Diets for slow growing chickens can be produced with several ingredients, but as it is a typical production of small producers, the acquisition of some inputs can be difficult due to the cost and the way it is shipped for commercialization. Allied to this, the age of slaughter can influence the performance, carcass characteristics and profitability of poultry production. Thus, the objective of this study was to evaluate metabolizability, performance, carcass characteristics and economic evaluation of the production of slow-growing chickens fed different diets and slaughtered at different ages, 600 day-old chicks were housed distributed in design. randomized in a 2x3 factorial scheme, (two diets: feeding using corn, soybean meal, industrial amino acids, limestone, dicalcium phosphate, vitamin and mineral premix; familiar from the mixture of commercial core with corn and soybean meal x three years slaughter: 56, 70 and 84 days), with five replications of 20 birds each. Simultaneously, the metabolizability test is carried out in each phase (initial, growth and final), using the partial excreta collection method. The diet influenced the metabolizability of crude protein, body weight, weight gain, consumption of feed, consumption of metabolizable energy, consumption of crude protein, consumption of lysine, weight and breast yield. Age influenced body weight, weight gain, feed intake, metabolizable energy intake, crude protein intake, lysine intake, feed conversion, carcass weights, chest, back, thigh + thigh, wing, head, feet, abdominal fat and relative carcass, thigh and drumstick weights, wing and abdominal fat. Interaction between diet and age for metabolizable energy, apparent metabolizable energy corrected for nitrogen retention and for relative breast weight. In the economic evaluation, the cost of producing the formulated diet was higher in all phases. Birds fed with the formulated diet complement the largest gross recipes at 70 and 84 days. The nutritional core diet the highest profits in the commercialization of live birds / kg and per kilogram of carcass and for the gross margin for birds of 56 and 70 days. However, the highest gross margin was obtained for birds fed the formulated diet and slaughtered at 84 days. It is concluded that the formulated diet positively favors the metabolizability of crude protein, promotes the best zootechnical performance, regardless of the age of the bird and the greater breast weight of the slow-growing broilers. Slow-growing broiler chickens at 84 days are heavier and show greater weights of cuts: chest, thigh + drumstick, wings and back. The core-containing diet is commercially available at a lower cost with the feeding of slow-growing chickens regardless of the age of slaughter. The sale of live chickens at 84 days offers a higher profit.
