Resumo
Assim como os demais estados do Nordeste, a Paraíba também apresenta potencial apícola devido as suas condições de vegetação e ambientais favoráveis. Este trabalho contribui para a identificação das diferenças e semelhanças entre os locais e época de produção do mel no período de dezembro de 2004 a novembro de 2005. Realizou-se análise de umidade, cinzas, ºBrix, sacarose, açúcares redutores, acidez (meq/kg) e pH, submetendo-se os resultados à análise de componentes principais. Os valores médios de umidade (18,75 por cento), ºBrix (80,11), açúcares redutores (79,63 por cento), sacarose (5,92 por cento), cinzas (1,52 por cento), acidez (33,92 meq/kg), pH (3,94) apresentam-se dentro do estabelecido pela legislação vigente.(AU)The Paraiba, as well as the too much states northeast, also presents apicultural potential due its favorable ambient conditions of vegetation and. With the objective to characterize through the physicist-chemistry composition the honeys produced for Apis mellifera L., in regions of the Paraiba, contributing for the identification of the differences and similarities between the places and time of production of the honey, had been carried through collections of 29 samples, in the period of December of2004 the November of2005. One became fullfilled analysis of humidity (%), leached ashes (%), °Brix, sacarose (%), reducing sugars (%), acidity (meq/kg) and pH, submitting the results the analysis of main components. The average values of humidity (18,75%), °Brix (80,11), reducing sugars (79,63%),sucrose (5,92%), leached ashes (1,52%), acidity (33,92 meq/kg), pH (3,94) are presented inside of the established one for the current law. It has differences between the places and times where the honeys had been produced. The characters that had more influenced for the grouping of the samples had been humidity and °Brix in axle X, acidity in axle Y and reducing sugars in axle Z. (AU)
