RESUMO

The objective was to determine the prevalence of foodborne pathogens in food in Longnan City, Gansu Province, China. In this research, we conducted tests on baked foods, catering foods, meat, and fruits and vegetables sold in supermarkets, farmers' markets, restaurants, retail stores, street stalls, and school canteens from 2013 to 2022. We analyzed the variety of foodborne pathogens (Salmonella, Staphylococcus aureus, Listeria monocytogenes, Bacillus cereus, and diarrheagenic Escherichia coli) in different sites and food types. Once foodborne pathogens were detected in the sample, it was deemed unqualified. The total detection rates of foodborne pathogens were 1.559%, 3.349%, 1.980%, 1.040%, 3.383%, and 1.303% in food from supermarkets, farmers' markets, restaurants, retail stores, street stalls, and school canteens, respectively. No pathogenic bacteria were detected in baked foods. Salmonella, S. aureus, L. monocytogenes, B. cereus, and diarrheagenic E. coli were detected in catering foods, among which B. cereus had the highest detection rate. Salmonella was the most common pathogenic bacteria detected in meat, while the detection rate of pathogenic bacteria in fruits and vegetables was low, with only one positive sample for diarrheagenic E. coli. Among the six sites, street stalls (3.382%) and farmers' markets (3.349%) had higher detection rates of pathogens. In general, the detection rate of pathogens from 2013 to 2022 was not high, but there were also some hidden dangers. Catering food is vulnerable to pathogen contamination, and street stalls and farmers' markets are the main sites of pollution. According to the above findings, the regulatory authorities should continue to strengthen supervision, guarantee food safety through early warning, and reduce the risk of food contamination.

Antioxidants are widely used to prevent oxidative degradation of food-contact plastics materials. However, when plastic products come into contact with food, antioxidants may contaminate food. Herein, twenty-three kinds of possible antioxidants were monitored in 257 products of seven polymers. The migration of antioxidants into the food simulants at different temperatures and times was detected by using HPLC-MS/MS. Risk assessment was performed based on the EU, U.S. FDA methods and Monte Carlo simulation. The antioxidants migrated mainly to fatty food simulant, with the highest concentration and occurrence frequency of Irgafos 168, followed byIrganox 1010, Irganox 1076, and Antioxidant LTDP in polyethylene terephthalate, polyvinyl chloride, polypropylene, polyethylene. No antioxidants were detected in polystyrene, polycarbonate, and polyvinylidene chloride. Additionally, antioxidants exhibited the highest detection rate of 0.81 in polyethylene. Risk assessment demonstrated that the antioxidants have no obvious health risk to the exposed population. However, the risk of polypropylene was relatively high compared to other polymers.

N-nitrosamines are human carcinogens commonly present in dried aquatic products. A method of gas chromatography - mass spectrometry combined with steam distillation was developed for the determination of 9 N-nitrosamines in dried aquatic products in Qingdao, China, with which 300 samples of fish, squid, shrimp and sea cucumber collected from Qingdao were analysed. A health risk assessment was conducted based on determined levels of N-nitrosamines by using estimated daily intake and slope factors. Results showed that fish products was the category with the highest content of N-nitrosamines, whereas squid and shrimp products were the categories with the highest frequency of presence of N-nitrosamines. The average estimated cancer risk of N-nitrosamines in dried aquatic products in Qingdao ranged from 3.57 × 10-8 to 3.53 × 10-5. Nitrosodimethylamine, N-Nitrosodiethylamine and N-Nitrosodibutylamine could be considered to pose a potential cancer risk to residents in Qingdao.

OBJECTIVES: To investigate the possible influence of polycyclic aromatic hydrocarbons (PAHs) exposure on neurodevelopment of toddlers at the age of 12 months. METHODS: Totally 306 subjects were recruited from the Qingdao Birth Cohort established in 2014. PAH-DNA adducts in toddlers' umbilical cord blood samples, hydroxyl-PAH metabolites in their urine samples and the developmental quotients (DQs) were measured. Sex, gestational age, birth weight, and maternal educational background were adjusted to analyze the influence of the PAH exposure on the neurodevelopment of the toddlers using multivariate linear regression model. RESULTS: Pearson correlation test showed that the logarithmic values of hydroxyl-PAH were negatively correlated with the DQs. Multivariate linear regression analysis indicated that logarithmic concentration of 1(9)- hydroxyphenanthrene was still associated with the DQs of the fine motor behaviors with ß and 95% confidential interval (CI) of -1.137 (-2.053, -0.222), together with PAH-DNA adducts [ß (95% CI): -0.577 (-0.930, -0.225)]. PAH-DNA adducts presented an independently negative influence on the DQs of the gross motor and personal social behaviors with ß (95%CI) of -0.470 (-0.814, -0.126) and -0.526 (-0.859, -0.193), respectively. CONCLUSIONS: The exposure to PAHs in toddlers at 12 months could influence their neurodevelopment. Additionally, prenatal exposure to PAHs should also be considered.

The investigation of the causative agents for foodborne diseases and subsequent development of preventive steps to control the outbreak and related economic loss is the basic goal and priority of a rational food safety program. The entero-pathogenic Vibrio spp., which are Gram negative bacteria inhabiting estuarine ecosystems, are the major cause of foodborne illness associated with the consumption of raw or undercooked contaminated seafood or shellfish. To survey the Vibrio contamination in sea snails (Neptunea cumingi Crosse and Busycon canaliculatu), a total of 20 samples were collected from traditional market, at Qingdao city in Shandong province, China and analyzed for Vibrio species contamination. Presumptive-positive colonies grown on a specific Vibrio agar-based medium were picked and identified by the VITEKTM. Vibrio alginolyticus, V. parahaemolyticus, and V. vulgaris were isolated and identified in 11, 8, and 2 seafood samples, respectively. Among the 8 isolates of V. parahaemolyticus. The V. parahaemolyticus isolates were further tested for the tdh, trh, and tlh virulence factors. All the V. parahaemolyticus isolates were tlh-positive, however, all of them were tdh-negative. Interestingly 2 V. parahaemolyticus isolates were positive for trh virulence factor. These results indicated that there is a high incidence of V. alginolyticus and V. parahaemolyticus in sea snails. Therefore, food safety regulations for fishery auction markets should be established to control these species in addition to other Vibrio pathogenic contaminants. Our study provides the first evidence for the prevalence of Vibrio spp. in sea snail samples from traditional market in the Qingdao province of China.

To characterize the genetic properties of coxsackievirus A12 (CVA12) strains isolated from hand, foot and mouth disease (HFMD) patients in Qingdao during 2008-2011, the complete genome and VP1 coding region were sequenced and analyzed. Phylogenetic analysis showed that all strains from China clustered into three different branches, suggesting multiple lineages of CVA12 co-circulating in Asia. Sequence analysis indicated a monophyletic group only when the P1 region was examined, indicating possible recombination between CVA12 and other HEV-A serotypes. The emergence of CVA12 involved in an HFMD outbreak in China is a public-health issue.
