Resumo

O consumo do pescado constitui importante fonte de alimento, porém, dentre os produtos de origem animal, são os mais susceptíveis a processos de deterioração. Este trabalho avaliou a qualidade macroscópica, sensorial e físico-química de 15 amostras de carne de sururu, comercializados em mercados e feiras livres de São Luís, MA. Na análise macroscópica e sensorial dos produtos, utilizaram- se os órgãos dos sentidos, para identificação da cor, odor e textura, bem como, para detecção de substâncias estranhas presentes nas amostras, com o auxílio de lupa de mesa. As Provas de Eber, pH e coeção foram realizadas de acordo com Brasil (1980). A qualidade geral dos produtos foi avaliada atribuindo-se notas de zero a dez pela escala hedônica estruturada de acordo com Pedrero et ai. (1997). Os resultados macroscópicos demonstraram que 100,0% das amostras continham sujidades em geral, tais como fios de cabelos, fragmentos de insetos, cascas e vidros em diferentes tamanhos e proporções. Os valores de pH para a carne de sururu variou de 5,73 a 7,28. Na prova de Eber obteve-se 05 (33,33%) amostras positivas para a carne de sururu. Na escala hedônica estruturada foram obtidas notas que variaram de dois a nove para as amostras.(AU)
The consumption of the fished one constitute important food source, however, amongst the products af animal origin, they are the susceptíveis processes of deterioration. This work evaluated the macrocospic, sensorial quality and physicist-chemistry of the meat of sururu, commercialized in markets and free fairs at SãoLuís - MA. ln the macrocospic and sensorial analysis of the products, one used the agencies of the directions, for identification of the color, odor and texture, as well as, for strange substance detention gifts in the samples, with the aid of magnifying glass of table with magnifying in 3x, with fluorescent light bulb On- 20 model. Hedônica scale structuralized of O was used the 10. The Test of Eber was used in accordance with the Pedrero et al. (1997). The macrocospic results had shown that 100.0% of the samples they contained dirtiness in general, being outside of the standards of the current law. Wires of hair, fragmentos of insects, rinds and glasses in different sizes and ratio had been found, characterizing potential risks to the public health. ln the hedônica scale notes had been gotten that had varied of two the nine for both samples, indicating a bigger acceptability for the meat of sururu. PH found in the samples of the meat of sururu it variedof 5.73 the 7.28, representing propitious bands the proliferation of deteriorantes and pathogenic microrganismos. ln the Test of Eber five (33,3 %) positive samples for the meat of sururu.
