Resumo

This study determined the metabolizable energy of DDGS for broiler quails (Experiment I) and evaluated the effect of different dietary levels of DDGS on performance, carcass, organ weight, meat quality, and economic viability (Experiment II). In Experiment I, 72 broiler quails were randomly distributed into two treatments (reference or test diets). The experimental period consisted of 5 days of adaptation, followed by 5 days of total excreta collection. Experimental diets consisted of a reference or a test diet containing 800 g/kg reference diet and 200 g/kg DDGS. In experiment II, 432 unsexed broiler quails were randomly distributed into groups fed six levels of DDGS (0, 50, 100, 150, 200, or 250 g/kg). At 43 days of age, birds were slaughtered and evaluated for carcass yield, organ weight, and meat quality. Apparent metabolizable energy values corrected for nitrogen retention of DDGS were 2,488 and 2,466 kcal/kg for males and females, respectively. In the growth phase and the overall period, feed intake increased linearly (p=0.015 and 0.040) and feed conversion ratio worsened (p=0.038 and 0.001) with the inclusion of DDGS in the diet, respectively. A linear increasing (p=0.001) of gizzard weight was observed with increasing dietary DDGS levels, while the economic variables were affect depending on seasonal feedstocks prices. It is concluded that dietary levels up to 250 g/kg DDGS do not affect growth, carcass characteristics, and meat quality of broiler quails. However, the prices of ingredients in the harvest and off-season period should be considered to determine the level of inclusion of DDGS.(AU)

ABSTRACT: The study evaluated the effect of sex and slaughter weight on carcass traits and non-carcass components of 1,489 horses (739 geldings and 750 females, classified into eight groups according to their weight). Data were analyzed under a completely randomized design. Geldings had a higher (P < 0.05) hot carcass yield (HCY) and cold carcass yield (CCY) than females; however, fat yellowness values (b*) were greater (P < 0.05) in females. Slaughter weight (SW) affected the carcass characteristics. Hot carcass weight (HCW), cold carcass weight (CCW), HCY, and CCY increased (P < 0.05) in accordance with slaughter weight, while cool loss percentage (CL%) was lower (P < 0.05) in horses weighing more than 300 kg. In addition, the non-carcass components decreased (P < 0.05) as the weight of the horses increased. In conclusion, sex and body weight are factors to consider in the production of equine meat since they affect carcass characteristics and non-carcass components.


RESUMO: O estudo teve como objetivo avaliar o efeito do sexo e do peso ao abate sobre as características de carcaça e componentes não-carcaça de 1.489 cavalos (739 machos castrados e 750 fêmeas, classificados em oito grupos de acordo com o peso). Os dados foram analisados em um desenho inteiramente casualizado. Os semeadores apresentaram maior rendimento de carcaça quente (HCY) e fria (CCY) do que as fêmeas, porém o amarelecimento da gordura (b*) foi maior nas fêmeas. O peso ao abate (SW) afetou as características de carcaça. HCW, CCW, HCY e CCY aumentaram de acordo com o peso de abate, enquanto CL% foi menor em equinos com peso superior a 300 kg. Além disso, os componentes não-carcaça diminuíram com o aumento do peso dos cavalos. Em conclusão, sexo e peso corporal são fatores a serem considerados na produção de carne equina, uma vez que afetam as características da carcaça e seus componentes.

This study evaluated the performance parameters, carcass characteristics, and meat quality of Label Rouge chickens raised under an alternative system as a function of age at slaughter. The design was completely randomized with a 5×2 factorial arrangement, with slaughtering at five ages (70, 90, 120, 150, and 180 days) and two sexes. A total of 240 birds (Pescoço Pelado strain) were used, including 120 females and 120 males. Performance, carcass, physicochemical, proximate composition, and muscle fiber traits were evaluated. Rearing time and sex had significant effects on performance-related traits, with better results for males. The interaction between slaughter age and sex had a significant effect on the carcass and physicochemical parameters, which cause different responses in males and females with increasing slaughter age. For the proximate composition and muscle fiber analysis, the interaction between the parameters studied only had a significant effect on ether extract in the breast. The increase in age resulted in chickens with higher live and carcass weight at slaughter but lower performance indices. Females had lower carcass yield and greater deposition of abdominal fat. Females had lower tenderness in the drumstick and males in the breast with increasing slaughter age, and both cuts had more intense color and redness and reduced lightness starting at the slaughter age of 90 days.


