Resumo

o manual de boas práticas nos estabelecimentos produtores de alimentos é elaborado visando garantir a integridade do alimento e a saúde do consumidor, sendo que uma das ferramentas utilizadas para se atingir BPF é o checklist. A presença do nutricionista é de extrema importância, podendo contribuir noplanejamento, direção, supervisão e avaliação da qualidade do produto final. Assim, avaliar as condições físicas e operacionais de restaurantes comerciais e industriais da microrregião de Ubá, MG foram os objetivos desse estudo, onde foram avaliadas sete UANs. O critério de avaliação utilizado foi o checklist baseado no anexo II da RDC n° 275/2002. Este possuiu 125 itens que foram divididos em quatro blocos: edificações e instalações, equipamentos, móveis e utensílios, manipuladores, produção e transporte.A unidade que apresentou maior índice de não conformidade foi um restaurante comercial (36,8%) que,embora apresentasse responsável técnico, o mesmo não possuía autonomia para exercer suas funçõescomo Nutricionista. Em relação à área externa, verificou-se 37,5% de inadequação nos restaurantes comerciais. Nos estabelecimentos industriais, 33,3% apresentaram inadequação no item ventilação. Os resultados obtidos deixam claro que a implantação e utilização de BPF e a presença do Nutricionista podem elevar o percentual de conformidade e melhorar a qualidade higienicossanitária dos estabelecimentos. The Good Practice Manual - GPM in establishments producing food is elaborated in order to ensurethe integrity of the food and consumer health, and one of the tools used to achieve GPM is the checklist. The presence of the nutritionist is very important and can contribute in the planning, direction, supervision and evaluation of final product quality. Thus, the goals of this study were to evaluate the physical and operational conditions of business and industrial restaurants in the micro-region of Uba - MG. This work was conducted in seven foodservices in the micro-region of Uba - MG. Theevaluation criteria used was the checklist based on Annex II of RDC No. 275/2002. There were 125 itemsthat were divided into four blocks: buildings and facilities, equipment, furniture and fixtures, manipulators, production and transportation. The foodservice that was more distant of the compliance rate was a commercial restaurant (36.8%), and in this unit there was a technical officer that had not the autonomy to perform their functions as a Nutritionist. Regarding the external area there was 37.5% of inadequacy in commercial restaurants. In industrial establishments, 33.3% had inadequate in the item ventilation. The results make clear that the deployment and use of GPM and the presence of the nutritionist can raise the percentage of compliance and can improve the hygienic quality of the establishments. (AU)
