EFEITO DA ALIMENTAÇÃO DE PASTO APÓS O PERÍODO DE CONFINAMENTO SOBRE DESEMPENHO CARCAÇA E CARNE DE NOVILHAS ANGUS

Resumo

A produção de animais a pasto resulta em uma produção geralmente com menor custo e carne com a presença de propriedades benéficas para a saúde humana, quando comparada a engorda em confinamento. A engorda somente a pasto pode resultar em maior tempo para atingir as características ideias para o abate. Deste modo, a utilização de uma alimentação com pastagem após o período de confinamento pode ser uma alternativa para atingir o abate precoce e com qualidade de carcaça e carne. Desta forma o objetivo deste estudo, foi verificar se a alimentação a pasto pós-confinamento modifica o perfil de ácidos graxos, tornando a carne mais saudável para o consumo e com melhores características sensoriais. Após a desmama, 22 novilhas da raça Angus (4+1 meses) foram mantidas por 6 meses em pastagem do gênero Cynodon, 30 dias antes da entrada no confinamento os animais receberam suplementação de silagem (1.2% PV). No início do confinamento foi realizada a mensuração da espessura de gordura subcutânea (EGS) na picanha e entre a 12 e 13° costelas, também mensuração da área de olho de lombo (AOL). A alimentação no confinamento foi com silagem de milho (1.16% PV) e concentrado (1,37 % PV). Após 94 dias de confinamento 11 animais foram abatidos, e os demais permaneceram no confinamento recebendo alimentação com aveia preta (Avena strigos) 0.9% PV), durante 42 dias, após encaminhadas ao abate. A terminação com o fornecimento de pastagem proporcionou maior rendimento de carcaça (P:0,020) e uma tendência de maior peso de carcaça fria (P:0.091), mas tendência de menor AOL quando comparada aos animais terminados apenas em confinamento (P:0,062). Houve diferenças significativas nas características fisico-químicas da carne, sendo que os animais que receberam a pastagem tiveram menor perda de exsudato (P<0,0001) e menor força de cisalhamento (P: 0,011) Modificações na coloração da gordura foram observadas no momento do abate e 24 horas após, porém na coloração do músculo somente foram observadas tendências de variação nas 48 horas após o abate. Na análise sensorial, a carne dos animais que receberam a alimentação a pasto obteve maior nota para o aroma (P:0.022). Na avaliação do perfil de ácidos graxos, a alimentação com pasto proporcionou redução na carne de n-6, AGPI, 1-3, bem como o aumento da relação n-6/n-3, na gordura resultou em aumento dos ácidos palmitoleico e ácido y-linolênico. Em conclusão, o fornecimento de aveia preta pós confinamento, proporcionou uma carne mais macia, menores pelas de ex sudato e maior escore do descritor sensorial de aroma, além de modificações no perfil lipídico.
The beef cattle production on pasture results, usually, in lower costs and in meat with beneficial properties for human health, when compared to finishing in feedlot. Grass finishing can result in a longer time to reach the requirements for slaughter. Thus, the use of pasture feed after the feedlot period can be an alte mative to reach an early slaughter with carcass and meat quality. In this way, the objective of this study was to verify if the grass feed after feedlot modifies the meat fatty acid profile, making it healthier for consumption and with better sensory characteristics. After weaning, 22 Angus heifers (4 + 1 months), were kept for 6 months grazing in Cynodon pasture and 30 days before entering the feedlot the animals received supplementation with corn silage (1.2% LW). At the beginning of the confinement, was performed the measurement of the subcutaneous fat thickness on the picanha and between the 12th and 13th ribs, also measuring the rib eye area. The feedlot diet was composed of com silage (1.16% LW) and concentrate (1.37% LW). After 94 days of confinement, 11 animals were slaughtered and the rest remained in the feedlot facilities receiving black oats (Avena strigosa) (0.9% LW) for 42 days, then slaughtered. The grass finishing provided higher carcass yield (P:0.020) and a tendency to greater cold carcass weight (P:0.091), but it showed a tendency to lower AOL (P:0.062) when compared to animals finished only in feedlot. There were significant differences in the physicochemical characteristics of the meat, which the animals that received the pasture had a smaller amount of ex udation losses (P<0.0001) and lower Warner-Bratzler shear force (P: 0.011). Changes in the color of the fat were observed at the time of slaughter and 24 hours after, however in the color of the muscle, only trends of variation were observed in the 48 hours after slaughter. In the consumer sensory panel, the beef from grassfed animals showed a higher score for aroma (P: 0.022). In the fatty acid profile analysis, feeding with pasture provided a reduction of n-6 in fat and also in the beef amount of polyunsaturated, resulting in an increase in palmitoleic acid, which is beneficial in the energy metabolism. In conclusion, the grass finishing with black oats after feedlot, provided a meat with greater tenderness, lower exudation losses in the thawing process and with better aroma in the panelists' evaluation, with also changes in the lipid profile.
