RESUMO

Antimicrobials long been used to enhance the performance and immunity of rabbits, typically by adding them to feed or drinking water to prevent illness. However, increasing consumer concerns about antibiotic-resistant microorganisms have led to a shift toward natural, eco-friendly, non-antibiotic feed supplements that can improve rabbit health and productivity. Recently, aromatic herbs and their extracts have gained considerable attention as natural antioxidants with growth-promoting and health-boosting properties. Essential oils and secondary metabolites play a central role in these effects, with Origanum vulgare (oregano) emerging as a standout option. Compared to synthetic alternatives, oregano is a natural, residue-free feed supplement with fewer harmful side effects. Its key bioactive components, thymol and carvacrol, have been shown to deliver significant benefits when incorporated into rabbit diets, particularly in improving production performance, immunity, and antioxidant capacity. Supplementing rabbit diets and drinking water with oregano essential oil (OEO) has been found to enhance growth performance, feed efficiency, and meat quality, while also lowering cholesterol levels and boosting antioxidant activity. Despite these promising results, research on the use of oregano in rabbit farming remains limited. This review aims to provide an up-to-date overview of the potential effect of oregano supplements, on growth parameters, carcass and meat quality, hemato-biochemical parameters, antioxidant capacity, immunity response, gut health, and gene expression in rabbits.

Immunocastration has been introduced in pig production to reduce boar taint. However, there is not much information on how different schedule of immunocastration affects meat quality, especially muscle histological properties. In this study, carcass and meat quality characteristics, histological properties of the longissimus dorsi muscle, sensory characteristics and fatty acid composition of meat and fat from entire males (EM), late immunocastrated (LIC, first dose 8 weeks before slaughter, second dose 4 weeks before slaughter) and early immunocastrated pigs (EIC, first dose 13 weeks before slaughter, second dose 8 weeks before slaughter) were compared. Fat thickness was greater in EIC than in LIC and EM. Meat quality parameters differed mainly between EIC and EM, as EIC had a higher pH 45, lower electrical conductivity, lighter and more yellowish loins and lower drip loss than EM. EM had a higher protein and moisture content and a lower fat content than EIC and LIC. No major effect on histological properties was observed, however, the percentage of fast-twitch oxidative fibres tended to be lower in both LIC and EIC animals compared to EM. Pork from EM had higher boar taint and lower pork odour and flavour scores and higher pig and boar taint flavour scores. The results of this study show that the immunocastration schedule influences some carcass, meat and fat quality traits and, because of that, it can be modified to obtain the desired final product.

The "Precoce MS" program, established by the Brazilian government in Mato Grosso do Sul in 2017, aims to encourage beef producers to harvest animals at younger ages to enhance carcass quality. About 40% of the beef produced in the state now comes from this program, which offers tax refunds ranging from 49% to 67% based on carcass classification and production system. Despite the program success, with participants delivering younger animals (with a maximum of 4 incisors), there remains significant variability in carcass quality. This paper investigates management practices and environmental factors affecting farm performance regarding carcass quality. Data from all animals harvested between the beginning of 2017 and the end of 2018 were analyzed, totaling 1,107 million animals from 1,470 farms. Farm performance was assessed based on the percentage of animals achieving grades "AAA" and "AA." Each batch of harvested cattle from each farm was categorized into two groups: high farm performance (HFP, with more than 50% of animals classified as "AAA" or "AA") and low farm performance (LFP, with less than 50% classified as such). A predictive logistic model was developed to forecast farm performance (FP) using 14 continuous and 15 discrete pre-selected variables. The most effective model, obtained through backward stepwise variable selection, had an R 2 of 0.18, accuracy of 71.5%, and AUC of 0.715. Key predictors included animal category, production system type, carcass weight, individual identification, traceability system, presence of a feed plant, location, and the Normalized Difference Vegetation Index (NDVI) from the 12-mo average before harvest. Developing predictive models of carcass quality by integrating data from commercial farms with other sources of information (animal, production system, and environment) can improve our understanding of production systems, optimize resource allocation, and advance sustainable animal production. Additionally, they offer valuable insights for designing and implementing better sectorial, social, and environmental policies by public administrations, not only in Brazil but also in other tropical and subtropical regions worldwide.

