RESUMEN

NORSF is a nuclear long noncoding RNA (lncRNA) that contributes to the follicular atresia and restrains 17ß-estradiol (E2) release by granulosa cells (GCs). Importantly, it is also a potential candidate gene in the quantitative trait locus (QTLs) for sow fertility traits. We identified NORSF as a candidate (causal) gene affecting sow fertility traits. A novel G-A variant was discovered at -478 nt of the NORSF promoter and termed as g.-478G>A. Association analysis revealed that this variant was associated with sow fertility traits (e.g., the total number of piglets born, the total number of piglets born alive, and the number of healthy piglets). Mechanistically, the g.-478G>A variant reduced the binding activity of the NORSF promoter to its transcription activator regulatory factor X7 (RFX7), leading to decreased NORSF promoter activity and transcription levels in sow GCs (sGCs), and weakened inhibitory effects on the transcription of CYP19A1, which encodes a rate-limiting enzyme for E2 synthesis and E2 release by sGCs. In addition, RFX7 is transcriptionally activated by P53, which restrains E2 release from sGCs via the RFX7/NORSF/CYP19A1 pathway. These findings indicate that the lncRNA NORSF is a causal gene in QTLs for sow fertility traits and define the P53/NORSF/CYP19A1 pathway as a new signaling pathway affecting sow reproduction, which provides a new target for improving female fertility.

The establishment and maintenance of a pregnancy requires proper interaction between the endocrine and immune systems in the uterus. Therefore, it is crucial to understand how changes in endometrial cytokine levels facilitate reproduction. This study aimed to investigate how representative cytokines sequentially changed in the endometrium and whether conception could be attributed to these changes. In this study, artificial insemination was performed twice in 160 sows and ovulation was examined every 3 h using transrectal ultrasonography. Uterine endometrial tissues were obtained via repeated biopsies at 2, 4, 6, 8, 12, 16, and 20 h after ovulation and interleukin (IL)-2, IL-4, IL-6, and IL-8 expression was examined using real-time polymerase chain reaction. The conception rate was 91.9%. The IL-2 levels showed no differences in conception or time. The expression peaks of IL-4 and IL-6 were delayed in sows that failed to conceive within 4-6 h and 2 h, respectively, compared to those that did conceive. In sows that conceived, IL-8 was highest after 2 h, and no difference was observed at other time point, regardless of conception. In sows that failed to conceive, the increase in IL-8 levels might have been cancelled or terminated before the first sampling time. These results highlight the importance of timely increases and subsequent declines in the levels of some cytokines for the establishment of pregnancy. Differences in uterine capacity start just after ovulation; detection and correction of these deviations can improve the reproductive efficiency of sows.

The present study investigated factors associated with the incidence of stillbirth in young hyper-prolific sows within free farrowing systems in tropical environments. A total of 714 live-born and 54 stillborn piglets from 57 Landrace × Yorkshire sows, with an average parity of 2.7 ± 1.0 (range: 1 - 4), were comprehensively investigated. Reproductive variables of the sows, including gestation length, farrowing duration, the total number of piglets born per litter, and the birth order and status of each piglet, were recorded. Differences in the physiological characteristics of live-born and stillborn piglets, such as birth interval, cumulative birth interval, body weight at birth, crown-rump length, body mass index (BMI), ponderal index (PI), meconium staining score, and the percentage of piglets with a broken umbilical cord, were analysed. Piglets were divided into four groups based on the quartiles of birth order (Q1-Q4). On average, the duration of farrowing was 173.3 ± 85.9 min, and the total number of piglets born and number of piglets born alive-per litter were 14.1 ± 3.8 and 12.5 ± 3.5, respectively. The incidence of stillbirth was 6.7% (54/801 piglets). The higher percentages of stillbirths were detected in sows with large litter sizes (≥17 piglets, 10.9%) compared to those with small (≤13 piglets, 6.1%) and moderate (14 - 16 piglets, 2.8%) litter sizes (p < .001). The incidences of stillbirth in Q3 and Q4 of the litters were higher than in Q1 and Q2 (p < .001). Compared to live-born piglets, stillborn piglets had higher cumulative birth interval (103.0 ± 3.71 vs. 142.4 ± 9.35 min, p < .001), BMI (17.1 ± 0.15 vs. 18.4 ± 0.39 kg/m2, p = .002), PI (63.7 ± 0.59 vs. 70.8 ± 1.59 kg/m3, p < .001), meconium staining scores (1.78 ± 0.04 vs. 2.04 ± 0.10, p = .021), and the percentage of piglets born with a ruptured umbilical cord (45.2% vs. 66.0%, p = .004). An increase in the incidence of stillbirth was detected at 60, 120, 150, 180, and ≥ 210 min after the first piglet was born, compared to those born within the first 30 min of farrowing (p < .05). In conclusion, the study found that stillbirths in young, hyper-prolific sows were linked to several factors: large litter sizes (≥17 piglets per litter), prolonged cumulative birth intervals (142.4 min), elevated BMI of 18.4 kg/m2, high PI values of 70.8 kg/m3, increased meconium staining scores, and a higher occurrence of ruptured umbilical cords. To reduce the risk of stillbirth, particularly among piglets with high body indices born later in the birthing process, it is recommended to enhance farrowing supervision for young sows, starting at a cumulative birth interval of 60 min.