O objetivo deste estudo foi avaliar os parâmetros de desempenho e as características de carcaça e qualidade da carne de frangos Label Rouge criados em sistema alternativo em função do aumento da idade de abate. O delineamento foi inteiramente casualizado (DIC) disposto em esquema fatorial (2x5), sendo dois sexos (macho e fêmea) e cinco idades de abate (70, 90, 120, 150 e 180 dias). Foram utilizadas 240 aves (Pescoço Pelado), sendo 120 fêmeas e 120 machos, sendo avaliados os parâmetros de desempenho, carcaça, físico-químicos, composição centesimal e fibra muscular. Com o aumento no tempo de produção houve efeitos dos períodos de produção e sexo em relação a variáveis de desempenho, com melhores resultados para os machos. Para os parâmetros de carcaça e físico-químicos, houve interação entre sexo e idade de abate, revelando comportamento diferenciado para machos e fêmeas com aumento da idade de abate. Para a composição centesimal e análise das fibras musculares, somente para extrato etéreo no peito foi verificado interação entre os fatores estudados. O aumento da idade proporcionou a obtenção de frangos com maiores pesos vivos e de carcaça ao abate com consequente redução dos índices de desempenho, além de menor rendimento de carcaça e maior deposição de gordura abdominal nas fêmeas. As fêmeas apresentam menor maciez na coxa e os machos no peito com aumento da idade de abate e, em ambos os cortes, ocorreu maior intensificação da cor, índice de vermelho e redução do brilho a partir de 90 dias ou em maiores idades de abate.

Resumo

The present work carried out full-genome SNP genotyping of 16-month-old Kalmyk steers to study their productive characteristics and beef quality indicators in the leading farms of the Republic of Kalmykia (Group I was located at the Agrofirma Aduchi farm; Group II at the Kirovsky breeding plant, and Group III at the Plodovitoye agricultural cooperative). As a result of investigating the frequencies of some homozygous alleles, the study established that the heterozygous allele A/A varied considerably along the lines from 0.2785 to 0.3146, while B/B varied from 0.3697 to 0.4125. Meanwhile, the heterozygous allele A/B varied from 0.2986 to 0.3197. Estimated inbreeding coefficients were 1.35, 1.28 and 1.27%. The conducted studies established a higher natural resistance determined by lysozyme, bactericidal and phagocytic activities of steers raised at the Agrofirma Aduchi as farm than their counterparts at the other agricultural enterprises. Over the entire period of the experiment, the steers from 8 to 16 months of age in Group I exceeded the indices of their counterparts in Groups II and III by 30.46g, or 3.31% and 38.04g, or 4.16%, respectively. It is concluded that an increase in the heterozygosity of the studied Kalmyk steers not only results in higher meat productivity, but also improves the quality of carcass and beef quality, increases the yield of more valuable meat grades, and optimizes the fractional composition of proteins.


O presente trabalho realizou a genotipagem de bois Kalmyk de 16 meses de idade para estudar suas características produtivas e indicadores de qualidade da carne bovina nas principais fazendas da República de Kalmykia (o Grupo I estava localizado na fazenda Agrofirma Aduchi; Grupo II - na planta de criação Kirovsky; Grupo III - na cooperativa agrícola Plodovitoye). Como resultado da investigação das freqüências de alguns alelos homozigotos, o estudo estabeleceu que o alelo heterozigotos A/A variou consideravelmente de 0,2785 a 0,3146, enquanto o B/B variou de 0,3697 a 0,4125. Enquanto isso, o alelo heterozigoto A/B variou de 0,2986 a 0,3197. Os coeficientes estimados de consanguinidade foram de 1,35, 1,28 e 1,27%. Os estudos realizados estabeleceram uma maior resistência natural determinada pelas atividades lisozóides, bactericidas e fagocitárias dos bois criados na Agrofirma Aduchi como fazenda do que suas contrapartes nas outras empresas agrícolas. Durante todo o período do experimento, os bois de 8 a 16 meses de idade no Grupo I excederam os índices de suas contrapartes nos Grupos II e III em 30,46g, ou 3,31% e 38,04g, ou 4,16%, respectivamente. Conclui-se que um aumento na heterozigosidade dos bois Kalmyk estudados não só resulta em maior produtividade da carne, mas também melhora a qualidade da carcaça e da carne bovina, aumenta o rendimento das carnes de maior valor e otimiza a composição fracionária das proteínas.

Two experiments were carried out to evaluate the effectsof protease addition to the diet of broilers at a higher level (1× or 2×) thanthe nutritional value proposed for the enzyme. The first experiment, 1280 day-old chicks (Cobb500®) were randomly allocated (randomized block design, 2×2+1 factorial arrangement),five treatments, eight replicates containing32 birds/replicate. Treatmentsconsisted: control diet without protease (CD); CD + 1× nutritional value of the enzyme (CDM1); CD + 2× nutritional value of the enzyme (CDM2); CDM1 + protease; and CDM2 + protease. The experimental period was 42 days. The mean weight (AFW), feed intake (FI), weight gain (WG), feed conversion, and carcass yield were evaluated. Significant differences were observed for AFW, WG, FI, abdominal fat yield, and feet percentage in the carcass. In the second experiment, 120 Cobb500®chicks at 14 days of age were allotted in a completely randomized design, 2×2+1 factorial arrangement, five treatments, six replicates withfour birds/replicate. The treatments were consistent with the first experiment. Significant improvements in the nitrogen balance wereobserved for the broilersthat received protease.The use of the enzyme tested is recommended with the recommended nutritional matrix, improving the zootechnical indices of broilers.(AU)