This meta-analysis consolidates various related studies to identify patterns in the impact of feeding algae on performance aspects, including milk fat, milk protein, and carcass yield in several ruminant species, such as cattle, sheep, and goats. The data were collected from 67 articles that examined factors such as the type of algae (macro- and microalgae), algal species, and animal breed. Barki sheep, Moghani sheep, and Zaraibi goats demonstrated an increased average daily gain (P < 0.05) when fed with both macro- and microalgae. Conversely, sheep such as Canadian Arcott and Ile-de-France showed adverse effects on the feed conversion ratio (FCR) (P < 0.05). Elevated FCR values were observed across castrated and young animals (P < 0.05). Algae extract notably increased the hot carcass weight (P < 0.001), particularly among Moghani sheep (P < 0.001). Raw algae significantly reduced the milk fat content (P < 0.001), particularly in cattle and sheep (P < 0.001). A decrease in milk fat was particularly noticeable in lactating females of Assaf sheep, Damascus goats, and Holstein cows (P < 0.001). Overall, algae inclusion tended to decrease the milk protein content (P < 0.05), leading to reduced milk production (P < 0.001) with cumulative algae feeding in Assaf sheep. However, conjugated linoleic acid (CLA; C18:2 c9,t11-CLA and C18:2 c12,t10-CLA) and docosahexaenoic acid (DHA; C22:6n-3) mostly increased in meat and milk from Holstein cow, Assaf sheep, Dorset sheep, and Ile-de-France sheep (P < 0.01). This meta-analysis highlights the necessity for additional research aimed at optimizing the sustainable use of algae in feed for ruminants, despite the demonstrated improvements in performance and the levels of CLA and DHA found in meat and milk.

Environmental enrichment is about improving the surroundings in which your animal lives by providing opportunities to express behavioral activity normally, which in turn has a great impact on the animal's welfare and productivity. The aim of the present study is to investigate the impact of using different enrichment cage tools (a rubber floor, plastic-colored balls, and a mirror) on rabbits' physiology, productivity, carcass quality, behavior, and welfare. A total of 84 weaned rabbits (V-line) were randomly and equally assigned to 4 groups, each with 7 replicates (3 rabbits/replicate). The 1st rabbit group (T1) served as a control, while the 2nd group (T2) was enriched with rubber floors. The 3rd group (T3) was enriched with plastic-colored balls, and the 4th group (T4) was enriched with mirrors. Productive traits, including the weekly body weight and feed intake, as well as the carcass characteristics, were measured. Hematological parameters and biochemical constituents were determined according to the reference's description. Furthermore, behavioral activities, such as walking, resting, feeding, and drinking, were observed. According to the results, enriching the rabbit cages with plastic-colored balls and mirrors improved the marketing body weight and feed conversion rate. It also improved carcass quality characteristics, such as the carcass weight and dressing percentage. The T3 and T4 rabbits had higher RBCS, Hb, and hematocrit levels as well as lower WBCS levels. They also had significantly higher total protein, globulin, glucose, AST, and IgG values than other treatments. In addition, they had significantly lower corticosterone levels and fear responses. Therefore, it is recommended to use plastic-colored balls and mirrors for rabbit farming for better productivity, behavior, and welfare.

This study involved 45 Holstein and 60 Holstein-Charolaise steers, tailored with specific diets according to breed and rearing systems. DNA genotyping was conducted for DGAT1, LEP, SCD1, SREBF1, and TG genes to investigate their impact on carcass conformation traits, beef quality traits, and sensory quality traits. The results showed associations between the genetic variants and the analyzed traits. Specifically, DGAT1 was found to affect drip loss, meat brightness, and color saturation. The TG gene was associated with marbling and meat color. LEP influenced trim fat and pH levels, while SCD1 was linked to metabolic energy live weight gains, and pH levels. SREBF1 was related to fatness.