BACKGROUND: Folic acid and vitamin B12 (FV), being B vitamins, not only facilitate the remethylation of homocysteine (Hcy) but also contribute to embryonic development. This study aimed to assess the impact of FV supplementation during late pregnancy on sows' reproductive performance, amino acid metabolism, placental angiogenesis, and related parameters. Twenty primiparous sows at day 60 of gestation were randomly allocated to two groups: a basal diet (CON) group and a group receiving a basal diet supplemented with folic acid at 20 ppm and vitamin B12 at 125 ppb. RESULTS: The findings revealed that dietary FV supplementation significantly reduced the incidence of intrauterine growth retardation compared to the CON group (P < 0.05). Furthermore, it led to a decrease in the Hcy levels in umbilical cord serum (P < 0.05) and activation of the placental mechanistic target of rapamycin complex 1 (mTORC1) signaling pathway (P < 0.05). Additionally, FV supplementation lowered placental malondialdehyde levels (P < 0.05) and increased the expression of placental thioredoxin (P = 0.05). Moreover, maternal FV supplementation notably elevated placental vascular density (P < 0.05) and the expression of sodium-coupled neutral amino acid transporter 2 (SNAT2) (P < 0.05), as well as amino acid concentrations in umbilical cord blood (P < 0.05). CONCLUSION: Maternal FV supplementation during medium to late gestation reduced Hcy levels in umbilical cord blood and positively impacted fetal development. This improvement was closely associated with increased placental antioxidant capacity and vascular density, as well as activation of the placental mTORC1-SNAT2 signaling pathway. © 2023 Society of Chemical Industry.

BACKGROUND: Encapsulation is commonly used to protect probiotics against harsh stresses. Thus, the fabrication of microcapsules with special structure is critical. In this work, microcapsules with the structure of S/O/W (solid-in-oil-in-water) emulsion were prepared for probiotics, with butterfat containing probiotics as the inner core and with whey protein isolate fibrils (WPIF) and antioxidants (epigallocatechin gallate, EGCG; glutathione, GSH) as the outer shell. RESULTS: Based on the high viscosity and good emulsifying ability of WPIF, dry well-dispersed microcapsules were successfully prepared via the stabilization of the butterfat emulsion during freeze-drying with 30-50 g L-1 WPIF. WPIF, WPIF + EGCG, and WPIF + GSH microcapsules with 50 g L-1 WPIF protected probiotics very well against different stresses and exhibited similar inactivation results, indicating that EGCG and GSH exerted neither harm or protection on probiotics. This significantly reduced the harmful effects of antioxidants on probiotics. Almost all the probiotics survived after pasteurization, which was critical for the use of probiotics in other foods. The inactivation values of probiotics in microcapsules were around 1 log in simulated gastric juice (SGJ), about 0.5 log in simulated intestinal juice (SIJ), and around 1 log after 40 days of ambient storage. CONCLUSION: Dry S/O/W microcapsule, with butterfat containing probiotics as the inner core and WPIF as the outer shell, significantly increased the resistance of probiotics to harsh environments. This work proposed a preparation method of dry S/O/W microcapsule with core/shell structure, which could be used in the encapsulation of probiotics and other bioactive ingredients.

