This study compared early weaning (EW; 150 days) with conventional weaning (CW; 240 days) in Nellore young bulls, evaluating performance, carcass characteristics, and meat quality. A total of 74 non-castrated male calves were divided into two weaning strategies: EW (n = 37) and CW (n = 37). During the growth phase, which lasted 454 ± 14 d for EW calves and 359 ± 16 d for CW calves, animals received a protein-energy supplement at a ratio of 5 g per kg of body weight while grazing Brachiaria brizantha cv. Marandu. The animals were managed for an 87d finishing phase in three collective feedlot pens, with a 3-week adaptation protocol, starting with corn silage to a concentrate ratio of 55:45 and reaching a ratio of 30:70 in the final diet. Body weight, average daily gain (ADG), dry matter intake (DMI), feed efficiency (FE), carcass characteristics, and meat quality were evaluated. The EW group was approximately 44 kg lighter than the CW at the time of conventional weaning (p < 0.001). However, this weight difference did not influence ADG, DMI, and FE in the finishing phase. No significant differences were observed in carcass characteristics such as yield percentage, loin area, subcutaneous fat thickness, and meat quality, except for the weight of primal cuts, which was greater in the CW group (p < 0.001). Thus, although calves weaned early are lighter throughout subsequent production phases than those weaned conventionally, performance, efficiency, carcass yield, and meat quality are not affected.

We aimed to evaluate the effects of early weaning on the productive and reproductive characteristics of Nelore heifer progeny. Ninety-five calves from primiparous (PRI) and multiparous (MUL) dams were assigned to one of two weaning strategies; 1) early weaning at 150 d (149â ±â 1.97) of age (EW; nâ =â 16 from PRI and 31 from MUL); or 2) conventional weaning at 240 d (247â ±â 2.41) of age (CW; 16 from PRI and 32 from MUL). All heifers received ~5 g/kg of body weight (BW) of creep-feed as fed from 90 d of age until weaning. After weaning, each group of heifers was transferred to a Brachiaria spp. paddock and received 5 g/kg of BW of a protein-energy supplement until 12 mo of age. Then, heifers were confined and fed a diet with a ratio of 79:31 (corn silage: concentrate) for 4 mo, during which they were submitted to a hormonal protocol to induce puberty and timed artificial insemination (TAI). Reproductive tract score (RTS, 1 to 5 scale: 1 being infantile and 5 being cyclic) and endometrial thickness were determined at 12 mo of age, rump fat thickness (RFT), and BW every 28â ±â 4 d through the breeding season, and plasma concentrations of IGF-I were evaluated at 12, 14, and 16 mo. At 15.6 mo of age heifers were submitted to a P4/E2 protocol for TAI at day 0 (D0), and a second TAI was performed at D22 in nonpregnant heifers. Ultrasound was used to determine the presence of corpus luteum on D10 and dominant follicle (DF) diameter and blood perfusion on D2 and D0. Data were analyzed using SAS by ANOVA or logistic regression. Though heifers from EW were lighter (Pâ <â 0.05) than CW at postweaning time points and CW presented a greater (Pâ =â 0.002) RFT than EW heifers from 11 to 15 mo, weaning strategy did not affect (Pâ >â 0.1) body condition score at TAI. Concentrations of IGF-I did not differ (Pâ >â 0.1) between heifers weaned at 150 and 240 d. The proportion of pubertal heifers, endometrium tone and thickness, and RTS at 16 mo did not differ (Pâ >â 0.1) between EW and CW groups. The diameter of DF on D2 and D0 and follicular blood perfusion on D0 were greater (Pâ <â 0.05) for heifers in the CW group than EW group, but P/AI at first and second TAI did not differ (Pâ >â 0.1) between groups. In conclusion, early weaning in Nelore heifers moderately reduces postweaning growth but does not affect puberty and reproductive performance before the breeding season when submitted to confinement.
In beef cattle operations, heifers represent the most current genetic improvement and are integral to the future of the herd. Factors such as age and weight at weaning and average daily gains impact fertility and longevity of beef heifers. The present study compared the effects of two weaning strategies (150 d of age vs. 240 d of age) on the growth and reproductive characteristics of Nelore Heifers. Comparing the weaning strategies of Nelore heifers, the present study indicates that: 1) heifers weaned at 150 d were lighter than heifers weaned at 240 d; and 2) puberty, concentration of IGF-I, and reproductive tract development and performance did not differ between weaning strategies. Shows that early weaning in Nelore heifers moderately reduces postweaning growth but does not affect reproductive performance.

