The aim of this study was to assess shelf life and nutritional value of apple juice, including the content of bioactive compounds, after pulsed electric field (PEF) treatment, taking into account different number of cycles: 4, 6, 8 (total 200, 300, and 400 pulses, respectively). Determination of vitamin C and polyphenols concentration, antioxidant activity as well as microbiological analysis were conducted immediately after PEF process and after 24, 48 and 72 h of storage. The results showed that PEF did not affect the content of bioactive compounds. PEF-treated juice did not show changes in the amount of vitamin C and total polyphenols during the storage for 72 h under refrigeration. PEF treatment was effective method for inactivation of a wide range of most common food spoilage microorganisms. PEF process can be used as an effective method of food preservation, allowing prolongation of shelf life and protection of nutritional value. This brings new opportunities for obtaining safe, healthy and nutritious food.

In Europe, there are no legal regulations specifying maximum allowable limits for pathogenic bacteria or fungi and yeasts in dog food. For proximate composition, the European Pet Food Industry Federation (FEDIAF) nutritional guidelines provide minimum recommended levels for protein and fat only, not for other ingredients and no safe maximum levels. Therefore, the aim of this study was to evaluate the microbiological safety of 35 dry dog foods, taking into account the division into foods with grains as the main plant ingredient and those described as grain-free. We assumed that grain-included foods are more susceptible to the presence of the total number of aerobic bacteria. This parameter is an essential, hygienic criterion informing about the microbiological safety of the pet food. It also inform about the microbiological quality of the food ingredients used, the effectiveness of decontamination during the production process, sanitary and hygienic conditions during the acquisition, processing and marketing of pet food and its components. In the case of macronutrients, the results in some cases were multiples of the minimum recommended levels. The most important microorganisms that presence was found in the analyzed dog foods were indicator bacteria (E. coli and coliform bacteria, Clostridium perfringens), whose presence in feed constitutes microbiological contamination. They inform about sanitary and hygienic conditions during the production and storage of the pet food. The current guidelines recommend microbiological testing of food for the presence of Salmonella bacilli as the basic indicator for assessing the sanitary quality. No Salmonella spp. was detected in any of the foods. The remaining analyzed bacteria (Proteus spp., Enterococcus spp., Staphylococcus spp.) as well as molds and yeasts, were present in both grain-included and grain-free foods. The obtained results showed that in terms of microbiological safety, grain-included foods come out worse, because microorganisms were detected more frequently in this type of dry dog food.

Keeping horses in good condition requires providing them with living conditions that meet welfare requirements. These animals should be accommodated with suitable space, access to high nutritional fodder and water, and a suitable microclimate in their shelters. When it comes to the environment in the stables, a serious problem is created by particulate matter (PM), which consists of bacteria. PM concentration may be responsible for developing multiple lower respiratory tract diseases in horses, including allergies and recurrent airway obstruction (RAO). In turn, these ailments may lead to decreasing equine physical and mental fitness. Additionally, people who spend time in the stables are exposed to the same harmful factors. The study was conducted in Udórz Stud Farm located in the southern region of Poland. The study was carried out in 2 different types of stables: 3 runners (a type of stable where horses are housed together and occasionally linked up, e.g., for feeding or grooming) and 2 box stables. The research continued for 2 years and the samples were collected in each season. The bioaerosol samples were collected using a six-stage Andersen-Graseby cascade impactor to assess size distribution and concentrations of airborne bacteria. PM concentration was analyzed using the DustTrak™ II Aerosol Monitor 8530, while microclimate parameters were measured using the Kestrel 5000 Weather Meter. There are almost no studies concerning size distribution of airborne bacteria, individual PM fractions, and the impact of everyday handling on the changes in the bioaerosol and PM concentration. This preliminary study provided basic information on this subject. We have revealed a strong correlation between high PM and bacterial aerosol concentrations. Higher contamination levels were recorded in runners, as compared to box stables. The highest bacterial aerosol level was detected in the spring. The analysis of the fractions of the bacterial aerosol in the stables indicated the highest share of ultra-fine fraction (0.65-2.1 µm), while respirable fraction (below 4.7 µm) exceeded 75%. It was established that the concentration of the bacterial aerosol inside the stables was many times higher than outside. It depended significantly on everyday activities undertaken in the stables, like feeding or cleaning. Taking the above into account, a different cleaning system should be developed (a wet cleaning system, with the use of water) and excrement should be removed more frequently.

Due to the dynamic development of industry, related to the processing of plant materials and a subsequent significant increase in the number of employees working in this kind of industry, the indoor air quality is of great importance for the human health. The premises of plants processing plant materials are a specific environment, related to exposure to biological agents. The major sources of microbial contamination of premises are employees' activities and the operation of devices used in the production process, quality of plant materials, technological processes, construction materials, ventilation (air-conditioning) systems, and outdoor air. Biological agents (primarily bacteria and fungi) transported in the air can cause numerous adverse health outcomes in exposed workers.
