As an indispensable process in the microencapsulation of active substances, emulsion preparation has a significant impact on microencapsulated products. In this study, five primary emulsions of paprika oleoresin (PO, the natural colourant extracted from the fruit peel of Capsicum annuum L.) with different particle sizes (255-901.7 nm) were prepared using three industrialized pulverization-inducing techniques (stirring, ultrasound induction, and high-pressure homogenization). Subsequently, the PO emulsion was microencapsulated via spray drying. The effects of the different induction methods on the physicochemical properties, digestive behaviour, antioxidant activity, and storage stability of PO microencapsulated powder were investigated. The results showed that ultrasound and high-pressure homogenization induction could improve the encapsulation efficiency, solubility, and rehydration capacity of the microcapsules. In vitro digestion studies showed that ultrasound and high-pressure homogenization induction significantly increased the apparent solubility and dissolution of the microcapsules. High-pressure homogenization induction significantly improved the antioxidant capacity of the microcapsules, while high-intensity ultrasound (600 W) induction slowed down the degradation of the microcapsule fats and oils under short-term UV and long-term natural light exposure. Our study showed that ultrasound and high-pressure homogenization equipment could successfully be used to prepare emulsions containing nanoscale capsicum oil resin particles, improve their functional properties, and enhance the oral bioavailability of this bioactive product.

The effects of the four heating intensities (hot-spring egg yolk, HEY; soft-boiled egg yolk, SEY; normal-boiled egg yolk, NEY; and over-boiled egg yolk, OEY) on lipidomes of boiled egg yolks were investigated. The results indicated that four heating intensities had no significant effect on the total abundance of lipids and lipid categories except for bile acids, lysophosphatidylinositol, and lysophosphatidylcholine. However, of all the 767 lipids quantified, the differential abundance of 190 lipids was screened among the egg yolk samples at four heating intensities. Soft-boiling and over-boiling altered the assembly structure of the lipoproteins through thermal denaturation and affected the binding of lipids and apoproteins, resulting in an increase in low-to-medium-abundance triglycerides. The decreased phospholipid and increased lysophospholipid and free fatty acid in HEY and SEY suggests potential hydrolysis of phospholipids under relatively low-intensity heating. Results provide new insights into the effect of heating on the lipid profiles of egg yolk and would support the public's choice of cooking method for egg yolks.

Micro-organisms on the eggshell surface of affect the quality of the egg. Sometimes, these microbes even pose a serious threat to the health of the egg's consumer. Bacterial 16S rDNA and fungal internal transcribed spacer region were sequenced to analyze the microbial diversity on the shell surface of the eggs collected from 4 distinct regions of China: Guyuan (GY; 1.5 million hens), Langfang (LF; 0.1 million hens), Beihai (BH; 1.2 million hens), and Dongguan (DG; 0.2 million hens). The results showed a higher bacterial and fungal abundance on the eggs collected from the northern and southern China farms, respectively. The dominant bacterial phylum detected across all egg samples was Firmicutes. In addition, the shell surfaces of the DG and LF samples harbored abundant levels of Proteobacteria. The dominant fungal phyla detected across all egg samples were Ascomycota and Basidiomycota. The bacterial compositions on eggshell surfaces differed significantly across all geographic regions, and the fungal composition differed significantly between samples collected from the southern and northern farms (P < 0.05). The abundance and composition of microbial colonies on the eggshell surface varied based on their geographical location (climate and environment) and farming scale (management). Our findings provide an important reference for optimizing the cleaning and disinfection methods for fresh eggs collected from different sources.

Boiling has important effects on the texture of chicken eggs, but its effects on egg nutrients have not been systematically investigated. In this study, changes in the metabolites of egg yolks boiled under different heating intensities were quantified and compared by metabolomic analysis. A total of 797 metabolites were identified, and the abundance of 162 metabolites changed significantly after boiling. The significant reduction of L-lysine and D-fructose suggested that Maillard reactions occurred in over-boiled egg yolks. Egg yolk endogenous enzymes might induce a partial hydrolysis of proteins and phospholipids during the warm-up period of boiling, as the abundance of dipeptides, lysophospholipids, and free fatty acids was significantly increased in boiled egg yolks. Boiling increased the detectable abundance of fat-soluble vitamins, riboflavin, and biotin, possibly by altering the complex structure of protein-lipid-lipophilic compounds or denaturing vitamin-binding proteins. The results of metabolomic analyses provide important information for understanding the nutritional changes of egg yolk boiled under different heating intensities.