The demand for clean label foods has driven research in the meat product sector. The objective of this study was to evaluate the effect on the physicochemical properties of adding L-lysine, wheat fiber (WTF) and microcrystalline cellulose (MCC) in sausage without the addition of sodium tripolyphosphate (STPP) and with reduced salt levels. Eight treatments were produced in total. Three control treatments were: CON1 - 0.5 % sodium tripolyphosphate and 2 % salt; CON2 - without STPP and 2 % salt; CON3 - without STPP and 1 % salt. Five other treatments were carried out without STPP and 1 % of salt: LYS - 0.8 % L-lysine; WTF - 2 % wheat fiber; MCC - 2 % microcrystalline cellulose fiber; LYSWTF - 0.8 % L-lysine and 2 % wheat fiber; LYSMCC - 0.8 % L-lysine and 2 % microcrystalline cellulose fiber. L-lysine and wheat fiber provided good emulsion stability for sausages. L-lysine and MCC increased the yield of the products. Microcrystalline cellulose increased the red color value (a*) of sausages. The intensity of the yellow color value (b*) was significantly affected by the removal of STPP and the reduction of salt levels, but L-lysine and MCC improved this parameter, providing similar results to CON1. Adding of L-lysine and dietary fiber increased hardness in sausages without added STPP and with salt reduction. L-lysine and wheat fiber are promising for reformulating emulsified meat product without phosphate added and with reduced salt levels due to lipid oxidation control and improvement in emulsion stability.

This study aimed to evaluate the effects of diets containing elephant grass genotypes silages as exclusive roughage on leg tissue composition, and physicochemical characteristics of meat of lambs. Twenty-four crossbred male lambs with an average initial body weight of 20.29±2.66kg were distributed in a complete randomized design with three treatments and eight replicates. The treatments consisted of three silages of elephant grass genotypes (IRI-381, Elephant B or Mott), without additives or wilting, as the only roughage. The diets did not affect (P>0.05) the dry matter (898.70±60.10 g/day), crude protein (128.93±6.91g/day), total digestible nutrients (690.20±91.82g/day) intakes, body weight at slaughter (24.83±2.79kg), and carcass yields (P>0.05). The tissue composition of the leg did not differ significantly between silages of elephant grass genotypes (P>0.05). No difference (P>0.05) for the physicochemical characteristics of meat from lambs fed diets tested was observed. Therefore, our results indicate that diets containing 50% elephant grass genotypes silages (IRI-381, Elephant B or Mott), harvested at 60 days of growth, have potential for use in lambs feeding.


Este estudo teve como objetivo avaliar os efeitos de dietas contendo silagens de genótipos de capim-elefante como volumoso exclusivo sobre a composição tecidual da perna e nas características físico-químicas da carne de cordeiros. Vinte e quatro cordeiros machos mestiços, com peso corporal inicial médio de 20,29±2,66kg, foram distribuídos em delineamento inteiramente ao acaso, com três tratamentos e oito repetições. Os tratamentos consistiram de três silagens de genótipos de capim-elefante (IRI-381, Elephant B ou Mott), sem aditivos ou emurchecimento, como único volumoso. As dietas não afetaram (P>0,05) os consumos de matéria seca (898,70 ± 60,10g/dia), proteína bruta (128,93±6,91g/dia) e nutrientes digestíveis totais (690,20±91,82g/dia), peso corporal ao abate (24,83±2,79kg) e rendimentos de carcaça (P>0,05). A composição tecidual da perna não diferiu significativamente entre as silagens dos genótipos de capim-elefante (P>0,05). Não foi observada diferença (P>0,05) para as características físico-químicas da carne dos cordeiros alimentados com as dietas testadas. Portanto, os resultados indicam que dietas contendo 50% de silagens de genótipos de capim-elefante (IRI-381, Elephant B ou Mott), colhidos aos 60 dias de crescimento, têm potencial para uso na alimentação de cordeiros.

