Grapes are one of the most cultivated fruits in the world. Concomitantly, a large amount of waste is generated from this product. Grape pomace (GP) flour can be used as an increment for making new food products. GP is rich in fibers and phenolic compounds, and in addition could be used to reduce agro-industrial residues. Thus, the objective of this study was to evaluate the influence of the addition of different percentages of grape pomace (GP) on the chemical, technological, and sensory characteristics in pasta and bakery products. An integrative review was conducted. The selection of papers was carried out by searching studies in databases. An improvement in chemical quality with the addition of GP was observed, such as fiber, anthocyanin, and micronutrient content. Biscuits, cookies, cakes, breads, and pasta did not show any impairment in terms of acceptability. However, biscuits and cookies had the best global acceptance. The degree of acceptance still seems to be low for the use of GP to be included in high quantities in successful products. Samples with a maximum of 10% addition of GP flour seem to be accepted. On the other hand, the higher the percentage of GP flour, the healthier benefits they seem to promote.

In this work, we studied the covalent immobilization of α-acetolactate decarboxylase (ALDC) on glutaraldehyde activated chitosan beads for application in beers to prevent off-flavor. The immobilized preparation was characterized regarding yield, efficiency, activity recovery, thermal and pH stabilities, and operational stability in beer. The concentration of activating agent was evaluated and at the best condition an immobilization yield of 84% and activity recovery of 9.1% were verified. Optimal pH was 6.0 for free and immobilized enzymes, however, the immobilized enzyme showed higher relative activity at the tested pH, with emphasis on the pH range from 5.0 to 6.5. Besides, immobilized enzyme showed stabilization factor of almost sevenfold at 60°C compared to free form. The immobilized biocatalyst was tested in repeated batches in beer for α-acetolactate conversion to acetoin, and after 12 cycles the enzyme presented 80% of its initial activity. To date, this is the most stable immobilized preparation of ALDC reported.

Bacillus spp. have been used as a biocontrol strategy to eliminate/reduce toxic fungicides in viticulture. Furthermore, the presence of fungi that are resistant to commonly used products is frequent, highlighting the need for new biocontrol strains. Aspergillus carbonarius can produce ochratoxins, including ochratoxin A (OTA), which has a regulatory maximum allowable limit for grape products. The purpose of this study was to assess the ability of four Amazonian strains of Bacillus (P1, P7, P11, and P45) to biocontrol A. carbonarius and various forms of ochratoxins in grapes. Berries treated with strain P1 presented no fungal colonies (100% reduction), while P7, P11 and P45 strains caused a reduction of 95, 95 and 61% on fungal counts, respectively. Six forms of ochratoxin were found in the grapes inoculated with A. carbonarius, including ochratoxin α, ochratoxin ß, ochratoxin α methyl-ester, ochratoxin α amide, N-formyl-ochratoxin α amide, and OTA. Four of these ochratoxin forms (ochratoxin ß, ochratoxin α methyl-ester, ochratoxin α amide, N-formyl-ochratoxin α amide) are reported for the first time in grapes. These ochratoxins were identified using liquid chromatography coupled to quadrupole time-of-flight mass spectrometry (LC-QToF-MS). All Bacillus strains inhibited the synthesis of OTA, which is the most toxic form of ochratoxin. No ochratoxin form was found when P1 and P7 were used. Although some forms of ochratoxin were detected in grapes treated with Bacillus spp. P11 and P45, the levels decreased by 97%. To our knowledge, this is the first report on the inhibition of Aspergillus carbonarius-derived ochratoxin by Bacillus species. P1 strain, identified as Bacillus velezensis, was found to be the most promising for completely inhibiting fungal growth and production of all ochratoxins.

