Analysis of the efficiency of the milk-pasteurization system after packaging in the Northern region of Paraná State. / Análise da eficiência do sistema de pasteurização do leite pós-embalagem na região norte do Paraná

Resumo

This paper aimed at evaluating the efficiency of the milk pasteurization system after packaging, which was carried out in a farm in the Northern region of Paraná State. Six samples werw collected once a week (three samples before pasteurization and three after it). This was done during ten weeks with the total of sixty samples. The physical-chemical analysis and microbiological tests were performed according to the Laboratório Nacional de Referência Animal (LANARA). The results of the analysis showed a decrease in the number of microorganisms and the efficiency of the system was 99,96%. However, the heat system showed to be unstable, not allowing heat homogeneity. The samples of the same had an alteration in the fat percentage and consequently in their density and total dry matter (EST).  
Este trabalho teve como objetivo avaliar a eficiência do sistema de pasteurização de leite pós-embalagem, sendo realizado em propriedade de um município da região Norte do Paraná. Foram colhidas seis amostras, uma vez por semana (três antes de pasteurizar e três após pasteurização), por dez semanas consecutivas, totalizando sessenta amostras. As análises físico-químicos e microbiológicas foram realizadas segundo o Laboratório Nacional de Referência Animal (LANARA). Os resultados das análises demonstraram redução do número de microrganismos indicando eficiência de 99,96%. No entanto, o sistema de aquecimento mostrou-se instável não permitindo homogeneidade de calor. As amostras de um mesmo lote variaram sensivelmente na percentagem de gordura e consequentemente na densidade e extrato seco total.
