RESUMO
A cunicultura está em crescimento no Brasil devido ao rápido retorno financeiro ao produtor e por possibilitar o aproveitamento de diversos subprodutos. Por meio de análise microbiológica de carne de coelho comercializada em cinco açougues do município de Curitiba, Paraná, avaliou-se a qualidade sanitária do alimento oferecido ao consumidor, conforme as legislações pertinentes do Ministério da Agricultura, Pecuária e Abastecimento e do Ministério da Saúde. As carnes foram compradas nos estabelecimentos supracitados. Todas as carnes estavam dentro do prazo de validade e possuíam garantia do Serviço de Inspeção Federal (SIF). O matadouro revendedor da carne para todos os açougues utilizados no trabalho é o mesmo, sendo realizada uma amostragem representativa do fornecedor da carne, colhendo-se uma amostra de cada estabelecimento revendedor. De acordo com os resultados obtidos e a legislação pertinente todas as carnes apresentaram-se microbiologicamente aceitáveis para o consumo, embora os estabelecimentos que as vendam tenham demonstrado falhas no armazenamento e não atendimento a todas as condições higienicossanitárias preconizadas pela Agência Nacional de Vigilância Sanitária. ABSTRACT
The rabbit meat trade is growing rapidly in Brazil due to its financial reward for the producers and because of the various products availed from the remains of rabbit carcass. This study performed a microbiological analysis of the rabbit meat sold in five butcher shops in Curitiba city, Parana State. We have evaluated the sanitary quality of food offered to consumers, according to the legislation of the Ministry of Agriculture, Livestock and Supply and the Ministry of Health. Ali meat bought was within the expiration date and was guaranteed by the Federal Inspection System. In this study, representative samples of rabbit's meat from the slaughterhouse were analyzed since all butcher shops investigated bought rabbit s meat from the same slaughterhouse. According to the results obtained and the current legislation the meat analyzed was microbiologically acceptable for consumption, although the establishments that sold it have demonstrated failures in storage and sanitary conditions recommended b¼ the National Agency of Sanitary Surveillance.