BACKGROUND: Aspergillus carbonarius has been identified as one of the main fungi that produce ochratoxin A (OTA) in grapes. This nephrotoxic mycotoxin has been legislated against in several countries and is a major concern for viticulture. Knowledge of resistance to, or susceptibility to, colonization by A. carbonarius may be useful in selecting the most promising cultivars for organic agriculture and could help in preventing fungal contamination in vineyards. This study aimed to evaluate the colonization potential and the capacity to produce OTA by A. carbonarius in Vitis vinifera, V. labrusca, and hybrid grapes. The correlation between OTA levels and grape berry characteristics was also analyzed. RESULTS: The OTA content was only strongly correlated with the thickness and hardness of the grape skins. The correlation between OTA levels and these parameters was negative (grapes with the least thickness and hardness had the highest OTA levels). Vitis vinifera grapes were more susceptible to A. carbonarius than V. labrusca and hybrid grapes at both 25 and 4 °C. Chardonnay (V. vinifera) grapes showed the highest levels of OTA, followed by Merlot, Cabernet Sauvignon, Tannat, and Moscato Branco. Italia grapes were the exceptions among V. vinifera cultivars, since they showed similar thickness, hardness, and fungal resistance as the V. labrusca and hybrid grapes. CONCLUSION: The highest resistance to A. carbonarius was observed in the following grapes: hybrids (BRS Lorena and BRS Violeta), V. labrusca (Isabel and Bordo), and V. vinifera (Italia). These cultivars can be prioritized in the implementation of organic viticulture. © 2020 Society of Chemical Industry.

LC-DAD-ESI-MS/MS was used to comprehensively characterise the non-extractable phenolic compounds (NEPC) in red and yellow araçá genotypes. Results showed a total of 45 and 43 phenolic compounds in the NEPC fraction and, similarly, 51 and 50 compounds in extractable phenolic compounds (EPC) fraction from red and yellow araçá, respectively. Gallic acid and ellagic acid were the unique compounds found in both fractions. The NEPC fraction represented about 35% (m/m) of the total phenolic content and was characterised by an abundance of phenolic acids, while the EPC fraction was rich in flavanols. Although NEPC represented one-third of the total phenolic compounds found in araçá, its antioxidant capacity (against peroxyl radical) was 50% higher than the EPC fraction. The results of this work show that the NEPC fraction of araçá has great diversity and a relatively high concentration of low-molecular-weight phenolic compounds with high antioxidant capacity.

Aspergillus carbonarius can produce a possibly carcinogenic mycotoxin named ochratoxin A (OTA). The metabolism of this fungus can also impact grape and wine quality as it influences the volatile and phenolic profiles, which are related to aroma and antioxidant activity, respectively. The objective of this study was to evaluate the effect of A. carbonarius on OTA levels and for the first time on volatile profile and antioxidant activity of grapes and their respective wines. Cabernet Sauvignon (CS, red) grapes presented higher susceptibility to A. carbonarius than Moscato Italico (MI, white) grapes and OTA levels in their respective musts were in accordance with this same trend. However, vinification of red grapes resulted in 67% reduction of OTA, while the reduction observed with white wines was 45%. The presence of acids (hexanoic, octanoic, nonanoic and decanoic, fatty odor) was found to be an indicative of the fungus incidence in grapes. These acids were precursors of esters that might impart negative aroma (methyl nonanoate and isoamyl octanoate, fatty odor) or provide desirable fruity characteristics (ethyl hexanoate, ethyl octanoate and methyl octanoate) for wine. In addition, terpenes were detected only in wines produced with grapes (CS and MI) inoculated with A. carbonarius. The presence of A. carbonarius increased the antioxidant activity of CS grapes. For MI grapes and both wines (CS and MI) no differences were verified in the antioxidant activity of the samples affected or not affected by this fungus. Although A. carbonarius occurrence has shown no influence on the antioxidant activity of wines, it produced OTA and has negatively influenced the wine odor profile, due to the production of some volatiles that impart a deleterious effect on wine aroma.

