RESUMEN

Foods enriched with insects can potentially prevent several health disorders, including cardiovascular diseases, by reducing inflammation and improving antioxidant status. In this study, Tenebrio molitor and Gryllus assimilis were selected to determine the effect on the development of atherosclerosis in ApoE/LDLR-/- mice. Animals were fed AIN-93G-based diets (control) with 10% Tenebrio molitor (TM) and 10% Gryllus assimilis (GA) for 8 weeks. The nutritional value as well as antioxidant activity of selected insects were determined. The lipid profile, liver enzyme activity, and the fatty acid composition of liver and adipose tissue of model mice were evaluated. Quantitative analysis of atherosclerotic lesions in the entire aorta was performed using the en face method, and for aortic roots, the cross-section method was used. The antioxidant status of the GA cricket was significantly higher compared to the TM larvae. The results showed that the area of atherosclerosis (en face method) was not significantly different between groups. Dietary GA reduced plaque formation in the aortic root; additionally, significant differences were observed in sections at 200 and 300 µm compared to other groups. Furthermore, liver enzyme ALT activity was lower in insect-fed groups compared to the control group. The finding suggests that a diet containing edible insect GA potentially prevents atherosclerotic plaque development in the aortic root, due to its high antioxidant activity.

Fishes are an important component of human nutrition, mainly acting as source of essential fatty acids in the prevention of cardiovascular disorders. The increase in their consumption has led to a growth of fishes waste; therefore, the disposal and recycling of waste has become a key issue to address, in accordance with circular economy principles. The Moroccan Hypophthalmichthys molitrix and Cyprinus carpio fishes, living in freshwater and marine environments, were collected at mature and immature stages. The fatty acid (FA) profiles of liver and ovary tissues were investigated by GC-MS and compared with edible fillet tissues. The gonadosomatic index, the hypocholesterolemic/hypercholesterolemic ratio, and the atherogenicity and thrombogenicity indexes were measured. Polyunsaturated fatty acids were found to be abundant in the mature ovary and fillet of both species, with a polyunsaturated fatty acids/saturated fatty acids ratio ranging from 0.40 to 1.06 and a monounsaturated fatty acids/polyunsaturated fatty acids ratio between 0.64 and 1.84. Saturated fatty acids were found to be highly abundant in the liver and gonads of both species (range 30-54%), as well as monounsaturated fatty acids (range 35-58%). The results suggested that the exploitation of fish wastes, such as the liver and ovary, may represent a sustainable strategy for the achievement of high value-added molecules with nutraceutical potential.

Body nutrient profiles in ecological studies allow for relating the nutritional status of consumers and their effects on the movement and retention of elements in ecosystems, as well as reflecting feeding conditions and habitat quality. This study compared the detailed whole-body nutrient composition (macronutrients, minerals, fatty acids and amino acids) of two omnivorous natives Orestias killifish from Lake Titicaca (Orestias agassizii and Orestias luteus, Valenciennes), the largest lake in the Andes, as an indirect tool to understand differences in their feeding ecology. Although both species are usually described as omnivorous fish, both have amphipods (Hyalella spp) as their main food source. Our results showed that both killifish had a comparable macronutrient composition, and the mineral concentrations of Mg, P and Ca (reflecting bony structures) differed between them. Many of the saturated fatty acids were significantly lower in O. luteus, and O. agassizii had higher concentrations of cis-vaccenic acid (18:1n11 (cis)), supporting the idea of a higher algal contribution to the diet of this fish. The lower histidine and higher taurine concentrations in O. agassizii compared with O. luteus (independent of body size) may reflect its ubiquitous behaviour and plasticity. This study shows how whole-body nutrient analysis can identify differences in feeding ecology and feeding behaviour between related species.

