Resumo
Objetivou-se avaliar métodos alternativos de restrição alimentar qualitativa e quantitativa em comparação à técnica convencional de muda forçada em codornas japonesas para o segundo ciclo de produção. O período de muda forçada teve duração de 10 dias e dois períodos de 21 dias de pós-muda. Foram utilizadas 72 codornas japonesas fêmeas, emfinal de produção com 72 semanas deidade. As aves foram distribuídas em delineamento inteiramente casualizado com três tratamentos e quatro repetições cada, com seiscodornas por repetição. Os tratamentos experimentais foram:T1 aves submetidas a três dias de jejum com posterior fornecimento de ração de postura à vontade por setedias; T2 aves que receberam alimentação controlada (10 g/ave/dia) por 10 dias; T3 aves que receberam farelo de arroz à vontade por 10 dias. Durante todo o experimento todasas aves foram submetidas a iluminação natural com média de 12 horas de luz diária e água a vontade e após os 10 dias de muda foi fornecido ração de postura a vontade. A utilização do T2 (10 g/ave/dia de ração de postura) e de farelo de arroz como alimentoalternativo no programa de muda forçada foi viável. Mesmo a perda de peso sendo abaixo do recomentado, as aves que receberam 10 g de ração ave/dia e farelo de arroz à vontade apresentaram resultados de desempenho e qualidade do ovo pós muda semelhantes àsaves que ficaram em jejum, além de possibilitar melhores condições de bem-estar animal.(AU)
The objective was to evaluate alternative methods of qualitative and quantitative feed restriction compared to theconventional technique of forced moulting in Japanese quails for the second production cycle. The forced moulting period lasted 10 days and two 21-day post-molt periods. 72 female Japanese quails were used, at the end of production at 72 weeks of age. Thebirds were distributed in a completely randomized design with three treatments and four replications each, with sixquails per replicate. The experimental treatments were: T1 birds submitted to three days of fasting with subsequent provision of layingfeed ad libitum for sevendays; T2 birds that received controlled feeding (10 g/bird/day) for 10 days; T3 birds that received rice bran ad libitum for 10 days. Throughout the experiment, all birds were submitted tonatural lighting with an average of12hours of daily light and water ad libitum and after 10 days of molting, laying feed was provided ad libitum. The use of T2 (10 g/bird/day of laying ration) and ricebran as an alternativefood in the forced molt program was feasible. Even the weight loss being below the recommended, the birds that received 10 g of poultry feed/day and rice bran ad libitum showed similar post-moult performance and egg quality results to birds that were fasted, in addition to enabling better conditions. of animal welfare.(AU)

Abstract Among several fruits, mangaba (Hancornia speciosa Gomes), it aroused the interest of producers and consumers due to its attractive sensory characteristics and health beneficial properties (high nutritional value and presence of bioactive substances), thus, this work evaluates the nutritional factors of the flour residue of mangaba processing that is despised by the food industry, and the influence of temperature on its production. The mangaba processing residue was splited in two main groups: in natura sample (control), and other for preparation of flour that was dried at 50 °C and divided into two other groups: treatment A (flour with roasts at 110 °C and 130 °C) and treatment B (flour from drying at 50 °C). The nutritional characteristics of flours were analyzed considering the chemical parameters: pH, titratable total acidity and soluble solids, in addition to the determination of moisture content, total lipids, total dietary fiber and ash, total energy value, antioxidant activity, phytochemical screening, quantification of phenolic compounds and flavonoids, as well as technological functional properties (water absorption index (WAI), water solubility index (WSI), milk absorption index (MAI) and milk solubility index (MSI) and oil absorption index (OAI). The results showed that the bioactive compounds present in the extracts do not have significant properties of acting as free radical kidnappers. The heat treatment, performed in the flour of mangaba processing residues, influenced the nutritional factors and properties of absorption and solubility, which showed statistical differences. These results show that the flour is a viable alternative for the energy enrichment of diets, contributing to the development of new products, the reduction of the disposal of these residues and consequently to the minimization of the environmental impact.
Resumo Dentre as diversas frutas a mangaba (Hancornia speciosa Gomes), despertou interesse de produtores e consumidores devido às suas características sensoriais atrativas e propriedades benéficas à saúde (elevado valor nutricional e presença de substâncias bioativas), assim, o trabalho avaliar os fatores nutricionais do resíduo da farinha de processamento de mangaba que é desprezado pela indústria alimentícia e, a influência da temperatura na sua produção. O resíduo de processamento da mangaba foi dividido em dois lotes, sendo um deles utilizado para as análises in natura (amostra controle) e o outro para a confecção da farinha que foi seca a 50 °C, e dividida em dois lotes: tratamento A (farinha com torras a 110 °C e 130 °C) e no tratamento B (farinha oriunda da secagem a 50 °C). Analisou-se as características nutricionais de farinhas considerando os parâmetros químicos: pH, acidez total titulável e sólidos solúveis, além da determinação do teor de umidade, lipídios totais, fibra alimentar total e cinzas, valor energético total, atividade antioxidante, triagem fitoquímica, quantificação de compostos fenólicos e flavonoides, bem como as propriedades funcionais tecnológicas (índice de absorção de água (IAA), índice de solubilidade em água (ISA), índice de absorção de leite (IAL) e índice de solubilidade em leite (ISL) e índice de absorção de óleo (IAO). Na análise foi inferido que os compostos bioativos presentes nos extratos não possuem propriedades significativas de agir como sequestradores de radicais livres. O tratamento térmico, realizado na farinha de resíduos de processamento de mangaba, influenciou nos dados dos fatores nutricionais e das propriedades de absorção e solubilidade, os quais apresentaram diferenças estatísticas. Estes resultados credenciam a farinha como uma alternativa viável para o enriquecimento energético de dietas, contribuindo para o desenvolvimento de novos produtos, a redução do descarte desses resíduos e consequentemente para a minimização do impacto ambiental.