Phenolic and nitrogenous compounds from different styles craft beers were identified by high performance liquid chromatography and mass spectrometry in order to stratify beer samples according to their style. For this, an exploratory assessment relying on Linear Discriminant Analysis was performed. Fifty-seven phenolic compounds were reported and twelve of them were found for the first time in beer: benzoic acids, 2,4-dihydroxybenzoic acid, 2,3-dihydroxybenzoic acid, dimethoxybenzoic acid; phenolic acid conjugates, 3-p-coumaroylquinic acid, 4-p-coumaroylquinic acid, 3-feruloylquinic acid, 4-feruloylquinic acid, 5-feruloylquinic acid; flavonoids, taxifolin hexoside, quercetin dihexoside, apigenin-6,8-dipentoside, and isofraxidin hexoside. Additionally, 11 nitrogenous compounds belonging to the phenolamide class were found. Two discriminant functions were generated and allowed a satisfactory separation among all beer styles. 3-Caffeoylquinic acid, 3-p-coumaroylquinic acid, 4-p-coumaroylquinic acid, 5-caffeoylquinic acid, coumaric acid, kaempferol-3-O-rutinoside, proanthocyanidin B dimer III and proanthocyanidin B dimer V were the compounds that showed the highest capacity of discriminate the beer styles (IPA, Lager and Weiss).

The objective of this research was to estimate for the first time the transformations that the free form of some target carbonyl compounds may undergo during winemaking and assess the exposure risk to these compounds through the consumption of the Merlot commercial wines under study. Acrolein and furfural were found in grapes and the respective wines, although levels were observed to decline throughout the winemaking process. Formaldehyde was found in all stages of wine production in levels lower than the limit of quantification of the method and ethyl carbamate was not found in samples. Acetaldehyde seems to be a precursor of acetoin and 2,3-butanediol, since the levels of this aldehyde decreased along winemaking and the formation of the ester and alcohol was verified. Furfural levels decreased, while the occurrence of furan-containing compounds increased during winemaking. The formation of acetaldehyde during alcoholic fermentation and the potential environmental contamination of grapes with acrolein and furfural are considered as the critical points related to the presence of toxic carbonyl compounds in the wine. Acrolein was found in the samples under study in sufficient quantities to present risk to human health, while other potentially toxic carbonyl compounds did not result in risk. This study indicated for the first time the presence of acrolein in grapes suggesting that environmental pollution can play an important role in the levels of this aldehyde detected in wines. Reduction of the emission of this aldehyde to the environment may be achieved by replacing wood burning by another heat source in fireplaces or wood stones, and abandoning the practice of burning garbage and vegetation.

The goals of this study were (i) to verify the effect of steam extraction used in juice production and the stages of vinification on the ochratoxin A (OTA) levels found in grapes naturally contaminated, and (ii) evaluate the risk of exposure to this toxin when the daily consumption of juice and wine is followed to prevent cardiovascular disease. OTA-producing fungi were isolated from Cabernet Sauvignon, Moscato Itálico and Concord grapes harvested from the same vineyard and intended to produce red wine, white wine and juice, respectively. The highest levels of this toxin were found in the Concord grapes used for juice production. Although greater reduction in OTA levels occurred during juice production (73%) compared to winemaking (66 and 44%, for red and white, respectively), the estimated OTA exposure through juice was higher than the tolerable intake established for this toxin by JECFA. The risk associated with juice consumption, rather than wine, can be explained by (i) higher OTA levels found in Concord must than those of Cabernet and Moscato, indicating that Concord grapes appear to be more susceptible to OTA production by toxigenic fungi; and (ii) the daily recommended juice consumption is higher than those proposed to red wine.

