Estudo qualitativo e quantitativo de restaurantes universitários das capitais brasileiras / Qualitative and quantitative study of university restaurants in the Brazilian capital

Resumo
o Restaurante Universitário é uma ferramenta importante na melhoria da assistência estudantil, principalmente para os alunos de baixo nível socioeconômico. O presente estudo teve como objetivo analisar qualitativa e quantitativamente os restaurantes universitários das instituições públicas brasileiras de ensino superior. Foram avaliados por meio de um questionário estruturado 22 restaurantes universitários, situados nas capitais das unidades federativas brasileiras e no Distrito Federal, sob diversos aspectos de sua organização. Os dados foram coletados a partir de informações obtidas nos sites oficiais das universidades. Não participaram deste estudo as universidades federais dos estados do Amapá, Rondônia, Roraima, Pernambuco e Tocantins por não possuírem restaurante universitário. As informações coletadas foram analisadas de forma descritiva e estatística por meio do programa SPSS, versão 2.0. Em 81,8% (n=18) dos RU's os comensais são compostos por alunos com qualquer vínculo à universidade, funcionários e visitantes. Metade dos RU's (50,0%, n= 11) oferece dois tipos de serviços (almoço e jantar); 12 RU's (54,5%; n= 12) são de grande porte; em 13 RU's (65,0%, n= 13) a produtividade individual do funcionário foi abaixo do esperado; em 41,0% (n=9) são administrados por autogestão; e o custo médio com os gêneros foi R$ 3,12. Pôde-se observar ainda que existe uma grande variação no preço das refeições entre os restaurantes universitários, reflexo do padrão do cardápio oferecido por cada unidade de alimentação (Preço médio: 2,00). Porém, os mesmos são abaixo daqueles oferecidos pelos restaurantes comerciais com o mesmo padrão de refeição. Concluiu-se que existe uma grande variação na oferta de alimentação entre os restaurantes universitários, reflexo de seus recursos físicos e financeiros. (AU)The University Restaurant (UR) is an important tool in the improvement of student assistance, primarily for the students of low socioeconomic level. The objective of this study was to analyze qualitatively and quantitatively the restaurants of university public brazilian institutions of higher education. Evaluated by means of a structured questionnaire 22 university restaurants, located in the capitals of brazilian states and the Federal District under various aspects of your organization. Half of UR's (50.0 %, n= Il) offers two types of services (lunch and dinner); 12 UR's (54.5 %; n= 12) are of large size; in 13 UR's (65.0 %; n= 13) The individual productivity of employee was below expected; in 41.0 % (n= 9) are administered by self-management; and the average cost with the genera was R$ 3.12 . Observed that there is a large variation in the price of meals with the restaurants university, reflecting the pattern of the menu offered by each unit of power (average price: 2.00 ). However, they are below those offered by commercial restaurants with the same pattern of meal. It was concluded that there is a large variation in the provision of food between the university restaurants, a reflection of their physical resources and financial. (AU)
