In practice cattle may be slaughtered at different combinations of age and weight. As each of these factors could affect meat quality traits, the present work aimed to identify which combination can be expected to increase overall meat quality of m. rectus abdominis of Charolais heifers. Totally, 40 heifers were slaughtered either at 26±1 or at 36±1 months of age. Young heifers were sampled at two different carcass weights (349±12 and 394±8 kg). Old heifers were also sampled at two different carcass weights (397±6 and 451±9 kg). The m. rectus abdominis was excised 24 h postmortem to determine metabolic enzyme activities, myosin heavy-chain isoform proportions, lipid contents, collagen content and collagen solubility. Shear force measurements were evaluated on raw and broiled meat after 14 days of ageing. Meat quality traits scored between 0 and 10 by sensory analysis. Increasing slaughter age from 26 to 36 months had no impact on either raw/broiled shear force (0.31⩽P⩽0.47) and/or meat quality traits (0.62⩽P⩽0.91) or on physicochemical properties of heifer's meat samples. Increasing carcass weight for a similar slaughter age of 26 months had also impact neither on meat quality traits (0.52⩽P⩽0.91) nor on muscular properties. On the contrary, increasing carcass weight for a similar slaughter age of 36 months had induced a decrease of muscular shear force (raw muscle; P=0.009) and a concomitant decrease of total collagen content (P=0.03). Nevertheless, no significant impact on meat quality traits was revealed by the sensorial panel (0.13⩽P⩽0.49). Metabolic enzyme activities (0.13⩽P⩽0.86) and myosin heavy-chain proportions (0.13⩽P⩽0.96) were not significantly impacted by slaughter age and carcass weight. Thus, the impact of increasing carcass weight and/or slaughter age in young Charolais heifers has a limited impact on meat quality traits and associated muscular characteristics. Modulating heifer's cycles (age and/or carcass weight in the studied range) appears to be a way to answer to the numerous marketing chains, without penalising meat quality traits.

This work sets out a methodological approach to assess how to simultaneously control together Animal Performances, nutritional value, sensory quality of meat. Seventy-one young bulls were characterized by 97 variables. Variables of each element were arranged into either 5 homogeneous Intermediate Scores (IS) or 2 Global Indices (GI) via a clustering of variables and analysed together by Principal Component Analysis (PCA). These 3 pools of 5 IS (or 2 GI) were analysed together by PCA to established the links existing among the triptych. Classification on IS showed no opposition between Animal Performances and nutritional value of meat, as it seemed possible to identify animals with a high butcher value and intramuscular fat relatively rich in polyunsaturated fatty acids. Concerning GI, the classification indicated that Animal Performances were negatively correlated with sensory quality. This method appeared to be a useful contribution to the management of animal breeding for an optimal trade-off between the three elements of the triptych.

The aim of this study was to highlight the relationships between decorin, tenascin-X and type XIV collagen, three minor molecules of extracellular matrix (ECM), with some structural parameters of connective tissue and its content in total collagen, its cross-links (CLs) and its proteoglycans (PGs). In addition, we have evaluated impact of these minor molecules on beef quality traits. The relative abundance of these molecules was evaluated by western blot analysis in Longissimus thoracis (LT) and Biceps femoris (BF) muscles from Aberdeen Angus and Blond d'Aquitaine beef breeds. Decorin and tenascin-X were more abundant in BF than in LT (1.8 v. 0.5 arbitrary units (AU), respectively, P<0.001, and 1.0 v. 0.6 AU, P<0.05). There was no muscle effect for collagen XIV content. Decorin and tenascin-X relative abundance were positively correlated with perimysium and endomysium areas and with collagen characteristics (total, insoluble and CLs). Decorin was negatively correlated with total PG content and positively with tenascin-X. Collagen XIV was correlated with any of parameters measured. To assess the impact of decorin, tenascin-X and collagen XIV and of their ratios to total collagen and PGs on shear force and quality traits we realized, respectively, a multiple-linear regression analysis and a Pearson's correlation analysis. Decorin and tenascin-X relative abundance were, respectively, negatively and positively involved in juiciness. Decorin relative abundance was also negatively involved in abnormal flavour and positively in overall liking. The ratio of decorin to total collagen and PGs was negatively correlated to juiciness, together with collagen XIV ratio to total PGs. The ratios of decorin, tenascin-X and collagen XIV to total PGs were positively correlated to sensory tenderness, negatively to abnormal beef flavour and positively to overall liking. The ratio of decorin to total collagen was also negatively correlated to abnormal flavour and positively to overall liking while its ratio to total PGs was positively correlated to beef flavour and overall liking. Results of the present study highlighted for the first time the possible role of minor ECM molecules on beef quality traits. In addition, variations of meat texture and more generally of sensory qualities would depend not only to the quantity of total collagen and of its CLs, but also of components of ECM such as decorin, tenascin-X and collagen XIV and of their ratios to total collagen and PGs.

