RESUMO

The aim of this study was to determine effects of parity (primiparous vs. multiparous), seasonal heat stress at calving (summer vs. winter), and time postpartum on some parameters associated with colostrum quality in Holstein cows reared in the Sonoran Desert ecosystem. Forty-seven cows (11 primiparous and 36 multiparous) expected to calve during summer, and 46 cows during winter (14 primiparous and 32 multiparous) were randomly selected. Management and feeding before and after parturition were similar for cows in both seasons. After parturition, colostrum from all cows was evaluated for volume, weight, temperature, density, and content of fat, protein, solids non-fat (SNF), and immunoglobulins (IGG). Data were analyzed with a model that included effects of parity status, calving season, and time postpartum, as well as all interactions. Colostrum produced in summer was warmer (P < 0.01) by almost 6 °C than winter colostrum, while colostrum from multiparous was warmer (P = 0.02) by 1.2 °C than that produced by primiparous cows. Colostrum volume and weight were not impacted by parity, calving season or time postpartum. Density, protein, and SNF content in colostrum were higher (P < 0.01) in multiparous vs. primiparous cows, as well as at parturition (0 h postpartum) than at 12 h postpartum (P < 0.01). At calving (0 h), spring colostrum had higher fat content (P < 0.01) and lower (P < 0.01) IGG concentration than that collected in summer, and no difference (P > 0.05) between seasons was observed for these components at 12 h postpartum. Multiparous cows produced colostrum with higher (P < 0.01) IGG concentrations than primiparous cows. In conclusion, only 0-h colostrum and that from multiparous cows was categorized as "Excellent," meanwhile the colostrum produced under summer heat stress was characterized as "Good" with reduced fat content. While the lacteal secretion collected at 12 post-partum still classified as colostrum, substantially lower contents of IGG, protein, fat, and SNF decreased its classification to "Poor" from the classification of "Excellent" at 0 h postpartum.

Two hundred Holstein heifers were divided by hair coat color in black (n1 = 60), white (n2 = 62), and mixed (n3 = 78) to accomplish two objectives: (1) to compare physiological variables using an analysis of variance, and (2) to construct regression equations to predict rectal temperature. In each heifer, rectal temperature (RT), respiration frequency (RF), and body surface temperatures (obtained with infrared thermography in eye, nose, forehead, head, neck, ear, shoulder, flank, belly, leg, loin, rump, and vulva) were measured. Black heifers had more RF and RT (P < 0.01) than mixed and white coat heifers; white heifers had similar RT than mixed color heifers, but they exhibited less RF (P < 0.05). In general, black and mixed coat color heifers had higher BST (P < 0.01) than white heifers in the majority of the anatomical regions measured. For black coat heifers, the best regression model to predict RT included three predictor variables: [RT = 35.59 - 0.013 (RH) + 0.045 (RF) + 0.019 (TEar); R2 = 71%]. For white coat heifers, the best model included two predictor variables: [RT = 35.29 + 0.035 (RF) + 0.033 (TForehead); R2 = 71%]; and for mixed coat color heifers, the best model included two predictor variables: [RT = 35.07 + 0.022 (RF) + 0.038 (THead); R2 = 44%]. Heifers with dark hair coat color showed higher physiological constants than white heifers; the prediction of rectal temperature was more precise in heifers with well-defined hair coat color. Physiological and climatic variables, along with infrared thermography, represent an appropriate combination to predict rectal temperature in Holstein heifers with predominant white or black hair coat color.

