Resumo

Sashimi characterized by fish thin slices (seafood) is consumed raw and in this way it can collaborate to the rise of contamination and diseases related to the pathogenical microorganisms to the mankind. The aim of this study was to analyzed 20 samples of Sashimi commercialized in São Luís-MA, investigating microbiological and sanitary aspects that characterize the product's quality. The objective of this work was to analyze the microbiologic, hygienic and sanitary quality of the Sashimi commercialized in the capital of Maranhão. The techniques of Multiple Tubes with Lactose Broth and Brilliant Green Bile Lactose Broth (BRILA), were applied to detect the total coliforms, and to detect the thermo-tolerants was used the EC Broth. After this procedure, Petri plates containing MacConkey agar were inoculated with the samples that tested positive on the BRILA and EC broth tests. To detect Salmonella sp the samples were inoculated in Rappaport Broth. After 24 hours the samples that tested positive were placed in Petri plates containing SS Agar. The bacterial species were identified using biochemical tests specific for enterobacterias. It is consulted the Hoskins Chart to the MPN/g. Inoculations in solid ways were also utilized to the research Staphylococcus (Salted Manitol agar) genre. The Staphylococcus species were identified using biochemistral specific tests. The analysis of thermo-tolerants showed that 5% of the samples were positives (MPN ~ I600/g) and 15,6% samples tested positive, emphasizing the presence of Escherichia coli (fecal indicator). O sashimi, caracterizado por fatias finas de peixe, pode colaborar para o aumento da contaminação e doenças relacionadas a micro- -organismos patogênicos ao homem. O objetivo deste trabalho foi avaliar a qualidade microbiológica do sashimi consumido na cidade de São Luís - MA, através da detecção de Escherichia coli diarreiogênicas após a pesquisa de coliformes totais e termotolerantes, Staphylococcus aureus e Salmonella spp. Foram coletadas 20 amostras de sashimi em restaurantes típicos do município, que foram diluídas em água peptonada estéril e inoculadas em Caldo Lactosado Simples. A partir dos tubos positivos foram realizadas semeaduras em ágar Manitol Salgado para a pesquisa de Sta- phylococcus spp. Um mililitro do inóculo bacteriano do Caldo Lactosado Simples foi transferido para os Caldos Verde Brilhante (VB) e Rappaport, e então reincubadas a 35°C. Após o período de incubação, das amostras positivas de caldo VB e Rappaport foram realizadas semeaduras em placas de Petri contendo ágar MacConkey e SS. Para a análise de coliformes termotolerantes.