The objective was to evaluate the effect of the supplementation with natural antioxidants from Yerba mate (Ilex paraguariensis St. Hil.) on the performance, carcass and meat characteristics, and fatty acid profile in meat and fat of Texel × Ile de France lambs kept in Brachiaria-grass pasture. Twenty lambs with a mean age of 90 days and 26.3 kg of BW were distributed in a completely randomized design in two treatments with 10 replicates/treatment: Control-protein-energy supplement based on corn and soybean meal (150 g/kg DM of crude protein) without the addition of natural antioxidant yerba mate and Yerba Mate - energy protein supplement with the addition of yerba mate (110 g/kg DM). There was no treatment effect on animal performance and carcass characteristics. The subcutaneous fat thickness was significantly higher for lambs treated without yerba mate. There was no effect of nutritional treatments on the oxidative markers of lamb meat. The muscle of the animals treated with yerba mate showed a higher concentration of unsaturated and polyunsaturated fatty acids elaidic, linolenic, thymnodonic, docosadienoic, and ceorvonic. The fat of the animals treated with yerba mate showed a higher concentration of palmitoleic acid, linoelaidic acid, heneicosanoic acid, dihomo-γ-linolenic acid, and arachidonic acid. The concentration of polyunsaturated fatty acids was significantly higher in meat and fat of lambs treated with yerba mate. Including yerba mate in the diet of lambs kept on Brachiaria pastures improves the lipid profile of polyunsaturated fatty acids in meat and fat, without altering the performance of the animals.

Two natural betaine sources; dehydrated condensed molasses fermentation solubles (Bet1) and Betafin®, a commercial anhydrous betaine extracted from sugar beet molasses and vinasses (Bet2); were used to investigate their impact on rumen fermentation parameters and lactation performance of lactating goats. Thirty-three lactating Damascus goats, with an average weight of 37 ± 0.7 kg and their age ranged from 22 to 30 months (2nd and 3rd lactation season), were divided into three groups, each group contained 11 animals. The control group (CON) was fed ration without betaine. While the other experimental groups were fed a control ration supplemented either with Bet1 or Bet2 to provide a 4 g betaine/kg diet. Results confirmed that betaine supplementation improved nutrient digestibility and nutritive value, and increased milk production and milk fat contents with both Bet1 and Bet2. Significant increases in concentration of ruminal acetate were observed in betaine-supplemented groups. Goats fed dietary betaine non-significantly recorded higher concentrations of short and medium-chain fatty acids (C4:0 to C12:0), and significant lower concentrations of C14:0 and C16:0 in milk. Also, both Bet1 and Bet2 non-significantly decreased the blood concentrations of cholesterol and triglycerides. Therefore, it could be concluded that betaine can improve the lactation performance of lactating goats and produce healthy milk with beneficial characteristics.

The high nutritional and nutraceutical qualities of emmer wheat make it a valuable cereal grain. The present study was designed to quantify the contribution of emmer wheat inclusion into Japanese quail's rations in terms of their productive responses, alterations in the fatty acid profile of their meat, and changes in the composition of volatile fatty acids in their feces. For this purpose, a total of 160, 1-day-old Japanese quails (Coturnix coturnix japonica) were randomly allotted to four dietary treatments (4 replicates and 10 quails/replicate) with different levels of emmer wheat including 0% (control), 5% (T5), 10% (T10), and 15% (T15). These dietary treatments were administered for a period of 35 days. The results obtained from the study showed that dietary changes led by incorporation of increasing levels of emmer wheat into quail rations had no negative impact on quail's health and production. Moreover, supplemental emmer could promote better feed conversion ratio and higher carcass yield, while it did not affect the relative weights of internal organs including liver, gizzard, and heart. In addition, the incorporation of increasing levels of emmer wheat into quail rations was characterized by a reduction in total saturated and monounsaturated fatty acids, whereas an increase was observed in the levels of total unsaturated and polyunsaturated fatty acids in breast meat. Emmer wheat inclusion also increased the levels of omega-3 and omega-6 fatty acids in breast meat. Regarding volatile fatty acid profile, a lower percentage of propionic acid while a higher percentage of acetic acid were recorded in feces of quails fed emmer wheat-based diets when compared to those fed control diets. Overall, as confirmed by the present findings, the incorporation of emmer wheat into quail diets could be proposed as a valuable strategy for the promotion of animal health and performance. More research is needed to further investigate the promising roles of using emmer wheat in poultry nutrition.

