ABSTRACT
The milk has an excellent nutritional value, but under poor hygienic conditions can be a disseminator of pathogens such as Staphylococcus aureus. This study aimed to quantify S. aureus in informally marketed milk in Bom Jesus, Piaui. Were acquired 25 samples at different points of sale, which were sent to the Food Microbiology Laboratory of UFPI in Bom Jesus-PI. Aliquots (1mL) were inoculated from 10-1 to 10-3 dilutions in Petrifilm Staph Express plates (3M Brazil Ltda.). The violet red colonies were subjected to application of Petrifilm Staph Express Disks for confirmation. They observed colonies of Staphylococcus aureus in all samples. The average score was 4.8 x 105 CFU / mL. It is concluded that the informally marketed milk has microbial contamination and consumption in raw form is risk to public health, the possible transmission of pathogens, requiring the adoption of corrective measures.