This study aimed to determine whether cows detected as tuberculosis (bTB) reactors and seropositive to brucellosis (bBR), as well as co-positive to bBR and bTB (bBR-bTB) and with a complete lactation before slaughter, were associated with reduced milk production and fertility. A total of 8068 productive and reproductive records of high-yielding Holstein cows from a single large dairy herd with a high prevalence of bTB and bBR were collected from 2012 to 2015. Lactation derived either from calving (n = 6019) or hormonally induced lactation (n = 2049), and all cows received growth hormone throughout lactation. For cows not induced into lactation, pregnancy rate to first service for healthy cows (C; 26.6%) was higher (P < 0.01) than bBR (15.2%), bTB (15.8%), and bBR-bTB (1.3%) cows. For induced cows, pregnancy rate to first service did not differ significantly among C, bBR, and bTB (14.5-17.3%) cows, but the percentage success of first service was extremely low (1.3%; P < 0.01) in bBR-bTB cows. Services per pregnancy (only pregnant cows) were lowest for C (3.3 ± 2.9; P < 0.01) and highest (6.4 ± 3.4) for bBR-bTB non-induced cows. This variable was lowest for C (2.9 ± 2.5; P < 0.01) and highest for bBR-bTB non-induced cows (6.3 ± 3.1). Pregnancy rate to all services did not differed for C (79.5%), bBR (76.7%), and bTB (75.9%) but was lower (58.9%; P < 0.01) for bBR-bTB non-induced cows. For induced cows this variable was highest for bBR (53.3%) and lowest for bBR-bTB (34.1%; P < 0.01) non-induced cows. 305-d milk production was increased by 4%, and total milk yield by 7% in TB-positive cows compared to that of the negative cows non-induced hormonally into lactation. This study showed the negative impact of the co-positivity for bTB and bBR on the reproductive efficiency of Holstein cows, although positive bTB and bBR tests enhanced milk yield.

The aim of this study was to evaluate the effect of seasonal heat stress (HS) on productive performance, physiological responses, metabolism, and hematological profile of hair breed male lambs finished in feedlot. Twenty Dorper × Katahdin male lambs (body weight = 34.6 ± 1.4 kg and age = 4.5 months) were housed in individual pens and exposed to environmental conditions of summer HS (n = 10, temperature = 28.3 ± 4.0 °C and THI = 77.2 ± 5.4 units) or winter thermoneutrality (n = 10, temperature = 19.2 ± 2.6 °C and THI = 64.0 ± 3.0 units). Each season, a 30-day feeding test was conducted to measure study variables. Compared to thermoneutral lambs, heat-stressed lambs had lower (P < 0.01) growth rate and feed efficiency without changing dry matter intake. Heat-stressed lambs presented higher (P < 0.01) rectal temperature and respiratory rate through the daytime than termoneutral lambs. On most sampling days, summer HS caused lower (P < 0.01) serum concentrations of glucose, cholesterol, total protein, urea, potassium, and thyroid hormones, but higher (P < 0.01) serum triglyceride and chlorine values. Overall serum concentrations of cortisol and insulin were unaffected by summer HS. The blood of heat-stressed lambs showed lower (P ≤ 0.03) erythrocyte and platelet counts, hemoglobin, and hematocrit, but higher (P ≤ 0.03) erythrocyte size and leucocyte count than the blood of thermoneutral lambs. In conclusion, hair breed male lambs in response to chronic conditions of summer HS had slow growth but avoided hyperthermia due to the activation of physiological, metabolic and endocrine adjustments.

A total of 1338 high-yielding cows with five lactations from a large well-managed commercial dairy operation in a hot environment of northern Mexico were used to evaluate milk yield and reproductive performance of cows undergoing unplanned extended lactations (EL; > 450 days). The null hypothesis that cumulative milk yield during five consecutive lactations is the same in cows not having unplanned EL and cows with several EL was tested. All EL resulted from cows failing to become pregnant with ≥ 4 services. Cows were allocated to 1 of 6 groups according to the number of EL (EL0 for cows with no EL to EL5 for cows with 5 EL). Cumulative milk yield was highest (P < 0.01) for EL5 cows (95,499 kg) and lowest for EL0 cows (56,236 kg). Likewise, cumulative days in milk were greatest (P < 0.01) in EL5 (2968 days) and lowest in EL0 (1857 days) cows. Mean milk yield per lactation increased linearly with the increase in the number of extended lactations with a maximum of 19,099 kg of milk/lactation for EL5 cows. Mean daily milk yield/productive life was lowest (P < 0.01) for EL0 (30.2 kg) and highest for EL5 (32.1 kg). The percentage of days in milk relative to days from birth to the end of the fifth lactation was highest for EL5 (78.1%) and lowest for EL0 (59.6%), with EL2 to EL4 cows intermediate. Length of calving interval was longest (P < 0.01) for EL5 (24.7 months) and shortest for EL0 (15.5 months) cows. It was concluded that it is worthwhile maintaining high-yielding cows incapable to conceive before 230 days in milk because they did conceive again and produced considerable amounts of milk during their productive life, which substantially prolonged their permanence time in the herd.