This research determined the nutritional composition, antioxidant activity and total phenolic compound content of sweet potato flour from different cultivars: Beauregard cv. sweet potato (BF) and the common sweet potato Brazlândia Rosada cv. (CF). Total lipids, proteins, moisture, carbohydrates, pH, titratable acidity, fiber, ash, iron, zinc, beta-carotene, vitamin A and determination of caloric value were analyzed. Antioxidant activity and total phenolic compounds were also determined by the DPPH (2,2-diphenyl-1-picryl-hydrazyl), ABTS (2,2-azinobis (3-ethylbenzothiazoline-6-sulfonic acid) and FRAP (Ferric Reducing Antioxidant Power) methods. CF showed higher levels of carbohydrates, ash, fiber, pH and antioxidant activity by the ABTS method. Protein and zinc contents were similar between the two flours. BF had higher moisture content, caloric value, lipids, iron, DPPH radical scavenging capacity and antioxidant activity by the FRAP method, as well as total phenolic compounds, beta-carotene and vitamin A content. The data revealed good nutritional composition for both analyzed flours. The Beauregard flour can be highlightedregarding its higher beta-carotene and iron content. Moreover, the Beauregard sweet potato flour is a good source of provitamin A, in addition to being a source of fiber.
O objetivo deste trabalho foi determinar a composição nutricional, atividade antioxidante e teor de compostos fenólicos totais de farinhas de batata-doce de diferentes cultivares: batata-doce Beauregard (FB) e batata-doce comum, cv. Brazlândia Rosada (FC). Foram realizadas as análises de lipídeos, proteínas, umidade, carboidratos, pH, acidez titulável, fibras, cinzas, ferro, zinco, betacaroteno, vitamina A e determinação do valor calórico. Também foram determinadas a atividade antioxidante, pelos métodos DPPH (2,2-difenil-1-picril-hidrazil), ABTS (2,2-azinobis (3-etilbenzotiazolina-6-ácido sulfônico) e FRAP (Ferric Reducing Antioxidant Power), e compostos fenólicos totais. A FC apresentou maiores teores de carboidratos, cinzas, fibras, pH e atividade antioxidante pelo método ABTS. Os teores de proteínas e zinco foram semelhantes entre as duas farinhas. A FB apresentou maiores teores de umidade, valor calórico, lipídeos, ferro, capacidade sequestradora de radicais DPPH e atividade antioxidante pelo método FRAP, compostos fenólicos totais, conteúdo de betacaroteno e vitamina A. Os dados revelaram uma boa composição nutricional para ambas as farinhas analisadas. O destaque para a farinha da batata-doce Beauregard é maior em relação ao seu teor de betacaroteno e ferro. Sendo a farinha obtida pela batata-doce Beauregard uma boa fonte de pró-vitamina A, além de ser fonte de fibras.

The present study aimed to verify whether the inclusion of other ingredients in the diet of laying hens could interfere with the traceability of bovine meat and bone meal (BMBM) in eggs through stable carbon and nitrogen isotope analysis. Two hundred and fifty-six white laying hens were used and randomly distributed into eight treatments composed of: CONTROL: control diet; GLUTEN: control diet + corn gluten; YEAST: control diet + yeast; GLUTEN + YEAST: control diet + corn gluten + yeast; BMBM: control diet + 4.5 % BMBM; BMBM + GLUTEN: control diet + corn gluten + 4.5 % BMBM; BMBM + YEAST: control diet + yeast + 4.5 % BMBM; BMBM + GLUTEN + YEAST: control diet + corn gluten + yeast + 4.5 % BMBM. The isotopic results were subjected to multivariate analysis of variance (MANOVA) and LDA multivariate linear discriminant analysis. At 28 days, the eggs of the birds given diets without the addition of BMBM differed from the CONTROL group. The yolks showed that all treatments were significantly different from the CONTROL, and at 56 days, all eggs and egg yolks were different from the CONTROL. At 28 days, albumen was significantly different for all CONTROL experimental treatments; however, at 56 days, the YEAST treatment showed no difference from the control. Thus, it was concluded that even with the addition of other ingredients, the isotope technique is still able to detect the BMBM in eggs.(AU)