The objective of this study was to evaluate the association of polymorphisms in the diacylglycerol acyltransferase (DGAT) and leptin (LEP) genes with the performance, carcass characteristics, meat quality, and lipid profile of Nellore cattle. A total of 100 intact male Nelore cattle were used to analyze the performance, carcass, physicochemical and centesimal composition, and fatty acid profile of beef. To identify the polymorphisms, the PCR­single-strand conformation polymorphism (SSCP) technique was applied to genomic DNA extracted from muscle tissue. The SSCP technique revealed the presence of four band patterns for the DGAT gene (AC, AD, AE and BB) with five alleles (A, B, C, D and E). For the LEP gene, five band patterns (AA, AB, AC, BB and BC) with three alleles (A, B and C) were observed. For the LEP gene, the AB genotype was associated with higher backfat thickness and ribs weight, while the BB genotype was associated with lower ribs yield; higher hindquarter yield was associated with AC and BB genotypes. Higher contents of C17:0, C18:0 and lower contents of C18:2ω6C, total polyunsaturated fatty acids, total ω6 and ratio of polyunsaturated and saturated fatty acids (PUFA/SFA) were verified for the AC genotype of the LEP gene. The AC and AA genotypes of the LEP gene were associated with higher means of C15:0 and C18:1ω9t. For the DGAT gene, the highest C24:0 content was associated with the AE genotype and the lowest with the AD and BB genotypes. Polymorphisms in the DGAT and LEP genes influence carcass parameters and the lipid profile of the meat of Nellore cattle.


Objetivou-se com este estudo avaliar a associação do polimorfismo dos genes da Diacilglicerol Aciltransferase (DGAT) e Leptina ­ (LEP) em relação ao desempenho, características de carcaça, qualidade de carne e perfil lipídico de bovinos Nelore. Para o estudo, foram utilizados um total de 100 bovinos nelores machos inteiros e avaliado os parâmetros de desempenho, composição da carcaça, composição físico-química, centesimal e perfil lipídico da carne. Para identificação dos polimorfismos foi utilizada a técnica de PCR-SSCP a partir da extração do DNA genômico do tecido muscular. A técnica de SSCP revelou a presença de quatro padrões de banda para o gene DGAT (AC, AD, AE e BB) com cinco alelos (A, B, C, D e E) e, para o gene LEP foram verificados cinco padrões de bandas (AA, AB, AC, BB e BC) com três alelos (A, B e C). Para o gene LEP, o genótipo AB foi associado a maior espessura de gordura subcutânea e peso do corte ponta de agulha, enquanto o genótipo BB foi associado a menor rendimento do corte ponta de agulha; maior rendimento do corte traseiro foi associado aos genótipos AC e BB. Maiores teores de C17:0, C18:0 e menores de C18: 2ω6C, total de ácidos graxos poli-insaturados, total de ω6 e a relação de ácidos graxos poli-insaturados e saturados (POL/SAT) foram verificados para o genótipo AC do gene LEP. Os genótipos AC e AA do gene LEP foram associados a maiores médias de C15:0 e C18:1ω9t. Para o gene DGAT, os maiores teores de C24:0 foram associados o genótipo AE e o menores aos genótipos AD e BB. A ocorrência de polimorfismo nos genes DGAT e LEP revelaram influência destes sobre parâmetros de carcaça e perfil lipídico da carne de bovinos Nelore.

The aim was to evaluate the effect of replacing ground corn with spineless cactus from two species Orelha de Elefante Mexicana-OEM (Opuntia stricta Haw.) and Gigante (Opuntia ficus-indica Mill) in a total mixed ration for finishing lambs evaluating its effects on intake, ingestive behavior, performance, carcass traits, commercial cuts and physiochemical composition of the meat. Eighteen crossbred lambs with average body weight of 15.0 ± 2.32 kg were distributed in a completely randomized design with three treatments (OEM and Gigante spineless cactus and ground corn as control treatment) and six replications. Spineless cactus species replacing ground corn in lambs diets does not change the intake of dry matter (DMI), crude protein and neutral detergent fiber or time (min/d) of ingestion, rumination and idleness, or final body weight gain. Lambs fed with ground corn and "Gigante" cactus presented a higher total weigh gain (TWG) and average daily weight gain (ADG) when compared to OEM spineless specie. Ground corn diet promoted better hot and cold carcass yield in lambs receiving spineless cactus, regardless of species. Feed and total costs (kg/lamb) were higher for the ground corn diet. The replacement of ground corn with spineless cactus did not change moisture, protein, and ash meat contents, as well as water holding capacity, cooking loss, shear force, and a* color intensity. However, there was an effect for the meat lipid content, b* and L* color intensity and color index, where the species of cactus Gigante on ground corn presented the highest lipid content and yellowness (b*) intensity and lower L* color compared to OEM. Spineless cactus species Gigante can replace ground corn as a source of energy in diets for finishing lambs because it significantly improves the financial income for the producer without changing the ADG, DMI, ingestive behavior and yield of commercial cuts.