Climate change is a major world-wide challenge to livestock production because food security is likely to be compromised by increased heat stress of the animals. The objective of this study was to characterize, using bioclimatic indexes, two livestock regions located in an arid zone of México, and to use this information to predict the impact of global warming on animal production systems of these regions located in the state of Baja California (México). A 5-year database (i.e., 2011 to 2015) consisting of about one million data points from two zones (i.e., coast, valley) from four meteorological stations in the north of Baja California were used. Bioclimatic indexes were constructed for the four types of livestock production systems most common in this region, being: dairy cattle, beef cattle, sheep, pigs. The temperature-humidity index (THI) thresholds used to classify heat stress were determined and scaled for each livestock species as: THIbeef and THIpig 74 units; THImilk 72 units; and THIsheep 23 units. Statistical differences between indices were detected (P < 0.01) during summer for the valley and coast zones as (THIbeef = 72.9 and 51.8; THImilk = 80.6 and 67.4; THIpigs = 83.9 and 65.2; THIsheep = 29.5 and 20.1 units). Coast zone weather did not suggest vulnerability of livestock production systems to heat stress at any time of the year, but heat stress risk during summer for valley zone dairy cattle, sheep and pigs was classified as severe, but lower for feedlot cattle. Prediction models showed significant adjustment just in the coastal zone for THImilk, THIsheep, and THIsheep, suggesting more impact of global warming during summer in the coastal zone. Use of management strategies to reduce heat load of domestic animals during summer in northern Baja California is essential to maintain their productivity, with more emphasis in the valley zone.

The main cause of death in newborn lambs is hypothermia, so is necessary to identify the factors affecting variations in body surface temperatures of sheep neonates because approximately 60% of their body heat losses occur through the skin. This study aimed to establish relationships among body surface thermography from different regions with rectal temperature (RT), birth weight (BW) and climatic variables in hair breed newborn lambs during early spring in an arid region. Data of body surface temperatures measured by infrared thermography (entire head, eye, muzzle, ear, entire body, shoulder, rump, loin, right flank, belly and leg), RT and BW were collected at 0, 12 and 24 h post-lambing in 85 lambs born in early spring. Relative humidity [RH], temperature [Te] and temperature-humidity index [THI] were also recorded. RT was not correlated with surface temperatures at 0 and 24 h, but it was at 12 h with all of them (0.36 ≤ r ≤ 0.44). BW and some surface temperatures were negatively correlated at 0 and 24 h (-0.24 ≤ r ≤ -0.30), but positively at 12 h (0.25 ≤ r ≤ 0.27). All surface temperatures were positively correlated (0.51 ≤ r ≤ 0.85) with Te and THI in the three sampling times. Principal component (PC) analysis showed that PC1 explained the majority of the variance (71-72%), followed by PC2 (8-9%) at 0, 12 and 24 h. Body surface temperatures increased as Te and THI also increased, but decreased with the increase in HR. In conclusion, under early spring environment (predominantly cold), the variations in body surface temperatures of hair sheep neonates were more closely related to climatic variables than to RT and BW. Thermography proved to be an effective tool to determine body heat loss by radiation in skin of neonate lambs.