This study evaluated the effects of including Moringa oleifera (moringa) leaf meal on performance, carcass yield and characteristics, and relative organ weights of broilers from 10 to 42 days of age. We distributed 420 male Cobb 500 chicks in a completely randomized design with five treatments and six replicates with 14 birds each. Treatments consisted of five experimental diets in which the moringa leaf meal was included at 0, 1.5, 3.0, 4.5, and 6.0% in the diets. The following performance variables were evaluated: weight gain, feed intake, and feed conversion; weights and yields of carcass, carcass traits, organs, and abdominal fat; and feet color. Significant differences between the treatment means were analyzed by Dunnett's test. The meal inclusion levels did not affect performance, carcass characteristics and yield, or organs weight. However, feet pigmentation increased linearly, and abdominal fat was greater only at the 1.5% level when compared with the control group. Moringa leaf meal can be included in the diet of broilers from 10 to 42 days of age, up to the level of 6%, without compromising performance or carcass yield of these birds.(AU)

Objetivou-se avaliar o desempenho e a viabilidade econômica da substituição parcial do farelo de milho pela farinha de batata-doce, para averiguar se é viável ou não a inclusão nas rações para tilápia. O experimento teve duração de 30 dias entre os meses de maio e junho de 2021 em delineamento experimental inteiramente casualizado com 4 tratamentos e 5 repetições. Entre os 4 tratamentos propostos, 3 eram compostos por diferentes níveis de substituição do farelo de milho pela farinha de batata-doce nas rações experimentais (0,0%; 5,0% e 10,0%) e um composto pela ração comercial (tratamento controle). Ao todo foram utilizados 300 peixes com peso inicial aproximado de 9,10 ± 1,48 g, sendo a unidade experimental representada por 15 peixes em um aquário de 100 litros. Foi constatado que o farelo de milho pode ser substituído pela farinha de batata-doce até o nível mais alto avaliado, que foi de 10% de substituição na ração experimental para tilápia, pois superou a ração comercial, apresentando menor custo e sem afetar o desempenho dos animais.
The objective was to evaluate the performance and economic viability of partial replacement of corn bran by sweet potato flour, in order to determine whether or not its inclusion in tilapia diets is feasible. The experiment lasted 30 days between May and June 2021 in a completely randomized experimental design with 4 treatments and 5 replications. Among the 4 proposed treatments, 3 consisted of different levels of replacement of corn bran by sweet potato flour in the experimental diets (0.0%; 5.0% and 10.0%) and one consisted of the commercial diet (control treatment). A total of 300 fish with an approximate initial weight of 9.10 ± 1.48 g were used, with the experimental unit represented by 15 fish in a 100-liter aquarium. It was found that corn bran can be replaced by sweet potato flour up to the highest level evaluated, which was 10% replacement in the experimental feed for tilapia, as it surpassed the commercial feed, with lower cost and without affecting performance. of the animals.