This study aimed to evaluate the effects of early weaning (EW) on body composition, hormone concentrations and metabolites, and reproductive performance of Nelore cows in the subsequent breeding season (BS). Suckled cows that became pregnant by timed-AI (TAI) in the 2020-BS were exposed in 2021 to early weaning at 150 d (27 primiparous [PRI] and 74 multiparous [MUL]) or conventional weaning (CW) at 240 d postpartum (30 PRI and 77 MUL). Body weight (BW) and body condition score (BCS) were determined at 2020-BS, EW, CW, prepartum, and 2021-BS. Blood samples were collected at EW, CW, prepartum (54.75â ±â 0.56 d prepartum), and 2021-TAI and assayed for insulin-like growth factor-1 (IGF-I), non-esterified fatty acid (NEFA), and ß-hydroxybutyrate (BHB) concentrations. In 2021-BS, cows were exposed to a P4/E2-based protocol for TAI at day 0 (D0), and a second TAI was performed at D22 in females detected with luteolysis (D20) by Doppler ultrasound. The presence of corpus luteum (CL) on D10, estrous expression, and dominant follicle (DF) diameter, and blood perfusion (BP) on D2 and D0 were determined. Data were analyzed by ANOVA or logistic regression of SAS as a 2â ×â 2 factorial with main factors of parity (PRI or MUL) and weaning strategy (EW or CW). An interaction of parity and weaning strategy was not observed (Pâ >â 0.1), but the weight (kg) and BCS were greater (Pâ <â 0.05) in MUL cows at the five timepoints, and EW cows were heavier than CW at the moment of CW (541 vs. 493 kg; and 5.3 vs. 4.3), prepartum (551 vs. 506 kg; and 5.2 vs. 4.4) and 2021-BS (475 vs. 450 kg; and 4.5 vs. 3.7). Plasma urea concentration at 2021-BS was greater (Pâ =â 0.01) for PRI than for MUL. A parity-by-time interaction was observed (Pâ ≤â 0.05) for concentrations of IGF-I, NEFA, and BHB. PRI cows had greater (Pâ ≤â 0.05) concentrations of IGF-I at EW and greater (Pâ ≤â 0.05) prepartum concentrations of NEFA and BHB than MUL cows. The proportion of cows with CL at D10 was not affected (Pâ >â 0.1) by weaning but was greater (Pâ <â 0.05) in MUL than in PRI cows (40.4 vs. 15.7%). The diameter of DF and proportion of BP on D0 were greater (Pâ <â 0.05) in EW cows than in CW cows. The pregnancy rate (P/AI, %) at the first TAI was greater (Pâ <â 0.05) in EW cows (60% vs. 45%), whereas no difference (Pâ >â 0.1) was observed at the second TAI. Cumulative P/AI (first and second TAIs) was greater (Pâ <â 0.05) in EW cows (81% vs. 63%). In conclusion, weaning at 150 d in Nelore cattle is a strategy to successfully recover the parous cow's body condition and to improve pregnancy success in the next BS, regardless of the cow's parity order.
The nutritional condition and body energy reserves at parturition are important factors that can affect the reproductive performance of suckled Nelore cows. Also, decreasing the weaning time can benefit the cow's metabolic status. The present study evaluated the effect of two periods of weaning (150 vs. 240 d) on the reproductive performance of the Nelore dam in the subsequent breeding season. The results of the present study indicate that early weaning: 1) improves the body condition, rump fat thickness, and metabolic condition of Nelore cows for the subsequent breeding season; 2) provides better ovarian follicle growth and blood perfusion during the subsequent timed artificial insemination program; 3) enhances the pregnancy rates in the subsequent breeding season.