Pinecone oil (PO) of Pinus koraiensis mainly contains α-pinene, ß-pinene, and limonene that may ameliorate animal well-being and growth performance. This study evaluated its effects on feed intake, milk composition and yield, serum parameters, and litter growth of sows. Twenty-seven pregnant sows (parity 2-4) were distributed to three dietary treatments. The trial started on Day 107 of gestation and ended on Day 21 of lactation. Sows were given either a basal diet or the basal diet + 200 or 400 mg/kg PO. Each treatment contained nine sows and each sow was considered an experimental unit. Results showed that the average daily gain and weaned body weight of piglets from the sows fed 400 mg/kg PO supplements were higher (p < 0.05) than the piglets from the control sows. Lactose content in colostrum samples and fat content in milk samples were higher (p < 0.05) in 400 mg/kg PO-treated sows, respectively, than those from the sows fed basal diet. Additionally, cortisol concentration and aspartate aminotransferase concentration in sow serum was lowered (p < 0.05) by 400 mg/kg PO on Day 21 of lactation. In conclusion, supplementation of 400 mg/kg PO during late gestation and lactation contributed to greater offspring growth performance, possibly by enhanced milk quality and alleviated maternal stress.

Two experiments were conducted to determine net energy (NE) values of wheat bran ingredients and develop a prediction equation for NE of wheat bran. In each experiment, 12 multiparous pregnant sows were allocated to two 3 × 6 Youden squares with three consecutive periods and six diets in each square. The study consisted of six diets, including a corn-soybean meal basal diet and five diets formulated with 29.2% wheat bran. Each period lasted for 10 d, with 5 d allocated for adaptation and followed by 5 d for heat production measurement. Sows were provided feed at 604 kJ/kg BW0.75·d-1. On day 10, sows underwent fasting to measure fasting heat production. Results indicated that the inclusion of wheat bran in the diets significantly reduced digestibility of energy and nutrients in (p < 0.05). The average net energy (NE) content of wheat bran was determined to be 8.8 MJ/kg DM. A regress equation NE = 7.968 + 0.28 × CP + 0.607 × EE - 0.782 × ash - 0.05 × hemicellulose (R2 = 0.98, p < 0.01) was found to accurately predit the NE value when feeding pregnant sows with wheat bran-based diets. In conclusion, the net energy content of wheat bran fed to pregnant sows ranged from 7.24 to 10.67 MJ/kg DM and can be effectively estimated using proximate analysis methods.

At present, the assessment of pig welfare quality has gained significant importance, prompting the exploration of novel biomarkers for this purpose. Traditionally, these biomarkers have been monitored in the blood; however, blood sampling is considered an invasive procedure. Currently, non-invasive methods for collecting samples are emerging as viable alternatives for assessing these biomarkers. This article aims to present the current knowledge regarding the use of non-invasive methods for analysing pig welfare biomarkers, specifically focusing on the saliva, hair, faeces, and urine as matrices to determine these biomarkers. The saliva analysis encompasses various biomarkers, such as cortisol, alpha-amylase, chromogranin A, the total esterase, oxytocin, acute phase proteins, adenosine deaminase, immunoglobulins and parameters of redox homeostasis. Cortisol, a specific biomarker, can be determined in the hair, urine and faeces, while urine samples allow for the analysis of catecholamines as non-invasive markers of pig welfare.

Metabolic demands of modern hybrid sows have increased over the years, which increases the chance that sows enter a substantial negative energy balance (NEB) during lactation. This NEB can negatively impact reproductive outcome, which is especially evident in primiparous sows causing a reduced second parity reproductive performance. The negative effects of the lactational NEB on reproductive performance can be partly explained by the influence of the premating metabolic state, during and after lactation, on the development of follicles from which oocytes will give rise to the next litter. In addition, the degree and type of body tissue mobilization during lactation that is, adipose tissue or lean mass, highly influences follicular development. Research investigating relations between the premating metabolic state and follicular and oocyte competence in modern hybrid sows, which experience higher metabolic demands during lactation, is limited. In this review we summarize current knowledge of physiological relations between the metabolic state of modern hybrid sows and follicular developmental competence. In addition, we discuss potential implications of these relations for current sow management strategies.