The technological, sensory, and nutritional characteristics of meat products are directly related to their animal fat content. Adding animal fat to meat products significantly influences their sensory properties, such as color, taste, and aroma. In addition, the physicochemical properties of fat decisively contribute to the texture of meat products, playing a fundamental role in improving the properties of viscosity, creaminess, chewiness, cohesiveness, and hardness. However, meat products' high animal fat content makes them detrimental to a healthy diet. Therefore, reducing the fat content of meat products is an urgent need, but it is a challenge for researchers and the meat industry. The fat reduction in meat products without compromising the product's quality and with minor impacts on the production costs is not a simple task. Thus, strategies to reduce the fat content of meat products should be studied with caution. During the last decades, several fat replacers were tested, but among all of them, the use of flours and fibers, hydrocolloids, mushrooms, and some animal proteins (such as whey and collagen) presented promising results. Additionally, multiple strategies to gel oils of vegetable origin are also a current topic of study, and these have certain advantages such as their appearance (attempts to imitate animal fat), while also improving the nutritional profile of the lipid fraction of the products meat. However, each of these fat substitutes has both advantages and limitations in their use, which will be discussed in subsequent sections. Therefore, due to the growing interest in this issue, this review focuses on the main substitutes for animal fat used in the production of meat products, offering detailed and updated information on the latest discoveries and advances in this area.

AIMS: This study was to analyse the biomass production and fatty acids (FAs) profiles in a newly isolated chlorophyte, namely Coccomyxa AP01, under nutritionally balanced (NB) conditions (comparing nitrate and urea as nitrogen sources) and nitrogen or phosphate deprivation. METHODS AND RESULTS: Lipid yields was about 30%-40% of dried biomasses in all examined nutritional conditions. Under NB conditions, lipids were principally constituted by monounsaturated FAs, mainly represented by oleic acid, and saturated and polyunsaturated FAs at similar concentrations. Nutrients deprivation induced remarkable changes in FAs profiles, with the highest amounts of saturated (42%-46%), followed by similar amounts of monounsaturated and polyunsaturated, and the emergence of rare long-chain FAs. Under phosphate deprivation, biomass yield was similar to NB conditions, with the highest yield of saturated (mainly palmitic acid) and of polyunsaturated FAs (33%) (mainly linoleic and linolenic acids). CONCLUSIONS: Balanced or deprived nutritional conditions in Coccomyxa AP01 induced a selective production and composition of FAs. The phosphate-deprivation condition concomitantly provided high biomass yield and the production of high value saturated and polyunsaturated FAs with industrial interest. SIGNIFICANCE AND IMPACT OF THE STUDY: Coccomyxa AP01 could be considered a promising source of different FAs, including also docosapentaenoic acid, for several commercial purposes spanning from biodiesel production, pharmaceutical and cosmetic applications to innovative aquaculture fish feeds.

The growing number of people at high risk of cardiovascular disease development contributed to both changes in diets by consumers and the reformulation of food products by food producers. Cardiovascular diseases are caused by the i.a. consumption of meat that contains animal fat rich in saturated fatty acids (SFA). The use of fat substitutes in meat seems to be a promising tool for the reduction of cardiovascular disease occurrence. In the presented study, beef fat was replaced at 0 (CO), 25 (S-25%), 50 (S-50%), 75 (S-75%), and 100% (S-100%) by a fat substitute in a form of a lyophilized hydrogel emulsion enriched with encapsulated açai oil. The chemical (TBARS, volatile compound profile, fatty acid profile, pH), and physical (TPA, consumer rating, L*a*b* color, cooking loss) analyses were performed on raw and grilled burgers subjected to storage at cold conditions (4 °C) in days 0 and 7. Burgers formulated with hydrogels had a higher content of polyunsaturated fatty acids (PUFAs) of about 32% (p < 0.05) and reduced SFAs by 22%. Reformulation of the burger resulted in lower nutritional indices of the atherogenicity index (AI) (0.8 for CO, 0.3 for S-100%, p < 0.05) and thrombogenicity index (TI) (1.8 for CO, 0.6 for S-100%, p < 0.05), as well as led to an increased h/H ratio (1.3 for CO, 3.9 for S-100%, p < 0.05). Furthermore the application of freeze-dried hydrogels reduced cooking loss. Moreover, consumers did not observe significant differences (p < 0.05) between the control and S-25% and S-50% burgers. Thus, the use of lyophilized hydrogels formulated with konjac flour and sodium alginate and enriched with encapsulated acai oil can be successfully applied as a fat substitute in beef burgers.