Vulnerable animals to heat stress have been described as ones with dark or black hides due to increasing absorption of solar radiation. The effect of coat color in pluriparous contemporary Holstein cows in a hot environment (mean annual temperature 24.6 °C), on body surface temperature (infrared thermography), physiological and hematological variables as well as milk yield and reproductive performance was assessed using 178 Holstein pluriparous cows (74 predominantly white and 104 predominantly black). Data were collected in the morning and afternoon in July (mean temperature-humidity index 82 units). Body condition score at mid-lactation (128 ±â€¯32 days in milk at the start of the experiment) was higher (P < 0.01) in predominantly white than in black cows (3.3 vs. 3.2). Respiration rate did not differ between groups (72 ±â€¯23 vs. 73 ±â€¯20 breaths/min for white and black cows, respectively, sampling time combined). In contrast, rectal temperature of black cows was 0.1 °C higher (P ≤ 0.01) than white cows, regardless of sampling time. The only significant hematologic change was a slight increase in mean corpuscular volume in black cows (54.7 fL, P < 0.01) compared to white cows (53.8 fL), but it remained within the reference range. Differences due to coat color did not alter body surface temperatures at any time of the day. Conception rates, services per conception, calving intervals and fetal losses were not associated with hair coat color, but cows with predominantly white coat produced 394 kg more (P < 0.01) fat-corrected milk in 305 days compared to cows with predominantly black coat. It was concluded that in this hot-arid environment with cows housed in facilities with extensive cooling, black hair coat moderately reduces 305-d milk yield without affecting milk composition, body surface temperature, and reproductive performance.

This study aimed to evaluate the effects of dietary supplementation of ferulic acid (FA) on reproductive tract weight (RTW), ovarian activity and serum concentrations of some metabolites and thyroid hormones of pre-pubertal hairbreed ewe lambs during the natural anestrous season. Twenty Dorper x Pelibuey crossbred ewe lambs (initial body weight = 28.5 ±â€¯0.5 kg and age = 5.0 mo) were fed a basal diet and assigned to two treatments (n = 10) under randomized complete block design: FA supplementation to dosages of 0 (control) or 300 mg of FA/d animal-1. Females were treated with FA during 34 d and then slaughtered to evaluate RTW and ovary. Blood samples were collected at days 1 and 34 to determine serum concentrations of metabolites (i.e. glucose, cholesterol, triglycerides, urea and total protein) and thyroid hormones. Final weight, dry matter intake, and serum concentrations of metabolites (except glucose) and thyroid hormones were unaltered by FA. Compared to control, FA-fed ewe lambs had lower (P = 0.05) serum glucose level but higher (P ≤ 0.05) RTW, ovarian mass, number of larger follicles and corpus luteum (CL). While percentage of ewe lambs with small follicles and number of small follicles per female did not vary, percentage of ewe lambs with large follicles and CL increased (P = 0.02) with FA. In conclusion, FA supplementation improves the reproductive tract development and ovarian activity of pre-pubertal hairbreed ewe lambs during the natural anestrous season. An improvement in functionality of the glucose-insulin system could be related with this benefic effect of FA.

The aims of the present study were to investigate (1) the risk factors that influence the occurrence of clinical ketosis (CK; blood ß-hydroxybutyrate > 3.0 mmol/L) and (2) to determine the influence of subclinical ketosis (SCK; 1.2 ≤ ß-hydroxybutyrate ≤ 2.9 mmol/L) and CK on reproductive performance and milk yield in high-yielding Holstein cows in a hot environment. Cows (n = 345) were blood sampled from 6 to 15 days postpartum for ß-hydroxybutyrate (BHB) determination with a hand-held meter. Cows calving in spring had 3.7 increased odds of having CK (20.7% incidence) than cows calving in summer (3.9% incidence) and autumn (9.4% incidence). Temperature-humidity index < 83 was associated with 1.6 times higher risk for CK compared with cows calving in warmer days. First-service conception rate was 12 and 16 percentage point higher (P < 0.05) in nonketotic cows compared with cows with SCK and CK, respectively. Actual 305-day milk yields for healthy, SCK, and CK cows were 9991 ± 1411, 10,123 ± 1442, and 10,386 ± 1435 kg (mean ± SD), respectively, with no difference (P > 0.05) between groups. In conclusion, this study documented that ketosis was seasonal with lower incidence of this metabolic disease during hot seasons and with increased ambient temperature at calving. Also, 305-day milk yield of Holstein cows was not related to blood BHB content early in lactation in this hot environment. However, elevated circulating BHB was negatively associated with conception rate at first service and fetal losses.