Intramuscular fat depot is of major interest for consumers, producers, and the industry. To predict intramuscular (i.m.) lipid deposition in cattle of continental breeds, different models were constructed for different muscles in bulls, steers, and cows. Two independent databases (DB1 and DB2) were developed with homogeneous individual data collected in the same slaughterhouse and total lipids, phospholipids, and triglycerides were analyzed in the same lab with the same procedures. Database DB1 was used with the meta-analysis methodology to fit the predictive models of i.m. lipids, phospholipids, and triglycerides with carcass fatness. Database DB2 was used to evaluate the accuracy of the models predicted. Total lipid and triglyceride contents varied linearly with carcass fatness in bulls, steers, and cows, but phospholipids were more independent of carcass fatness, regardless of the type of cattle studied. In bulls, LM had a lower minimal value (intercept in the model) and greater slope than semitendinosus (ST) and triceps brachii (TB) muscles. In cows, LM showed a greater intercept than ST and TB muscles but a similar slope. In steers, lipid content increased similarly in LM, rectus abdominis (RA) muscle, and ST muscle with carcass fatness. Bulls had a lower intercept than steers but showed a similar trend with carcass fatness. According to the external evaluation using DB2, the models obtained to predict total lipids in LM were more accurate than those obtained in the ST muscle in bulls and cows and in the RA muscle in steers. The models proposed for cows should be used only in the range of carcass fatness used to fit the equations, and further data are needed to fully validate them.

The aim of this study was to compare the responses in fattening performance and meat composition for high-concentrate diets rich in either starch and lipids (especially omega-3 fatty acids) or fibrous by-products. A total of 140 Charolais bulls (initially 319 ± 27 kg BW) were allocated to 3 high-concentrate diets and were fattened for up to 18 mo. The diet treatments included concentrate mixtures rich in either fiber (FR; n = 56) or starch plus linseed (diets SL and SLR; n = 56 and n = 28, respectively) and barley straw. The concentrate mix was offered ad libitum in SL and FR diets but was kept isoenergetic to the FR diet in the SLR diet. Bulls were weighed every 15 d. Feed intake was measured daily. Carcass composition was assessed for all animals slaughtered at 699 ± 65 kg BW. Meat nutritional quality traits (e.g., fat content and fatty acid composition focusing on n-6 and n-3 polyunsaturated fatty acids) were measured on the longissimus thoracis, rectus abdominis, and semitendinosus muscles. Metabolic enzyme activity (phosphofructokinase, lactate dehydrogenase, and cytochrome-c oxidase) was measured on these muscles and on liver. The SL diet bulls had greater fattening performance, BW gain (P = 0.006), and efficiency for growth (P = 0.025) at an energy intake similar to that of FR diet bulls. They also had heavier carcasses with a greater proportion of fat. However, liver samples showed no difference in specific metabolic activity. Compared to bulls fed the SL diet, bulls fed SLR consumed 15% less energy and had lower BW gain (P < 0.001) but were slightly more efficient for growth (P = 0.010). They had lower carcass weight but a greater muscle-to-fat ratio. Compared to bulls fed the FR diet, SLR bulls had lower than planned NEg intake and lower BW gain but did not have differences in body composition. Compared to the FR diet, the SL diet led to a greater omega-3 fatty acid content because of a greater supply of dietary linoleic acid, especially in lean muscle.