This study aimed to evaluate the effects of molybdenum (Mo) and organic and inorganic sources of copper (Cu) and sulfur (S) on the performance, carcass traits, and blood concentration of these minerals in lambs. Forty male non-castrated crossbred Dorper x Santa Inês lambs (20 ± 1.2 kg of body weight and 90 ± 2 d of age) were randomly allocated into one of the ten following treatments: (T0) control, basal diet; (T1) Mo; (T2) inorganic Cu and inorganic S; (T3) inorganic Cu and organic S; (T4) organic Cu and inorganic S; (T5) organic Cu and organic S; (T6) Mo plus inorganic Cu and inorganic S; (T7) Mo plus inorganic Cu and organic S; (T8) Mo plus organic Cu and inorganic S; and (T9) Mo plus organic Cu and organic S. Regardless of the source, Mo, Cu, and S were added at levels of 10 mg, 10 mg, and 2000mg/kg DM, respectively. The mineral supplements (Mo, Cu, and S) were added into the total mixed ration (TMR) by mixing them apart with the mineral and vitamin premix and then put into the TMR. The animals were kept in individual pens and received a total mixed ration for 84 days. Body weight and blood sampling was performed every 28 days. All animals were slaughtered after 84 days, and carcass traits were evaluated. Although organic sources of Cu and S added to Mo supplementation had increased the ADG throughout the study, this effect did not reflect in the heavier final BW outcomes for this treatment. In addition, no effect of these treatments was observed on the carcass traits. The serum Cu concentration was higher for the T0 group compared to the other groups; otherwise, Mo reduced the serum Cu concentration compared to the other groups. Considering the interaction among the minerals and their sources at 84 d of study, organic sources of Cu and S treatment and Mo associated with inorganic sources of Cu plus organic S treatment had an increased serum Cu concentration compared to other groups. Regardless of time, organic sources of Cu and S increased serum S concentration. At 84 days after enrollment, serum Mo concentration was lower for the control group compared to the other groups. Further, Mo supplementation increased its blood concentration compared to the control group throughout the study. The control group had the highest ceruloplasmin activity compared to the other groups; otherwise, at 84 d of the study, either Mo or inorganic S supplementation reduced ceruloplasmin activity. Serum ceruloplasmin activity was higher when Cu supplementation, regardless of source, was associated with organic S. However, at d 84 of the study, inorganic Cu associated to organic S supplements increased serum ceruloplasmin activity. In this current study, it was not possible to identify a pattern in the variables studied, however, further studies are needed to confirm that organic sources of Cu and S interacted alone without a defined pattern.

This study evaluated the effects of gestational supplementation strategy on nitrogen isotopic signature in blood plasma of beef cows and their progeny. The study comprised 15 pregnant Nellore cows divided into three different supplementation protocols: NP) non-programmed group; PP) cows receiving protein−energy supplement in the last third of pregnancy; and FP) cows receiving protein−energy supplement throughout the gestational period. Blood plasma from cows was sampled at the beginning of gestation, in the prepartum, and postpartum periods as well as from their calves at 30 and 180 days of age, for the analysis of stable isotope ratios 15 N/14 N. At pre- and postpartum periods, cows fed PP and FP presented greater abundance of δ15 N compared to NP (p < 0.05) at pre- and postpartum. All three groups showed significant differences (p < 0.05) in the postpartum period. The δ15 N values of calves at 30 days of age differed between the NP group and PP and FP groups (p < 0.05), with no difference (p > 0.05) at 180 days of age. The different gestational supplementation strategies influenced isotopic fractionation of nutrients of cows and their calves after birth, indicating effects on nutritional metabolism and cumulative behavior on isotope abundance related to consumption during gestation.