1. This study investigated the effects of incorporating yellow mealworm (Tenebrio molitor) larval meal as a partial and/or complete substitute for soybean meal on carcass and meat quality in slow-growing chickens.2. A total of 256 one-day-old male broilers were randomly allocated to 1 of 32 experimental units distributed among four treatments (n = 8): the control treatment (C), where soybean (SB) meal was the protein source, and three experimental treatments, in which SB meal was replaced by Tenebrio molitor (TM) larval meal at levels of 50% (T1), 75% (T2) and 100% (T3), respectively. Three different feed phases (1-29; 29-57 and 57-92 d of age) were used for each treatment. All chickens were slaughtered at 92 d of age, with eight animals per treatment randomly selected to assess carcass and meat quality. Near-infrared reflectance spectroscopy (NIR) was used to classify meat quality.3. Carcass traits were not significantly different between treatments, except for head and thigh weight, which were higher in the control group (p < 0.01). In terms of physicochemical characteristics, treatment T2 showed less yellowness (p < 0.05), while water and cooking losses were lower in treatments T1 and T2 (p < 0.01). Meat from both T1 and T2 groups had lower shear forces (p < 0.01), higher moisture content (p < 0.01) and less protein (p < 0.05) compared to treatments C andT3. Birds fed T3 had the highest meat ash content (p < 0.01). Chickens consuming TM had higher monounsaturated fatty acid (MUFA) levels and lower polyunsaturated fatty acid (PUFA) and n-6 acidsPUFA (p < 0.01).4. Substitution of SB with TM is a protein alternative for slow-growing chickens that supports carcass and meat quality comparable to those fed a conventional diet.

In the Netherlands, poultry meat production has been evolving in recent years toward broiler production systems with slow-growing broilers. In this study the effects of season, catching method, and thinning on carcass quality and production parameters in four different broiler production systems in the Netherlands was evaluated. The data for this study were collected from slaughterhouse data in 2018, 2019, and 2020 and contained information about four different broiler production systems: conventional (fast growing) broilers (CONV), 2 different indoor slow-growing broilers (SGB1 and SGB2), and Better Life 1 Star (BLS) concept with slow-growing broilers. The data set consisted of 14,976, 1,730, 3,713, and 1,121 records (flocks) for CONV, SGB1, SGB2, and BLS, respectively. All three production systems with slow-growing broilers had a lower slaughter weight, average daily gain (ADG), first-week mortality, and total mortality than CONV (no-thinning). ADG of SGB2 and BLS was lower than that of SGB1. Slaughter weight and ADG were the lowest when day-old chicks were placed in March/April and the highest when they were placed in September/October. All slow-growing broiler production systems had a lower footpad lesion score and a lower incidence of hock burns, leg hematomas, breast hematomas, dead-on-arrival chickens (DOA), and total rejects than CONV. Autumn flocks had more hock burns, a higher footpad lesion score, and more wing hematomas than spring flocks. More scabby hips and fewer total rejects were found during the summer months than during the winter months. Thinning flocks had more scabby hips, ammonia burns, and DOAs and fewer hock burns, footpad lesions, wing hematomas, leg hematomas, breast hematomas, and total rejects than no-thinning flocks. Mechanically caught flocks had more ammonia burns, DOAs, and total rejects than manually caught flocks. In conclusion, this study showed that all three production systems with slow-growing broilers had a lower first-week mortality and total mortality and better scores on most carcass quality parameters and welfare indicators than CONV.