Ochratoxin A (OTA) is a mycotoxin with nephrotoxic, genotoxic, teratogenic and carcinogenic properties. The presence of this toxin in wines and juices occurs due to the development of toxigenic fungi in grapes. Studies have shown the presence of this toxic secondary metabolite in these beverages may results in economic losses to the winery as well as health problems for consumers. In Europe, several studies have been done in order to map the areas where the development of ochratoxigenic fungi is more favorable. However, in Brazil these studies are still incipient. The Joint Expert Committee on Food Additives of the World Health Organization (JECFA) established the safe tolerable intake of 112ng OTA per kg of body weight per week. To verify whether the population is exposed to OTA levels that pose a risk to health is necessary to compare the parameter of safe ingestion defined by JECFA with the levels of exposure to this toxin. Periodic monitoring of the OTA levels in food and beverage has been justified by some reasons including: (i) the toxic effects of this toxin, (ii) the recent publication of the Brazilian legislation establishing maximum limit for OTA, (iii) the introduction of grape juice in school meals and (iv) the recommendation of regular wine intake because of their functional properties.


A ocratoxina A (OTA) é uma micotoxina que possui propriedades nefrotóxicas, genotóxicas, teratogênicas e carcinogênicas. A presença dessa toxina em vinhos e sucos ocorre devido à contaminação das uvas por fungos toxigênicos. Estudos têm mostrado a presença desse metabólito secundário tóxico nestas bebidas, o que pode significar perdas econômicas ao setor vitícola, bem como problemas à saúde dos consumidores. Na Europa, vários estudos têm sido realizados com o objetivo de mapear as áreas em que o desenvolvimento de fungos ocratoxigênicos é mais favorável. Entretanto, no Brasil estes estudos ainda são incipientes. O Comitê de Especialistas em Aditivos Alimentares da Organização Mundial da Saúde (JECFA) estabeleceu a ingestão tolerável segura de 112ng de OTA por quilo de peso corpóreo por semana. Para verificar se população está exposta a OTA em níveis que representam risco para à saúde, é necessário comparar o parâmetro de ingestão segura, definido pelo JECFA, com os níveis de exposição a esta toxina. O monitoramento periódico dos níveis de OTA em alimentos e bebidas é justificado por alguns motivos que incluem: (i) os efeitos tóxicos dessa toxina, (ii) a publicação recente da legislação brasileira que estabelece limite máximo para OTA, (iii) a introdução do suco de uva na merenda escolar; e (iv) a recomendação da ingestão regular de vinho/suco de uva devido as suas propriedades funcionais.

This study reports, for the first time, the main changes that occur with some important aroma compounds of Moscatel sparkling wines during winemaking, measured using headspace solid-phase microextraction, one-dimensional and comprehensive two-dimensional gas chromatography (GC×GC) with mass spectrometry detection (MS). The best conditions of volatile extraction included the use of PDMS/DVB fibre, 2mL of wine, 30% of NaCl, 40°C for 30min. The chromatographic profile of sparkling wines showed decreasing amounts of monoterpenes (limonene, 4-terpineol, terpinolene, citronellol, α-terpineol, linalool, hotrienol, and nerol oxide), increasing amounts of esters (terpenyl esters, ethyl octanoate, ethyl decanoate and hexyl acetate) and alcohols (1-nonanol and 2-phenylethanol). Sixty-nine compounds co-eluted in the first dimension; only six co-eluted in the second dimension. GC×GC/TOFMS allows more detailed study of the volatile profile of sparkling wines.

Headspace solid-phase microextraction (HS-SPME) combined with comprehensive two-dimensional gas chromatography with time-of-flight mass spectrometry detection (GC×GC/TOFMS) was used to analyse the volatiles in five types of wines elaborated with grapes of Cabernet Sauvignon, Merlot, Chardonnay, Sauvignon Blanc and Pinot Noir varieties. Fisher ratio, principal component analysis (PCA) and stepwise linear discriminant analysis (SLDA) were used to develop a discriminant model and, as a result, 12 volatile compounds enabled differentiation and classification of wines according to grape cultivars. A detailed examination of GC×GC/TOFMS data showed that the use of one-dimensional gas chromatography with a mass spectrometric detector (1D-GC/MS) would probably result in misidentification of some of these 12 compounds, as they showed partial coelution with other components in the first chromatographic dimension.