Objetivou-se avaliar o efeito da substituição do milho moído por duas espécies de palma forrageira, Orelha de Elefante Mexicana-OEM (Opuntia stricta Haw.) e espécie Gigante (Opuntia ficus-indica Mill) em uma ração completa para terminação de cordeiros avaliando seus efeitos sobre consumo, comportamento ingestivo, desempenho, características de carcaça, cortes comerciais e composição físico-química da carne. Foram utilizados dezoito cordeiros sem padrão racial definido com peso corporal médio de 15,0 ± 2,32 kg e foram distribuídos em delineamento inteiramente casualizado com três tratamentos (OEM e palma Gigante e grão de milho como controle) e seis repetições. As duas espécies de palma forrageira em substituição ao milho moído na dieta de cordeiros não modificaram o consumo de matéria seca (CMS) proteína bruta e fibra em detergente neutro nem o tempo (min/dia) de ingestão, ruminação e ócio ou ganho corporal final. Cordeiros alimentados com milho moído e palma Gigante apresentaram maior ganho de peso total (GPT) e médio diário (GMD) em relação à espécie OEM. A dieta com milho moído promoveu melhor rendimento de carcaça quente e fria comparando cordeiros recebendo palma forrageira, independente da espécie. Os custos com ração e total (kg/cordeiro) foram maiores para a dieta com milho moído. A substituição do milho moído pela palma forrageira não alterou os teores de umidade, proteína e cinzas da carne, bem como a capacidade de retenção de água, perda por cozimento, força de cisalhamento e intensidade de cor a*. No entanto, houve efeito para o teor de lipídios da carne, índice de intensidade de cor b* e L*, sendo que a espécie de palma Gigante e o milho grão moído apresentou o maior teor de lipídios e intensidade de amarelo (b*) e menor cor L* em relação ao OEM. ABSTRACT: This study evaluated the performance parameters, carcass characteristics, and meat quality of Label Rouge chickens raised under an alternative system as a function of age at slaughter. The design was completely randomized with a 5×2 factorial arrangement, with slaughtering at five ages (70, 90, 120, 150, and 180 days) and two sexes. A total of 240 birds (Pescoço Pelado strain) were used, including 120 females and 120 males. Performance, carcass, physicochemical, proximate composition, and muscle fiber traits were evaluated. Rearing time and sex had significant effects on performance-related traits, with better results for males. The interaction between slaughter age and sex had a significant effect on the carcass and physicochemical parameters, which cause different responses in males and females with increasing slaughter age. For the proximate composition and muscle fiber analysis, the interaction between the parameters studied only had a significant effect on ether extract in the breast. The increase in age resulted in chickens with higher live and carcass weight at slaughter but lower performance indices. Females had lower carcass yield and greater deposition of abdominal fat. Females had lower tenderness in the drumstick and males in the breast with increasing slaughter age, and both cuts had more intense color and redness and reduced lightness starting at the slaughter age of 90 days.


RESUMO: O objetivo deste estudo foi avaliar os parâmetros de desempenho e as características de carcaça e qualidade da carne de frangos Label Rouge criados em sistema alternativo em função do aumento da idade de abate. O delineamento foi inteiramente casualizado (DIC) disposto em esquema fatorial (2x5), sendo dois sexos (macho e fêmea) e cinco idades de abate (70, 90, 120, 150 e 180 dias). Foram utilizadas 240 aves (Pescoço Pelado), sendo 120 fêmeas e 120 machos, sendo avaliados os parâmetros de desempenho, carcaça, físico-químicos, composição centesimal e fibra muscular. Com o aumento no tempo de produção houve efeitos dos períodos de produção e sexo em relação a variáveis de desempenho, com melhores resultados para os machos. Para os parâmetros de carcaça e físico-químicos, houve interação entre sexo e idade de abate, revelando comportamento diferenciado para machos e fêmeas com aumento da idade de abate. Para a composição centesimal e análise das fibras musculares, somente para extrato etéreo no peito foi verificado interação entre os fatores estudados. O aumento da idade proporcionou a obtenção de frangos com maiores pesos vivos e de carcaça ao abate com consequente redução dos índices de desempenho, além de menor rendimento de carcaça e maior deposição de gordura abdominal nas fêmeas. As fêmeas apresentam menor maciez na coxa e os machos no peito com aumento da idade de abate e, em ambos os cortes, ocorreu maior intensificação da cor, índice de vermelho e redução do brilho a partir de 90 dias ou em maiores idades de abate.

The objective of this study was to examine the effects of behavioral differences in cattle on bruising on different cuts and on carcass yield. A total of 4,061 lots of cattle were evaluated, which corresponded to 199,026 carcasses. Animal temperament was classified as calm, anxious, or excited. The following carcass cuts were evaluated: round, rump, shin, thin flank, tenderloin, and rib. Of the total number of slaughtered animals, 68.26% had at least one type of bruise with complete removal of the affected tissue. There was an interaction effect between sex and temperament on the occurrence of bruises on the different cuts and on carcass yield. In castrated males, bruises on the round, rump, shin, and tenderloin cuts did not differ between temperament classes, but the excited males showed more bruises on the thin flank and rib cuts. Among the females, for all cuts, the number of bruises was higher (P<0.05) in those with excited temperament than in the anxious and calm animals, which did not differ (P>0.05). Additionally, carcass yield relative to plant weight decreased (P<0.05), with the calm females exhibiting the highest values, followed by those with anxious and excited temperament. In the castrated males, however, although performance declined, those with anxious and excited temperament did not differ (P>0.05). Females and more reactive animals have more bruises on their carcass.(AU)


