Resumo
O desígnio do presente artigo foi averiguar a consonância com a legislação dos procedimentos e das boas práticas de fabricação da água mineral natural engarrafada, desde a sua captação até sua expedição para o mercado, assim como das edificações de quatro estabelecimentos industrializadores de água mineral natural na ilha de São Luís-MA, através de dados documentados do check list aplicado pela Superintendência de Vigilância Sanitária do Estado do Maranhão (SUVISA/MA) nessas empresas. O chec list verifica o sistema de captação, edificação e instalações; equipamentos, móveis e utensílios; manipuladores; seleção dos insumos e dos seus fornecedores; recepção e armazenamento dos insumos; fabricação e higienização das embalagens; envase e fechamento; rotulagem e armazenamento; transporte e exposição à venda; controle de qualidade; responsável pelo processamento; documentação e registro e POP's. Os resultados mostraram que as indústrias A, C e D estão dentro dos padrões de BPF's exigidos pelos órgãos competentes, sendo as respectivas conformidades de 89,79 por cento, 97, 48 e 97,90 por cento, enquanto que a indústria B deixa a desejar em relação ao cumprimento das legislações específicas, apresentando 68,94 por cento de concordância. Revela ainda, que todas estas empresas têm falhas no desenvolvimento e execução dos seus POP's.(AU)The design of the present article was to survey the accord with the legislation of the procedures and the good manufacture practices of the bottled natural mineral water, since its captation until its expedition for the market, thus as of the constructions of four natural mineral water enterprises in the island of São Luís-MA, through data registered of check list applied by the Superintendency of Sanitary Monitoring of the State of the Maranhão (SUV1SNMA) in these companies, which verify the system of captation, construction and installations; equipment, furniture and utensils; manipulators; election of the insumption and its suppliers; reception and storage of the; manufacture and hygienic cleaning of the packings; it plants and closing; packages and storage; transport and for sale exposition; quality control; responsible for the processing; documentation and register and POP' s. The results had shown that the industries A". "C" and "D" are inside of the standards of GMP's demanded by the competent agencies, having respective conformity of89,79%, 97,48% and 97,90%, where as industry "B" hás deficiencies in relation to the fulfilment of the specific legislation, presenting 68,94% of agreement. It still shows that all these companies have problems in the development and execution of its POP's. (AU)