The aim of this paper was to identify pre-slaughter factors that modify total and insoluble collagen contents in bovine muscle to construct a model of collagen dynamics. The meta-analyses were performed with primary data of total (n = 1165) and insoluble (n = 1145) collagen contents from INRA experiments obtained from different muscles in young bulls, cows and steers. According to both the bibliography and meta-analyses, total collagen content and solubility were greatly affected by the muscle (type). Moreover, the pattern of the evolution of collagen characteristics was similar among Longissimus, Semitendinosus and Triceps brachii muscles in young bulls. In cows, collagen contents in the Triceps brachii muscle had delayed dynamics compared with the other muscles. Collagen characteristics differed among breeds because of variation in the maturity of the breed. Similarly, according to the meta-analyses, total and insoluble collagen content evolutions with the degree of maturity (DOM; proportion of adult weight reached at slaughter) were different in dairy and rustic breeds from those of beef breeds, especially in bulls. Although the relationships between collagen content and DOM were quantified in different muscles and sexes, the precision of the fitted equations was not sufficient for prediction. Consequently, relying on the hypotheses raised by the meta-analysis and the literature, an approach to further develop a dynamic mechanistic model of soluble and insoluble collagen content is proposed.

Beef industry operators often use a "grain of meat" assessment to aid in selecting carcasses according to their tenderness potential. The first aim of this study was to formalise this empirical notion by building a scoring scale for grain of meat. Two experts, regular users of this notion, were called upon to build the assessment grade. A group of 16 criteria was identified on the carcass as being effective in predicting an overall "grain of meat" score. The second aim of this study was to establish the relationship between the meat grain score estimated on the carcass and the tenderness of the longissimus thoracis muscle estimated by sensory evaluations. Some individual criteria such as "nerve presence", "marbling", and "touch of muscles" appeared to be linked to muscular characteristics such as collagen content, lipid content and shear force. No significant relationship was identified between grain of meat and either tenderness (initial: p=0.58; overall: p=0.50), shear force (p=0.33), or collagen content and collagen solubility (p=0.23; p=0.33).

The purposes of this study were 1) to assess the effects of 3 high-concentrate diets on enteric CH(4) production, total tract digestibility, and rumen fermentation of beef cattle, and 2) to evaluate, by life cycle assessment, the potential effects of these feeding systems on the environment. Six bulls (age of 12.4 mo and BW of 417 kg at midexperiment) of the Blond d'Aquitaine breed were assigned to 3 dietary treatments in a replicated 3 × 3 Latin square design. Diets consisted of 1) 49% natural grassland hay, 41% ground corn grain, and 10% soybean meal (hay); 2) 63% corn silage, 21% ground corn grain, and 16% soybean meal (CS); and 3) 70% ground corn grain, 16% soybean meal, and 14% wheat straw (CG). Daily CH(4) emission (g/d), measured using the sulfur hexafluoride tracer technique, was similar for the hay and CS diets and was 56% greater than for the CG diet (P < 0.001). This difference between diets was maintained when CH(4) output was expressed by unit of feed intake (P < 0.001) or digested feed (P < 0.001). Gross energy intake loss as CH(4) averaged 6.9% for the hay and CS diets and 3.2% for the CG diet (P < 0.001). Organic matter intake and GE intake did not differ between diets. Organic matter digestibility was less for the hay diet than for the CS and CG diets (P=0.008). Digestibility of NDF was greatest for the hay diet, intermediate for the CS diet, and least for the CG diet (P=0.02), with ADF digestibility being similar between the hay and CS diets and greater than for the CG diet (P < 0.001). The rumen pH at 5 h postfeeding was less for animals fed the CG diet compared with those fed the other 2 diets (on average, 5.1 vs. 5.9, respectively; P < 0.001). Total CH(4) emission (enteric + manure) was least for the CG diet, whereas N(2)O and CO(2) emissions were greatest for the CG diet. Total greenhouse gas emissions were least for the CG diet when C sequestration by grasslands was not taken into account.