A method has been developed to determine 10 elements in Brazilian red wines using high-resolution continuum source flame atomic absorption spectrometry, a technique that allows the fast sequential determination of an essentially unlimited number of elements per sample, each one under previously optimized conditions. All measurements were made without sample preparation, using aqueous standard solutions for calibration. The results were in agreement within 99% of confidence (t-test) with those obtained by inductively coupled plasma optical emission spectrometry. The same grape, Cabernet sauvignon, was used in all experiments, and the wines from each region were prepared especially for this investigation in order to avoid any confusion due to grapes from other regions, which are often used in commercial wines. The elements K, Mn, Rb and Sr were found to be the best indicators for the origin of the wines, based on a Principal Component Analysis.

Wine aroma is an important characteristic and may be related to certain specific parameters, such as raw material and production process. The complexity of Merlot wine aroma was considered suitable for comprehensive two-dimensional gas chromatography (GC×GC), as this technique offers superior performance when compared to one-dimensional gas chromatography (1D-GC). The profile of volatile compounds of Merlot wine was, for the first time, qualitatively analyzed by HS-SPME-GC×GC with a time-of-flight mass spectrometric detector (TOFMS), resulting in 179 compounds tentatively identified by comparison of experimental GC×GC retention indices and mass spectra with literature 1D-GC data and 155 compounds tentatively identified only by mass spectra comparison. A set of GC×GC experimental retention indices was also, for the first time, presented for a specific inverse set of columns. Esters were present in higher number (94), followed by alcohols (80), ketones (29), acids (29), aldehydes (23), terpenes (23), lactones (16), furans (14), sulfur compounds (9), phenols (7), pyrroles (5), C13-norisoprenoids (3), and pyrans (2). GC×GC/TOFMS parameters were improved and optimal conditions were: a polar (polyethylene glycol)/medium polar (50% phenyl 50% dimethyl arylene siloxane) column set, oven temperature offset of 10 °C, 7s as modulation period and 1.4s of hot pulse duration. Co-elutions came up to 138 compounds in 1D and some of them were resolved in 2D. Among the co-eluted compounds, thirty-three volatiles co-eluted in both 1D and 2D and their tentative identification was possible only due to spectral deconvolution. Some compounds that might have important contribution to aroma notes were included in these superimposed peaks. Structurally organized distribution of compounds in the 2D space was observed for esters, aldehydes and ketones, alcohols, thiols, lactones, acids and also inside subgroups, as occurred with esters and alcohols. The Fischer Ratio was useful for establishing the analytes responsible for the main differences between Merlot and non-Merlot wines. Differentiation among Merlot wines and wines of other grape varieties were mainly perceived through the following components: ethyl dodecanoate, 1-hexanol, ethyl nonanoate, ethyl hexanoate, ethyl decanoate, dehydro-2-methyl-3(2H)thiophenone, 3-methyl butanoic acid, ethyl tetradecanoate, methyl octanoate, 1,4 butanediol, and 6-methyloctan-1-ol.

Os objetivos deste trabalho foram caracterizar e diferenciar vinhos-base para espumante (cultivares 'Chardonnay' e 'Pinot Noir') provenientes da Serra do Nordeste e Serra do Sudeste do Rio Grande do Sul por meio de parâmetros físico-químicos e elementos minerais combinados com técnicas de análise multivariada. Foram analisados nove parâmetros físico-químicos (densidade, grau alcoólico, extrato seco total, extrato seco reduzido, acidez total, acidez volátil, acidez fixa, pH e açúcares redutores), por espectrofotometria no infravermelho, e 11 elementos minerais (Al, B, Ba, Ca, Cu, Fe, K, Mg, Mn, Na e Sr), por espectrometria de emissão ótica com plasma indutivamente acoplado (ICP-OES). Os elementos encontrados em maiores concentrações foram K, Mg e Ca e, em menores concentrações, Ba, Fe, Sr e Al. A Análise de Componentes Principais (ACP) mostrou que há uma tendência natural de separação entre os vinhos-base da Serra do Nordeste e Serra do Sudeste. Por meio da Análise Discriminante (AD) foram obtidos cinco descritores (Mg, Ca, Mn, pH e grau alcoólico) para os vinhos-base da cultivar 'Chardonnay' e seis descritores (B, Mn, Fe, Na, pH e acidez volátil) para a cultivar 'Pinot Noir', com capacidade de classificar as amostras de vinhos-base de acordo com a origem geográfica. Os elementos Mn e Mg parecem ser aqueles com maior capacidade de discriminação entre os vinhos-base da Serra do Nordeste e Serra do Sudeste.