The Procapra przewalskii inhabits in a selenium (Se)-deprived environment in long-term, but they have no pathological manifestations due to the Se deprivation. This study aimed to reveal the underlying adaptation induced by Se deprivation. In the analysis, a total of 93 significantly changed metabolites were identified in positive and negative ion modes, including 46 upregulated and 47 downregulated compounds in the Se-deprived group. The differential metabolites were annotated as the major molecules in bile acid biosynthesis, biosynthesis of unsaturated fatty acids, and pyrimidine metabolism, respectively. This study systematically analyzed the serum metabolomics characteristics of P. przewalskii under Se-deprived conditions for the first time, providing a basis for further understanding of the metabolic mechanism of P. przewalskii in the Se-deprived environment.

To study the effects of the seleno-chitosan on daily gain, wool yield, and blood parameters in the Chinese merino sheep in the selenium (Se)-deficient pastures. The samples of soils, forages, and tissues had been collected in the Southern Xinjiang of Northwest China. Our findings indicated that the Se contents in soils and forages from affected pastures were remarkably lower than those unaffected by the pastures (P < 0.01). The Se contents in the blood and the wool from affected Chinese merino sheep were extremely lower than those from healthy sheep. Meanwhile, the values of Hb, PCV, and PLT in affected sheep were significantly decreased (P < 0.01). The yield of wool and the growth rate in affected sheep were also remarkably reduced (P < 0.01). The affected Chinese merino sheep were orally treated by seleno-chitosan for 150 days; the Se contents in blood were remarkably increased and reached the healthy range on day 5. The blood parameters soon recovered to a healthy range on day 10. The growth rate of sheep in the treated group was remarkably higher than that in the control animals. The yield of the wool was also significantly increased in the treated group. Consequently, the Se-deprived environment caused a threat to daily gain, wool yield, and blood parameters in the Chinese merino sheep. The seleno-chitosan could not only markedly increase the Se contents blood contents, but also significantly increase the production performance (daily gain and wool yield), and release the symptoms of anemia in the Se-deprived animal.

The study was implemented for exploring influences of nano-K2MoO4 on the daily gain and antioxidant function of Chinese merino sheep in the native pasture, Xinjiang Uygur Autonomous Region, Northwest of China. Eighty of the sheep, weight of (45.56 ± 2.35) kg, were randomly distributed to the tested areas for 90 days, 20 sheep/group. The findings showed that the contents of Mo and N in the forage of applying nano-K2MoO4 were extremely higher than those in the control pastures (P <0.01). The daily gain in the fertilized groups were remarkably lower than that in the control group (P <0.01). The harvest of forage in the fertilized pastures were significantly higher than those in control (P <0.01). The contents of Mo in blood and liver in grazing the Chinese merino sheep were extremely higher than those from the control group (P <0.01). The contents of Cu in blood and liver in grazing the Chinese merino sheep were extremely lower than those in the unfertilized pastures (P <0.01). The levels of hemoglobin (Hb), blood platelet (PLT), and erythrocyte count (RBC) in animals from the fertilized pastures were extremely lower than those in the control pastures (P < 0.01). The activities of SOD, GSH-Px, and CAT in serum were significantly lower than those in group C. The serum MDA levels were significantly higher than those in the control group (P < 0.01). In conclusion, the application of nano-K2MoO4 in pastures can greatly improve the yield of forage, but strikingly decreased the daily gain and antioxidant function in grazing the Chinese merino sheep.

To investigate the effects of nano-ammonium octamolybdate (nano-Mo) and Macleaya cordata extracts (MCE) on antioxidant capacity of grazing Nanjiang brown goats on natural prairies under Cu and Cd stress, a 2 × 2 factorial design was adopted in this test, and two factors were nano-Mo (0, 10 mg/kg) and MCE (0, 3000 mg/kg). 24 hm2 polluted grassland was used in this 30-day trial and was equally divided into twelve fenced units. A total of 36 Nanjiang brown goats (1 year old) with an average body weight (BW) of 40.9 ± 2.1 kg were used in this test. The dietary treatments were (1) CON group, basic diet; (2) Nano-Mo group, basic diet + 10 mg/kg added Mo (nano-Mo); (3) MCE group, basic diet + 3000 mg/kg added MCE; and (4) combined group, basic diet + 10 mg/kg added nano-Mo and 3000 mg/kg added MCE. Nano-Mo or combination of nano-Mo and MCE diets significantly decreased the Cu content in serum and the liver of grazing goats (P < 0.05) and increased the Fe and Mo contents in serum and the liver (P < 0.05). The supplementation of nano-Mo, MCE, and combined diets extremely increased the levels of blood Hb, RBC, and PCV (P < 0.05), as well as the activities of serum SOD, GSH-Px, CAT, and Cp (P < 0.05), and greatly decreased the blood WBC content (P < 0.05) and the serum MDA content (P < 0.05). In conclusion, the application of nano-Mo and/or MCE diets on contaminated grasslands changed the contents of mineral elements in serum and the liver of grazing goats, reduced oxidative stress, and improved antioxidant capacity. The combination of nano-Mo and MCE can alleviate the toxic damage of combined heavy metal contaminations.