O objetivo desta pesquisa foi avaliar os efeitos das diferenças comportamentais dos bovinos e seus reflexos nas contusões nos diferentes cortes e nos valores de rendimento de carcaça. Foram avaliados 4.061 lotes de bovinos, perfazendo 199.026 mil carcaças. O temperamento animal foi classificado em calmo, ansioso e excitado. Foram avaliados os cortes das carcaças divididas em coxa, alcatra, dianteiro e lombo, vazio e costela. Do total de lotes de animais abatidos, 68,26% apresentaram pelo menos um tipo de contusão com remoção completa do tecido afetado. Ocorreu interação entre o sexo e temperamento animal para os diferentes cortes na ocorrência de contusões e no rendimento de carcaça. Nos machos castrados as contusões dos cortes da coxa, alcatra, dianteiro e lombo não diferiram entre as classes de temperamento, tendo os animais agressivos mais contusões nos cortes do vazio e costela. Nas fêmeas em todos os cortes, as quantidades de contusões verificadas foram superiores (P<0,05) para animais com comportamento excitado do que animais ansiosos e calmos, não ocorrendo diferença entre os mesmos (P>0,05). O rendimento de carcaça em relação do peso de frigorífico quanto as classes comportamentais, nas fêmeas foi decrescente (P<0,05) com maiores valores para animais calmos, seguidos dos animais ansiosos e com menores rendimentos para animais com temperamento excitado, enquanto nos machos castrados, embora o rendimento tenha sido decrescente, animais com temperamento ansioso e excitado não diferiram (P>0,05). Carcaças oriundas de fêmeas e de animais com maior reatividade apresentam mais lesões.(AU)

The objective of our study was to evaluate the effect of the use of legume (Arachis pintoi) or nitrogen fertilization on animal performance, characteristics of carcass and meat, and fatty acids profile of crossbred steers on Megathyrsus maximus cv. Aruana pasture, overseeded with temperate grasses. The experimental design was completely randomized, with three treatments and three replicates. The experiment was carried out from June to October (127 d). The treatments were: Low-N: 100 kg of N/ha; Medium-N: 200 kg of N/ha; and Legume: Arachis pintoi + 100 kg of N/ha. The pasture with higher nitrogen fertilization (N200) showed a more significant forage mass yield. The mixed grass with legumes presented a higher concentration of saturated fatty acids and saturated:unsaturated ratio in the meat. However, the grass pastures resulted in a higher content of unsaturated fatty acids in the meat. The other pasture variables, and characteristics of carcass and meat were not influenced by the treatments. The increase in nitrogen fertilization, from 100 to 200 kg/ha, and Arachis pintoi mixed with Aruana grass pasture overseeded with black oat and ryegrass does not affect the daily weight gain and the carcass and meat characteristics of the steers. The grass-legume mixture decreases the total concentration of unsaturated fatty acids in meat without influencing the concentration of polyunsaturated fatty acids.(AU)

Resumo

This article provides an overview of assisted reproductive technologies (ART) and genome engineering to improve livestock production systems for the contribution of global sustainability. Most ruminant production systems are conducted on grassland conditions, as is the case of South American countries that are leaders in meat and milk production worldwide with a well-established grass-feed livestock. These systems have many strengths from an environmental perspective and consumer preferences but requires certain improvements to enhance resource efficiency. Reproductive performance is one of the main challenges particularly in cow-calf operations that usually are conducted under adverse conditions and thus ART can make a great contribution. Fixed-time artificial insemination is applied in South America in large scale programs as 20 to 30% of cows receive this technology every year in each country, with greater calving rate and significant herd genetic gain occurred in this region. Sexed semen has also been increasingly implemented, enhancing resource efficiency by a) obtaining desired female replacement and improving animal welfare by avoiding newborn male sacrifice in dairy industry, or b) alternatively producing male calves for beef industry. In vitro embryo production has been massively applied, with this region showing the greatest number of embryos produced worldwide leading to significant improvement in herd genetics and productivity. Although the contribution of these technologies is considerable, further improvements will be required for a significant livestock transformation and novel biotechnologies such as genome editing are already available. Through the CRISPR/Cas-based system it is possible to enhance food yield and quality, avoid animal welfare concerns, overcome animal health threats, and control pests and invasive species harming food production. In summary, a significant enhancement in livestock productivity and resource efficiency can be made through reproductive technologies and genome editing, improving at the same time profitability for farmers, and global food security and sustainability.(AU)