Litter size in modern sows has been dramatically improved in recent decades by genetic selection for highly prolific sows. In a tropical environment, the average total number of pigs born and number born alive are reported to be as high as 17.2 and 15.1 piglets per litter, respectively. Therefore, the new production target in many herds aims to achieve 30-40 pigs weaned per sow per year. Despite the improvements in litter size, the mean preweaning piglet mortality rate remains high, at between 10% and 20%, in major pig-producing countries. A sufficient daily feed intake by lactating sows is important for high milk production as sow milk yield is the limiting factor for piglet growth rate. Heat stress, which can occur when the ambient temperatures rise above 25°C, is one of the major problems that decreases daily feed intake and compromises milk yield. Therefore, it is necessary to encourage high feed intakes to achieve high milk yields. However, even with high nutrient intakes, productivity can be constrained by intestinal barrier function, limiting digestive ability, and allowing potential pathogens and/or toxins to become systemic. This is more likely greater under tropical conditions because of heat stress, exacerbating sow fertility problems. Underpinning sow herd performance, including responses to environmental challenges, is the selection of appropriate gilts, for example, selection and management for early puberty, thus presumably selecting the more fertile gilts and the correct management of lactation to improve the number of weaned piglets are some of the key factors for future reproductive efficiency of the farm under tropical conditions.

Selection for hyper-prolific sows has increased the litter size by more than 50% during the last three decades, and proper nutrition of the female pigs has concomitantly changed due to improved prolificacy and productivity of gilts and sows. This review summarizes the physiological characteristics and nutritional challenges associated with feeding modern hyper-prolific sows during the gilt rearing period and during gestation, transition, and lactation periods. The review presents up-to-date knowledge of the energy and lysine requirements of female pigs and focuses on how nutrition may increase fat gain and limit protein and weight gain in the gilt rearing period and in early and mid-gestation. In late gestation, fetal and mammary growth should be considered and during the transition, colostrum yield and farrowing performance need to be optimized. Finally, milk production should be optimized and body mobilization should be minimized in the lactation period to achieve high feed efficiency in hyper-prolific sows.

Homeostasis of gut microbiota is a critical contributor to growth and health in weaned piglets. Fish oil is widely reported to benefit health of mammals including preventing intestinal dysfunction, yet its protective effect during suckling-to-weaning transition in piglets remains undetermined. Low (30 g/d) and high (60 g/d) doses of n-3-rich fish oil were supplemented in sows from late gestation to lactation. Serum indicators and gut microbiota were determined to evaluate the effects of maternal fish oil on growth performance, immunity and diarrhea of piglets. DHA and EPA in the colostrum as well as serum of suckling and 1-week post-wean piglets were significantly and linearly increased by maternal supplementation of fish oil (P < 0.05). IGF1 and T3 in nursing and weaned piglets were significantly elevated by maternal fish oil (P < 0.05), and the increase of IGF1 was concerning the dosage of fish oil. Colostrum IgG, plasma IgG, IgM in suckling piglets, IgG, IgM and IgA in weaned piglets were significantly increase as maternal replenishment of fish oil increased (P < 0.05). Additionally, cortisol was significantly reduced in weaned pigs (P < 0.05), regardless of dosage. 16S rRNA sequencing revealed that α-diversity of fecal microbiota in nursery piglets, and fecal Lactobacillus genus, positively correlated with post-weaning IgA, was significantly increased by high dosage. Collectively, maternal fish oil during late pregnancy and lactation significantly promoted growth, enhanced immunity, and reduced post-weaning diarrhea in piglets, therefore facilitated suckling-to-weaning transition in piglets, which may be partially due to the altered gut microbial community.

microRNAs (miRNAs) are well known to be important in mammalian female fertility. However, the genetic regulation of miRNAs associated with female fertility remains largely unknown. Here, we report that two single-nucleotide variants (SNVs) in the miR-23a promoter strongly influence miR-23a transcription and function in granulosa cell (GC) apoptosis. Two novel SNVs, g.-283G>C and g.-271C>T, were detected in the porcine miR-23a promoter by pooled-DNA sequencing. Furthermore, SNVs in the promoter region influenced miR-23a transcription in porcine GCs by altering its promoter activity. Functionally, SNVs in the promoter strongly influenced miR-23a regulation of early apoptosis in porcine GCs cultured in vitro. In addition, a preliminary association analysis showed that the combined genotypes of the two SNVs, rather than a single SNV, were tentatively associated with sow fertility traits in a Large White population. Overall, our findings suggest that the SNVs g.-283G>C and g.-271C>T in the miR-23a promoter are causal variants affecting GC apoptosis and miR-23a may be a potential small-molecule nonhormonal drug for regulating female fertility.