Beta-adrenergic agonists (ß-AA) have been shown to positively impact finishing performance and some carcass traits of feedlot cattle. Our objective was to evaluate the efficacy of a ß-AA on the basis of zilpaterol hydrochloride (Grofactor, Laboratorios Virbac México, Guadalajara, Mexico) on growth and DMI, carcass characteristics, and meat quality of finishing bulls. Forty-five bulls (75% 25% ) initially weighing 448.7 ± 2.58 kg were blocked by BW and randomly assigned to 1 of 3 diets, using pens of 3 animals, in a randomized complete block design: 1) daily feeding without ß-AA in the basal diet (Control), 2) daily feeding with 0.15 mg/kg BW of Grofactor added to the basal diet (ZHG), or 3) daily feeding with 0.15 mg/kg BW of Zilmax (MSD Salud Animal México, Mexico City, Mexico) added to the basal diet (ZHZ). The duration of the feeding period was 30 d with a subsequent 4-d withdrawal period. Compared with Control bulls, the group fed ZHG had a 12% better ( < 0.025) G:F ratio, and their final BW ( 0.094) and ADG ( 0.084) tended to be enhanced. Feedlot performance of ZHG and ZHZ bulls was similar, although the DMI was ∼4% lower ( 0.05) in ZHG bulls vs. the ZHZ and Control groups. The HCW ( 0.001) and dressing percentage ( 0.015) were higher by 20 kg and 3%, respectively, in ZHG bulls vs. Control bulls. The KPH fat was lower ( 0.007) in bulls fed ZHG than in nonsupplemented bulls, but other carcass characteristics were not different in the ZHG and ZHZ bulls, and noncarcass components were not affected by ZHG or ZHZ supplementation. At 48 h postmortem, ZHG bulls had lower ( 0.007) water holding capacity and trended toward ( 0.06) increased chroma and reduced pH ( 0.09) compared to Control bulls. However, compared to ZHZ bulls, ZHG bulls had higher ( 0.02) chroma and a trend ( 0.08) toward increased hue angle. At 14 d postmortem, meat quality variables did not differ between the 3 groups of bulls. Supplementation of ZH Grofactor improved feedlot performance and some carcass characteristics of finishing bulls without affecting meat quality. The effects of Grofactor on feedlot performance, carcass traits, and meat quality were similar to those of Zilmax.

Twenty Dorper × Pelibuey primiparous ewes were used to evaluate effects of seasonal ambient heat stress (i.e., spring vs. summer) on physiological and metabolic responses under production conditions in an arid region. Ten ewes experiencing summer heat stress (i.e., temperature = 34.8 ± 4.6 °C; THI = 81.6 ± 3.2 units) and 10 under spring thermoneutral conditions (temperature = 24.2 ± 5.4 °C; THI = 68.0 ± 4.8 units) were corralled together to measure rectal temperature, respiratory frequency, and skin temperatures at 0600, 1200, 1800, and 2400 h on four occasions over 40 days. Blood metabolite and electrolyte concentrations were also measured at 0600 and 1800 hours. Data were analyzed with a completely randomized design using repeated measurements in time. Rectal and skin temperatures, as well as respiratory frequency, were higher (P < 0.01) in summer than spring at all measured days. Blood serum glucose, cholesterol, triglycerides, and chlorine concentrations were lower (P < 0.01) in summer than spring at 0800 and 1800 hours. In contrast, summer heat stress increased (P < 0.01) blood urea and potassium concentrations at 0800 and 1800 hours. Compared with spring thermoneutral conditions, summer heat stress affected the physiological and metabolic status of hair breed ewes in an arid region, which included blood metabolite and electrolyte adjustments to efficiently cope with summer heat stress.