This research describes the base wines characterization and differentiation (cultivars Chardonnay and Pinot Noir) from Serra do Nordeste and Serra do Sudeste of Rio Grande do Sul by physicochemical parameters and mineral elements followed by multivariate statistical analysis. Nine physicochemical parameters (density, alcoholic content, total dry extract, reduced dry extract, total acidity, volatile acidity, fix acidity, pH and reducing sugars) were analyzed by infrared spectrofotometry and eleven mineral elements (Al, B, Ba, Ca, Cu, Fe, K, Mg, Mn, Na and Sr) by inductively coupled plasma optical emission spectrometry (ICP-OES). Elements K, Mg, and Ca were founded in higher concentrations and Ba, Fe, Sr, and Al were founded in lower ones. Principal Component Analysis (PCA) showed a natural separation tendency between wines from Serra do Nordeste and Serra do Sudeste. Five descriptors were obtained by Discriminant Analysis (DA) for base wines from cultivar Chardonnay (Mg, Ca, Mn, pH and alcoholic content) and six descriptors for base wines from cultivar Pinot Noir (B, Mn, Fe, Na, pH and volatile acidity). These descriptors were capable to classify samples of base wines according to geographical origin. Mn and Mg elements seem to be the elements with higher discrimination capacity between base wines from northwest Serra and Southeast Serra.

Objetivou-se estudar o efeito do uso de taninos enológicos na composição sensorial do vinho Cabernet Sauvignon. O trabalho foi conduzido em Bento Gonçalves, Rio Grande do Sul (RS), com uvas Cabernet Sauvignon, safra 2004. Trata-se de uma cultivar que se destaca no Brasil pela importância na produção de vinhos tintos de guarda. Porém, em algumas safras, possui dificuldades para uma adequada maturação, o que dificulta a elaboração de vinhos com o perfil sensorial desejado pelos consumidores. Dentre as estratégias para minimizar esse problema, está o manejo do vinhedo, aliado a ajustes tecnológicos nas etapas de elaboração do vinho. Para tal, foram usados taninos de quebracho e castanheira, aplicados em três dosagens (5,0g hl-1, 10,0g hl-1, 20,0g hl-1) e em três momentos de aplicação (maceração, descuba, e após a fermentação malolática). Nos vinhos estabilizados, realizaram-se análises sensoriais, em relação aos atributos ligados aos perfis olfativos e gustativos, com análise de oito descritores olfativos e nove descritores gustativos, além de um conceito geral. Assim, verificou-se que os taninos enológicos imprimiram algumas diferenças, principalmente no perfil aromático dos vinhos, que apresentaram acréscimo de qualidade quando tratados com os taninos enológicos. Da mesma maneira, houve superioridade olfativa e gustativa nos vinhos que receberam tratamentos com taninos na etapa de maceração.


The objective of this research was to study the effect of enological tannins in the sensory composition of the Cabernet Sauvignon wine. The study was conducted in Bento Gonçalves, RS, with Cabernet Sauvignon grapes, harvest 2004. This is a cultivar that stands out in importance in Brazil for the production of red wines. However, in some crops there are difficulties for a proper maturation, which hampers the development of wines with the sensory profile desired by consumers. Among the strategies to minimize this problem there is the management of vineyards, combined with technological adjustments in stages of winemaking. To this end, quebracho and nut tannins were used and applied in three doses (5.0g hl-1, 10.0g hl-1, 20.0g hl-1), with three times of application (maceration, drawing off and after malolactic fermentation). In the stabilized wines, there were sensory analysis, related to the attributes associated with olfactory and taste profiles, with analysis of 8 olfactory descriptors 8 and 9 descriptors taste, besides a general concept. Thus, it was found that the enological tannins enabled some differences, mainly in the volatile profile of wines, which showed an increase of quality when treated with the enological tannins. Similarly, there was superiority smell and taste in the wines that received treatment with tannins in the stage of maceration.