The aim of this study was to evaluate the effects of replacing 50% of the true protein from soybean meal with extruded urea on the performance and carcass characteristics of lambs finished on pasture. Twenty lambs with initial weight of 29.9±6.2kg and 5 months of age, distributed in two treatments in blocks at random, were kept in pastures of Urochloa spp. Supplemented with 2% of body weight (BW). The treatments consisted of supplements containing soybean meal as the only true protein source (control), or extruded urea replacing 50% of soybean meal (NPN treatment). There was no effect of treatment on total supplement intake. There were differences in average daily gain (242.1 vs. 264.6g/day), slaughter weight (41.9 vs. 45.0kg) and carcass weight (18.9 vs. 20.1kg). There was no effect of the treatment on the final body condition score, hot carcass yield, carcass length, breast depth, subcutaneous fat thickness or rib eye area. The group of animals that received extruded urea showed superior carcass finishing characteristics (99.0% vs. 66.0%), maturity (22.0% vs. 0.0%), marbling (55.0% vs. 33.0%), meat texture (44.0% vs. 33.0%) and fat (66.0% vs. 22.0%). There were no significant effects on tenderness (7.5kg/f) or flesh color (L* = 33.2; a* = 16.2; b* = 8.3). There were no significant changes in the biochemical profile of the animals' blood during the experiment for both treatments. The replacement of 50% of protein from soybean meal by the extruded urea as NPN source in the supplement for lambs finished in Urochloa spp pastures provides better animal performance and qualitative characteristics of meat, without altering quantitative carcass characteristics.


Objetivou-se avaliar os efeitos da substituição de 50% da proteína verdadeira do farelo de soja por ureia extrusada sobre o desempenho e as características de carcaça de cordeiros terminados em pasto. Vinte cordeiros de 29,9+6,2kg de peso inicial e com cinco meses de idade, distribuídos em dois tratamentos em blocos ao acaso, foram mantidos em pastagens de Urochloa spp. suplementado com 2% do peso vivo (PV). Os tratamentos consistiram em suplementos contendo farelo de soja como única fonte de proteína verdadeira (controle), ou ureia extrusada em substituição a 50% do farelo de soja (tratamento NPN). Não houve efeito do tratamento na ingestão total de suplemento. Houve diferenças no ganho médio diário (242,1 vs. 264,6 g/dia), no peso ao abate (41,9 vs. 45,0kg) e no peso da carcaça (18,9 vs. 20,1kg). Não houve efeito do tratamento sobre escore de condição corporal final, rendimento de carcaça quente, comprimento de carcaça, profundidade do peito, espessura de gordura subcutânea ou área de olho de lombo. O grupo de animais que recebeu ureia extrusada apresentou características superiores de acabamento de carcaça (99,0% vs. 66,0%), maturidade (22,0% vs. 0,0%), marmoreio (55,0% vs. 33,0%), textura da carne (44,0% vs. 33,0%) e gordura (66,0% vs. 22,0%). Não houve efeitos significativos na maciez (7,5 kg/f) nem na cor da carne (L*= 33,2; a*= 16,2; b * = 8,3). Não houve mudanças significativas no perfil bioquímico do sangue dos animais durante o experimento para ambos os tratamentos. A substituição de 50% da proteína do farelo de soja pela ureia extrusada como fonte de NPN no suplemento para cordeiros terminados em pastagem de Urochloa spp. proporciona melhor desempenho animal e características qualitativas da carne, sem alterar as características quantitativas da carcaça.

We aimed to reduce the dimensionality of quantitative traits in pigs applying factor analysis. Quantitative variables were collected, and the factor analysis extracted five factors with biological meaning related to performance, carcass quality, carcass yield, meat quality, and initial pH. These factors were posteriorly used as dependent variable to evaluate the effects of genetic groups (Piau, Duroc, and Pietrain crossbreds), nutritional plans (low, medium and high lysine levels) and sex. An interaction effect between genetic group and sex was observed in performance, in which Duroc crossbred showed the greatest scores. The Pietrain genetic group showed greater values of carcass quality compared with Duroc and Piau, while Piau crossbred pigs had greater values for meat quality compared with Pietrain and Duroc. A greater carcass yield was observed in Pietrain crossbred compared with Duroc pigs. Pigs fed under low lysine level had the lowest performance values. Carcass yield was affected by nutritional plans, in which the medium lysine level showed the greatest values. Meat quality was improved by the nutritional plan with high lysine level compared with the low lysine level. Initial pH showed increased means when using nutritional plans with low and medium lysine levels in diet composition. With regard to sex effects, a greater carcass quality was found for gilts compared with barrows. The reduction of the data dimensionality allowed the joint evaluation of genetic group, nutritional plan, and sex based on new latent variables that represented the original dataset under easier framework based on factors' biological interpretation.(AU)