The development of analytical methods to verify the production system of meat products requires the identification of biomarkers that can trace the product's origin, and secondly the factors that govern the deposition of these markers in animal tissue need to be defined. In this study, 2,3-octanedione, skatole and terpenes were selected as biomarkers, and their deposition was investigated in bull calves reared under three different strategies. All of the animals were reared indoors until approximately 150 days of age. They were suckled twice a day by their mothers, and both calves and cows had free access to cocksfoot hay. Then the first two groups of animals were kept indoors, suckled by their mothers twice a day and received either cocksfoot hay (HL) or freshly cut-green herbage (GL) and a limited quantity of concentrate. The third group of calves (PH) was kept on pasture with their mothers and offered concentrate ad libitum. The pasture supporting the PH animals was highly diversified, containing several terpene-rich plant species, whereas the herbage for the GL animals contained no species known to be aromatic. Perirenal and subcutaneous adipose tissues were analysed for volatile compounds. The perirenal fat was found to be more responsive to the treatment and a more reliable substrate than the subcutaneous adipose tissue. Higher levels of 2,3-octanedione (P < 0.05) were found in PH and GL than in HL fat (6.56, 6.51 and 5.77 area arbitrary units, respectively, in perirenal fat), confirming the ability of this molecule to trace green herbage feeding. Skatole was detected in the perirenal and subcutaneous fat of all the animals. Animals receiving high concentrate level (PH group) presented lower (P < 0.05) skatole values (5.83 area arbitrary units in perirenal fat) than animals receiving low concentrate level (HL and GL groups, 6.23 and 6.71 area arbitrary units, respectively, in perirenal fat). Terpenoids, and especially sesquiterpenes, were found at higher levels and diversities in the PH than in the GL and HL animals. Two monoterpenoids allowed group discrimination considering perirenal or subcutaneous fat without distinction, whereas 11 and 5 sesquiterpenoids from perirenal and subcutaneous fat, respectively, allowed it.

We have recently shown that the expression of the DNAJA1 gene encoding a heat shock protein (Hsp40) is a negative marker of meat tenderness in Charolais bulls. To acquire knowledge on the regulation of DNAJA1 expression, we analysed the abundance of DNAJA1 transcripts and protein during development and according to management factors (e.g. feeding treatments, growth path and stress status) in different bovine muscles during postnatal life. We report here a developmental expression profile for DNAJA1 with decreased levels of transcript and protein during the progression of myogenesis. During postnatal life, we found the highest expression of DNAJA1 in the most oxidative muscles. No effect was detected for dietary treatment (pasture v. maize-based diet), growth path (compensatory growth after a restriction period) or pre-slaughter stress status. Therefore, the genetic background and muscle type could be considered as the main factors regarding the level of DNAJA1. Integration of the knowledge gained from this study should help to predict muscle metabolic properties and the ability of the live animals to give high sensory quality meat.