RESUMO

The aim of the present study was to evaluate the impact of zilpaterol hydrochloride (ZH; 0 or 10 mg/lamb daily) and soybean oil (SBO; 0 or 6%) supplementation on feedlot performance, carcass traits, and wholesale cut yield of 32 Dorper × Pelibuey ewe lambs (30.55 ± 2. 57 kg of initial BW). Lambs were blocked by BW and randomly assigned to treatments under a randomized complete block design with a 2 × 2 factorial arrangement. After a 34-d feeding period, all ewes were slaughtered. No ZH × SBO interactions were detected (P ≥ 0.11) for the variables evaluated. In the overall feeding period and first 17 d of experiment, feedlot performance was not affected (P ≥ 0.26) by ZH supplementation, but from d 18 to 34, ZH increased (P ≤ 0.03) total gain, ADG, and G:F without affecting DMI (P = 0.58). Also, ZH increased (P ≤ 0.02) HCW, cold carcass weight, dressing percentage, LM area, and leg perimeter. Lung weight as percentage of final BW decreased (P = 0.05) whereas other noncarcass components and wholesale cut yields were not affected (P ≥ 0.06) by ZH supplementation. Inclusion of SBO did not affect (P ≥ 0.08) feedlot performance or wholesale cut yields. The LM pH at 24 h postmortem as well as liver and peritoneum percentages were decreased (P ≤ 0.05) by SBO supplementation, but no other carcass characteristics or noncarcass components were affected (P ≥ 0.08) by SBO. In conclusion, feedlot performance and carcass characteristics were not altered by the interaction of ZH × SBO. However, ZH alone increased the growth of ewes during the last 17 d of the feeding period. Likewise, carcass characteristics of economic importance (i.e., HCW, dressing percentage, LM area, and leg perimeter) increased with ZH supplementation. In general, feedlot performance, carcass traits, and wholesale cut yields were not altered by including 6% of SBO in the finishing diet of ewe lambs.

The aim of this study was to evaluate effects of free ferulic acid (FA) supplementation on productive performance, some blood metabolite concentrations, and carcass characteristics of ewe lambs finished in a feedlot. Dorper×Pelibuey ewe lambs (n=20; BW=28.5±0.5 kg; age=5 mo) were individually housed in pens and assigned under a randomized complete block design to the following dietary treatments (n=10): daily feeding without (control) or with 300 mg of FA/animal. The feedlot feeding period lasted 34 d and then all ewe lambs were slaughtered. Free FA did not affect (P≥0.16) BW gain, ADG, DMI, and G:F during the first 17 d, but BW gain (P=0.10) and ADG (P=0.10) tended to decrease for FA from d 17 to 34 and from d 1 to 34 without affecting (P≥0.16) DMI and G:F in ewe lambs. Serum concentrations of glucose, cholesterol, triglyceride, total protein, and urea were not affected (P>0.05) by FA at d 1, 17, and 34 of the feeding period. Carcass characteristics were not affected (P>0.05) by FA. Stomach percentage tended (P=0.08) to decrease and leg yields increased (P=0.02) for FA. Other noncarcass components and wholesale cut yields were not affected (P>0.10) by FA. In conclusion, FA supplementation did not improve productive performance, metabolic status, and carcass characteristics of ewe lambs receiving a feedlot finishing diet.

Forty Dorper × Pelibuey ram lambs initially weighing 31.7 ± 2.30 kg were stratified by BW and randomly assigned to treatments under a completely randomized design with a 2 × 2 factorial arrangement of treatments to evaluate effects of zilpaterol hydrochloride (ZH; 0 or 10 mg/lamb daily) and soybean oil (SBO; 0 or 6%) on feedlot performance, carcass characteristics, and wholesale cut yield of ram lambs under heat stress conditions. After a 34-d feeding period, all lambs were harvested. Climatic conditions were of moderate heat stress (average temperature 35.7°C) for lambs during the study. Interactions ZH × SBO were not observed (P ≥ 0.11) for any of the variables evaluated. During the first 17 d of experiment, ZH increased (P ≤ 0.05) BW, ADG, and G:F without affecting feed intake (P = 0.40), but from d 18 to 34 and the entire 34-d feeding period, feedlot performance was not affected (P = 0.18) by ZH. Also, ZH decreased KPH, dressing percent, LM area, LM pH at 24 h postmortem, and leg perimeter (P ≤ 0.04). Renal fat (P = 0.03) decreased with ZH while other noncarcass components were not affected (P ≥ 0.06) by ZH supplementation. Leg yield (P = 0.01) and plain loin (P = 0.04) decreased with ZH and yields of other wholesale cuts were not affected (P ≥ 0.10) by ZH. Feedlot performance (P ≥ 0.20) and wholesale cut yield (P ≥ 0.21) were not affected by SBO. Additionally, dressing percentage decreased (P < 0.01) with SBO while other carcass characteristics (P ≥ 0.12) were not affected by SBO. In conclusion, inclusion of both ZH and SBO in feedlot finishing diets did not improve feedlot performance, carcass characteristics, or wholesale cut yield of hair-breed ram lambs under moderate heat stress. Feedlot performance responded only to ZH and only during the first 17 d of the feeding period. In addition, some carcass characteristics of economic importance, such as dressing, LM area, and leg yield, were improved by ZH.