Aiming to improve milk quality and animal health, the effects of the inclusion of sunflower oil with added organic selenium (Se) and vitamin E in the diets of lactating cows were evaluated. Twenty-four multiparous lactating Jersey cows were randomly enrolled into four treatments: CON (control); SEL [2.5 mg organic Se kg-1 dry matter (DM) + 1000 IU vitamin E daily]; SUN (sunflower oil 3% DM); and SEL + SUN (sunflower oil 3% DM + 2.5 mg organic Se kg-1 DM + 1000 IU vitamin E daily). The experimental period was 12 weeks with 14 days for acclimation. Cows were milked twice a day. Dry matter intake, milk production, and composition were measured daily and analyzed in a pooled 4-week sample. On day 84, white blood cell counts, as well as serum and milk Se and vitamin E levels, were assessed. Supplementation with selenium and vitamin E alone or combined with sunflower oil increased milk production, and increased the serum and milk concentrations of those nutrients. The inclusion of sunflower oil reduced fat content and DM intake but also altered the milk fatty acid profile, mainly increasing levels of trans 11 C18:1 (vaccenic) and cis 9 trans 11 conjugated linoleic acid (CLA). Our results indicate that supplementation with sunflower oil, Se and vitamin E provides beneficial effects on animal performance and milk composition, which could be an important source of CLA and antioxidants (Se and vitamin E) for human consumption.

This study investigated the effect of different prenatal nutrition on the plasma metabolome of Nellore dams and their offspring. For that purpose, three nutritional treatments were used in 126 cows during pregnancy: NP(control) only mineral supplementation; PPprotein-energy supplementation in the final third; and FPprotein-energy supplementation during the entire pregnancy. Targeted metabolomics were analyzed in plasma at the beginning of pregnancy and in pre-delivery of cows (n = 27) as well as in calves (n = 27, 30 ± 9.6 days of age). Data were analyzed by the analysis of variance, partial least squares discriminant analysis, and the principal component analysis (PCA). The PCA showed a clear clustering in the periods investigated only in cows (early gestation and pre-delivery). We found significant metabolites in both supervised analyses (p < 0.05 and VIP score > 1) for cows (Taurine, Glutamic acid, Histidine, and PC aa C42:2) and for calves (Carnosine, Alanine, and PC aa C26:0). The enrichment analysis revealed biological processes (p < 0.1) common among cows and calves (histidine metabolism and beta-alanine metabolism), which may be indicative of transgenerational epigenetic changes. In general, fetal programming affected mainly the metabolism of amino acids.

The aim of this study was to investigate the serum and meat metabolomic changes according to the genetic potential for muscularity of non-castrated Nellore males and its association with phenotypic traits. Forty-eight non-castrated Nellore males were separated into two groups based on their genetic potential for post-weaning muscularity: high (HM) and low (LM). Selection for muscularity did not cause noticeable differences in the traits evaluated during the finishing phase and after slaughter. However, several metabolites in meat and serum, have changed according to the muscularity group. HM animals presented an over-abundance of glycerol, glutamine, choline, methylhistidine, betaine, creatinine and methionine in serum, compared with their LM counterparts. Similarly, the meat samples of HM animals were rich in glucose-6-phosphate, lactate, pyruvate, creatinine, betaine, choline, glycerol and arginine relative to LM bulls. Inosine monophosphate was the only metabolite over-abundant in LM animals. In conclusion, the genetic potential for post-weaning muscularity did not affect performance during the finishing phase, carcass traits and meat quality. However, multivariate analysis shows that the genetic potential of muscularity can be correlated with serum lipid and protein metabolites, and with energy metabolism in meat, providing a footprint of cattle muscularity metabolism.

The impact of growth rate (GR) and finishing regime (FR) on growth and meat quality traits of Angus x Nellore crossbred steers, harvested at a constant body weight (530 ± 20 kg) or time on feed (140 days), was evaluated. Treatments were: 1) feedlot, high GR; 2) feedlot, low GR; 3) pasture, high GR and 4) pasture, low GR. Live body composition, carcass and meat quality traits were evaluated. High GR had greater impact on muscle and fat deposition in feedlot-finished, but not in pasture-finished animals. Feedlot animals had higher Longissimus muscle area, backfat thickness, meat luminosity and tenderness when compared to pasture groups. Moreover, pasture- and feedlot-finished animals with similar GR did not differ in the chromatic attributes of non-aged meat, regardless of endpoint. Thus, GR appeared to be the main factor driving beef chromatic parameters, while FR had a major impact on achromatic attributes and tenderness of meat.