Study was planned to assess the bio-efficiency along with toxicity of iron and zinc fortified whole wheat flour in Sprague dawley albino rats. Whole wheat flour was fortified with different dosage of sodium iron EDTA (NaFeEDTA), ferrous sulphate (FeSO4), zinc oxide (ZnO) and zinc sulphate (ZnSO4). The rats (n=3) in each group were fed on fortified wheat flour for 2 months. Liver biomarkers including alkaline phosphatase (ALP), alanine transaminase (ALT), aspartate aminotransferase (AST) and bilirubin were recorded from serum samples. Increased concentration of ZnSO4 affected the liver biomarkers to be highest among all whereas, bilirubin levels were less than the rats fed on control diet. The above mentioned fortificants have negligible effect on renal biomarkers including creatinine and urea. Moreover, hematological parameters were also checked and reportedly, sodium iron EDTA fed rats presented highest amount of hemoglobin, iron and total iron binding capacity. Highest zinc level was observed in rats fed on whole wheat flour fortified with 60mg/Kg Zinc oxide. Microscopic observation of liver tissue depicted that rats fed on iron and zinc fortified wheat flour have more toxic effects whereas, histopathology presentation of kidney tissue has least toxic impact. It has been concluded that mandatory fortification of wheat flour with iron and zinc may cause increased serum biomarkers along with toxicity of vital organs like liver, hence fraction of wheat flour may be fortified to fulfill the requirements of deprived and vulnerable group.
O estudo foi planejado para avaliar a bioeficiência juntamente com a toxicidade da farinha de trigo integral fortificada com ferro e zinco em ratos albinos Sprague dawley. A farinha de trigo integral foi fortificada com diferentes dosagens de ferro sódico EDTA (NaFeEDTA), sulfato ferroso (FeSO4), óxido de zinco (ZnO) e sulfato de zinco (ZnSO4). Os ratos (n = 3) de cada grupo foram alimentados com farinha de trigo fortificada por 2 meses. Biomarcadores hepáticos incluindo fosfatase alcalina (ALP), alanina transaminase (ALT), aspartato aminotransferase (AST) e bilirrubina foram registrados a partir de amostras de soro. O aumento da concentração de ZnSO4 afetou os biomarcadores hepáticos como sendo os mais altos entre todos, enquanto os níveis de bilirrubina foram menores do que os ratos alimentados com dieta controle. Os fortificantes mencionados acima têm efeito insignificante nos biomarcadores renais, incluindo creatinina e ureia. Além disso, os parâmetros hematológicos também foram verificados e, segundo relatos, os ratos alimentados com EDTA de sódio e ferro apresentaram maior quantidade de hemoglobina, ferro e capacidade total de ligação de ferro. O maior nível de zinco foi observado em ratos alimentados com farinha de trigo integral fortificada com 60 mg/Kg de óxido de zinco. A observação microscópica do tecido hepático mostrou que ratos alimentados com farinha de trigo fortificada com ferro e zinco têm mais efeitos tóxicos, enquanto a apresentação histopatológica do tecido renal tem menos impacto tóxico. Concluiu-se que a fortificação obrigatória da farinha de trigo com ferro e zinco pode causar aumento dos biomarcadores séricos juntamente com toxicidade de órgãos vitais como o fígado, portanto a fração da farinha de trigo pode ser fortificada para atender os requisitos do grupo carente e vulnerável.

The growth in demand for gluten-free products linked mainly to health aspects has led to an increased interest in the production of mixed flours for use in bakery products. This work aimed to evaluate the use of different mixtures of cassava starch with banana flour, obtained from the pulp and peel of green fruits, for the production of gluten-free biscuits. In the preparation of the biscuits, seven mixtures were prepared with varying percentages of cassava starch, banana pulp flour and banana peel flour. A formulation with wheat flour was used as a control. Wheat flour, cassava starch and banana flours were analyzed for chemical composition. The results showed that the banana peel flour stood out for its higher levels of proteins, fibres, lipids, ash, total phenols, total flavonoids and antioxidant activity which make this flour effective as a functional additive. However, the results of physical and sensory characteristics of the biscuits showed that the variation in the percentage of banana peel flour led to greater changes in the quality attributes of the biscuits, so the percentage of inclusion should be limited. Banana pulp flour (UBF) had high starch content, however, the biscuits produced with higher percentages of this flour and lower percentages of cassava starch showed lower propagation rates, greater hardness and less sensory acceptance, showing the importance of the starchy raw material in the physical properties of biscuits. Formulations containing cassava starch mixed with up to 15% banana flour (1:1, pulp and peel) are a good basis for making gluten-free biscuits.(AU)
O crescimento da demanda por produtos sem glúten, ligado principalmente à aspectos de saúde, tem levado a um aumento do interesse na produção de farinhas mistas para uso em produtos de panificação. Este trabalho teve como objetivo avaliar a utilização de diferentes misturas de fécula de mandioca com farinhas de banana, obtidas a partir da polpa e da casca de frutos verdes, para a produção de biscoitos sem glúten. No preparo dos biscoitos foram feitas sete misturas com percentuais variáveis de fécula de mandioca, farinha de polpa de banana e farinha de casca de banana. Uma formulação com farinha de trigo foi usada como padrão. A farinha de trigo, a fécula de mandioca e as farinhas de banana foram analisadas quanto à composição química. Os resultados mostraram que a farinha de casca de banana se destacou pelos maiores teores de proteínas, fibras, lipídios, cinzas, fenóis totais, flavonoides totais e atividade antioxidante, o que torna esta farinha eficaz como aditivo funcional. Porém, os resultados das características físicas e sensoriais dos biscoitos mostraram que a variação na porcentagem de farinha de casca de banana levou a maiores alterações nos atributos de qualidade dos biscoitos, portanto, o percentual de inclusão deve ser limitado. A farinha de polpa de banana (UBF) tinha alto teor de amido, contudo, os biscoitos produzidos com maiores percentuais dessa farinha e menores porcentagens de amido de mandioca apresentaram menores taxas de propagação, maior dureza e menor aceitação sensorial, mostrando a importância da matéria prima amilácea nas propriedades físicas de biscoitos. Formulações contendo amido de mandioca misturado com até 15% de farinha de banana (1:1, polpa e casca) são uma boa base para biscoitos sem glúten.(AU)