Extensive beef production systems on pasture are promoted to improve animal welfare and beef quality. This study aimed to compare the influence on muscle characteristics of two management approaches representative of intensive and extensive production systems. One group of 6 Charolais steers was fed maize-silage indoors and another group of 6 Charolais steers grazed on pasture. Activities of enzymes representative of glycolytic and oxidative (Isocitrate dehydrogenase [ICDH], citrate synthase [CS], hydroxyacyl-CoA dehydrogenase [HAD]) muscle metabolism were assessed in Rectus abdominis (RA) and Semitendinosus (ST) muscles. Activities of oxidative enzymes ICDH, CS and HAD were higher in muscles from grazing animals demonstrating a plasticity of muscle metabolism according to the production and feeding system. Gene expression profiling in RA and ST muscles was performed on both production groups using a multi-tissue bovine cDNA repertoire. Variance analysis showed an effect of the muscle type and of the production system on gene expression (P<0.001). A list of the 212 most variable genes according to the production system was established, of which 149 genes corresponded to identified genes. They were classified according to their gene function annotation mainly in the "protein metabolism and modification", "signal transduction", "cell cycle", "developmental processes" and "muscle contraction" biological processes. Selenoprotein W was found to be underexpressed in pasture-fed animals and could be proposed as a putative gene marker of the grass-based system. In conclusion, enzyme-specific adaptations and gene expression modifications were observed in response to the production system and some of them could be candidates for grazing or grass-feeding traceability.

The effect of animal maturity on fiber cross-sectional area, percentage of fiber types, activities of isocitrate dehydrogenase (ICDH) and lactate dehydrogenase (LDH), total and insoluble collagen and lipid concentration was investigated in the longis-simus thoracis (LT), semitendinosus (ST), and triceps brachii (TB) muscles. The analysis considered 2,642 muscle samples from bulls, steers, and cows of Aubrac, Charolais, Limousin, Montbéliard, and Salers breeds. For the bulls, the fiber cross-sectional area, percentage of slow oxidative fibers, and ICDH activity showed a quadratic relationship (P < 0.05), and the percentage of fast oxidative-glycolytic and fast glycolytic fibers and LDH activity showed a cubic relationship (P < 0.05) with increased maturity. A linear relationship was observed for the collagen and lipid muscle characteristics. The response equation coefficients for different muscles indicate that development of muscle characteristics is different for each muscle. Compared with the other muscles, ST muscle had a greater fiber cross-sectional area, proportion of fast glycolytic fibers, LDH activity, and collagen content. The LT muscle had a greater proportion of slow-oxidative fibers and lipid (P < 0.05). Within the ST muscle, all characteristics except lipid concentration showed different development between the breeds. Steers showed greater changes in muscle fiber cross-sectional area, percentage of fast oxidative-glycolytic and fast glycolytic fibers, and total lipid in the muscle with increasing maturity compared with bulls. The mean fiber cross-sectional area and percentage of fast glycolytic fibers was greater and the mean lipid concentration was less in bulls compared with steers (P < 0.05). Data for cows were from more mature animals. Muscle characteristics in cows did not show large changes with increasing degree of maturity. Muscle type accounts for a greater proportion of the variation in the muscle characteristics than breed and sex of the animal.

The activities of bulls, their feeding behaviour and their ruminal pH were examined at several stages during the finishing period, according to the forage-to-concentrate ratio of their diet. Twenty-four bulls of the Blond d'Aquitaine breed (initial body weight = 326 ± 21 kg) were assigned to six balanced pens with a space allowance of 9.4 m2 per bull during the finishing period. They were fed three different diets with achieved forage-to-concentrate ratios of (i) 8% straw and 92% concentrate, (ii) 44% hay and 56% concentrate and (iii) 57% maize silage and 43% concentrate. Bulls had ad libitum access to feed dispensed once daily. Offered and refusals were weighed on 5 consecutive days per week. The bulls were slaughtered at the common final live weight of 650 kg and the finishing period lasted 138, 181 and 155 days for straw-concentrate, hay-concentrate and maize silage-concentrate diets, respectively. The time budget was estimated four times by scan sampling with a 10-min interval. Feeding behaviour was appraised using data from electronic feeding gates. Ruminal pH was measured from a ruminal fluid sample collected by rumenocentesis. On average, the bulls spent 78% of the time lying or standing still, and 11% of the time eating. The forage-to-concentrate ratio of the diet influenced only those activities directly linked to feeding, i.e. eating and drinking. Bulls fed a high-concentrate diet spent less time eating than the other bulls (47 min v. >2 h) and took shorter meals (7 min v. 17 min). The bulls fed the straw-concentrate diet spread their meals over the entire day, whereas the others maintained two major peaks of eating activity, the main one in the morning after feed dispensing, the other one at the end of the diurnal period. Intake rate ranged widely between diets, from 58 g/min on average for the diets based on hay or maize silage up to 173 g/min for the high-concentrate diet. The concentrate-diet bulls also had a lower ruminal pH during the first 2 months of the finishing period. The dispersion of meals based on a high-acidosis-risk diet may be a way to limit the decrease in ruminal pH.