The study aimed to evaluate the supplementation of gilts with cow's milk naturally enriched with n-3 and n-6 polyunsaturated fatty acids (PUFA) on reproductive outcomes, and the serum biochemical and FA profile of swine females and their offspring. During 316 days, 30 gilts were distributed into three groups: (1) Control, fed a basal diet + milk from cows without oil; (2) n-3, fed a basal diet + milk from cows fed a diet enriched with linseed oil; (3) n-6, fed a basal diet + milk from cows fed a diet enriched with soybean oil. The gilts receiving the diets containing PUFA had higher serum urea and very-low-density lipoprotein levels and lower serum total protein and low-density lipoprotein levels compared to the Control group. Females supplemented with n-3 presented higher serum palmitic acid and γ-linolenic acid levels than those fed n-6. Piglets from the Control group were heavier at birth than those from females supplemented with enriched milk. The piglets from females receiving enriched milk had 140 g higher body weight from 1 to 21 days old compared to the Control group, and greater average daily weight gain from 7 to 14 days old. The serum eicosapentaenoic acid level of piglets fed n-3 was 69% higher than those fed n-6, which reduced the AA/EPA ratio. Gilts supplemented with PUFA-enriched cow's milk showed changes in their serum palmitic and γ-linolenic acid levels, in addition to improved performance, EPA concentration and consequently reduced AA/EPA ratio in their piglets, demonstrating beneficial results for their progeny.

The aim of this study was to explore the use of TD-NMR relaxometry and 1H NMR spectroscopy-based for detecting differences in meat quality attributes. There was limited association between various TD-NMR signals and any physicochemical parameters of fresh and aged meat differing in tenderness ratings. Samples were then divided into three groups based on statistical changes in metabolite concentration. Group A samples possessed near linear increases in metabolite concentration over aging time; whereas samples assigned to Groups B and C were characterized by increases in metabolites that peaked between 7 and 14 days, and up to 14 days aging, respectively. 1H NMR spectroscopy discriminated meat quality using changes in metabolites reflective of glycolysis, the citric acid cycle, protein degradation, amino acid generation and purine metabolisms. These data suggest segregation of meat quality is possible using both NMR technologies but additional work is necessary to understand fully their utility in a commercial industry setting.

In this study, we investigated the beneficial effects of milk biofortified with antioxidants on the health of children. Two experiments were conducted: experiment one evaluated the milk of 24 Jersey dairy cows (450 ± 25 kg of body weight (BW); 60 ± 30 days in milk dry matter intake (DIM)) given different diet treatments (CON = control diet; COANT = diet with vitamin E and selenium as antioxidants; OIL = diet with sunflower oil; and OANT = diet with sunflower oil containing more vitamin E and selenium as antioxidants), and experiment two evaluated the effect of the milk produced in the first experiment on the health of children (CON = control diet; COANT = diet with vitamin E and selenium as antioxidants; OIL = diet with sunflower oil; OANT = diet with sunflower oil containing more vitamin E and selenium as antioxidants; and SM = skim milk). One hundred children (8 to 10 years old) were evaluated in the second experiment. Blood samples were collected at 0 days of milk intake and 28 and 84 days after the start of milk intake. The cows fed the COANT and OANT diets showed greater selenium and vitamin E concentrations in their milk (p = 0.001), and the children who consumed the milk from those cows had higher concentrations of selenium and vitamin E in their blood (p = 0.001). The platelet (p = 0.001) and lymphocyte (p = 0.001) concentrations were increased in the blood of the children that consumed milk from cows fed the OANT diet compared to those in the children that consumed SM (p = 0.001). The children who consumed milk from cows fed the OIL diet treatment had increased concentrations of low density lipoprotein (LDL) and total cholesterol in their blood at the end of the supplementation period compared to children who consumed SM. The results of this study demonstrate that the consumption of biofortified milk increases the blood concentrations of selenium and vitamin E in children, which may be beneficial to their health.