For many years, pig production has focused on maximizing performance by selecting for maximal muscle growth and feeding diets that allow the animals to express their genetic potential. However, it is unclear whether this selection for muscle deposition has affected the capacity of pigs to cope with by-product-based diets, which rely on fat as the primary energy source instead of starches and sugars. Therefore, an experiment was set up to investigate if different types of boars affect how their progeny cope with alternative ingredients in the diet, with a possible need for adapted breeding schemes. Two types of boars within the Piétrain sire line were used based on either a high or low estimated breeding value for daily feed intake (HFI: high feed intake, low feed intake). When their progeny reached 14 weeks of age, two dietary strategies were compared: a control (CON) vs a by-product-based diet high in fat and fiber (HFF). The CON diet was mainly based on cereals (corn, wheat, barley) and soybean meal. The HFF diet was formulated to contain the same net energy, CP and digestible amino acid levels without any cereals or soybean meal. In total 192 animals were included in the experiment (48 animals/type of boar/diet) and performance, digestibility, carcass and meat quality were compared. None of the parameters showed a significant interaction (P < 0.05) between the type of boar and diet, suggesting that shifting to diets that are less prone to feed-food competition is equally feasible in different types of pigs. Type of boar did affect performance, carcass quality and intramuscular fat content. HFI pigs showed higher daily feed intake (DFI) and daily gain (P < 0.001), with no significant difference in feed conversion ratio (P = 0.205), lower carcass quality (P < 0.001) and higher intramuscular fat content (P = 0.030). For both boar types, pigs fed the CON diet performed better, with a higher daily gain (P = 0.028), DFI (P = 0.011) and dressing yield (P = 0.009) and better digestibility (P < 0.001), but without differences in feed conversion ratio or meat quality. In conclusion, there was no indication that pigs differing in feed intake capacity cope differently with a high-fat, high-fiber diet based on by-products. Different types of pigs may cope well with diets that are less prone to feed-food competition.

The objectives of this study were to examine the effects of feeding high-concentrate diets post-weaning (PW) prior to forage finishing on (1) changes in ultrasound intramuscular fat deposition and lipogenic/lipolytic gene expression during the post-weaning phase and (2) carcass characteristics and fatty acid composition after forage finishing to 487 kg. Steers were randomly assigned to one of four treatments (PW0, PW40, PW80, and PW120) at weaning to examine the time of high-concentrate feeding prior to forage finishing. The ultrasound intramuscular fat content was greater (p < 0.05) for PW120 compared to those for PW0, PW40, or PW80 at the end of the post-weaning phase. Feeding high concentrates (PW120) up-regulated (p < 0.01) the mRNA expression of fatty acid transporters and lipogenic genes and down-regulated lipolytic genes in the LM compared to PW0. Carcasses from PW120 were graded 83% Choice (p = 0.025), whereas carcasses from other post-weaning treatments (PW0, 40, or 80) were graded 25, 36, and 54% Choice, respectively, at the final harvest. The total fatty acid content of the muscle at slaughter was greater (p = 0.0004) for PW120 than PW0, PW40, and PW80. Feeding high-concentrate diets to steers post-weaning for 120 day enhanced early intramuscular fat deposition without causing major changes to the fatty acid composition of the longissimus muscle after forage finishing.

The objective of this study was to investigate the effects of composite alkali-stored spent Hypsizygus marmoreus substrate (SHMS) on carcass quality, rumen fermentation, and rumen microbial diversity in goats. Twenty-four 6-month-old Chuanzhong black goats with similar body weights (20 ± 5 kg) were selected and randomly divided into four groups (n = 6 per group) and received four treatments: 0% (control group, CG); 20% (low-addition group, LG); 30% (moderate-addition group, MG); and 40% (high-addition group, HG) of SHMS-replaced silage corn and oat hay. The experiment lasted for 74 days (including a 14 d adaptation period and a 60 d treatment period). The results of this study showed that MG and HG significantly improved the marble score of goat meat (p < 0.05). The flesh color score significantly increased in each group (p < 0.05). The fat color scores significantly increased in LG and MG (p < 0.05). There were no significant effects on the pH value or shear force of the longissimus dorsi in each group (p > 0.05). The cooking loss in MG was higher than that in CG (p < 0.05). The histidine and tyrosine contents in each group of muscles significantly increased (p < 0.05), with no significant effect on fatty acids (p > 0.05). The rumen pH of MG significantly decreased (p < 0.05), while the total volatile fatty acids (TVFAs) and ammoniacal nitrogen (NH3-N) increased by 44.63% and 54.50%, respectively. The addition of the SHMS altered both the alpha and beta diversities of the rumen microbiota and significant differences in the composition and structure of the four microbial communities. The dominant bacterial phylum in each group were Firmicutes and Bacteroidetes, with Prevotella 1 as the dominant bacterial genus. Correlation analysis revealed that rumen bacteria are closely related to the animal carcass quality and rumen fermentation. In the PICRUSt prediction, 21 significantly different pathways were found, and the correlation network showed a positive correlation between the Prevotella 1 and 7 metabolic pathways, while the C5-branched dibasic acid metabolism was positively correlated with nine bacteria. In summary, feeding goats with an SHMS diet can improve the carcass quality, promote rumen fermentation, and alter the microbial structure. The research results can provide a scientific reference for the utilization of SHMS as feed in the goat industry.

