Industrialized coconut water may have been adulterated by adding sugar above the limit permitted by law. According to Brazilian law, industrialized coconut water can receive the maximum addition of 1 g of sugar per 100 mL of the drink. This work aimed to detect adulteration in industrialized coconut water produced in Brazil and measure the relative isotopic enrichment in fresh coconut water, using the techniques of stable isotopes of carbon. Fresh coconut water samples from 13 locations, industrialized coconut water samples of 17 different brands and cane sugar were analyzed by Isotope Ratio Mass Spectrometer coupled to an elemental analyzer. The relative isotopic enrichment found for fresh coconut water samples ranged from −26.40 to −23.76. From 17 brands of coconut water analyzed, 11 were adulterated by excess sugar and two were already adulterated by presenting soluble solids content higher above the threshold permitted by law. In 65 % of Brazilian industrialized coconut water, the amount of exogenous sugar is higher than the limit permitted by law. Most Brazilian companies do not respect the legal limit of adding cane sugar established by law.

The aim of this study was to evaluate the effect of phytogenic additives and glutamine plus glutamic acid, associated or not, on histomorphometry of bursa of Fabricius and small intestine, oocyst count and lesion scores, and carbon turnover of duodenal mucosa of broiler chickens infected with Eimeria acervulina. A total of 450 male broiler chickens was distributed into a completely randomized design with six treatments and three replications. Treatments consisted of control diet (CD); CD + coccidiosis vaccine; CD + antibiotic performance enhancers and anticoccidial (APE/AC); CD + glutamine and glutamic acid (Gln/Glu); CD + phytogenic additives (PA); CD + Gln/Glu + PA. Birds on treatment CD + vaccine were vaccinated via drinking water at three days of age against coccidiosis. At 16 days of age all birds of all treatments were inoculated orally and individually with 500,000 oocysts of Eimeria acervulina. There was no treatment effect on lesion score in the intestinal epithelium of birds. The smaller number of excreted oocysts was observed in groups of birds fed diets containing APE/AC and PA. Were observed better results of villus height and crypt depth for duodenum and ileum of birds of treatments containing Gln/Glu at 7 days of age, and Gln/Glu and PA at 21 days of age. Higher percentage of cortical area from bursa follicles was observed in birds fed diets supplemented with Gln/Glu and PA at 7, 14 and 21 days of age. Increased turnover of intestinal mucosa was observed in treatments containing Gln/Glu, indicating acceleration in development and regeneration of damaged tissue. Glutamine plus glutamic acid and phytogenic additives can provide improvements to structure, and thus to intestinal function, as well as to better immune response against the infectious challenges. Phytogenic additives can be used for coccidiosis control of broiler chickens where the use of antibiotic performance enhancers and anticoccidials is prohibited.(AU)

The aim of this study was to assess whether the inclusion of low amounts of ingredients such as wheat bran, corn gluten and yeast in the diet of laying hens can interfere with the traceability of meat and bone meal (MBM) in eggs and its fractions (albumen and yolk). We used 256 laying hens distributed across eight treatment groups, which consisted of a diet based on corn-soybean-wheat (CSW) bran meal and other diets that had additions comprising gluten and/or (MBM) and/or yeast. To analyse the isotopic ratios (13C:12C and 15N:14N), on the 28th and 56th days, 16 eggs were randomly taken for each treatment (four for each repetition), where eight eggs (two for each repetition) were used to harvest yolk and albumen samples and the remaining eight (two for each repetition) were used to analyse the whole egg. We concluded that detection of 2.0% MBM in the egg and its fractions is possible; however, the results for treatments containing gluten and yeast were not different from those containing MBM. Therefore, the inclusion of 3.0% gluten and/or yeast does not result in different ?13C and ?15N isotopic values in the egg and its fractions compared to the values obtained with the addition of 2.0% MBM in the diet.(AU)

Background Environmental devastation threatens the survival of many species, including venomous snakes such as the South American rattlesnake Crotalus durissus terrificus. This observation is based on the decrease of snakes collected and donated to Brazilian research institutes. Nevertheless, some individuals have managed to survive and procreate. The question is how these snakes are adapting in these new environmental conditions. Methods To answer it, the carbon-13 level of rattlesnakes and their feed (either laboratory or wild mice) was evaluated by isotope-ratio mass spectrometry. Thus, rattle segments from 16 adults and 15 offspring of captive snakes, and of three wild newborn C. d. terrificus were evaluated as well as 17 Mus musculus mice captured in traps, four live feeder mice and the ration offered to mice at animal houses. Results The isotopic exchange time of the captive adult snakes (n = 16) varied between 33 and 37 months and of captive-born animals (n = 15), until reaching a plateau of equilibrium, varied from 18 to 24 months. Regarding the captured Mus musculus (n = 17), 88.23% (n = 15) were from a C4 environment. Of the six rattle rings from offspring of captured C. d. terrificus, five were from a C4environment, whereas of the 170 rattle rings studied, 60% originated from a C3 environment and 40% from a C4. The same carbon-13 values were found in captive snakes. Conclusions Based on the present results, it can be inferred that most C. d. terrificus snakes (60%) fed animals from a C3environment; birds consist of an alimentary alternative for snakes, as well as rodents, small reptiles and amphibians; different venom compositions among snakes from the same region may be related to the food type; the primary rattle of offspring reflects the maternal diet during gestation; and, finally, the different rattle rings indicate the alimentary history of these animals.(AU)