The working hypothesis was that supplementation with progesterone (iP4) at early diestrus increases pregnancy rates of suckled beef cows with poor body condition score (BCS) and/or in anestrus when cows are submitted to timed insemination (TAI). The time of ovulation among suckled multiparous (n = 1270) and primiparous (n = 303) Nelore cows was synchronized using an estradiol/P4-based protocol for TAI (D0). At Day â10, visual evaluation of BCS was performed (scale = 1-5) and animals were classified according to an ovarian activity (OA) score: (OA1) absence of CL and presence of follicles ≥ 8 mm, (OA2) absence of CL and presence of follicles < 8 mm and (OA3) presence of corpus luteum (CL). On Day 4, animals were assigned randomly to receive 150 mg of injectable, long-acting P4 (iP4, n = 786) or non-iP4 (n = 787). Further, ultrasonic evaluations were performed on D0 and D4 for measurements of the largest follicle diameter (DF) and CL area, respectively. The BCS affected positively DF, CL area and OA. Supplementation with iP4 did not affect (P = 0.49) pregnancy rates and there was no significant interaction (P > 0.1) of P4 treatment with BCS or OA was detected for conception and pregnancy rates. Regardless of iP4, pregnancy rates of cows with moderate (2.75-3.25) (59.1%) and high (≥ 3.5) (57.8%) BCS were greater than those of cows with low (2.0-2.5) BCS (41.5%). Cows in OA2 had a greater P/AI (51.3%) than cows in OA1 (41.7%) or OA3 (41.9%). In conclusion, P4 supplementation after TAI did not improve P/AI and did not enhance the response to treatment of cows with a low BCS, regardless of OA.

SCOPE: Nutrition is a major contributing factor for immunocompetence. The aim was to assess the immune status of older people after consuming milk produced by lactating cows fed with one of the following diets: control diet (C), C + vitamin E + selenium (C + A), C + sunflower oil (C + O), and C + sunflower oil + vitamin E + selenium (A + O). METHODS AND RESULTS: Sixty elderly people received one of these biofortified milks for 12 weeks. Immune response was assessed by measurement of the expression of COX-1, COX-2, MCP-1, PPAR (δ, α, and ß/δ) genes, neutrophil production of oxygen reactive species induced by immune complexes, neutrophil phagocytosis and lytic activity of the alternative pathway of the complement system, and cytokine levels. Variables were assessed before and after treatment. Our findings showed stability of some inflammatory mediators (complement activity and neutrophils burst) in treatment groups, except complement activity in C + A, and an increase of these markers in C, especially reactive oxygen species production and phagocytic activity. TNF-α was significantly increased in all groups. In C + A, IL-4 and IL-2 increased after treatment, and in the group that received the milk produced by cows fed with "O" diet, CCL20 and IL-27 increased. CONCLUSION: Overall, as compared to C, milk biofortification was associated with stabilization of the activity of alternative complement pathway and the neutrophils burst, and modulated different cytokines levels.