Animal welfare is of increasing public interest, and the pig industry in particular is subject to much attention. The aim of this study was to identify and compare areas of animal welfare concern for commercial pigs in four different production stages: (1) gestating sows and gilts; (2) lactating sows; (3) piglets; and (4) weaner-to-finisher pigs. One welfare assessment protocol was developed for each stage, comprising of between 20 and 29 animal welfare measures including resource-, management- and animal-based ones. Twenty-one Danish farms were visited once between January 2015 and February 2016 in a cross-sectional design. Experts (n = 26; advisors, scientists and animal welfare controllers) assessed the severity of the outcome measures. This was combined with the on-farm prevalence of each measure and the outcome was used to calculate areas of concern, defined as measures where the median of all farms fell below the value defined as 'acceptable welfare.' Between five and seven areas of concern were identified for each production stage. With the exception of carpal lesions in piglets, all areas of concern were resource- and management-based and mainly related to housing, with inadequate available space and the floor type in the resting area being overall concerns across all production stages. This means that animal-based measures were largely unaffected by perceived deficits in resource-based measures. Great variation existed for the majority of measures identified as areas of concern, demonstrating that achieving a high welfare score is possible in the Danish system.

Abortion in sows or the expulsion of foetuses between days 35 and 109 of gestation results in major financial losses. Abortion is the result of maternal failure due to factors interfering with either the endocrine control of pregnancy or causing endometrial damage. In addition, causes of fetal origin, due to infections with a special affinity for the fetus, can also lead to abortion. Many different non-infectious and infectious factors may be involved. Non-infectious risk factors include inappropriate ambient temperature, seasonal effects, different stress factors, and toxic substances. Microorganisms that may cause abortion can be classified as facultative pathogenic and specific pathogenic microorganisms. The first category includes mostly bacteria that are endemic in many pig farms and that are normally harmless commensals. They can cause abortion only in case of decreased immunity or other predisposing factors. Different specific pathogenic microorganisms, especially viruses and bacteria, can cause fetal death and abortion. Some may have a special affinity for the reproductive tract and the foetuses (e.g. Aujeszky's disease virus, parvovirus, Leptospira sp.), while others may cause clinical disease or fever in sows (e.g. swine influenza viruses, Erysipelothrix rhusiopathiae), subsequently leading to abortion. Diagnosis of fetal death and abortion is challenging due to the broad array of processes that may be involved, and the fact that the inciting cause may happen well in advance of the abortion. The diagnostic process should start with a thorough evaluation of the clinical problem and the farm. In case an infectious cause is suspected, proper samples should be collected, preferably from different sows and foetuses, for the detection of specific pathogens. Prevention of abortion mainly relies on the implementation of good management practices, hygiene and biosecurity measures, and for some pathogens also on vaccination.

Genetic selection has resulted in a considerable increase in litter size, paralleled by an increase in farrowing duration and perinatal mortality. This paper describes some of the physiological changes around farrowing, and how genetic trends and sow management interact with these. Compromised farrowing can be related to nutritional management, or to housing conditions and handling of periparturient sows. Transition diets, for example, can be formulated to support calcium homeostasis and alleviate constipation. The opportunity to express natural behaviours and minimize stress around farrowing can further optimize farrowing conditions and reduce piglet mortality. Loose farrowing systems are part of the answer to the challenges around farrowing; however, current systems do not perform consistently. In conclusion, increased farrowing duration and increased perinatal mortality may to some extent be inevitably related to trends in pig production; however, they can be improved by nutritional measures, housing conditions and farrowing management.

The environment in sow houses is the key to restrict sow production due to its significant effect on sow growth and reproduction. In this article, the effect of light, thermal and light-thermal-humidity environment in sow houses is systematically reviewed for sow reproduction and welfare according to the existing literature. The results show the optimal ambient temperature range for sows is approximately 16-22°C, as well as the lowest and highest critical temperature are 16 and 27°C respectively. Meanwhile, the increase of relative humidity from 50% to 70% is equivalent to the increase of effective temperature by 0.9°C in sow houses. In addition, the evaluation indexes are summarized to the future research direction is proposed according to the reviewed results. It can be concluded that the current research mainly focuses on the effect mechanism of light-thermal-humidity environment on sow growth and reproductive performance, as well as the optimal regulation range of light-thermal-humidity environment. In particular, it is a popular topic to further study the effect of light-thermal-humidity environment on the genetic material of sows, as well as metabolic parameters and body composition of their offspring. The above conclusions can contribute to guiding the regulation of light-thermal-humidity environment in sow houses and improving the sow welfare.