The study aimed to evaluate the turnover of 13C by replacing the C3 photosynthetic pathway diet to C4 and C4 to C3 in eggs of japanese quail (Coturnix coturnix japonica) using the technique of stable isotopes. Two hundred and sixteen japanese quail, 50 days old, distributed in a completely randomized experimental design with two treatments in six replications, in an experimental period of 48 days, were used. Prior to 50 days of age, half of quails consumed diet based on C4 plants (corn) and the other half based on C3 plants (rice), both containing meat meal and bone meal. There was replacement of those diets during the experimental period, C3 based diet to C4 and C4 to C3 . A total of six eggs were collected from each treatment per day, according the quails age: 50, 51, 52, 54, 57, 60, 64, 68, 73, 78, 85, 91 and 98 days. To determine the turnover rate, the exponential model of isotopic dilution was employed. The experimental time of 48 days was enough for the total turnover in the eggs, with the incorporation of 99% of the carbon atoms of the new diet. The incorporation speed was slower when replacing diets were from C3 to C4 than C4 to C3 , which can be explained by bromatological differences of the ingredients.

The incorporation speed was slower when replacing diets were from C3 to C4 than C4 to C3 , which can be explained by bromatological differences of the ingredients.(AU)

The aim of this study was to evaluate carbon turnover on muscle tissue Pectoralis major, keel, tibia and liver of poultry at different life stages using the carbon stable isotopes technique. 216 male chick lings (Cobb) were used. The trial was conduced in a totally random distribution consisting on seven treatments with distinct days for diet substitution (0, 7, 14, 21, 28, 35, 42 days old). Either Boltzmann sigmoid regression or the exponential time function were used in order to measure the carbon isotopic turnover in a specific period of time. The half-life were: 2.5; 2.8; 2.9; 4.9; 5.1; 5.5 e 6.0 day on muscle tissue; 2.7; 2.9; 3.1; 4.6; 5.3; 4.1 e 8.0 day on keel; 4.4; 3.6; 5.4; 5.8; 4.3; 5.2 e 6.3 day on tibia and 1.3; 1.9; 1.4; 1.5; 1.9; 1.7 and 2.1 day on liver, for to treatments T1, T2, T3, T4, T5, T6 e T7 respectively. According to the results of this study, it is possible to conclude that the tibia has slowest metabolism and may indicate the isotopic signature of initial diets of poultry culture. The fast metabolism tissue, liver, is appropriated to reflect the diets fed at closer period of evaluation.(AU)

Isotope analysis has proved to be an extremely important tool in the traceability process; however, statistical analyses of the results show discrepancies, as the data depend on and originate from several chemical elements such as carbon, hydrogen, oxygen, nitrogen and sulfur (CHONS). In order to establish the proper analysis of traceability data for birds using the stable isotope technique and evaluate the need for a combined analysis of the variables, data for carbon-13 and nitrogen-15 were used from eggs (albumen + yolk) of laying hens and the pectoral muscle of broilers, which were subjected to univariate statistical analysis (ANOVA and complemented with Tukey's test) and multivariate statistical analysis (MANOVA and Discriminant Analysis). The data were analyzed using Minitab 16 software, and the results, corroborated in the theory, confirm the need for multivariate analysis, showing also that discriminant analysis clarifies questions from the results of the other analysis methods compared in this study.

The present study investigates the 13C and 15N isotopic composition in frozen samples (control), samples in alcohol and in formaldehyde of Plagioscion squamosissimus and Hypophthalmus edentates. From each individual we extracted a strip of muscle from the region above the lateral line, in the dorsal fin base, that was divided into three equal parts, each one was submitted to one type of treatment: freeze control group (-15oC), conservation in alcohol 70% and fixation in formaldehyde 4%. Samples were kept under those treatments for 30 days, washed and submerged in distilled water for 4 hours. Afterwards, they were dried up in air oven at 60oC for 48 hours and macerated until the obtaining of a fine powder. A significant difference was found in isotopic values of carbon and nitrogen, between the control and the samples in alcohol and formaldehyde, except for 13C from the H. edentates samples in formaldehyde. The carbon isotopic values of samples in alcohol were mostly enriched compared to control, whereas the samples in formaldehyde presented depleted values in relation to the control. The nitrogen isotopic values for both samples preserved in alcohol and formaldehyde were enriched when compared to the values of frozen samples, independently of used preservatives. Therefore, the isotopic correction should be accomplished according to the isotope and preservative employed for

The present study investigates the δ13C and δ15N isotopic composition in frozen samples (control), samples in alcohol and in formaldehyde of Plagioscion squamosissimus and Hypophthalmus edentatus. A significant difference was found in isotopic values of carbon and nitrogen, between the control and the samples in alcohol and formaldehyde, except for δ13C from the H. edentatus samples in formaldehyde. Therefore, the isotopic correction should be accomplished according to the isotope and preservative employed for species of freshwater fish.

The burger is a manufactured meat product and a potential carrier of bacteria producers or not of toxins from the various processing stages, from origin to processing, storage, transport and distribution for consumption. Within this context, the objective of this study was to evaluate the hygienic-sanitary aspects of hamburgers meat sold in Brazil. Were analyzed 110 samples of beef hamburgers of 11 Brazilian commercial brands according to microbiological methodology described by Normative Instruction n" 62 of August 26, 2003. All11 brands exhibited a bacterial count that was within the limits (5x1 Q3CFU/g) for coliforms at 45OC; however, the value of coagulase-positive Staphylococcus in the H brand (samples 1and 7) was above the permitted standards (5x1Q3 CFU/g). The B (sample 5), D (sample 5), E (sample 5) and G (sample 4) brands also showed counts above the recommended levels (3x1 Q3CFU/g) for sulfite- -reducing Clostridium at 46OC, and the brand L (sample 6) was positive for Salmonella Infantis.(AU)