Two experiments were conducted using direct method to determine the standardized ileal phosphorus (P) digestibility coefficient (SIPDC) of meat and bone meal (MBM) and poultry byproduct meal (PBM) for broilers. In the first experiment, three MBM from different batches were evaluated, with four treatments (MBMI, MBMII, MBMIII, and a P-free diet) and nine replicates of seven birds each, totaling 252 birds distributed across a completely randomized design. The P-free diet was used to determine endogenous P losses. Titanium dioxide (5 g kg−1) was used as an indigestible indicator. In the second experiment, three PBM from different batches were evaluated, with 189 birds distributed over three treatments (PBMI, PBMII, and PBMIII) and nine replicates of seven birds each. These two experiments were conducted when birds were 19-22 days old. The birds were euthanized to collect the ileal content. Using the P-free diet, endogenous P losses were determined at 94.9 mg kg−1 dry matter intake. Standardized ileal P digestibility of MBMI (0.65) and MBMIII (0.69) was higher compared with MBMII (0.49). The SIPDC determined for three PBM sources were similar and 0.96, 0.96, and 0.93 for PBMI, PBMII, and PBMIII, respectively. The present study demonstrates that P in MBM is not as available as it is believed and that the variability between batches should be considered by nutritionists, while PBM can be considered an excellent P source to broiler diets.

The aim of this study was to evaluate the effects of incorporating Bacillus spp.-fermented mixture (FM; 55% soybean meal and 45% feather meal) in the starter feed of goat kids, specifically its effects on growth performance, blood profile, carcass characteristics, and gastrointestinal traits; the FM protein profile was also evaluated. Seventy-five four-week-old male dairy goat kids were randomly assigned to three different starter diet groups containing B, D, or J strains of 5% Bacillus spp. FM (BG, DG, and JG), a commercial starter diet group (CG), and a starter diet group without FM (NG). During the starter phase (0-6 weeks), the average daily gain was higher in JG and BG goats than in the NG, with the average daily gain and feed conversion in BG found to be best at 6-8 weeks. Furthermore, the intestinal villi and papillae height in the ventral and dorsal sac of BG goats were higher than those in the other groups. The SDS-PAGE analysis of the FM samples further indicated that low molecular weight peptides in FM significantly increased after fermentation. Thus, using a suitable Bacillus sp. to ferment soybean and feather meals can increase the available nutrients. Taken together, these results indicate that adding 5% Bacillus spp.-fermented soybean and feather meal mixture to a starter feed is a feasible option to improve the growth performance of goat kids, without negatively impacting their health.

This research focuses on the standardization of the blood meal production process at a Colombian rendering plant through a design of experiments. Initially, 108 samples of blood meal were taken where only 23% achieved the moisture target (7.5% to 8.5%). Therefore, an analysis of the measurement system was performed using a repeatability and reproducibility (R&R) study. Results showed that 39.96% of the observed variability was caused by the measurement system that was out of control. So, it was necessary to improve the method of sampling reducing the participation of the measurement system in the variability of the process to only 3.79%. Later, several experiments were accomplished with a 2k factorial design. Each experiment consisted of a response variable (blood meal moisture), two controllable factors (drying chamber temperature and percentage of rotation of the metering screw), and an uncontrollable factor (initial blood meal moisture). Finally, experiments were carried out and validated observing that, with a drying chamber temperature of 160 °C and a percentage of screw rotation of 29%, more than 97% of the blood meal was according to the moisture target. In conclusion, is confirmed that the design of experiments is a tool that allows a clear path towards optimization and standardization of processes.(AU)
Esta pesquisa se concentra na padronização do processo de produção de farinha de sangue de uma usina de beneficiamento colombiana por meio de um planejamento de experimentos. Em primeiro lugar, foi realizado um estudo de 108 amostras de farinha de sangue onde apenas 23% atingiram a meta de umidade (7.5% a 8.5%). Portanto, uma análise do sistema de medição foi realizada usando um estudo de repetibilidade e reprodutibilidade (R&R). Os resultados mostraram que 39.96% da variabilidade observada foi causada pelo sistema. Assim, foi necessário aprimorar o método de amostragem, reduzindo a participação do sistema na variabilidade para apenas 3.79%. Posteriormente, vários experimentos foram realizados com um planejamento fatorial 2k. Cada experimento consistiu em uma variável de resposta (umidade da farinha de sangue), dois fatores controláveis (temperatura da câmara de secagem e porcentagem de rotação da rosca dosadora) e um fator incontrolável (umidade inicial da farinha de sangue). Finalmente, experimentos foram realizados e validados observando que, com uma temperatura da câmara de secagem de 160 ° C e um percentual de rotação da rosca de 29%, mais de 97% da farinha de sangue estava de acordo com a umidade desejada. Em conclusão, confirma-se que o planejamento de experimentos é uma ferramenta que permite um caminho claro para a otimização e padronização de processos.(AU)