BACKGROUND: To compare plasma fatty acids (FAs) between participants with primary open-angle glaucoma (POAG) and participants without neuropathy in an elderly population and to investigate specific FAs pattern in POAG. METHODS: We conducted a population-based study in participants older than 75 years. Participants underwent a comprehensive eye examination with optic nerve photographs, visual field test and optic nerve OCT with RNFL thickness measurement. Glaucomatous status was defined according to the International Society for Epidemiologic and Geographical Ophthalmology classification. Lipids were extracted from plasma and FAs methylesters prepared and analyzed by gas chromatography-mass spectrometry. RESULTS: Among the 1153 participants of the Montrachet study 810 were retained for analysis and 68 had POAG. The mean age was 82.11 ± 3.67. In multivariable analysis FAs levels were not different between POAG participants and controls (P = 0.078). A FAs pattern characterized by high negative weight of gamma-linoleic acid, eicosapentaenoic acid polyunsaturated FAs (PUFAs), Cis-7 hexadecenoic acid monounsaturated FAs (MUFAs) and high positive weight of eicosadienoic acid, docosatetraenoic acid, docosapentaenoic n-6, alpha linoleic acid PUFAs, eicosenoic acid MUFAs, margaric acid and behenic acid saturated FAs was positively associated with POAG. After adjustment for major confounders, individuals in the upper tertile of FAs pattern scores compared with those in the lower tertile were more likely to present POAG (OR = 3.09 [95% CI 1.29-7.40] P = 0.013). CONCLUSIONS: We found no significant difference regarding isolated plasma FAs between participants with POAG and participants without neuropathy in elderly but specific FAs pattern might be associated with POAG.

This paper investigated the limits of the current approach for the determination of the fatty acids profile of milk fats from proton nuclear magnetic resonance data based on the hypothesis that the signal at 0.96 ppm, currently assigned in the literature as a marker for the "short chain fatty acids," is generated only by the butyric moiety (not by all of the short-chain fatty acids, which also include C6:0-caproic acid). The hypothesis was tested and experimentally confirmed. Moreover, the triplet at 0.96 ppm can also be due to n-3 fatty acids such as linolenic acid (C18:3); therefore, a previously reported methodology for the fatty acids profiling of dairy products-considered as general in the literature-cannot be used in fraud-detection approaches because it allows linolenic acid to be mistaken for butyric acid, consequently leading to misclassification of adulterated samples as nonadulterated. To support our opinion, we have applied the current literature approach for the determination of the fatty acids composition of 3 synthetic nondairy fat blends and have obtained fatty acid compositions similar to milk fats, allowing for their misclassification as genuine milk fats. However, in reality, the blends had very different compositions, as confirmed by gas chromatography. Consequently, we have highlighted the weaknesses of the existing methodology for the detection of dairy food adulteration. In return, new proton nuclear magnetic resonance descriptors based on various integral ratios of signals associated with CH2 moiety versus signals associated with butyric and n-3 fatty acids were proposed to detect adulterations.

