight mass spectrometry. Tropomyosin alpha-1 chain, troponin-T, myosin light chain-1 fragment, cytoplasmic malate dehydrogenase, alpha-enolase and 78 kDa glucose-regulated protein were more abundant in Nellore, while myosin light chain 3, prohibitin, mitochondrial stress-70 protein and heat shock 70 kDa protein 6 were more abundant in Angus (P<0.05). Nellore had higher phosphorylation of myosin regulatory light chain-2, alpha actin-1, triosephosphate isomerase and 14-3-3 protein epsilon. However, Angus had greater phosphorylation of phosphoglucomutase-1 and troponin-T (P<0.05). Therefore, proteins involved in contraction and muscle organization, myofilaments expressed in fast or slow-twitch fibers and heat shock proteins localized in mitochondria or sarcoplasmic reticulum and involved in cell flux of calcium and apoptosis might be associated with differences in beef quality between Angus and Nellore. Furthermore, prohibitin appears to be a potential biomarker of intramuscular fat in cattle. Additionally, differences in phosphorylation of myofilaments and glycolytic enzymes could be involved with differences in muscle contraction force, susceptibility to calpain, apoptosis and postmortem glycolysis, which might also be related to differences in beef quality among Angus and Nellore.

The objective of this study was to evaluate the effect of freezing prior to wet aging on the color of Nellore and Aberdeen Angus cattle meat. Samples of the Longissimus thoracis muscle were subjected to two treatments: conventional aging (0, 7, 14 and 21days); and freezing (-20°C for 40days) followed by thawing and aging. Freezing promoted (P<0.05) formation of metmyoglobin during aging, especially in Nellore beef. Frozen meats showed (P<0.05) lower lightness (L*) values and higher redness (a*), chroma (C*) and hue angle (h*) values at the first day of storage, deteriorating quickly with aging time. The color of the Nellore meat was less (P<0.05) stable to freezing, being lighter, yellower and less red than Angus meat. The results suggest that color stability in vacuum-packed beef is reduced by freezing prior to aging and that reduction depends on the animal breed.

Conduziu-se este trabalho, com o objetivo de verificar a viabilidade econômica da terminação em confinamento de novilhos Nelore e Red Norte na região de Lavras, MG. Foram utilizados 41 novilhos, não castrados, de dois grupos genéticos, sendo: 19 Nelore e 22 Red Norte, com pesos vivos iniciais médios de 315 ±31 kg e 321 ±30 kg, respectivamente. O período experimental foi de 112 dias, divididos em quatro períodos de 28 dias. A viabilidade econômica foi analisada utilizando o modelo de custo, considerando os custos operacionais, alternativos e de depreciação. Todos os indicadores econômicos gerados apresentaram resultados negativos. A atividade apresentou prejuízo de R$ 6,88 e 19,74/arroba para os animais Red Norte e Nelore, respectivamente. Os resultados negativos obtidos nessas condições ocorreram porque o custo operacional efetivo foi maior que o preço de venda da arroba. Em um cenário com a aquisição de animais a atividade de confinamento apresentou resíduo próximo de zero para o grupo Red Norte. A prática do confinamento não apresentou viabilidade econômica para a região de Lavras, MG, no ano de 2007.


The objective was to study the economic viability of feedlot in Lavras region, state of Minas Gerais. Forty one bulls of two genetic groups were used, being: 19 Nellore and 22 Red Norte, with initial average age of 20 months and initial average live weight of 315 ±31 kg and 321 ±30 kg, respectively. The experimental period was 112 days. The model of cost was used to evaluate the economic viability. All economic indexes presented negative results. The activity presented negative profit of R$ 6.88 and R$ 19.74/arroba for the animals Red Norte and Nellore, respectively. The negative results obtained in these conditions took place because the operational effective cost was bigger than the sale price of the arroba. The feedlot didn't present economical viability for the Lavras region, in the year of 2007. The feed efficiency has straight influence on the economical viability of feedlot.