The objective of this study was to develop a cake rich in resistant starch, with green banana flour (GBF), of good sensory acceptance. In step 1, four cake formulations were prepared with increasing concentrations of GBF and evaluated for acceptability and purchase intention. In step 2, four new formulations were made by modifying the most accepted formulation in step 1, in addition to the formulation without GBF (control). The resistant starch content, proximate composition, total calorific value, and sensory acceptance data were obtained. The formulation with cocoa powder and dried banana (E1F4) achieved 97.78% overall acceptance and higher purchase intent. In step 2, the formulations with 14% and 18% GBF were the most accepted for flavor, texture/softness, and overall acceptance. Adding the categories of "would certainly buy" and "would probably buy", 53.33% of consumers would buy the cake with 14% GBF and 48.89% would buy the cake containing 18% GBF. The incorporation of GBF increased the resistant starch contents of the formulations as compared with the control. Ash content was highest in the formulation with 26% GBF (2.22%) and lipid content in the control formulation (11.58%). The treatments did not differ in terms of moisture content. Protein content decreased as the GBF content in the formulations was increased. The total dietary fiber content of the formulations was 9.30%. Carbohydrate content and calorific value also did not vary. The mean values of L*, a*, b*, C*, and h* showed that the cakes had an intense dark brown color. In conclusion, the addition of 14% and 18% GBF to the cake resulted in a product of high sensory acceptance, with high purchase intent, a resistant starch content 7.21 and 8.34 times higher than those in the control cake.(AU)
O objetivo desse estudo foi desenvolver uma formulação de bolo com farinha de banana verde (FBV), rica em amido resistente e com boa aceitação sensorial. Na etapa 1, foram elaboradas quatro formulações de bolo, com concentrações crescentes de FBV, as quais foram avaliadas quanto à aceitação sensorial e intenção de compra. Na etapa 2 foram feitas quatro novas formulações, modificando-se a formulação mais aceita na etapa 1, e um controle, sem farinha de banana verde. Quantificou-se o teor de amido resistente, estudou-se a composição centesimal, calculou-se o valor calórico total e avaliou-se a aceitação sensorial. A formulação com cacau em pó e banana passa (E1F4) apresentou aceitação global igual a 97,78% e maior intenção de compra. Na etapa 2, as formulações com 14% e 18% de farinha de banana verde foram as mais aceitas para o sabor, textura/maciez e aceitação global. Somando-se as categorias "certamente compraria" e "provavelmente compraria", 53,33% dos consumidores comprariam o bolo com 14% de farinha de banana verde e 48,89% o com 18%. A incorporação de concentrações crescentes de FBV proporcionou aumento nos teores de amido resistente das formulações em relação ao controle. O teor de cinzas foi maior na formulação com 26% de farinha de banana verde (2,22%) e o de lipídeos na formulação controle (11,58%). Os tratamentos não diferiram quanto ao teor de umidade. O teor de proteína reduziu, à medida em que o teor de farinha de banana verde foi incrementado nas formulações. O teor de fibra alimentar total das formulações foi igual a 9,30%. O teor de carboidratos e valor calórico também não variaram. Os valores médios das variáveis L*, a*, b*, C* e h* demonstraram que os bolos apresentaram coloração marrom escura intensa. Conclui-se que a adição de 14% e 18% de farinha de banana verde no bolo resultou em um produto com elevada aceitação sensorial, elevada intenção de compra e com teor de amido resistente 7,21 e 8,34 vezes superior ao bolo controle.(AU)