European hazelnut (Corylus avellana L.) is a major species of interest for nutritional use within the Betulaceae family and its nuts are widely used throughout the world in the chocolate, confectionery, and bakery industries. Recently its cultivation has been expanded in traditional producer countries and established in new places in the southern hemisphere, including Chile, South Africa, and Australia. Introducing hazelnut in new environments could reduce its productivity, lead the trees to experience eco-physiological disorders, and expose the crop to high pressure from common and new pests and diseases. Thus, new approaches in cultivar choice guidance, in the sustainable orchard management and even in nut storage and kernel quality evaluation are urgently required to improve the hazelnut production and processing chain. The main objective of this study was to systematize the published information regarding recent findings about the cultural operations that directly influence nut and kernel quality, support varietal choice for new plantations, and list the recent advances in nut storage and in quality and safety evaluation. © 2020 Society of Chemical Industry.

BACKGROUND: The total amount of bio-waste produced annually in the EU by the food and beverage chains is estimated at 37 billion kg. The use of insects for the valorization of by-products from these value chains may represent a sustainable solution. This study aimed to investigate the by-products obtained from different food chains and used for the rearing of black soldier fly (BSF) prepupae, and to evaluate the content and profile of the lipid extracted from the prepupae and outline its possible applications. The substrates used in this experiment were: (i) industrial by-products (brewery spent grains, cows' milk whey, grape stalks, and tomato peels and seeds) and (ii) by-products from retailers (bread dough, fish scraps, and spent coffee ground). Fat extracted from prepupae using an adjusted Folch method was used for total lipid content and fatty acid profile. RESULTS: The best larval performances were obtained from beer (0.22 gweight per prepupa), tomato (0.19 gweight per prepupa), and cheese (0.14 gweight per prepupa) food-chain by-products. The extremely different compositions of the substrates were reflected in the differentiated lipid profile of the BSF prepupae and in the range of ratios between unsaturated and saturated fatty acids, which varied from 0.37 for cows' milk whey to 1.34 for tomato peels and seeds. CONCLUSION: The lipids, proteins, and chitin extracted from prepupae are high-value bio-based products that could be used in the feed / food industry or for the development of innovative biomaterials, such as biodiesel. These results suggest that food-chain by-products are the best candidates for insect-bioconversion purposes. © 2020 Society of Chemical Industry.

Heavy metals pollution affects the nutritive value of fish. This study examined if the inclusion of dietary hempseed (HS) and hempseed oil (HO) in the diet of the fish could revert the copper-induced toxic effects on muscle fatty acid profile of rohu (Labeo rohita) and mrigal (Cirrhinus mrigala). Fingerlings of both species were exposed to a sub-lethal concentration of copper i.e., 20% of LC50 (1.34 ppm for rohu and 1.52 ppm for mrigal) for 96 h for 30 days. Following exposure, fish were maintained on graded levels of HO (1, 2 and 3%) or on HS (5, 10 and 15%) for 50 days. Copper exposure showed a significant effect on the fatty acid composition of both species; increased their saturated (SFA) to unsaturated (USFA) and altered their omega-3/omega-6 (ω-3/ω-6) ratios. However, feeding graded levels of hempseed products reverted the toxic effects of copper on the fatty acid profile of both the species, significantly increased muscle total fatty acid contents, improved ω-3/ω-6 ratios, and decreased SFA / USFA ratio in % inclusion dependent manner. Furthermore, hempseed product showed a species-specific effect on USFA. The ω-3/ω-6 ratios decreased in the muscle of C. mrigala whereas an increasing trend with an increase in hempseed product % inclusion was observed in L. rohita. Moreover, HS showed a higher impact on both species as compared to HO. With the findings of this study, hempseed product could be recommended as a feed ingredient for enhancing the essential fatty acid contents of fish which in turn can have a good impact on consumer health.