This study investigated how birth weight differences in piglets affected carcass and muscle fiber properties as well as meat quality at slaughter. Within litters, piglets were grouped according to their birth weight as either normal (NBW; 1.62-1.73 kg) or low (LBW; 1.18-1.29 kg). At 5 weeks of age, NBW piglets were randomly transitioned to control (C) or isocaloric high fat diets derived from non-dairy (HF), while LBW piglets were randomly transitioned to high fat diets derived from non-dairy (HF) or dairy sources (HFHD). Piglets were reared in individual pens under standardized housing and feeding conditions. Live weight was recorded weekly, and pigs were slaughtered at 12 weeks of age. Hot carcass weights, dressing percentages, lean meat yield, and primal cut proportions were determined. The m. longissimus thoracis was collected from the right side of the carcass for measurement of physical and chemical properties of meat and muscle fiber characteristics. Results indicated that LBW pigs compensated for their live weight compared to NBW pigs at 6 weeks of age. The mean muscle fiber diameter of LBW-HFHD group is significantly higher than NBW-C and NBW-HF group, and the type I muscle fiber diameter is significantly higher than NBW-C group. Dairy fat inclusion in LBW pig diet reduced carcass back fat thickness. This increased the calculated lean meat yield to be comparable to that of NBW pigs fed a commercial diet. Incorporating dairy-sourced high-fat into LBW pigs' diets appears to be an effective strategy for producing carcasses equivalent to NBW pigs.

Feed costs and carcass yields affect the profitability and sustainability of sheep production. Therefore, it is crucial to select animals with a higher feed efficiency and high-quality meat production. This study focuses on the impact of dietary and genetic factors on production traits such as feed efficiency, carcass quality, and meat quality. Diets promote optimal sheep growth and development and provide sufficient protein can lead to higher-quality meat. However, establishing an optimized production system requires careful consideration and balance of dietary parameters. This includes ensuring adequate protein intake and feeding diets with higher intestinal absorption rates to enhance nutrient absorption in the gut. The study identifies specific genes, such as Callipyge, Calpastatin, and Myostatin, and the presence of causal mutations in these genes, as factors influencing animal growth rates, feed efficiency, and meat fatty acid profiles. Additionally, variants of other reported genes, including PIGY, UCP1, MEF2B, TNNC2, FABP4, SCD, FASN, ADCY8, ME1, CA1, GLIS1, IL1RAPL1, SOX5, SOX6, and IGF1, show potential as markers for sheep selection. A meta-analysis of reported heritability estimates reveals that residual feed intake (0.27 ± 0.07), hot carcass weight (0.26 ± 0.05), dressing percentage (0.23 ± 0.05), and intramuscular fat content (0.45 ± 0.04) are moderately to highly heritable traits. This suggests that these traits are less influenced by environmental factors and could be improved through genetic selection. Additionally, positive genetic correlations exist between body weight and hot carcass weight (0.91 ± 0.06), dressing percentage (0.35 ± 0.15), and shear force (0.27 ± 0.24), indicating that selecting for higher body weight could lead to favorable changes in carcass quality, and meat quality.

