CAPÍTULO 2. COMPOSIÇÃO QUÍMICA E QUALIDADE DE OVOS E DO SACO VITELINICO DE NEONATOS DE REPRODUTORAS PESADAS EM DIFERENTES IDADES RESUMO - A qualidade do ovo é um dos requisitos mais importantes do mercado comercial de ovos. Garantir a integridade nutricional e funcional dos ovos é uma busca incessante da produção avícola brasileira. Objetivou-se avaliar fisicamente a qualidade interna e externa de ovos provenientes de um lote de matrizes em três diferentes estágios do ciclo produtivo e quantificar a transmissão de nutrientes via ovo a progenie. As aves foram avaliadas com 32, 42 e 52 semanas de idade. Os experimentos foram conduzidos em empresa comercial e no Aviário experimental do Departamento de Produção Animal da Escola de Medicina Veterinária e Zootecnia, da Universidade Federal de Goiás. Foi utilizado um lote de matrizes da linhagem Hubbard. Foram realizadas coletas de ovos e ração provenientes dessas matrizes e saco da gema da prole. 460 ovos foram homogeneizados e destes 60 ovos foram selecionados para fazer a análise de qualidade interna dos ovos e o restante foi identificado e encaminhado para incubação. A idade da matriz influenciou os dados de peso do ovo, gravidade específica, porcentagem de gema, e casca e no índice de gema, não se verificado alterações quanto a porcentagem de albúmen e o índice de albúmen.
ABSTRACT
CHAPTER 2. CHEMICAL COMPOSITION AND QUALITY OF EGGS AND VITELIN SAC OF DAY-OLD CHICKS FROM BROILER BREEDERS IN DIFFERENT AGES ABSTRACT The objective of this study was evaluate physically internal egg quality from broiler breeders in three different stages of production cycle. The birds were evaluated during the initial egg production (32 weeks), peak egg production (42 weeks) and after peak production (52 weeks), checking if the broiler breeders age can interfere on the internal egg quality and following the physiological alterations with the advancing age. Three experiments were conducted in commercial company and at the Poultry Sector from Department of Animal Production at the School of Veterinary Medicine and Animal Science, Federal University of Goiás in Goiânia. The lineage utilized was Hubbard. Were collected eggs from breeders with 32 wk of age. A group of 460 eggs was homogenized and then 60 eggs were selected to internal quality analysis and the remainder was identified for commercial hatchery. To evaluate the internal quality 60 eggs were separated, identified and individually weighed. The specific gravity was obtained by immersing the eggs into different saline solutions of densities varying between 1.050 and 1.100 g/l. To realize the internal quality the eggs were cracked and the Ames S-6428 micrometer was utilized to yolk and albumen height. The yolk and albumen diameter was measured with digital caliper Caliper® model Stainless Hardened to calculate the Haugh unit. After separated the yolk and albumen, these were weighed in digital scale (accuracy to 0.01g). The eggshells were washed and placed in forced ventilation oven at 65 ° C for 72 hours. The eggshell thickness was measured with digital caliper. The yolks were frozen at - 18 °C and then lyophilized. It was found that the age breeders interferes on the eggs components. The age of broiler breeders influenced the data percentage of albumen and yolk index with higher values compared to younger breeders. The albumen index and percentage of albumen were not affected by breeder age.