BACKGROUND/AIMS: Tff3 protein plays a well recognized role in the protection of gastrointestinal mucosa. The role of Tff3 in the metabolism is a new aspect of its function. Tff3 is one of the most affected liver genes in early diabetes and fatty liver rodent models. The aim of this study was to investigate the effect of Tff3 deficiency on lipid and carbohydrate metabolism and on markers of oxidative stress that accompanies metabolic deregulation. METHODS: Specific markers of health status were determined in sera of Tff3 deficient mice, including glucose level, functional glucose and insulin tolerance. Composition of fatty acids (FAs) was determined in liver and blood serum by using gas chromatography. Oxidative stress parameters were determined: lipid peroxidation level via determination of lipid hydroperoxide and thiobarbituric acid reactive substances (TBARS), antioxidative capacity (FRAP) and specific antioxidative enzyme activity. The expression of several genes and proteins related to the metabolism of lipids, carbohydrates and oxidative stress (CAT, GPx1, SOD2, PPARα, PPARγ, PPARδ, HNF4α and SIRT1) was determined. RESULTS: Tff3 deficient mice showed better glucose utilization in the glucose and insulin test. Liver lipid metabolism is affected and increased formation of small lipid vesicles is noticed. Formation of lipid droplets is not accompanied by increased liver oxidative stress, although expression/activity of monitored enzymes is deregulated when compared with wild type mice. Tff3 deficient mice exhibit reduced expression of metabolism relevant SIRT1 and PPARγ genes. CONCLUSION: Tff3 deficiency affects the profile and accumulation of FAs in the liver, with no obvious oxidative stress increase, although expression/activity of monitored enzymes is changed as well as the level of SIRT1 and PPARγ protein. Considering the strong downregulation of liver Tff3 in diabetic/obese mice, presence in circulation and regulation by food/insulin, Tff3 is an interesting novel candidate in metabolism relevant conditions.

BACKGROUND: Designer eggs (DEs) have gained positive importance in maintaining cholesterol level, triglyceride profile and protection towards cardiovascular diseases due to the presence of essential fatty acids (EFAs) such as omega-3 (or) n-3 fatty acids. However, extreme heat conditions effect the quality as well as quantity of EFAs during the production of designer egg dried powder (DEDP). Therefore, the main mandate of research was the development of DEDP and determination of spray drying conditions impact on fatty acids composition of DEDP samples. METHODS: The DEs were produced, collected, de-shelled, homogenized and diluted before spray drying to get fine powder. The spray drying of DEs was carried out using a laboratory spray drier. An experimental design was used for the drying parameters, where the inlet air temperature was varied (160, 180 and 200 °C), feed flow rate (200, 300 and 400 mL/hr), atomization speed (16,000, 20,000 and 24,000 rpm) and outlet air temperature (60, 70 and 80 °C) at different levels. For convenience of experimental design coding was used. The DEDP was collected in a single cyclone separator and was stored after packaging for consecutive 2 months at 25 °C and 4 °C, respectively. The powder yield was calculated from the collected dry mass in the collecting vessel divided by the processed whole egg diluted matter. The total lipids of DEDP samples were determined gravimetrically. The esters of fatty acids in each sample were prepared and analyzed through Gas Chromatograph apparatus. The oxidative stability of DEDP samples was estimated by following standard procedure of peroxide value. RESULTS: The powder yield of DEDP as a result of different operating conditions was found in the range of 30.06 ± 0.22 g/500 mL to 62.10 ± 0.46 g/500 mL DEs sample. The decreasing trend in moisture content (4.4 ± 0.16% towards 4.0 ± 0.09%) and total fat content (45 ± 0.65 g/100 g towards 41 ± 0.35 g/100 g) in DEDP samples was observed with increased inlet and outlet temperature while fat content increased at high feed flow rate and atomization speed. In this study, loss of PUFAs in DEDP samples was followed due to their active role regarding to human health. For alpha-linolenic (ALA) fatty acids, maximum value at 4 °C observed was 127.32 ± 0.27 mg/50 g egg and 124.43 ± 0.32 mg/50 g egg while the minimum value observed for ALA was 100.15 ± 0.09 mg/50 g egg and 97.15 ± 0.06 mg/50 g egg after 30 and 60 days storage, respectively. The significant decrease trend for eicosapentaenoic (EPA) fatty acids values from 11.78 ± 0.31 mg/50 g egg to 2.18 ± 0.14 mg/50 g egg at 25 °C under spray dried conditions of inlet air temperature (180 °C), feed flow rate (300 mL/hr), atomization speed (24,000 rpm) and outlet air temperature (80 °C) after 60 days storage period was noted. The docosahexaenoic (DHA) fatty acids value in DEDP was decreased from 15.49 ± 0.79 mg/50 g egg (0 day) to 10.10 ± 0.64 mg/50 g egg at 60 days (4 °C) and same decreasing trend was observed at 25 °C. The decreasing order for total omega-3 fatty acids retention in DEDP during storage intervals was found as 162.33 ± 1.64 mg/50 g egg > 158.61 ± 1.53 mg/50 g egg > 148.03 ± 1.57 mg/50 g egg (0, 30 and 60 days stored at 4 °C) and 162.33 ± 1.64 mg/50 g egg > 151.56 ± 1.54 mg/50 g egg > 135.89 ± 1.62 mg/50 g egg (0, 30 and 60 days stored at 25 °C). The peroxide value (PV) levels obtained in DEDP samples after 60 days were higher (0.78 ± 0.06, 0.81 ± 0.02 meq/kg O2) when compared to initial readings at 0 day (0.65 ± 0.04 meq/kg O2). The PV of DEDP samples reached their maximum peaks after 60 days at 25 °C. The increasing order showed that lipid oxidation increased with storage. However, the overall PV never exceeded the limit of 10 (meq/kg) considered as a threshold limit. CONCLUSIONS: Extreme hot conditions (> 180 °C) of spray dryer reduce the quality of designer egg dry powder. Extreme conditions assist PUFAs loss and decrease in storage stability due to high lipid oxidation.