This study focused on isolating Pseudomonas spp. during milking process in ten dairy farms with manual and mechanical milking systems during dry and rainy seasons, and evaluating DNA homology and patterns of distribution between isolates, in order to identify main sources of milk contamination by Pseudomonas spp. A total of 167 isolates of Pseudomonas spp. were obtained from water, milkers' hands, cows' teats, teat cups, cooling tanks and raw milk. Bacteria of Pseudomonas spp. genus were isolated from 85 and 82 sampling points in dairy farms with manual and mechanical milking system, respectively. A significant difference (p=0.02) on Pseudomonas spp. isolation was observed among samples of surface of cows' teats before and after pre-dipping, but no significant difference (p>0.05) was observed among milking systems or seasons. The possibility of the same Pseudomonas spp. patterns are distributed in different farms and seasons using Amplified Fragment Length Polymorphism (AFLP) technique was demonstrated. Milkers' hands, surface of cows' teats, teat cups and cooling tanks were associated with raw milk contamination with Pseudomonas spp. on farms with manual and mechanical milking system, showing that regardless of the type of milking system and season, proper hygiene procedures of equipment, utensils and workers' hands are essential to avoid contamination of the milk and, therefore, improve milk quality.(AU)
Este estudo se propôs a isolar Pseudomonas spp. durante o processo de ordenha em dez fazendas com sistemas manuais e mecanizados, durante as estações seca e chuvosa, além de avaliar a homologia do DNA e seus padrões de distribuição entre os isolados, a fim de se determinar as principais fontes de contaminação do leite. Cento e sessenta e sete isolados de Pseudomonas spp. foram obtidos a partir de amostras de água, mãos de ordenhadores, tetos, teteiras, tanques de resfriamento e leite cru armazenado, sendo 85 e 82 pontos de amostragem em fazendas com sistemas de ordenha manual e mecânico, respectivamente. Diferença estatisticamente significativa foi encontrada entre os isolados observados entre a superfície dos tetos antes e após o pré-dipping (p=0,02), mas nenhuma diferença foi encontrada entre sistemas de ordenha ou estações (p>0,05). A possibilidade do mesmo padrão de Pseudomonas spp. estar distribuído em diferentes fazendas ou estações foi avaliada pela técnica de Polimorfismo do Tamanho de Fragmento Amplificado (AFLP). As mãos de ordenhadores, superfície dos tetos das vacas, teteiras e tanques de resfriamento foram associados com a contaminação do leite cru, demonstrando que independente do tipo de ordenha e estação, a higiene adequada de equipamentos, utensílios e mãos dos ordenhadores é essencial para evitar contaminação do leite, e consequentemente aumentar sua qualidade.(AU)

To produce milk that is healthier for human consumption, the present study evaluated the effect of including canola oil in the diet of dairy cows on milk production and composition as well as the nutritional quality of this milk fat. Eighteen Holstein cows with an average daily milk yield of 22 (± 4) kg/d in the middle stage of lactation were used. The cows were distributed in 6 contemporary 3x3 Latin squares consisting of 3 periods and 3 treatments: control diet (without oil), 3% inclusion of canola oil in the diet and 6% inclusion of canola oil in the diet (dry matter basis). The inclusion of 6% canola oil in the diet of lactating cows linearly reduced the milk yield by 2.51 kg/d, short-chain fatty acids (FA) by 41.42%, medium chain FA by 27.32%, saturated FA by 20.24%, saturated/unsaturated FA ratio by 39.20%, omega-6/omega-3 ratio by 39.45%, and atherogenicity index by 48.36% compared with the control treatment. Moreover, with the 6% inclusion of canola oil in the diet of cows, there was an increase in the concentration of long chain FA by 45.91%, unsaturated FA by 34.08%, monounsaturated FA by 40.37%, polyunsaturated FA by 17.88%, milk concentration of omega-3 by 115%, rumenic acid (CLA) by 16.50%, oleic acid by 44.87% and h/H milk index by 94.44% compared with the control treatment. Thus, the inclusion of canola oil in the diet of lactating dairy cows makes the milk fatty acid profile nutritionally healthier for the human diet; however, the lactating performance of dairy cows is reduce.

Idosos institucionalizados apresentam um risco aumentado de alteração do estado nutricional. Sendo assim, são necessários indicadores sensíveis para identificação da alteração do estado nutricional. O objetivo deste estudo é avaliar indicadores para análise do estado nutricional de idosos institucionalizados, em um período de três meses, por meio de exames bioquímicos e antropométricos. Foram selecionados 81 voluntários, com 78 ± 10 anos, sendo 53% do sexo feminino. Os dados antropométricos evidenciaram que as variáveisíndice de massa corporal, peso, massa gorda e ângulo de fase dos idosos institucionalizados diminuíram em três meses com diferença significativa no período. Dentre todos os exames bioquímicos e antropométricos, as variáveis índice de massa corporal, peso, massa gorda, ângulo de fase e lipidograma foram os indicadores da avaliação nutricional que identificaram alterações precoces e riscos nutricionais dos idosos institucionalizados no período de três meses. Vale ressaltar que indicadores nutricionais avaliados precocemente podem evitar os riscos nutricionais de idosos institucionalizados.