Twenty-four male Ile-de-France lambs (six blocks of homologous lambs) were used to study the effect of four feeding systems on muscle triglyceride (TG) and phospholipid (PL) fatty acids (FA) from the longissimus thoracis (LT): raised and finished on cool season grasses (G), raised on the same grasses and stall-finished, indoors, on concentrates and hay, respectively, for 22 (GSS) and 41 days (GSL), and stall-feeding, indoors, on concentrate and hay during both growing and finishing periods (S). In TG, similar decreases (P<0.05) of proportions of linolenic acid were observed after changing from grass feeding to stall feeding (GSS and GSL), and a decrease (P<0.05) in proportions of conjugated C18:2 cis9, trans11 (CLA cis9, trans11) was obtained after a long period of concentrate feeding (GSL). In PL, C22:5 n-3 achieved a significantly (P<0.05) lower level in GSL lambs compared both G and S lambs. A similar non-significant tendency was observed in the case of the other very long chain n-3 polyunsaturated FA. The separate analysis of fatty acids of TG and PL from the LT muscle underlined that TG afforded a more significant lowering effect than PL on the overall ratio between C18:2 n-6 and C18:2 n-3 in muscle lipids and on the health potential of meat for the consumer. A PCA analysis combining FA composition of TG and PL, and growth performances of the lambs allowed an efficient discrimination between the four feeding systems.

Muscle characteristics and sensory rating of meat were determined in M. longissimus thoracis (LT), M. semimembranosus (SM), M. semitendinosus (ST) and M. triceps brachii (TB) from seven Holstein (HO, dairy breed) and six Salers (SA, beef breed) cull cows slaughtered at 6-7 years of age at the same fat score. Significant differences (P<0.001) among muscle types were observed: ST was the more glycolytic and TB the more oxidative; total collagen: ST>SM=TB>LT; initial and overall tenderness: LT>TB=SM>ST, juiciness: TB>LT=SM>ST. Flavour differed only between breeds: HO>SA (P<0.01). Three tenderness classes (high, intermediate, low) were determined from scores for sensory overall tenderness for all 52 meats: the lower total and insoluble collagen contents, the more oxidative metabolism, the more tender was the meat. Muscle type, and not breed explained most of the variability of meat quality from dairy and beef cull cows slaughtered at the same age and fat score.