Response surface methodology was used to study the effect of flaxseed flour (FS) and tomato paste (TP) addition, from 0 to 10% and 0 to 20% respectively, on beef patty quality characteristics. The assessed quality characteristics were color (L, a, and b), pH and texture profile analysis (TPA). Also, sensory analysis was performed for the assessment of color, juiciness, firmness, and general acceptance. FS addition reduced L and a values and decreased weight loss of cooked products (P<0.05). An opposite effect was observed when TP was added (P<0.05). All TPA parameters decreased when percentages of FS and TP were increased in the formulation of beef patties. Furthermore, FS and TP addition adversely affected the sensory characteristics of the cooked product (P<0.05); nevertheless, all sensory characteristics evaluated had an acceptable score (>5.6). Thus FS and TP are ingredients that can be used in beef patty preparation.

In summers with severe hot environmental temperatures, thermoregulation is expected to be critical during the last third of gestation of hair ewes, and this effect can be overstated by suboptimal feeding conditions. Twenty-four multiparous hair sheep ewes with approximately 100d of pregnancy were randomly assigned to two treatments to evaluate the effects of nutritional restriction (NR) during late gestation on some serum metabolites, physiological variables, and thyroid hormone concentrations under intense heat load (maximum temperature 42-45°C). Treatments were as follows: (1) control, ewes fed free choice wheat straw plus a concentrate at a rate of 500g/d, and (2) nutritionally-restricted (NR) ewes, which were offered wheat straw only ad libitum. Body weight of NR ewes dropped 5.1kg (P<0.05), while control ewes gained 4.7kg during the study period. Rectal temperature was not affected (P>0.05) by feeding regime either in the morning or afternoon hours. Respiration rate was greater (P<0.05) in control ewes (20 and 40breaths/min higher in the day and night, respectively) on d 130 and 145 of pregnancy compared to NR ewes. Skin temperatures during the morning and afternoon were affected (P<0.05) by feeding regime at d 130 and 145 of pregnancy. In the morning, NR ewes presented greater (P<0.05) head and rump temperature at day 145 of gestation, and lower (P<0.05) udder temperatures at d 130 and 145 than control ewes. In the afternoon, skin temperatures of NR ewes were higher (P<0.05) in head and right flank on d 130 and 145 of pregnancy, and in udder at day 145 compared to control ewes. Serum glucose was higher (P<0.05) in NR ewes than control animals at day 145 of pregnancy. Serum cholesterol, triglyceride and thyroid hormones were not affected by nutritional restriction. Overall, it was found that nutritionally restricted ewes were less affected by intense heat loads than well-fed ewes, apparently due to the lower metabolic heat produced by this underfed animals. Also, it was apparent that the lower respiration rate of NR ewes was compensated by a greater body surface temperature.

