Resumo

O Ministério da Saúde publicou a Resolução RDC 216, de 15 de setembro de 2004, que considera a necessidade de elaboração de requisitos higiênico-sanitários, assim como a implementação do Manual de Boas Práticas e Procedimentos Operacionais Padronizados. O presente trabalho teve como objetivo investigar a implementação dos requisitos exigidos pela RDC 216/04 nos Serviços de Alimentação e a atuação da Vigilância Sanitária frente a mesma. Foram pesquisados 40 estabelecimentos comerciais do tipo restaurantes, lanchonetes, padarias/confeitarias do bairro centro de Santa Maria-RS. Por meio de um formulário com perguntas fechadas, aplicado pessoalmente aos responsáveis pelos Serviços de Alimentação, no período de 5 de janeiro a 15 de janeiro de 2006. Após os resultados obtidos, constatou-se que 92,5 por cento estabelecimentos não apresentam Manual de Boas Práticas implementado, 95 por cento dos estabelecimentos não foram fiscalizados em relação ao Manual de Boas Práticas, nenhum deles possui implantado os Procedimentos Operacionais Padronizados e todos pretendem se adequar à nova Resolução. A atuação orientativa da Vigilância Sanitária foi verificada através deste estudo, assim como a ausência dos documentos. A implementação dos requisitos exigidos pela RDC 216/04 nos Serviços de Alimentação é fundamental para assegurar a produção de alimentos seguros.(AU)
The Health department published Resolution RDC 216 of 15 of September of 2004, that it considers the necessity of elaboration of hygienical-sanitary requirements, as well as the Practical Good implementation of the Manual of and Standardized Operational Procedures. The present work had as objective to investigate the implementation of the requirements demanded for RDC 216/04 in the Services of Feeding and the performance of the Sanitary Monitoring front to the same one. 40 commercial establishments of the type had been searched restaurants, snack bars, bakeries/confectioneries of the quarter center of Saint Maria By means of a form with closed questions, applied personally to the responsible ones for the Services of Feeding, in the period of day 5 of January the 15 of January of 2006. After the gotten results, 95% of the establishments were evidenced that 92.5% of the Good establishments do not present implemented Manual of Practical, had not been fiscalized in relation to the Manual of Good Practical, none of them possess implanted the Standardized Operational Procedures and all intend to adjust themselves to the new Resolution. The orientative performance of the Sanitary Monitoring was verified through this study, as well as the absence of documents. The implementation of the requirements demanded for RDC 216/04 in the Services of Feeding is basic to assure the safe food production. (AU)