Forty male Ile-de-France lambs (10 blocks of 4 homologous lambs) were used to study the effects of four feeding systems on muscle fatty acids (FA): raising and finishing on cool-season grasses (G), raising on the same grasses and stall-finishing, indoors, on concentrates and hay, respectively, for 22 (GSS) or 41 days (GSL), and stall-feeding indoors on concentrates and hay during both growing and finishing periods (S). Twenty-four lambs only (6 blocks) were retained for comparison of growth performances, lipid content in the longissimus thoracis muscle (LT) and their FA composition according to treatment. The 16 other lambs (4 blocks) were removed from the comparison, due to a large spread in the growth of the lambs towards the end of the trial. No significant effects of treatment were seen on the rate of growth (221, 228, 243 and 245±SE 8.0g/d, respectively, for G, GSS, GSL and S groups), and the lipid contents of the LT (2.22, 2.16, 2.17 and 2.52±SE 0.11g/100g fresh tissue). Grazing, lowered n-6 PUFA (polyunsaturated fatty acids), and increased n-3 PUFA and C18:2 c9t11 (conjugated linoleic acid cis9, trans11) compared to concentrate feeding. The main effects of grazing were not removed by a short period of finish indoors on concentrate (GSS group), but C20:4 n-6 and C22:6 n-3 contents achieved the lowest contents in this group, with significant differences from the values observed for GSL and S groups (C20:4 n-6) or from the three other groups (C22:6 n-3). After a longer period of finish on concentrate (GSL group), C18:3 n-3 (linolenic acid), C18:2 c9t11 and long chain (LC) n-3 PUFA were brought to the levels observed in the S group. In terms of adequacy for human health, the C18:2 n-6/C18:3 n-3 ratios were favourably low in the four groups (2.6, 3.6, 4.9 and 5.2±SE 0.7, respectively, for G, GSS, GSL and S groups), the level observed in the case of G group being significantly lower than for the three other groups and the level observed for GSS group being significantly lower than for the GSL and S groups.

The aim of this work was to improve the knowledge on young suckled Salers bull production and to study the effect of forage type and concentrate level on performance, carcass and muscle characteristics as well as on meat quality. Twenty-four Salers male calves of 150 days of age were assigned to six groups: C0 (fed exclusively with hay and dam's milk and slaughtered at approximately 6 months of age), and HH (hay - high concentrate), HL (hay - low concentrate), GH (cut grass - high concentrate), GL (cut grass - low concentrate) and CP (control pasture: pasture - high concentrate) groups differing in feeds received until slaughter and slaughtered unweaned at approximately 10 months of age. Carcass weights averaged 210 kg at 10 months of age at slaughter. Average daily weight gain (ADWG) in HH and GH groups tended to be higher (P = 0.09) than in HL and GL groups (1354 v. 1248 g/day). ADWG in CP group (1542 g/day) was higher (P < 0.05) than in the other groups. Carcass weight in CP group (230 kg) tended to be higher (P < 0.1) than in HL (198 kg) and GL (200 kg) groups. Carcass muscle weight was higher (P < 0.05) in GH (155 kg) and CP groups (165 kg) than in HL (141 kg) and GL (142 kg) groups. Carcass and offal fatty tissue weights and carcass fatness did not differ between groups. Neither forage type nor concentrate level had significant effect on the area of muscle fibres or on muscle metabolic enzyme activities (namely, lactate dehydrogenase - LDH, phosphofructokinase - PFK, isocitrate dehydrogenase - ICDH, citrate synthase - CS and cytochrome-c oxidase - COX). semitendinosus muscle of CP group presented higher CS enzyme activities (8.10 µmol/min per g) than HH (5.30 µmol/min per g) and GL (4.52 µmol/min per g) groups. Neither total nor insoluble collagen content significantly differed between groups. Lipid content in rectus abdominis muscle was relatively low (average 67.5 mg/g dry matter) and was not affected by diet (P > 0.05). The ratio between n-6 and n-3 polyunsaturated fatty acid content was lower (P = 0.01) in the low-concentrate-fed than in the high-concentrate-fed group (3.95 v. 5.37, respectively). Sensory analysis noted that longissimus thoracis muscle from CP animals was more tender and juicy than that from HH and GH animals (P < 0.05).