Processed meat foods may be associated with poor eating habits, but the aggregation of vegetable ingredients, such as pequi (Caryocar brasiliense), makes the formulations of these products healthier and more nutritious. Thus this study aimed to characterize the chemical composition of breaded chicken prepared with pequi pulp flour in breading, as well as to evaluate the technological and sensorial properties of the breaded chicken. The pequis pulp from the region of Montes Claros - MG was dehydrated to obtain flour used in predust, with substitutions of 0%, 25%, 50% and 100% of the breadcrumbs flour. Meat products were chemically evaluated for moisture, lipids, proteins, carbohydrates, and ashes, technologically with measures of specific volume, yield, color difference, chromaticity, and tone of the breaded chicken, and sensorially by the evaluation of the intention of consumption and acceptance. As a result, pequi flour added lipid and protein content, improved yield, allowed higher specific volumes, and more intense color tones to the breaded. In addition, these presented good sensorial results and without significant differences among the studied formulations. It was concluded that the use of pequi flour in the production of breaded chicken can provide nutritional and technological enrichment to these products, without adversely affecting their sensorial characteristics.
Alimentos cárneos processados podem estar associados a hábitos alimentares pouco sadios, mas a agregação de ingredientes vegetais, como o pequi (Caryocar brasiliense), torna as formulações desses produtos mais saudáveis e nutritivas. Assim, este estudo objetivou caracterizar a composição química de empanados de frango preparados com farinha da polpa de pequi na camada de empanamento, bem como avaliar as propriedades tecnológicas e sensoriais dos empanados produzidos. A polpa de pequis da região de Montes Claros - MG foi desidratada para obtenção da farinha utilizada na camada de pré enfarinhamento, com substituições de 0%, 25%, 50% e 100% da farinha de rosca. Os produtos cárneos foram avaliados quimicamente quanto aos teores de umidade, lipídios, proteínas, carboidratos e cinzas; tecnologicamente com medidas de volume específico, rendimento, diferença de cor, cromaticidade e tonalidade dos empanados; e sensorialmente pela avaliação da intenção de consumo e aceitação. Como resultados, a farinha de pequi acrescentou conteúdo lipídico e proteico, melhorou o rendimento, permitiu maiores volumes específicos e tonalidades de cor mais intensas aos empanados. Ademais estes apresentaram bons resultados sensoriais e sem diferenças significativas entre as formulações estudadas. Conclui-se que a utilização da farinha de pequi na produção de empanados, pode fornecer enriquecimento nutricional e tecnológico a estes produtos, sem alterar negativamente suas características sensoriais.

The objective of this study was to determine the metabolizable energy, standardized ileal amino acid digestibility (SIAAD) and digestible amino acid values of wheat meal (WM), wheat gluten meal (WGM), meat bone meal (MBM) and poultry-by-product meal (PPM) in diets for broilers. In the first experiment, the total excreta collection method was used, with 180 chicks with 14 days, distributed in a completely randomized design, with 4 feeds + reference diet with 6 replicates and 6 broilers each. In the second experiment, 180 broilers from 24 to 28 days old were used, distributed in a completely randomized design, with 4 feeds + one protein free diet with 6 replicates and 6 broilers each. The AMEn values of WM, WGM, MBM and PPM were 3052, 3174, 1556 and 3200 (kcal/kg), respectively. The average SIAAD of the essential and non-essential amino acids of WM, WGM, MBM and PPM were 74.21, 97.50, 69.28 and 83.08; 76.32, 96.42, 63.93 and 77.66, respectively. The values of the main digestible limiting amino acids were 0.18, 1.42, 0.41 and 0.94 for methionine; 0.20, 1.48, 1.73 and 2.73 for lysine; 0.23, 1.67, 0.72 and 1.89 for threonine; and 0.35, 3.22, 1.38 and 2.47 for valine, respectively for the feedstuffs in study.(AU)

A feeding trial was conducted to determine the potential value of replacing 100 % of meat and bone meal (MBM) ingredient as the major animal protein source in Japanese quail diets by 50% and 100% of insect meal derived from S. littoralis Larvae. A total of 360, 7 days-old quail chicks, were randomly divided into three equal groups (120 chicks) with three replicates each. They were offered three different diets 1, 2 and 3, respectively. The Diet 1 contained MBM only as a major source of animal protein, diet 2 had both MBM (50%) and insect meal (50%) while diet 3 contained insect meal (100%). Results: Partial or total replacement of S. littoralis larvae with MBM increased body weight gain and improved feed conversion ratio (p0.05). Moreover, treated groups with insect meal were economically much more profitable than conventional MBM. On the other hand, serum total protein, albumin, globulin, triglycerides, cholesterol, total antioxidant, thyroxin, estradiol-17B, and testosterone hormones level were significantly higher (p0.05) in treated groups than in the control one. While, serum alkaline phosphates, alanine aminotransferase and aspartate aminotransferase activities in all treated groups were within equal range and did not differ among them. The inclusion of insect meal protein as a replacement for MBM up to 100% replacement has no adverse effect on growth performance, carcass characteristics, hematological and serum biochemical indices of growing Japanese quail chicks. Moreover, it can be used as one of a protein source for lowering the production costs of poultry diets.(AU)