Carcass and pork traits have traditionally been considered of prime importance in pig breeding programmes. However, the changing conditions in modern farming, coupled with antimicrobial resistance issues, are raising the importance of health and robustness-related traits. Here, we explore the genetic architecture of carcass and pork traits and their relationship with immunity phenotypes in a commercial Duroc pig population. A total of nine traits related to fatness, lean content and meat pH were measured at slaughter (∼190 d of age) in 378 pigs previously phenotyped (∼70 d of age) for 36 immunity-related traits, including plasma concentrations of immunoglobulins, acute-phase proteins, leukocytes subpopulations and phagocytosis. Our study showed medium to high heritabilities and strong genetic correlations between fatness, lean content and meat pH at 24 h postmortem. Genetic correlations were found between carcass and pork traits and white blood cells. pH showed strong positive genetic correlations with leukocytes and eosinophils, and strong negative genetic correlations with haemoglobin, haematocrit and cytotoxic T cell proportion. In addition, genome-wide association studies (GWASs) pointed out four significantly associated genomic regions for lean meat percentages in different muscles, ham fat, backfat thickness, and semimembranosus pH at 24 h. The functional annotation of genes located in these regions reported a total of 14 candidate genes, with BGN, DPP10, LEPR, LEPROT, PDE4B and SLC6A8 being the strongest candidates. After performing an expression GWAS for the expression of these genes in muscle, two signals were detected in cis for the BGN and SLC6A8 genes. Our results indicate a genetic relationship between carcass fatness, lean content and meat pH with a variety of immunity-related traits that should be considered to improve immunocompetence without impairing production traits.

Selenium (Se) yeast, a bioavailable form of selenium, exhibits enhanced bioavailability due to its unique organic matrix and superior metabolic availability compared to the inorganic selenium sources. This study aims to evaluate the effects of Se yeast on the growth performance, slaughter performance, antioxidant capacity, and Se deposition in broiler chickens. A total of 264 1-day-old male AA broilers (38.7 ± 0.1 g) were randomly assigned to four treatment groups, with six replicates of 11 chickens per replicate. The broilers were fed a basal diet or a diet supplemented with 0.1, 0.2, and 0.4 mg/kg Se yeast. The experiment lasted for 42 days. Although the results showed that Se yeast did not significantly improve the growth performance of broilers, it did significantly decrease the abdominal fat ratio. Additionally, supplementation of Se yeast significantly improved the antioxidant capacity of broilers. The quadratic regression models were used to simulate the relationship between Se content in the feed and Se deposition in broiler tissues. The regression equations were as follows: pectoral muscle, Y = 2.628X - 0.340X2 - 0.592 (R2 = 0.927); leg muscle, Y = 2.317X - 0.272X2 - 0.490 (R2 = 0.937); liver, Y = 3.357X - 0.453X2 - 0.493 (R2 = 0.961); kidney, Y = 4.084X - 0.649X2 + 0.792 (R2 = 0.932). Based on these findings, the Se deposition in broiler tissues can be predicted by the Se content of the additive, which is of great significance for the precise production of Se-enriched functional chicken products.

Warner-Bratzler Shear Force (WBSF) is a quantitative measurement of meat toughness that has great impact on the consumer acceptability of meat. This study was conducted to evaluate growth performance, carcass and meat quality characteristics, and fatty acids profile of longissimus lumborum (LL) intramuscular fat (IMF) of pigs that are genetically divergent for WBSF. Based on WBSF values of the LL from a previous study, 12 immunocastrated male pigs selected from 96 pigs were divided into two groups with high WBSF (53.28 to 42.50 N) and low WBSF (37.27 to 27.79 N). Although high-WBSF pigs tended to have improved (P = 0.08) gain-to-feed ratio, overall performance was similar between WBSF groups. High-WBSF pigs also tended to have higher (P = 0.09) cooling loss and lean percentage as well as decreased (P = 0.08) 10th-rib backfat depth than low-WBSF pigs. Loins from high-WBSF pigs tended to have lower (P = 0.07) IMF content and higher (P = 0.09) cooking loss than low-WBSF pigs. Compared to low-WBSF pigs, IMF of the LL from high-WBSF pigs had lower (P = 0.05) percentage of oleic acid and tended to have a decreased (P = 0.07) percentage of total monounsaturated fatty acids. Loins from pigs with high WBSF tended to have increased (P = 0.09) total polyunsaturated fatty acids (PUFA) content and had higher (P = 0.03) PUFA: saturated fatty acid ratio than low-WBSF pigs. Selecting pigs for pork tenderness could potentially conflict with lean growth efficiency and a healthier fatty acids profile for human consumption.

