Resumo
Em serviços de alimentação a qualidade higiênico-sanitária dos alimentos manipulados é uma preocupação crescente entre os consumidores que prezam pela saúde. Para melhorar a qualidade e segurança na produção dos alimentos, o Ministério da Saúde publicou a Resolução RDC 216 de 15 de setembro de 2004, que dispõe sobre Regulamento Técnico de Boas Práticas para Serviços de Alimentação. O presente trabalho teve como objetivo investigar a vigência da RDC 216/04 nos Serviços de Alimentação. Por meio de um formulário com perguntas fechadas, verificou-se o conhecimento dos proprietários em relação à RDC 216/04, os meios pelos quais estes ficaram sabendo sobre a Resolução e a atuação da Vigilância Sanitária frente à mesma. Foram pesquisados 40 estabelecimentos comerciais do tipo restaurantes, lanchonetes, padarias/confeitarias do bairro Centro em Santa Maria- RS, no período do dia 5 de janeiro a 15 de janeiro de 2006. Após os resultados obtidos, constatou-se que 55% dos responsáveis pelos Serviços de Alimentação têm conhecimento sobre a nova Resolução sendo que a maior divulgação sobre a legislação foi feita pela Vigilância Sanitária (36,36%) e através de jornais(31,82%). E todos os estabelecimentos pretendem se adequar à nova Resolução. Observou-se que, apesar dafalta de conhecimento dos responsáveis em relação à RDC 216/04, todos os estabelecimentos demonstraramum interesse inicial em se adequar à nova Resolução. Portanto, enfatizasse a necessidade de maior divulgaçãoda legislação, além do caráter orientativo que a Vigilância Sanitária está desenvolvendo, pois a implementação dos requisitos exigidos pela RDC 216/04 nos Serviços de Alimentação é fundamental para melhorar a qualidade e segurança na produção de alimentos. To improve the quality and security in the production of foods, the Health department published Resolution RDC 216 of 15 of September of 2004, that it makes use on the Good Regulation Technician of Practical for Services of Feeding. The present work had as objective to investigate the validity of RDC 216/04 in the Services of Feeding. By means of a form with closed questions, the knowledge of the proprietors in relation to RDC 216/04 was verified, the ways for which these had been knowing on the Resolution and the performance of the Sanitary Monitoring front to the same one. 40 commercial establishments of the type had been searched restaurants, snack bars, bakeries/ confectioneries of the quarter center of Saint Maria, in the period of day 5 of January the 15 of January of 2006. After the gotten results, evidenced that 55% of the responsible ones for the Services of Feeding have knowledge on the new Resolution being that the biggest spreading on the legislation was made by the Sanitary Monitoring (36.36%) and through periodicals (31.82%). E all the establishments intend to adjust themselves to the new Resolution. II was observed that although the lack of knowledge of the responsible ones in relation to RDC 216/04, all the establishments had demonstrated an initial interest in if adjusting to the new Resolution. Therefore, it is emphasized necessity of bigger spreading of the legislation, beyond the orientative character that the Sanitary Monitoring is developing, therefore the implementation of the requirementsdemanded for RDC 216/04 in the Services of Feeding is basic to improve the quality and security in the food production.