Fifty-seven primiparous Angus, Hereford, and crossbred cows were used to study the effect of strategic supplementation on metabolic, productive, and reproductive responses. The experiment had two periods including four phases: prepartum supplementation (phase I; 52 days), early postpartum (phase II; 43 days), pre-mating supplementation (phase III; 21 days), and the last phase including mating, gestation, and lactation until weaning (phase IV; 103 days). Phases I and II were considered as period 1, and phases III and IV were considered as period 2. During phase I (−52±2 days before calving to birth), half of the cows received a supplement (S-), and the rest only grazed native swards (C-). For phase III (59±2 days postpartum [DPP] until mating), cows from the previous treatments (C- or S-) were sorted in two levels of pre-mating supplementation, supplemented (-S) or not supplemented (-C), resulting in four treatment combinations (CC, CS, SC, and SS). The supplement was 1 kg dry matter/cow per day of whole rice bran and 550 mL/cow per day of crude glycerin. In period 1, cows receiving prepartum supplementation increased concentration of cholesterol, glucose, and albumin and decreased concentration of non-esterified fatty acids, beta-hydroxybutyrate, and urea. This improvement in energy balance was reflected in a higher body condition score at calving. Alternatively, in period 2, pre-mating supplementation only increased cholesterol concentration. None of the supplementation periods affected the weaning weight of calves. Prepartum, but not pre-mating, supplementation increased total pregnancy rate. A short prepartum supplementation improves pregnancy rate of primiparous cows managed under extensive production systems. However, there is no additional benefit of supplementation during the pre-mating period.(AU)

The objective with this study was to evaluate the effect of including dried distillers grains with solubles (DDGS) as a replacement for soybean meal on feed intake, digestibility, and total digestible nutrients (TDN), as well as plasmatic glucose and serum urea concentrations. Fifteen Saanen goats were distributed in a completely randomized design with three treatments and five replicates. Treatments were soybean meal (SBM), SBM+DDGS (12.28% of dry matter [DM]), and DDGS (23.16% of DM), as protein source in diets, common to all corn ground and mineral-vitamin supplement, and corn silage (60% of DM). Response variables were evaluated every 30 d, from 1 to 120 d after parturition. Measurements included body weight, DM intake, DM and nutrient digestibility, and blood samples. Indigestible neutral detergent fiber was used to estimate fecal excretion. There was a difference in neutral detergent fiber intake from 1 to 30 d after parturition. In the four phases of lactation evaluated, there were treatment effects on DM, organic matter, ether extract, and total carbohydrate digestibility, as well as on TDN concentration. Neutral detergent fiber digestibility was affected by treatments, except from d 61 to 90. There was no treatment effect on non-fibrous carbohydrate digestibility, regardless of period. Therefore, SBM+DDGS (12.28% of DM), as protein source on diets may be used in Saanen goat diets from 1 to 120 d of lactation without negative effects on feed intake, digestibility, and plasma glucose and urea concentrations.(AU)

The objective of this study was to analyze the potential of the jabuticaba peel flour (JPF) as an ingredient in whole-grain bread. Pan bread formulations with different concentrations of jabuticaba peel flour were made: 0% (T0), 5% (T1), 10% (T2), and 15% (T3). Proximate composition, pH, water activity, color, phenolic compounds and antioxidant activity of bread were determined. The addition of JPF to the bread formulations led to a reduction of carbohydrate levels (51.14 to 46.55 g 100 g-1), lipids (4.79 to 3.35 g 100 g-1) and an increase in moisture (31.06 to 37.31 g 100 g-1) and ash (0.22 to 0.35 g 100 g-1). The fiber content increased up to three times, and the phenolic compounds up to seven times, thus increasing the antioxidant activity of the JPF-based bread when compared to the control. Bread made with the addition of JPF presented lower L* values (46.72 to 36.07) and higher a* values (3.10 to 9.07) compared to the control. Therefore, jabuticaba peel flour can be considered a potential ingredient for addition to whole-grain pan bread with desirable nutritional and functional characteristics.(AU)
Este trabalho teve como objetivo analisar o potencial da farinha de casca de jabuticaba (FCJ) como ingrediente em pães de forma integrais. Foram elaboradas formulações de pães com diferentes concentrações de farinha de casca de jabuticaba: 0% (T0), 5% (T1), 10% (T2) e 15% (T3). Foram realizadas análises de composição centesimal, pH, atividade de água, cor, compostos fenólicos e atividade antioxidante dos pães. A adição de FCJ às formulações de pão levou a uma redução dos níveis de carboidratos (51,14 a 46,55 g 100 g-1), lipídios (4,79 a 3,35 g 100 g-1) e aumento da umidade (31,06 a 37,31 g 100 g-1) e minerais (0.22 a 0.35 g 100 g-1). O teor de fibras aumentou até três vezes e os compostos fenólicos até sete vezes, aumentando a atividade antioxidante do pão à base de FCJ quando comparado ao controle. O pão elaborado com a adição de FCJ apresentou menores valores de L* (46,72 a 36,07) e maiores valores de a* (3,10 a 9,07) em relação ao controle. Portanto, a farinha de casca de jabuticaba pode ser considerada um ingrediente potencial para a adição ao pão de forma integral com características nutricionais e funcionais desejáveis.(AU)