This study evaluates, for the first time, the seasonal (winter and summer) and geographical (São Miguel⁻SMG and Santa Maria⁻SMA Islands) variability of Fucus spiralis (Fs) biochemical composition (dry weight basis) and antioxidant properties. Protein and carbohydrates presented higher values in Fs-SMGwinter, lipids, total dietary fiber, and energy value in Fs-SMAsummer, and ash and soluble dietary fiber/insoluble dietary fiber ratio in Fs-SMAwinter. The fatty acid (FA) profiles showed a lower SFA in Fs-SMGsummer, whereas MUFA and PUFA presented higher values in Fs-SMGsummer and Fs-SMGwinter, respectively. Excellent dietary ratios of n6/n3 PUFA and hypocholesterolemic/hypercholesterolemic FA were found, with lower values in Fs-SMAwinter and higher in Fs-SMGsummer, respectively. The highest total phenolics was found in Fs-SMAsummer acetone:water extract and total flavonoids showed the higher value in Fs-SMGwinter methanol extract. The best free radical-scavenging activity was observed in the Fs-SMAwinter methanol (EC50 = 0.045 mg/mL) and acetone:water (EC50 = 0.059 mg/mL) extracts. The ferric-reducing antioxidant power showed the best results in Fs-SMAwinter methanol extract (EC50 = 0.016 mg/mL) and Fs-SMAsummer acetone:water extract (EC50 = 0.017 mg/mL). The best ferrous ion-chelating activity was found in Fs-SMGwinter acetone:water extract. Overall, results revealed that F. spiralis nutritional and functional bioactivity values have geographical and seasonal variations and that its regular consumption may add benefits to human health.