Twelve Dorper × Pelibuey wether lambs (26.8 ± 1.6 kg initial BW, 5 mo of age) were used to evaluate effects of zilpaterol hydrochloride (ZH) on feedlot performance, and effects of ZH and ZH supplementation period (15 and 30 d) on nutrient intake and digestibility. Lambs were blocked by initial BW, and assigned randomly within BW blocks to 1 of 2 treatments: i) control (no ZH), and ii) supplemented with ZH (10 mg ZH/wether lamb daily). Measurements of intake and digestibility were performed on d 9 to 15 and 24 to 30. Feedlot performance data were analyzed as a randomized complete block design, and nutrient intake and digestibility data were analyzed as a randomized complete block design with a 2 × 2 factorial arrangement of treatments. Final BW, ADG, total BW gain, and G:F were greater (P ≤ 0.04) for ZH than for control lambs. No treatment × feeding duration interaction for nutrient intake and apparent total tract digestibility were observed (P > 0.05). Intake of DM, OM, CP, and GE were less (P ≤ 0.03) for ZH than for control. Lambs fed for 30 d had greater (P ≤ 0.04) NDF and GE intake compared with those fed for 15 d. Total tract digestibility of DM, OM, CP, EE, and ADF (P ≤ 0.03) was less for ZH than control. Furthermore, calculated DE, ME, and TDN intake decreased (P < 0.01) with ZH supplementation. Also, DM, CP, and ether extract(EE) digestibility were greater (P < 0.01) for 30 d than for 15 d. Additionally, greater (P ≤ 0.01) DE, ME, and TDN intake was observed for 30 d compared with 15 d. In conclusion, ZH supplementation of wether lambs consuming feedlot diets resulted in improved feedlot performance and reduced the intake and digestibility of some nutrients.

Heat stress generates a significant economic impact for the dairy industry in arid and semi-arid regions of the world, so that heat abatement is an important issue for dairy producers. The objective of this study was to evaluate effects of two short-term cooling periods on physiological and productive status of lactating Holstein cows during hot ambient temperatures. Thirty-nine multiparous cows were blocked by milk yield and assigned to one of three treatments including: control group (C), cows cooled before milking time (0500 and 1700 h daily, 1 h cooling); AM group, cows cooled at 1000 h and before milking (2 h cooling); and AM + PM group, cows cooled at 1100, 1500 and 2200 h, as well as before milking (4 h cooling). The cooling system was placed in the holding pen which the cows were moved through for cooling. Respiratory rate, and temperatures of thurl and right flank, were lower (P < 0.05) in cows from the AM + PM group than AM and C cows during the morning and afternoon. However, udder temperature was higher in the AM + PM group compared to AM and C groups during the afternoon, although lower than the AM group during the morning. Rectal temperature was similar in all groups. Thyroxin concentrations tended (P < 0.10) to be lower in AM + PM relative to the AM and C groups. The AM + PM group had higher (P < 0.05) milk production than C (18.70 vs. 17.43 kg, respectively), and AM + PM cows had a trend (P < 0.10) to increased milk energy output vs. the C and AM groups (13.75 vs. 13.18 and 13.15 Mcal, respectively). Protein and fat in milk, body condition score, glucose, cholesterol, triglycerides and triiodothyronine were similar among the groups. Four hours of cooling with spray and fans during severe summer temperatures only modestly improved milk yield of lactating Holstein cows.

Twenty-four Dorper × Pelibuey ewe lambs initially weighing 25.1 ± 0.6 kg were used in a 34-d feeding experiment and after slaughter to evaluate the effect of zilpaterol hydrochloride (ZH) on feedlot performance, carcass characteristics, and wholesale cut yield. Ewe lambs were individually housed in pens, blocked by initial BW, and assigned randomly within BW blocks to 1 of 2 treatments: 1) control (no ZH) and 2) supplemented with ZH (10 mg/ewe lamb daily) during 32-d and a 2-d withdrawal preslaughter period. Feeding ZH increased (P < 0.01) final BW, ADG, and G:F of ewe lambs, whereas feed intake was unaffected (P = 0.80). Hot and cold carcass weights, dressing percentage, and conformation score were improved (P < 0.001) when ZH was fed. Likewise, LM area was 3.7 ± 0.41 cm(2) larger (P < 0.001) for ZH than control ewe lambs. Feeding ZH did not affect (P ≥ 0.29) cooling loss, carcass length, fat thickness, or KPH. With exception of peritoneum (P < 0.001), head (P = 0.021), and neck (P < 0.001), ZH did not increase (P ≥ 0.12) noncarcass components or wholesale cut yield percentage. A trend to increase (P = 0.060) loin percentage from HCW was observed in lambs supplemented with ZH. In conclusion, feeding ZH to Dorper × Pelibuey ewe lambs improved feedlot performance and also some carcass traits (HCW, cool carcass weight, dressing percentage, and LM area) of economic importance; however, fat deposition was not affected by ZH.