The objectives of the two experiments were to determine the respective effects and interactions of diet type (grass v. maize diets) and physical activity (grazing v. zero grazing) on lipogenic enzyme activities and adipose cell size in subcutaneous, perirenal and intermuscular adipose tissues and on plasma metabolites and hormones in Charolais steers. After weaning, the steers were assigned to two (Experiment 1, n = 24) or three (Experiment 2, n = 24) groups, with steers in Experiment 1 grazed grass or indoors maize-silage-fed and steers in Experiment 2 grazed grass, indoors cut grass- or indoors maize-silage-fed. Both experiments lasted for 23 months. All grass-fed animals were fed grass silage during the two winter seasons. During the two summer seasons, steers fed on grass were rotationally grazed on a perennial rye-grass pasture while steers fed on cut grass were fed indoors on freshly cut grass alone. Steers fed on maize silage were fed maize silage indoors during the entire experiment. All animals were reared for similar body weight and growth rates and slaughtered at the same age (31 to 32 months). Activities of lipogenic enzymes were significantly lower in the three adipose tissue sites of steers fed cut grass compared with maize silage, although there were less-marked effects in intermuscular adipose tissue. Plasma insulin and glucose concentrations were also lower in steers fed cut grass whereas plasma leptin concentration was similar. As body fat content was not affected by nutritional treatment, it is suggested that the decrease in potential lipogenic activity was associated with the nature of the diet and not to differences in available net energy. In other respects, grazed grass compared with eating cut grass did not affect lipogenic enzyme activities but decreased plasma leptin concentrations in the older steers and increased plasma non-esterified fatty acids and glucose concentrations without affecting adipose tissue weight and adipose cell size.

Bovine meat is criticised for the bad nutritional image of its lipids and fatty acids. However, with dairy products, beef is the major source of conjugated linoleic acid (CLA) which could have several human health benefits. The present study compared, from data of five nutritional experiments on bovine animals performed by the laboratory, the impact of factors linked to the animals (breed, age, sex, type of muscle) and to feeding conditions (basal diet, lipid supplements) on the CLA proportion and composition in muscles. Among these factors, linseed supplementation was an efficient way to increase CLA proportion in beef (+22% to +36%) but was highly modulated by the nature of the basal diet, and by intrinsic factors (breed, age/sex, type of muscle) since these ones could modulate CLA proportion in beef from 24% to 47%. Moreover, these factors modified also the proportion of cis,trans-CLA, related to cis,cis- and trans,trans-isomers. Specific biological properties of these latter isomers should be determine to understand the consequences of intramuscular CLA isomer variations for the health of consumers.

Thirty-two male Ile-de-France lambs were used in a factorial 2×2 design to analyse the effects of feeding systems (grass outdoor, G, or concentrate and hay indoor: stall, S) and of growth rate (low, L, or high, H) on total lipids, triglyceride (TG) and phospholipid (PL) contents and their fatty acid composition in the longissimus thoracis muscle (L.T.). Contents were lower for TG (10.4 vs. 15.8 mg/100 g fresh tissue, P<0.05) and higher for PL (6.4 vs. 5.8 mg/100 g fresh tissue, P <0.05) in grass-fed lambs compared to stall-fed ones. TG of grass fed lambs displayed lower proportions of palmitic acid (C16:0), monounsaturated fatty acids (MUFAs), linoleic acid (C18:2n-6) and other (n-6) polyunsaturated fatty acids (PUFA) and higher proportions of stearic acid (C18:0), linolenic acid (C18:3n-3), cis 9, 11 trans C18:2 and trans monounsaturated fatty acids. In PL of the same lambs only lower MUFA, C18:2n-6 and (n-6) PUFA and higher C18:3n-3, (n-3) PUFA and cis 9, 11 trans C18:2 were observed. Growth rate had no effect on lipid, TG or PL contents of longissimus thoracis. However C18:0 proportions were higher in TG and lower in PL for low growth rate lambs. Low growth rate lambs had also lower cis 9, 11 trans C18:2 in TG. Thus, irrespective of growth rate, the muscle lipids characteristic of grass fed lambs fulfilled the recommended features of human food components much better than that of stall fed lambs, namely for CLA and C18:3n-3. The lower ratios of (n-6) to (n-3) PUFA displayed in grass fed lambs both in TG and in PL were also useful to discriminate all the grass fed lambs from all the stall fed animals.