Anthropometric data showed that the variables body mass index, weight, fat mass, and phase angle of the institutionalized elderly in three months decreased with significant difference between the assessments. Among all the biochemical and anthropometric measurements, body mass index, weight, fat mass, phase angle and blood fat were the indicators of nutritional assessment that identified early changes and nutritional risks of institutionalized elderly in three months. It is noteworthy that the early evaluation of nutritional indicators can prevent nutritional risk among elderly in living in rest homes.

UNLABELLED: This study was conducted with 35 Nellore beef cattle to determine the effect of supplementation of two levels and two copper sources (organic and inorganic) on metabolism of lipids and cholesterol of meat. The five treatments used were: CONTROL: without copper supplementation, I10 or I40: 10 or 40 mg/kg DM (as Cu sulfate), O10 or O40: 10 or 40 mg/kg DM (as Cu proteinate). In general, the copper supplementation changed the fatty acid profile of meat (p<0.05), with a higher proportion of unsaturated fatty acids and reduction of saturated fatty acids. There was no effect of supplementation on blood cholesterol and triglycerides, however; in general, there was a reduction in cholesterol concentration in the L. dorsi (p<0.05) compared to the control treatment through the reduction (p<0.05) in the concentrations of GSH and GSH/GSSG ratio. The Cu supplementation did have an influence on metabolism of lipids. The production of healthier meat is beneficial to public health by reducing the risk of cardiovascular disease.

Objetivo - Comparar a substituição parcial de farelo de soja por uréia sobre a produtividade e qualidade do leite. Métodos - Foram utilizadas 24 vacas Girolanda em lactação em um experimento com delineamento inteiramente casualizado. Dois concentrados foram utilizados: (C) controle, sendo a principal fonte de proteína o farelo de soja e (U) uréia, neste tratamento 1/3 da proteína total foi substituída por nitrogênio não protéico (NNP) oriundo da uréia. Foram avaliadas a produção, a composição e as características físico-químicas do leite. As dietas foram formuladas seguindo as recomendações do NRC (2001) e a nutrição protéica foi acompanhada pela concentração de uréia plasmática. A contagem de células somáticas foi utilizada com a finalidade de monitorar a sanidade da glândula mamária. Resultados - A produção leiteira foi diferente (P<0,05) entre os tratamentos 9,41 para o grupo Uréia vs. 7,98 kg/vaca/dia para o grupo Controle. A composição e as características físico-químicas foram semelhantes entre os tratamentos (P>0,05). Houve redução de 11,5% no custo do concentrado com inclusão de uréia. Conclusão - A substituição parcial do farelo de soja por uréia em dietas para vacas Girolanda mostrou-se uma alternativa viável para a produção leiteira, pois além de aumentar a produção, reduziu os custos com alimentação, sem alterar o valor nutricional do leite.
Objective - To compare the partially replacement of soybean meal by urea on lactation performance in experiment completely randomized. Methods - Twenty four Girolanda dairy cows were used. Two treatments were used: (C) control, being the main source of protein soybean meal and (U) urea, in this treatment 1/3 of total protein was replaced by non-protein nitrogen (NPN) derived from the urea. Milk production, composition and physico-chemical characteristic were measured. Diets were formulated following the recommendations of NRC (2001) and protein diet was accompanied by the concentration of blood urea nitrogen. Somatic cell count was used to monitor udder health. Results - There were differences (P>0.05) among treatments only for milk production 9.41 for urea treatment vs. 7.98 kg/cow/day for control treatment. Milk composition and physico-quimical characteristics were similar among treatments (P>0.05). There was a decrease of 11,5% in the cost of the concentrate with addition of urea. Conclusion - This study indicated that using urea for lactating Girolanda dairy cows had no detrimental effect on lactation performance or on milk nutritional value.
