The fatty acid metabolism in fish is affected by several factors and change between freshwater and seawater species. The tilapias are the mainly freshwater species reared in the world due to its great capacity of adaptation to different environments, which allows their farming in fresh, brackish or saltwater and, thus, becoming an alternative to the coastal regions. The purpose of this study was to evaluate the influence of salinity and diet on the performance, metabolism and fatty acid profile in Nile tilapia (Oreochromis niloticus) juvenile. The experimental design was completely randomized in a 4 x 2 factorial scheme with four replicates. The treatments were determined by the combination of the salinities 0, 10, 20 and 30 g.L-1 with diets containing animal and vegetable origin ingredients (AV) or only vegetable origin ingredients (V). The replicates were tanks of 60 L containing 12 fish with initial body weight (BW) of 26.23 ± 4.22 g. The acclimation to salinities was performed gradually, with an increase of 5 g.L-1 in intervals of 24 hours. The experimental period was 32 days and fish were fed three times a day up to apparent satiety. An interaction effect between salinity levels and diet types was detected for final BW, average daily gain (ADG), total length (TL) and standard length (SL). These traits decreased linearly with salinity in diet V, but were not influenced by salinity in diet AV. The daily feed intake (DFI) reduced linearly with the increase of salinity. Hepatosomatic index (HSI) increased linearly with the increase of salinity and was higher in diet AV. The plasma concentration of total proteins (TP) had a quadratic effect to salinity levels, with maximum estimated value of 2.96 g.dL-1 for salinity 10.26 g.L-1 . Plasma concentrations of cholesterol and triglycerides (TG) were higher in diet AV. For body chemical composition, it was verified that crude protein (CP) content was higher in diet V, and the ether extract (EE) content presented a quadratic effect to salinity levels, with maximum estimated value of 19.85%, on dry matter basis, for salinity 9.16 g.L-1 . Regarding the profile of fatty acid deposited in the fish, the proportions of C17, C18, C22:1 and C22:3n-6 increased linearly, while n-6:n-3 ratio decreased linearly with the increase of salinity. Proportions of C14 to C17, C20:1, C20:5n-3 and C22:6n-3 were higher in diet V, while the proportions of C18:2n-6, C18:3n-6, C18:3n-3 and C20:3n-6 and n-6:n-3 ratio were higher in diet AV. The increase of salinity up to 30 g.L-1 leads to a decreasing of feed intake, and when associated to the diet containing only ingredients of vegetable origin, decreases the performance of Nile tilapia juvenile. Moreover, the n-6:n-3 ratio is reduced with the increase of salinity or with use of diet containing vegetable ingredients, changing the profile of fatty acid deposition in the fish.