The core body temperature serves as a pivotal physiological metric indicative of sow health, with rectal thermometry prevailing as a prevalent method for estimating core body temperature within sow farms. Nonetheless, employing contact thermometers for rectal temperature measurement proves to be time-intensive, labor-demanding, and hygienically suboptimal. Addressing the issues of minimal automation and temperature measurement accuracy in sow temperature monitoring, this study introduces an automatic temperature monitoring method for sows, utilizing a segmentation network amalgamating YOLOv5s and DeepLabv3+, complemented by an adaptive genetic algorithm-random forest (AGA-RF) regression algorithm. In developing the sow vulva segmenter, YOLOv5s was synergized with DeepLabv3+, and the CBAM attention mechanism and MobileNetv2 network were incorporated to ensure precise localization and expedited segmentation of the vulva region. Within the temperature prediction module, an optimized regression algorithm derived from the random forest algorithm facilitated the construction of a temperature inversion model, predicated upon environmental parameters and vulva temperature, for the rectal temperature prediction in sows. Testing revealed that vulvar segmentation IoU was 91.50%, while the predicted MSE, MAE, and R2 for rectal temperature were 0.114 °C, 0.191 °C, and 0.845, respectively. The automatic sow temperature monitoring method proposed herein demonstrates substantial reliability and practicality, facilitating an autonomous sow temperature monitoring.

Sow farrowing is an important part of pig breeding. The accurate and effective early warning of sow behaviors in farrowing helps breeders determine whether it is necessary to intervene with the farrowing process in a timely manner and is thus essential for increasing the survival rate of piglets and the profits of pig farms. For large pig farms, human resources and costs are important considerations in farrowing supervision. The existing method, which uses cloud computing-based deep learning to supervise sow farrowing, has a high equipment cost and requires uploading all data to a cloud data center, requiring a large network bandwidth. Thus, this paper proposes an approach for the early warning and supervision of farrowing behaviors based on the embedded artificial-intelligence computing platform (NVIDIA Jetson Nano). This lightweight deep learning method allows the rapid processing of sow farrowing video data at edge nodes, reducing the bandwidth requirement and ensuring data security in the network transmission. Experiments indicated that after the model was migrated to the Jetson Nano, its precision of sow postures and newborn piglets detection was 93.5%, with a recall rate of 92.2%, and the detection speed was increased by a factor larger than 8. The early warning of 18 approaching farrowing (5 h) sows were tested. The mean error of warning was 1.02 h.

BACKGROUND: In most regions around the globe, average dietary calcium intake is relatively low. Consumers increasingly supplement calcium with milk. However, commercial high-calcium milk has the problem of low calcium bioaccessibility. This study was to explore calcium fortified milk containing calcium carbonate (CaCO3 ) loaded solid-in-oil-in-water emulsion as a potential novel calcium fortified milk with higher calcium bioaccessibility. RESULTS: The CaCO3 loaded solid-in-oil-in-water (S/O/W) emulsion with good physical stability (zeta potential -33.34 ± 0.96 mV, mean particle size 4.49 ± 0.02 µm) and high calcium bioaccessibility (32.34%) was prepared when the concentration of xanthan gum was 4 g L-1 . Furthermore, the physicochemical properties and gastrointestinal fate of calcium fortified milk (calcium contents, 1.25 mg mL-1 , 1.35 mg mL-1 , and 1.45 mg mL-1 ) with different proportions of CaCO3 loaded S/O/W emulsion and pure milk were investigated. The calcium fortified milk (calcium content, 1.25 mg mL-1 ) with a small amount of CaCO3 loaded S/O/W emulsion did not significantly affect the physicochemical properties of pure milk and had similar rheological properties and higher calcium bioaccessibility to commercial high-calcium milk. Excessive calcium ion (Ca2+ ) weakens the electrostatic interaction of milk sample system and causes aggregation of colloidal particles, which was attributed to more insoluble calcium soap formation. CONCLUSION: This study showed that the S/O/W emulsion delivery system improved the dispersion stability and bioaccessibility of CaCO3 . These findings contribute to the development of calcium fortified milk with improved physicochemical properties and higher calcium bioaccessibility. © 2023 Society of Chemical Industry.
