Resumo
Meat is a great medium for the growth of microorganisms and may be responsible for transmission of pathogenic bacteria to man. Among its products, ground beef has highlighted to be a low-cost product and easy to prepare, however, that food is a great culture medium due to factors that favor the multiplication of microorganisms that can cause infections. This study evaluated the sanitary conditions of ground beef sold in Bom Jesus, PI, by counting of mesophilic aerobic bacteria.