The aim of the present study was to estimate the chemical composition (water, lipid, protein, mineral, and energy contents) of carcasses measured postmortem using dual-energy X-ray absorptiometry (DXA) scans of cold half-carcass or 11th rib cut. One hundred and twenty beef-on-dairy (dam: Swiss Brown, sire: Angus, Limousin, or Simmental) bulls (n = 66), heifers (n = 42), and steers (n = 12) were included in the study. The reference carcass composition measured after grinding, homogenization, and chemical analyses was estimated from DXA variables using simple or multiple linear regressions with model training on 70% (n = 84) and validation on 30% (n = 36) of the observations. In the validation step, the estimates of water and protein masses from the half-carcass (R2 = 0.998 and 0.997; root mean square error of prediction [RMSEP], 1.0 and 0.5 kg, respectively) and 11th rib DXA scans (R2 = 0.997 and 0.996; RMSEP, 1.5 and 0.5 kg, respectively) were precise. Lipid mass was estimated precisely from the half-carcass DXA scan (R2 = 0.990; RMSEP = 1.0 kg) with a slightly lower precision from the 11th rib DXA scan (R2 = 0.968; RMSEP = 1.7 kg). Mineral mass was estimated from half-carcass (R²â€…= 0.975 and RMSEP = 0.3 kg) and 11th rib DXA scans (R2 = 0.947 and RMSEP = 0.4 kg). For the energy content, the R2 values ranged from 0.989 (11th rib DXA scan) to 0.996 (half-carcass DXA scan), and the RMSEP ranged from 36 (half-carcass) to 55 MJ (11th rib). The proportions of water, lipids, and energy in the carcasses were also precisely estimated (R2 ≥ 0.882) using either the half-carcass (RMSEP ≤ 1.0%) or 11th rib-cut DXA scans (RMSEP ≤ 1.3%). Precision was lower for the protein and mineral proportions (R2 ≤ 0.794, RMSEP ≤ 0.5%). The cattle category (sex and breed of sire) effect was observed only in some estimative models for proportions from the 11th rib cut. In conclusion, DXA imaging of either a cold half-carcass or 11th rib cut is a precise method for estimating the chemical composition of carcasses from beef-on-dairy cattle.


Assessment of the water, lipid, protein, mineral, and energy contents of beef carcass allows for an understanding of the bovine growth physiology and is key to determining the carcass's commercial value at the slaughterhouse. Direct measurement of the carcass chemical composition requires postmortem grinding and homogenization of a half-carcass to perform chemical analyses. This reference method is expensive, time-consuming, and destructive of edible meat. The aim of the present study was to develop an alternative and nondestructive method to determine carcass chemical composition based on image scans obtained using dual-energy X-ray absorptiometry (DXA). Equations were calibrated to estimate the carcass composition based on the DXA scans of a whole half-carcass or a single-rib cut in an accurate, precise, fast, and reproducible way. These were established for seven types of beef-on-dairy cattle of different sexes and breeds of sire, which are among the most commonly used in specialized beef-on-dairy fattening production systems worldwide.