O objetivo do trabalho foi estudar o efeito do ácido 3-indoibiitirico (A/B) no enraizamento e desenvolvimento de estacas semi-lenhosas de quivi, cv. Monte. O experimento foi conduzido na Estação Experimental Agronômica da UFRGS, em Eldorado do Sul, RS, e constou de cinco tratamentos, com cinco repetições, em blocos casualizados. Usou-se 19 sacos/parcela, com duas estacas/saco plástico, plantadas em uma mistura argila: areia.-esterco (1: 1: 1): e tratadas com AIB nas concentrações de: 2000ppm, 4000ppm, 6000ppm e 8000ppm, além da testemunha (sem AIB). O AIB não influenciou na porcentagem de enraizamento das estacas, mas resultou no aumento linear do peso seco médio das raízes. Houve, da mesma forma, incrementos lineares no comprimento e no peso seco dos brotos, à medida que se elevou a concentração de AIB.


The objective of this experiment was to study the effect of the 3-indolbutiric acid (IBA) on the rooting and development of semi-hardwood cuttings of kiwi, cv. Monty. The experiment was carried out at the Staccatos Experimental Agronomical/UFRGS in Eldorado do Soul. RS, Brazil with five treatments and five repetitions, in completely randomized blocks design. There were 19 bags per pilot with two cuttings per plastic bag grow in a catty: sane manure mixture (1:1:1) and treated by /BA at the concentrations of 2000ppm, 4000ppm, 6000ppm and 8000ppm. In addition to the contrail. IBA did not affect the rooting percentage but resulted in a linear increase of the mean root dry weight. Shoot development was not affected by the IBA. Buy there was a tendency for a linear increase of shoot length and dry weight in response to IBA concentrations above 2000 ppm.

O trabalho foi realizado em Santana do Livramento. Rio Grande do Sul, com o objetivo de avaliar o efeito de épocas de desfolha e de colheita sobre a composição físico-química do vinho Cabernet Sauvignon. O experimento foi conduzido num fatoriat incompleto, com quatro épocas de desfolha e três épocas de colheita, realizadas em função de uma data ideal de colheita, totalizando onze tratamentos, com três repetições. A intensidade de desfolha foi de aproximadamente 25 por cento. Os vinhos foram elaborados através de microvinificações. Os resultados mostraram que a época de desfolha não afetou de forma significativa a maioria das variáveis analisadas no vinho, à exceçao do álcool, açúcares redutores e extraio seco. A época de colheita, por outro lado, influiu significativamente na maior parte das variáveis, exceto na acidez total e na acidez volátil, o que sugere uma maior influência deste fator sobre a composição e qualidade do vinho.


The fleld work was carried out in Santana do Livramento, State of Rio Grande do Sul, Brazil, aiming to evaluate the effect of defotiation and harvesting times on the physicchemical composition of Cabernet Sauvignon wines. The experimental design was an incompletely factorial with four defotiation times and three harvesting limes at on ideal harvest date with a total of eleven treatments in three replicales. The defotiation intensity was about 25 percent and wines were elaborated in small volumes The results showed that the time of defotiation did not have significam effect on the majority of the variables anatyzed, exception on the alcohot, reducing sugars and dry extract. On the other hand, the harvesting time had a significant effect on almost ali variables, exception to the total and votatile acidities. These results suggests a greater influence of the harvesting time on the composition and quatity of Cabernet Sauvignon wine.