This study evaluated the effects of including Moringa oleifera (moringa) leaf meal on performance, carcass yield and characteristics, and relative organ weights of broilers from 10 to 42 days of age. We distributed 420 male Cobb 500 chicks in a completely randomized design with five treatments and six replicates with 14 birds each. Treatments consisted of five experimental diets in which the moringa leaf meal was included at 0, 1.5, 3.0, 4.5, and 6.0% in the diets. The following performance variables were evaluated: weight gain, feed intake, and feed conversion; weights and yields of carcass, carcass traits, organs, and abdominal fat; and feet color. Significant differences between the treatment means were analyzed by Dunnett's test. The meal inclusion levels did not affect performance, carcass characteristics and yield, or organs weight. However, feet pigmentation increased linearly, and abdominal fat was greater only at the 1.5% level when compared with the control group. Moringa leaf meal can be included in the diet of broilers from 10 to 42 days of age, up to the level of 6%, without compromising performance or carcass yield of these birds.(AU)

This experiment was planned to evaluate the effects of phytase supplementation with or without organic acid (OA) on performance, protein, calcium (Ca), phosphorus (P) and sodium (Na) digestibility and carcass parameters in broiler chickens fed low Ca and low P diets in comparison to a high Ca and high P diet with standard specifications. For this purpose, two iso-nitrogenous and iso-caloric diets were prepared in such a way that one diet had high Ca (9.80) and high P (4.50) and second diet had low Ca (8.50) and low P (2.40), respectively. Low Ca and low P diet was further supplemented with enzyme phytase @ 500 FTU/kg, and phytase @ 500 FTU/kg + organic acid (1 kg/ton). Rations were offered to seven replicates of ten birds each, from day 1 to 21. Results revealed that the experimental treatments had no effect on feed intake and growth performance of birds (p>0.05). Carcass parameter results showed highest thigh meat yield % and liver weight % in the birds fed diet with low Ca & P and supplemented with enzymes phytase (p<0.05). Fecal P and Na digestiblities were high (p<0.05) in experimental broilers fed low Ca low P with enzyme phytase supplementation as compared to the diet without phytase supplementation. It is concluded that phytase and OA supplementation in the starter diet with low Ca and low P level did not influence intake, growth and feed conversion of the broilers. However, thigh meat yield percent and mineral digestiblities (P and Na) increased in the broilers that received the diet with low Ca and low P level and supplemented with enzyme phytase.(AU)

The objective of this study was to evaluate the growth performance and meat quality of feedlot Aberdeen Angus steers fed high-concentrate diets with or without a natural feed additive composed of a mixture of yeasts and essential oils (EO). A completely randomized design with two diets (with or without natural feed additive) and 12 replicates was used. Twenty-four steers with initial shrunk body weight of 402.62±48.2 kg and average age of 18±2.0 months were used. Steers were fed ad libitum a diet containing 777.3 g of concentrate/kg dry matter (DM) and 222.7 g of corn silage/kg DM for 74 days. The mixture of yeast and EO was supplied at the rate of 10.0 and 0.117 g/animal/day, respectively. Average daily weight gain and feed efficiency in the adaptation period was greater in animals fed natural feed additive; however, there was no difference for the total experimental period. Dry matter intake, carcass weight, carcass yield, proportion of carcass bone, carcass muscle + fat:bone ratio, round thickness, and arm length were not altered by treatments. The inclusion of a natural feed additive in the diet increased the cooling loss (0.98 vs. 1.25%), proportion of carcass muscle (51.32 vs. 54.56%), carcass muscle:fat ratio (1.70 vs. 2.11%), leg length (68.79 vs. 70.71 cm), and arm perimeter (36.70 vs. 37.88 cm) and reduced the proportion of carcass fat (30.17 vs. 25.92%). Carcass length was greater in animals fed the diet with a natural feed additive. Meat color, texture, and marbling were not altered by treatments. The addition of natural feed additive to high concentrate diets does not alter the productive performance of feedlot Aberdeen Angus steers, although it can increase the proportion of lean meat of carcasses.(AU)

The objective of this trial was to investigate the potential benefits of enzyme and probiotic supplementation on the growth performance, nutrient digestibility, carcass traits, and meat quality of Simmental cattle. Sixty Simmental steers (367.75±4.69 kg) were randomly divided into three groups: control (fed basal diet), BC1 group (fed basal diet and 10 g/d brewer's yeast and cellulase supplementation per cattle), and BC2 group (fed basal diet and 20 g/d brewer's yeast and cellulase supplementation per cattle). A 10-d preparation period was followed by a 120-d experimental period. The results showed that the final weight of the BC2 group was greater than that of the control group. Also, feed conversion ratio of the BC2 group was better than that of the control group. Net meat weight increased by 3.86% in the BC2 group compared with the control group. The apparent digestibility of neutral detergent fiber, acid detergent fiber, and crude protein of the BC2 group was greater than that of the control group. Dietary supplementation with brewer's yeast and cellulase supplementation could improve the growth performance and nutrient digestibility of Simmental cattle.(AU)