The objective of this study was to determine the effect of bitter gourd (BG) leftovers (stems and leaves) as an alternative dietary ingredient on pig performance, carcass characteristics, serum parameters (urea, insulin, and leptin levels), and faecal consistency. Healthy Tempo × Great Yorkshire and Landrace pigs (N = 240; 120 gilts and 120 boars) weighing 25.8 kg (9-10 weeks of age) were randomly assigned to three treatments (eight pens per treatment; each pen with five gilts and five boars). The three treatments consisted of a non-supplemented commercial diet (control; CON) and a CON diet supplemented with 6.5 g/kg BG (BG1) or 13 g/kg BG (BG2). Pigs were fed the experimental diets until slaughter (120 kg body weight; BW). Feed intake was recorded daily and calculated for each experimental phase (i.e., days 0-36, days 36-66, days 66-98, and the overall experimental period). Average daily feed intake (ADFI), average daily gain (ADG), and feed conversion ratio (FCR) were calculated. The frequencies of visiting the feed station and of feeding were recorded daily. Faecal scores (FS) for consistency were measured per pen twice weekly. On the day of slaughter, two pigs per pen (one male and one female) were randomly selected for the measurement of muscle thickness and blood collection. At the slaughterhouse, carcass weight, dressing percentage, back fat thickness, muscle depth, and lean meat percentage were recorded. Data were analysed using ANOVA, with the pen as the experimental unit. Diets BG1 or BG2 did not affect the performance of the pigs, except for a significant decrease in the ADG of the pigs fed the BG2 diet in the feeding period of 50-80 kg. However, no differences in performance were observed in the overall experimental period. Faecal scores, carcass quality, and serum levels of urea, insulin, and leptin were also not affected by the diet. In summary, leftovers (stems and leaves) of BG can be successfully added to the diet of growing-finishing pigs without interfering with performance and carcass characteristics.

Targets for finished livestock are often determined by expected fat, either subcutaneous or intramuscular. These targets are used frequently to improve eating quality. Lower intramuscular fat, lack of product uniformity, and insufficient tenderness can negatively impact beef acceptability. This study aimed to investigate the differences in gene expression that alter metabolism and intercellular signaling in the muscle and adipose tissue in beef carcasses at different fat endpoints. In this study, longissimus thoracis muscle samples and adipose tissue were collected at harvest, and RNA was extracted and then sequenced using RNAseq. Differential expression was determined using edgeR, and p-values were adjusted using the Benjamini-Hochberg method. A corrected p-value of 0.005 and log2 (fold change) of >1 were the threshold to identify differential expression. Comparison between intermuscular and subcutaneous fat showed no differences in the genes activated in the two adipose tissue depots, suggesting that subcutaneous fat was an adequate sample. Carcass data allowed the classification of carcasses by USDA quality grades (marbling targets). In comparing muscle from Standard and Choice carcasses, 15 genes were downregulated, and 20 were upregulated. There were 49 downregulated and 113 upregulated genes comparing adipose tissue from Standard and Choice carcasses. These genes are related to the metabolism of fat and energy. This indicates that muscle transcript expression varies less than adipose. In addition, subcutaneous fat can be used to evaluate transcript changes in fat. However, it is unclear whether these fat tissues can be used as surrogates for marbling.

Many factors influence the effects of exogenous organic chromium (EO-Cr) on the growth performance and carcass qualities of weaned and growing-finishing pigs, such as pig growth stages, types of EO-Cr, period of supplementation, and farm management. However, it is challenging to comprehensively consider all factors in one study. To solve this problem, we searched all relative literature published from 1 January 2000 to 1 January 2023, to systematically analyze and review the effects of EO-Cr on pig growth performance and carcass qualities via meta-analysis. Thirty-five papers were filtered and analyzed, which involved 4366 pigs. The results showed that, for weaned piglets, EO-Cr diets significantly increased the average daily gain (ADG, p < 0.001) and average daily feed intake (ADFI, p = 0.022) but reduced the feed-gain ratio (p = 0.004). In addition, for growing-finishing pigs, EO-Cr supplementation significantly increased the ADG (p < 0.001), carcass lean ratio (p = 0.020), and loin muscle area (p < 0.001), but had no significant effect on the ADFI (p = 0.071), feed-gain ratio (p = 0.692), dressing percent (p = 0.989), or back fat thickness (p = 0.142). Moreover, the effect of EO-Cr was greater in weaned piglets than in growing-finishing pigs. In terms of the dose effect of the supplement, chromium nicotinate is the most suitable EO-Cr type for weaned piglets with an optimal dosage range of 0.125-0.150 mg/kg. On the other hand, chromium picolinate is the most suitable EO-Cr type for growing-finishing pigs with an optimal dosage range of 0.250-0.300 mg/kg. In conclusion, EO-Cr supplementation is beneficial for enhancing the growth performance and carcass qualities of both weaned and growing-finishing pigs.