INTRODUCTION: The levels of docosahexaenoic acid (DHA, 22:6n-3) and arachidonic acid (AA, 20:4n-6) are critical for the normal structure and function of the brain. Trans fatty acids (TFA) and the source of the dietary fatty acids (FA) interfere with long-chain polyunsaturated fatty acids (LC-PUFA) biosynthesis. OBJECTIVES: The aim of this study was to investigate the effect of TFA supplementation in diets containing different proportions of n-9, n-6, and n-3 FA on the brain FA profile, including the retention of TFA, LC-PUFA levels, and n-6/n-3 PUFA ratios. These parameters were also investigated in the liver, considering that LC-PUFA are mainly bioconverted from their dietary precursors in this tissue and transported by serum to the brain. Also, stearoyl-CoA desaturase-1 (SCD1) and sterol regulatory element-binding protein-1c (SREBP-1c) gene expressions were evaluated. METHODS: Male CF1 mice were fed (16 weeks) diets containing different oils (olive, corn, and rapeseed) with distinct proportions of n-9, n-6, and n-3 FA (55.2/17.2/0.7, 32.0/51.3/0.9, and 61.1/18.4/8.6), respectively, substituted or not with 0.75% of TFA. FA composition of the brain, liver, and serum was assessed by gas chromatography. RESULTS: TFA were incorporated into, and therefore retained in the brain, liver, and serum. However, the magnitude of retention was dependent on the tissue and type of isomer. In the brain, total TFA retention was lower than 1% in all diets. DISCUSSION: Dietary n-3 PUFA decreased TFA retention and increased DHA accretion in the brain. The results underscore the importance of the type of dietary FA on the retention of TFA in the brain and also on the changes of the FA profile.

BACKGROUND: The lipidomic profiling of erythrocyte membranes is expected to provide a peculiar scenario at molecular level of metabolic and nutritional pathways which may influence the lipid balance and the adaptation and homeostasis of the organism. Considering that lipid accumulation in the cell is important in promoting tissue inflammation, the purpose of this study is to analyze the fatty acid profile in red blood cell membranes of patients with Non-Alcoholic Fatty Liver Disease (NAFLD), in order to identify and validate membrane profiles possibly associated with the degree of hepatic damage. METHODS: This work presents data obtained at baseline from 101 subjects that participated to a nutritional trial (registration number: NCT02347696) enrolling consecutive subjects with NAFLD. Diagnosis of liver steatosis was performed by using vibration-controlled elastography implemented on FibroScan. Fatty acids, extracted from phospholipids of erythrocyte membranes, were quantified by gas chromatography method. RESULTS: The subjects with severe NAFLD showed a significant decrease of the ratio of stearic acid to oleic acid (saturation index, SI) compared to controls, 1.281 ± 0.31 vs 1.5 ± 0.29, respectively. Low levels of SI in red blood cell membranes, inversely associated with degree of liver damage, suggest that an impairment of circulating cell membrane structure can reflect modifications that take place in the liver. Subjects with severe NAFLDalso showed higher levels of elongase 5 enzymatic activity, evaluated as vaccenic acid to palmitoleic acid ratio. CONCLUSIONS: Starting from these evidences, our findings show the importance of lipidomic approach in the diagnosis and the staging of NAFLD.

BACKGROUND: Cinnamaldehyde (CIN) is the main active component of cinnamon (Cinnamomum cassia) oil and has been tested as alternative feed additive in cattle production. Little information was available on the effect of dietary CIN in comparison to monensin (MO) on beef fatty acid (FA) profile. This study analyzed FA profiles of liver, subcutaneous fat and pars costalis diaphragmatis (PCD) muscle obtained from steers (n = 70) finished on diets: control, a barley grain-silage feedlot diet; 330 mg/head.day MO; and 400, 800 or 1600 mg/head.day CIN treatments. RESULTS: Inclusion of MO or CIN did not affect total saturated, unsaturated, polyunsaturated FA and individual FA in the various tissues with exceptions that proportion of palmitic acid in PCD muscle was increased by 800 mg/steer.day CIN (P < 0.05). There were positive correlations (P < 0.05) on oleic, linoleic, conjugated linoleic acid (CLA)-c9,t11 and 18:1-t10 between the subcutaneous fat and PCD muscle, and on α-linolenic acid, CLA-c9,t11 and 18:1-t10 between PCD muscle and liver, whereas correlations on the FA between the subcutaneous fat and liver were not significant except for 18:1-t10 (P < 0.01). CONCLUSION: The results indicate that the supplementation of CIN and MO to feedlot diet has limited effect on beef FA profiles.
